Queen of the spring flowers

She arrives unnoticed on a fresh night that breathes the warmth of spring, yet retains the cool of winter. Bald trees sigh in the wake of her steps, they stretch and shrug after a long sleep. Her hands float like the breeze, stroking buds on the branches and twigs of bushes. Wherever she goes, the earth warms under her light feet, sprouts emerge and the grass shakes itself and raises its head proudly. She kneels down to flower beds and sings for the flowers buds. And when the sun comes up, just like a miracle, a gentle green net covers all branches which used to be barren during the long winter, as if spring was a spiderweb that stretched through all living beings. White, yellow and pink flowers open their chalice toward the sunbeams. They seem to be the daughters of light; no one knows their secret - that the Queen of flowers hummed the colors in their petals by the moonlight.

Hozzávalók:
120 gr fehércsoki
50 gr tejcsoki
ételfesték

1. Alaposan megtisztítom a formát. Papíron megtervezem a virágmotívumot, előkészítem a hozzávalókat. Temperálom a tejcsokit, és ecsettel a maszk arcrészén megfestem a virág körvonalait. Miután a csoki megszilárdult, kifestem: a szirmok végére fehér lüsztert festek, amit összemosok rózsaszínnel, majd legbelül pirossal. A virág közepe aranyszínű lesz.

Ingredients:
120 gr white chocolate
50 gr milk chocolate
food paint

1. I clean the mold thoroughly. On a piece of paper, I plan the flower pattern; and I prepare the ingredients. I temper the milk chocolate and with a thin brush I paint the contours of the flower on the cheek of the mask. Once the chocolate sets, I paint it: I add a bit of white luster to the edges of the petals, which I blend with pink, then red on the inner parts. The middle of the flower is gold.

2. I temper the white chocolate, pour it in the mold and then turn it around for some time so that I get an even and thick layer. Finally, when the chocolate gets cool, I shake out the excess, then I scrape off the edges with a spatula. I place the mold on a parchment sheet upside down.

3. I place the mold in the fridge for some time and when the chocolate gets solid, I carefully take it out of the mold. With the mixture of gold luster and some drops of alcohol, I paint the lips, the eyes and the art nouveau pattern on the other side of the face.

Whisky

Az ismételt helyreállítás a 80-as években fejeződött be.

200 gr tejcsoki
100 gr étcsoki
40 ml Ballantine's whisky
egy kiskanál vaj
lüszterpor

Elkészítés:
Kimérem a whiskyt. Ezzel kész is a töltelék.
A hatszögletű bonbonforma egy-egy harmadát kifestem bronz színű lüszterporral. Amikor megszáradt, temperálom a tejcsokit és elkészítem a burkokat. Ha megszilárdultak, megtöltöm őket a krémmel, a formát pedig a hűtőbe teszem pár órára. Végül temperálom a maradék tejcsokit, és lezárom a bonbonokat.

For me, the most beautiful building of Budapest is the original not-original Matthias Church (aka Church of Assumption). It sits on the Castle Hill like a lacy wonder; elegant, splendid. A proof that one medieval Gothic architecture existed here - even though the stones themselves are not medieval, the building itself is.
This wonderful church survived the storms of a thousand years, it was reborn from time to time and it is still here for us.
Originally, the church was founded by King Stephen I (first king of Hungary) in 1015; however, no written record exists about this; we only know it from tradition. According to Béla IV's orders, the first reconstruction happened after the Mongol invasion and ended in 1269. The building had a classical Gothic style at this phase. A hundred years later King Louis the Great reconstructed it, then during the reign of King Matthias a bell tower was erected with the king's symbol, the raven on top.
Under the Turkish occupation, the building was damaged, then transformed into a mosque in 1541. In 1686, it switched owners again: after Buda was retaken, the Jesuit Order received it and they restored it in Baroque style, moreover, they also built other edifices around it. In 1723 the church burnt down, and thus a major portion of the medieval elements were lost.
The rebirth of the Matthias Church started in 1874, when it was renovated under Frigyes Schulek's supervision. Schulek tried to reconstruct the church's medieval image; therefore during the rebuilding work, in some places the walls were demolished to the ground. The interior decoration was the responsibility of artists Bertalan Székely and Károly Lotz. Thus, the church revived in its old-new appearance: a Gothic, neo-Gothic, Art nouveau wonder.
Of course, its story does not end here, because after its heydays, two world wars came and during the second one, it was heavily damaged again and served as a German camp kitchen and as a Soviet stable. But these were only fleeting moments compared to the centuries of glory. The renovations finished in the 1980s.
Fun facts: Franz Joseph I and Queen Elizabeth were crowned here; during WW2 the beautiful windows designed by Székely and Lotz were hidden and thus you can see the originals even today; the roofs are covered with handmade Zsolnay tiles; this was the place where Franz Liszt's Coronation Mass was performed for the first time.
I saw this amazing photo of the church about a year ago in a Facebook group. I saved it because I decided that I wanted to draw it. And now, finally I finished it.

This time I also brought a chocolate, which I tried to make elegant inside and out. The filling is really simple, still it's silky and strong; the decoration is modest :)

Ingredients:
200 gr milk chocolate
100 gr dark chocolate
40 ml Ballantine's whisky
small spoon of butter
luster dust

Recipe:
I measure out the whisky. In a bain-marie I melt the dark chocolate and the butter then I combine it with the whisky. The filling is thus ready.
With bronze luster dust, I paint one-third of the hexagonal cavities of the mold. When it sets, I temper the milk chocolate and I prepare the shells. After the chocolate gets solid, I fill the shells with the filling and put the mold in the fridge for some hours. Finally, I temper the leftover milk chocolate and I seal the bonbons.

Kimérem a mascarponét.

I found this recipe idea on one of the popular Hungarian recipe collection sites, but I adapted it to my taste :) Since I had some marzipan at home - a total accident - I thought, why not?!
I think this recipe has potential, you only need a bit of imagination and dexterity. I could imagine it with pistachio cream or milk chocolate-rose pepper cream; and the decoration could be adapted too, candy confetti or blueberry etc.

Ingredients:
12 strawberries
3 spoons of mascarpone
15 ml cream
50 gr marzipan
70 gr milk chocolate

Recipe:
I clean and wash the strawberries then dry them and place them on parchment paper (in case they are not stable, I cut a little bit off the bottom). I carefully cut in the top of the strawberries in a cross shape.
I put the mascarpone in a bowl. Then I pour the cream in a pot, chop up the marzipan and throw it in it. I warm it up and stir it until the marzipan melts. I combine the liquid with the mascarpone and mix the two. I put the bowl in the fridge. When the cream cools down, I spoon it in a piping bag; I carefully push the tube into the cuts on the strawberries and fill them with the cream.
Finally I temper some milk chocolate and pouring it into a piping bag, I draw lines on the strawberries. After a bit of cooling, the amazing treat is done. Be careful, it's addictive!

eper-rebarbara // strawberry-rhubarb

Réges-régen Ahura Mazda megteremtette a világot.

A rebarbara neve egyébként görög, illetve latin nyelvből ered: a görög "rheon" szó a perzsa "rewend" átvétele. A szintén görög "rha" pedig a Volga nevére utal, mivel annak mentén termesztették  a rebarbarát. A középkori latinban ezekből aztán "rheum barbarum" (idegen rheum) lett.

Olvasztott kakaóvajjal kevert barackszín lüszterporral összefröcskölöm a bonbonforma mélyedéseit. Temperálom a tejcsokit, elkészítem a bonbonok burkát. Elzárom a tüzet, a lét kevergetve hűtöm. Miután a töltelék zselésedett, kiveszem a formát. Temperálom a maradék tejcsokit és lezárom a bonbonokat.

Long long time ago Ahura Mazda created the world. The first animal he created was a white ox, which glowed like the moon. And the first man, Gayomart, was so perfect, that he shone like the sun. However, the treacherous Ahriman did not stand this, he defiled the creation and killed both the ox and the man. However, Ahura Mazda chased away Ahriman and his demons. From the dying ox, new plants and animal species emerged; whereas from Gayomart's seed, which fell on the ground, a rhubarb grew out forty years later. Its single stem and fifteen leaves took the shape of two figures: they were Mashya and Mashyanag, the ancestors of all human beings. Between the two humans, a spirit also rose up and for nine months, they maintained the shape of the rhubarb. Finally when Mashya and Mashyanag assumed human form, the spirit entered them. Then Ahura Mazda told them: "You are the seed of man, you are the parents of the world, you have been given the most exalted sound reason, think good thoughts, speak good words, do good deeds and do not worship the demons."

This is how the creation of the world is described in the Avesta, the holy book of Zoroastrianism. At the same time, it explains how two equal peers: man and woman arose from the androgynous Gayomart, who shared the same spirit.
Moreover, it also describes how the rhubarb was created - which had a key role in the origins of mankind :) Rhubarb has been used a laxative in Chinese medicine even 5000 years ago. In the Middle Ages then, it was also discovered in Europe and the precious dried - which was sometimes more expensive than cinnamon or saffron - was imported through the Silk Road. The rhubarb remained a luxury good for a long time; for instance in 17th century England it was double or triple the price of opium.
Finally, when its cultivation started in Europe, it became a popular component of sweets. The name of the rhubarb comes from Greek and Latin: the Greek word "Rheon" derives from the Persian "rewend". The Greek "rha" refers to the name of the Volga River, where rhubarb was cultivated. In medieval Latin, these words became "rheum barbarum" (foreign rhubarb).
It is only fitting for a plant with such rich and long history to be used as chocolate filling :D And that's what I did - I applied the classic strawberry-rhubarb combination, without any other flavouring.

Ingredients:
100 gr strawberry
100 gr rhubarb
two small spoons of sugar
200 gr milk chocolate
agar
lustre dust

Recipe:
I chop up the strawberry and the rhubarb and start to cook them with a minimal amount of water and a little bit of sugar. When the consistency becomes pulpy, I turn the stove off and I sieve the jam.
I sprinkle the cavities of the mould with the mixture of melted cocoa butter and peach lustre dust. I temper the milk chocolate and I prepare the bonbon shells. I wait until they become solid. In the meanwhile take the ca. 150 ml strawberry-rhubarb liquid and I boil it with the agar (and I eat up the leftover fruits). I turn off the stove and keep stirring the liquid while it cools. When it cools to room temperature and starts to set, I fill the shells and put the mould in the fridge for 10 minutes. After the filling jellifies, I take the mould out, I temper the leftover milk chocolate and seal the bonbons.

I've written blogs for more than ten years: I had personal blogs in Hungarian and English, on several different servers, I have a music blog... Now that I haven't had a personal blog for four years, my exhibitionism was bothering me so much that I decided to start it again. This time though, I won't be writing random posts, but the central topic will be chocolate recipes.
Probably I'm not the only one who, when s/he likes something, for a long while s/he is just staring at it, beating around the bush until s/he finally decides to take the decisive step. This is how I was with chocolate. Since my early childhood I loved it: I can eat endless portions excessively (how fortunate that it can't be seen :D). Several books about processing cocoa and about chocolate, as well as recipe compilations, are lined up on my bookshelf, I knew everything by heart in theory but for many years I was just dreaming about learning the practice. I took the decisive step in February 2015, when I went to the Szamos Chocolate School. The course was held by maestro Andor who started out by stating that his favorite was white chocolate. Since then I'm not afraid to say this in front of others :D
So for one and a half years chocolate making has been one of my beloved hobbies: almost everything is in it what I like to do. It requires manual skills as well as imagination, experimenting; you have to know how to combine flavors, colors, patterns, textures, and of course, whether you succeeded or not, the outcome is amazing in every case. And where does inspiration come from? Almost everywhere. Obviously I must mention here those chocolate blogs that I have been browsing and from where I've been collecting recipes and ideas: Levendula&Csokoládé, Pralinéparadicsom, and nowadays my best friend, Cucu's blog.
If you think now "well, ok, chocolate is really cool but how can someone potter around so much because of some tiny bonbons/a bar of chocolate?" I can only react with a quote: "Happiness. Simple as a glass of chocolate or tortuous as the heart. Bitter. Sweet. Alive." (Joanne Harris: Chocolat) Cocoa (theobroma cacao) is native to the rainforests of Southern America. It is the food of the gods as its name states; due to its history and its flavor for me it is like a piece of archaic force, wildness, mysticism in our everyday lives. Making chocolate requires devotion and attention like a love bond. All of this is expressed in the word "tempering" - not by chance. Chocolate must be tamed, only then will the magic happen.
And I like to combine this magic with other types of magic: music, fairytales, handicrafts... That's where the title of the blog comes from and this is what the posts will be written about.
