rózsás-rozés-málnás // rose- rosé wine-raspberry

Én a városokkal épp úgy vagyok, mint az emberekkel. Néha keresztezik egymást útjaink, gyönyörködök bennük, sokukat megkedvelem, néhányba beleszeretek, másokat megszeretek, aztán mégis eltávolodunk egymástól, megint másokat idegenkedve figyelek, és időbe telik, mire megbarátkozok velük. Na Pozsony épp az utóbbi volt. Első találkozásunkkor téli köpenybe burkolózott, és bár a legjobb szállását ajánlotta fel, és a csodás, aranyló karácsonyi vására mellett még a rockklubjait is egyből bemutatta, valamiért sokáig mégsem kívánkoztam vissza. Eltartott egy darabig, míg egy-egy kiruccanás során annyira megismerkedtem útjaival, hogy már otthonosan mozogjak benne. De van, hogy egy igazán jó kapcsolathoz idő kell és még szorosabb ismeretség :) így aztán Pozsony akkor vált közeli kebelbarátommá, amikor több ismerősöm is lett benne, amikor már annyira beleszerettem a kastélyába, hogy valahányszor arra járok, első utam oda vezet és agyonfotózom, amikor már a város látványa teljesen belémivódott. Amikor az óváros összes kis utcája ismerősként fogad, és többé már nem tudok elveszni (térkép nélkül sem), ismerem a boltok kirakatát, tudom, hol vannak a legjobb éttermek és kocsmák, és mindig van kivel elmenni oda.
Szóval ez a csoki egy pozsonyi jóbarátomnak készült, a legutóbbi látogatás alkalmával :)


Hozzávalók:
50 ml rozébor
egy vörös rózsa
30 ml málnapüré
100 gr fehércsoki
egy kiskanál vaj
150 gr tejcsoki
lüszterpor, kakaóvaj

Elkészítés:
A rózsaszirmokat leszedem a szárukról, gyengéden megmosom, majd levágom a tövükről a fehér részeket. Egy kis pohárba teszem őket, és rájuk öntöm a rozét. Két napig állni hagyom, közben néha megkeverem kiskanállal. Végül leszűröm a bort, hozzáadom a málnapürét. A vajjal együtt megolvasztott fehércsokit is a borhoz keverem. 
Kakaóvaj és arany lüszterpor segítségével összefröcskölöm a bonbonforma mélyedéseit. Ezt megismétlem a vörös lüszterrel is. Temperálom a tejcsokit, elkészítem a burkokat. Amikor megszilárdultak, megtöltöm őket a töltelékkel, és a hűtőbe teszem. Néhány óra múlva kiveszem, és a maradék temperált tejcsokival lezárom a bonbonokat.



For me, cities are like people. Sometimes we cross paths, I admire them, I like many of them, I fall in love with some of them; others I get to like but later we drift apart; some others I observe from the distance and it takes time until we become friends. Bratislava was like this. She was wearing a winter coat when we first met and even though she offered her best accommodation and introduced her wonderful, golden Christmas fair and her rock clubs, for some reason I still did not feel the need to go back. It took time until I got familiar with its streets during occasional visits. But sometimes a really good relationship needs time and even closer acquaintance :) therefore Bratislava became my intimate friend when I got to know some people there, when I fell in love with her castle so much so that whenever I go there, I have to visit it and take photos of it, when the sight of the city infiltrated me. When all of the tiny streets of the old city centre greet me and I cannot get lost any more (not even without a map), I know the shop windows, I know where the best restaurants and pubs are and I always have someone to go there with.
So this chocolate was made for a friend of mine who lives in Bratislava, on the occasion of my last visit :)


Ingredients:
50 ml rosé wine
one red rose
30 ml raspberry puree
100 gr white chocolate
one spoon butter
150 gr milk chocolate
lustre dust, cocoa butter

Recipe:
I get rid of the stem of the rose, I gently wash the petals and I cut off the white parts. I put them in a small glass and I pour the rosé wine on them. I leave them to soak for two days, occasionally stirring them with a spoon. Finally I sieve the wine and I add the raspberry puree. I also combine it the the mixture of the melted butter and white chocolate.
I sprinkle the cavities of the bonbon mould with golden lustre and cocoa butter. I do the same with red lustre. I temper the milk chocolate, I prepare the bonbon shells. When they get solid, I fill them with the filling and I put the mould in the fridge. Some hours later I take it out and I seal the bonbons with the leftover tempered chocolate.

orgona-rozébor // lilac- rosé wine

(ha szeretnél nyerni egy csomaggal az orgonás-rozés csokiból, pillants rá a Facebook oldalamra!)

Ma kifőzzük, hogyan készül egy történész.
Hozzávalók:
egy db ember, akinek fogalma sincs, mivé váljon
mintegy 6-7 év
világmegváltó tervek
idealizmus és talán kissé túl sok remény

Elkészítés:
1. Végy egy gyereket, akit a világon minden érdekel (igen, a kémia, a csillagászat, a művészetek, a vallások, az irodalom, még a matek is), kivéve a történelem. Végy mellé nem túl motiváló töritanárokat, ami aztán majd odáig fajul, hogy az érettségi előtt másfél-két évvel már attól fog parázni, hogy megbukik. Lévén, hogy utálja a törit, de muszáj megtanulnia, kénytelen lesz töri faktra járni két évig. Ahol aztán adj mellé egy igen jó tanárt.
2. Amikor eljön az egyetemre jelentkezés ideje, a gyereket már a világon minden érdekli, beleértve a történelmet is. Dönteni persze képtelen, ezért beszéld rá a töri szakra.
3. Amikor eljön a diplomázás ideje, alanyunk rá fog ébredni, hogy valójában a vég nélküli tanulás motiválja leginkább (mivel gyerekkorában meg volt győződve, hogy nagy titkokat fog feltárni, mint a kincskeresők a filmekben!), ezért folytatja tanulmányait. A negyedik diploma után belátja, hogy további diplomákat szerezni már nem kihívás, tovább kell lépni.
4. Mindeközben szórjunk a katyvaszba egy olyan témát, ami kellően megfogja alanyunkat. Aki gyerekkora óta arról is meg van győződve, hogy bármilyen aprócska élőlény ő a nagy univerzumban, azért egy kicsit meg tudja változtatni az emberiséget. Megvan tehát a téma, alanyunk arra is rájön, hogy valójában elő tud adni, és van is mondanivalója. Ekkor jön képbe az idealizmus, a remény, az emberi jóságba vetett hit. Alanyunk tehát megtalálja az életcélját.
5. Buktatókkal teli úton ébreszd rá alanyunkat, hogy jóllehet ő azt hitte, nem akar dolgozni (csak tanulni ugyebár), valójában nem a munkától ódzkodott, hanem annak a napi-8-óra-az-irodában fajtájától; de bezzeg szabadúszóként éjt nappallá téve képes melózni. Főleg ha szeretett témájáról van szó.
6. Évek hosszú során át alanyunk majd megtapasztalja, hogy a különböző múzeumok és intézmények hogyan használják ki a munkaerőt (illetve annak idealizmusát), továbbá milyen az, amikor - lévén szabadúszik, ugye - ismerősök, sőt gyakran hozzá közel állók szólogatnak be, hogy ő valójában nem is dolgozik, vagy egészen furcsa elképzeléseik vannak az életéről, mert abból annyit látnak, hogy napi pár óra levéltárazás után hazamegy. Nyilván az "nem igazi munka", egyébként is, köztudott, hogy "az értelmiségiek nem csinálnak semmit". Lesznek persze olyanok, akik irigyek erre, vagy netán a pénzügyeire célozgatva tesznek kellemes megjegyzéseket, de aki nem lát bele, az nem is tudhatja, és hát az élet már csak ilyen, az emberek jóindulatúak (se) :D :)
7. Évek hosszú során és buktatókon át juttasd el alanyunkat biztos angol nyelvtudásig és a szakmai függetlenségig, kiterjedt nemzetközi kapcsolathálóig, doktori tanulmányokig. Juttasd el három kontinens tizenhat országának 26 városába konferenciákra és nyári egyetemekre, hogy továbbfejlődjön. Kapjon a kutatását támogató ösztöndíjakat.

Aztán jön a nagy kérdés, hogy emberünk mit tesz mindezért. Legyen mondjuk, hogy eddig három kiállítás készítésében vett részt, továbbá hat nyári egyetemen és egy online kurzuson; háromszor volt meghívott előadó, hat nemzetközi konferenciát szervezett, 21 konferencián adott elő. Négy angol nyelvű és három magyar tanulmánya jelent meg, két kötetet segédszerkesztett. Négy múzeumnak és két egyetemnek dolgozott, önkénteskedett egy szervezetnek. 
Félreértés ne essék, a fentiek nagy része szintén önkéntes munka (vagy nem fizetetnek érte, de szakmai szempontból muszáj), mert általában a kultúra és a tudomány kapja a legkevesebb pénzt. Itt jön képbe az idealizmus, na meg úgy általában a történészek élete. Aki menedzseri fizetésre vágyik, ne menjen történésznek. A szabadúszás előnye, hogy kötetlen, és az ember otthon vagy a parkban is végezheti, azonban néha van munka, máskor meg nincs, és ha valakinek nem jó a munkamorálja, az bajban lesz a határidőkkel. 
Viszont minden hátrányáért kárpótol az érzés, hogy olyasmit csinálok, amit imádok, és amivel úgy érzem, hogy jobbá teszem a világot. Épp ezért alkalomadtán este 10-11-ig, hétvégente is, ünnepnapokon is, bármikor képes vagyok dolgozni, mert nem fáradság. El sem tudnám képzelni az életem úgy, hogy olyasmit csináljak, amit unok, nem az életcélom, vagy közben nem érzem azt, hogy jót teszek másokkal.
Erre az évre a terveim: folytatom megkezdett ismeretterjesztő cikkeim sorozatát (eddig három nyelven jelentek meg: szlovákul itt és itt, angolul itt, magyarul pedig itt), egy magyar és három angol nyelvű tanulmányom áll szerkesztés alatt, magam pedig két angol nyelvű tanulmánykötet és egy forráskiadvány szerkesztésében veszek részt. Hat konferenciára és egy nyári egyetemre jutottam be, még egy konferenciára kell jelentkeznem, egyre pedig meghívást kaptam. Mindemellett két ösztöndíjra jelentkeztem, gyűröm a "nem igazi munka" levéltárazást, dolgozok a doktori disszertációmon, továbbá nagy örömömre az év elején bekapcsolódtam a Post bellum (Pameť národa) nevű NGO munkájába (amelynek már meg is írtam az első cikkemet) - a Post bellum olyan Közép-Európában élő emberek interjúit gyűjti egy online adatbázisban, akik átélték a 20. század valamely nagy történelmi eseményét (holokauszt, 1968, 1956, rendszerváltás stb.). 
És kész is a történészünk.



A mai bonbon lágy boros krémmel töltött, amit az orgona finom illata egészít ki, és kedves, rózsaszín virágminta díszíti.

Hozzávalók:
egy kis pohárnyi orgonavirág
60 ml rozé (én a Varga pincészet félszáraz habzóborát használtam)
200+100 gr étcsoki
egy kiskanál vaj
transzferfólia

Elkészítés:
Az orgonavirágokat lecsipkedem a szárról, egy kis pohárba teszem, és ráöntöm a rozét. Néha kicsit megkeverem és óvatosan lenyomkodom a virágokat. Egy délután (5-6 óra) hosszat hagyom ázni, azután leszűröm.
Vízgőz felett megolvasztok 100 gr étcsokit, belekeverek egy kiskanál vajat is, és elegyítem a borral. Sokáig kell kevergetni, mert nem igazán szereti egymást a két szubsztancia. 
Temperálok 200 gr étcsokit, elkészítem a bonbonok burkát. Megtöltöm őket a boros krémmel, és hűtőbe teszem. Amikor a krém teteje elég szilárd, kiveszem. Méretre vágom a transzferfóliát, félreteszem. Temperálom a maradék étcsokit, lezárom a bonbonokat, ám mielőtt visszatenném a hűtőbe, rájuk simítom a transzferfóliát. Alaposan elsimogatom, hogy ne maradjon alatta légbuborék. Amikor a bonbonok elkészültek, a fóliát le lehet húzni, a csokit pedig kirázogatni a formából.




Today we'll learn how to prepare a historian.
Ingredients:
one person who has no idea what she wants to become
about 6-7 years

idealism and probably a bit too much hope

Recipe:
1. Take one kid who is interested in everything (yes, chemistry, astronomy, arts, religions, literature, even mathematics), except for history. Take not too motivating history teachers, which will result in that 1.5-2 years before high school graduation, the kid will be afraid that she'll fail at the exam. Though she hates history, but she must learn it, she'll have to take extra classes for two years. Where you shall add a very good teacher.
2. When she has to pick a university, the kid will be interested in everything, including history. Obviously she is unable to choose, so persuade her to choose history.
3. At the time of graduation our subject will realise that actually life-long learning is what motivates her (as when she was a kid, she was convinced that she'll discover great secrets like those treasure hunters in the movies!), therefore she continues to study. After the fourth diploma she realises that getting more diplomas is not a real challenge and she must move forward.
4. In the meantime add into this mixture a topic, which captivates our subject. Who has been convinced since her childhood that even though she's only a tiny creature in the vast universe, she can still change humanity a little bit. So we have the topic and our subject also realises that she can present and she has a message. Then idealism, hope and faith in the kindness of humans come into the picture. Thus our subject finds the meaning of her life.
5. Through a rocky road, make our subject realise that even though she had believed that she doesn't want to work (only study), in reality it wasn't work she was afraid of but its 8-hour-in-the-office form; however, as a freelancer she can work day and night. Especially when it comes to her beloved topic.
6. During the years our subject will experience how museums and various institutions exploit workforce (more precisely the idealism of that workforce), and how it is when - as she's freelancing - acquaintances, or often people close to her nag her that she is not working or they have the weirdest ideas about her life, because the only thing they see is that she spends a couple of hours in the archive, then goes home. Obviously that cannot be "real work", and anyway, everyone knows that "intellectuals don't do anything". There will be some who'll envy this or they make nice comments about her financial issues, but those who don't see behind the scenes, cannot know what's going on and life is like this, people are nice (not) :D :)
7. Through years and lots of stumbling, make the subject achieve firm English knowledge and professional independence, an international network and doctoral studies. Get her to 26 cities of 16 countries on three continents, to conferences and summer schools in order to develop her. She shall get scholarships too, for her research.

Then the question arises, what does our subject do for all this. Let's say, she participated in the creation of three exhibitions, she took part in six summer schools and one online course; three times she was invited as a guest presenter, she organised six international conferences and presented at 21 conferences. She published four English and three Hungarian papers; copy edited two volumes. She worked for four museums and two universities and volunteered for one organisation.
Don't misunderstand, most of the above mentioned was also voluntary work (or there was no salary but had to be done for professional reasons), because usually only a small amount of money is invested in culture and science. Here comes idealism and the life of historians in general. Whoever wants the salary of a manager, shouldn't become a historian. The advantage of freelancing is that one can do it at home or in the park, but sometimes you have some work, other times you don't, and if you don't have a strict work morale, deadlines might be problematic.
However, the feeling that I do something I truly love and with which I feel that I make the world a better place, compensates for any disadvantage. Therefore oftentimes I work until 10-11 in the evening, in the weekend or even on holidays, because it is not tiring for me. I can't even imagine my life doing something I am bored with, which is not the meaning of my life or with which I don't feel that I do good to others.
My plans for this year: I'll continue the series of my popularising articles (I've published them in three languages: in Slovak here and here, in English here, in Hungarian here). I have one Hungarian and three English language papers that are being edited; I myself am editing two English language conference volumes and one primary source edition. I got invited to seven conferences and one summer school; I still have to apply to one conference. Besides, I applied to two scholarships, I'm suffering with the "not real work" archival research, working on my dissertation, moreover, I am super happy that in the beginning of this year I joined an NGO called Post bellum (Pameť národa) (for which I've already written my first article) - Post bellum collects the interviews of people from Central Europe, who experienced a significant historical event of the 20th century (Holocaust, 1968, 1956, fall of the Iron Curtain, etc.).
And our historian is ready.



Today's bonbons are filled with soft wine-cream, complemented with the nice scent of lilacs and decorated with cute pink flowers.

Ingredients:
one small glass of lilac flowers
60 ml rosé wine (I used semi dry sparkling wine)
200+100 gr dark chocolate
small spoon of butter
transfer sheet

Recipe:
I nip the flowers off the stem and put them in a small glass; I pour the wine on them. Occasionally I stir them and carefully press the flowers down. I leave them to soak for an afternoon (5-6 hours), then I sieve it.
I melt 100 gr dark chocolate in bain marie; I also add a spoonful of butter and I combine it with the wine. You'll have to stir it for a while because the two substances don't like each other.
I temper 200 gr dark chocolate; I prepare the bonbon shells. I fill them with the wine cream and I put the mould in the fridge. When the cream sets, I take it out. I cut off a piece of the transfer sheet and put it aside. I temper the leftover dark chocolate; I seal the bonbons but before I put the mould in the fridge, I place the transfer sheet on the top. I press it down so no air bubbles can remain under it. When the bonbons are ready, the sheet can be peeled off and the chocolate shaken out of the mould.
