töklámpás csoki // jack-o-lantern chocolate

Mindenféle Facebookon és egyéb helyeken terjengő információkkal szemben a Halloween valójában a katolikus egyház egyik kísérlete arra, hogy hagyományai közé olvassza és megszelídítse a kelta Samhain ünnepét. Egy igen régi hagyományról van tehát szó, amely az év világos/napos és sötét felét választja el. Samhain átmeneti idő a kettő közt, és mint ilyen, sokféle szertartás kapcsolódott hozzá: ilyenkor hozták le az állatokat a téli legelőkről, örömtüzeket gyújtottak, alakoskodtak, és úgy hitték, hogy ekkor vékonyabb a világok közti válaszfal, ezért áldozati ételt helyeztek a küszöbre az arra kószáló démonoknak, tündéreknek és más lényeknek, és az asztalnál is üresen hagytak egy helyet a már eltávozott, de ilyenkor visszalátogató rokonok szellemeinek.
Már ennyiből is kitűnik, hogy sok áthallás van Samhain és a mai Halloween között. A gyertyagyújtás, a töklámpás arca mind a démonok elűzésére szolgáló modern, szelídített mágia. Ilyenkor megyünk a temetőbe, és az átmenetet jelképezi bizonyos országokban a nyári időszámításról a télire való átállás is.
Na és hogy ne maradjunk igazi mágia nélkül, arról a csoki is gondoskodik :)) a töklámpásokat vettem alapul külsőleg és belsőleg is, egy kis alkohollal az ünnep jegyében (ötletgazda 2: Minako) :D

Hozzávalók:
30 gr sütőtök
30 gr aszalt sárgabarack
8 cl brandy
két csipet gyömbér
50 gr tejcsoki
170 gr fehércsoki
a díszítéshez: 3 evőkanál kakaóvaj, vörös és arany lüszterpor, 10 gr étcsoki

Elkészítés:
Temperálom az étcsokit, majd vékony ecsettel töklámpás arcokat festek a bonbonforma félgömb alakú mélyedéseibe. Ha a csoki elkezd szilárdulni, a vízgőz felett újból fel lehet melegíteni kicsit. Az egyenetlenségeket egy fogpiszkálóval lehet kijavítani, és ne feledjük, hogy ha feliratot készítünk, azt tükörírással tegyük (én persze elfelejtettem, minő meglepő :D)


Ha az arcok megszilárdultak, 2-3 evőkanálnyi kakaóvajat megolvasztok, és arany, meg vörös lüszterpor segítségével narancsszínt keverek ki. Ezzel kétszer átfestem a mélyedéseket, hogy elég intenzív színt kapjanak a töklámpások.


Ezután elkészítem a tölteléket: az aszalt sárgabarackot felszeletelve egy órára brandybe áztatom, majd a sütőtökkel és ízlés szerint még egy kis brandyvel összeturmixolom. Megmelegítem, és adok hozzá 50 gr tejcsokit, meg pár csipet gyömbért, ami élénkebbé teszi az ízhatást.
Most jöhet a bonbon héja: temperálom a fehércsokit (azon fog szépen kijönni a lüszterporos réteg színe), beleöntöm a formába, majd kirázom. Amikor megszilárdult, megtöltöm a bonbonokat. Nem zárom le őket, hanem miután elkészültek, és kiszedtem őket a formából, melegítek egy kis fehércsokit. Kisméretű ecsettel felviszem a csokit azoknak a félgömböknek a peremére, amelyekre arcot festettem, és összeragasztom őket az arc nélküli félgömbökkel. Kész is vannak a finom csoki-töklámpások!

As opposed to information spreading on Facebook and other forums Halloween is in reality an attempt of the Catholic church to incorporate and tame Samhain, the Celtic feast, into its own traditions. So we're speaking of a quite old tradition, which divides the year into a sunny/bright and a dark half. Samhain is a liminal time between the two and as such, many rituals were connected to it: this was the time when cattle were brought back from the summer pastures, bonfires were lit, people guised themselves and they believed that the border between the two worlds was thinner, therefore they placed offerings on the doorsteps for demons, fairies and other creatures wandering around, and at the table they left an empty place for the ghosts of those dead relatives who visited them.
Even from these examples it is clear that Samhain and today's Halloween have much in common. Burning candles and the face of the jack-o-lantern are modern, tamed magic for scaring away the demons. We are going to the cemetery at this time, and the transition is also symbolised by changing back from daylight saving time in certain countries.
And chocolate also takes care that we don't stay without real magic :)) I was inspired by jack-o-lanterns - both in the case of the outside and the inside of these sweets; with some additional alcohol in the name of the feast (idea also by Minako)

Ingredients:
30 gr pumpkin
30 gr dry apricots
8 cl brandy
2 pinches of ginger
50 gr milk chocolate
170 gr white chocolate
decoration: 3 spoons of cocoa butter, red and gold luster dust, 10 gr dark chocolate

Recipe:
I temper the dark chocolate, then I paint jack-o-lantern faces with a thin brush into the hemisphere shaped cavities of the mould. When the chocolate starts to get solid, it can be warmed up a bit in a bain-marie. Mistakes can be corrected with a toothpick, and let's not forget to write inscriptions backwards (Of course I forgot it, what a surprise :D).
After the faces solidified, I melt 2-3 spoons of cocoa butter and I add gold and red luster dust in order to achieve an orange colour. I paint the cavities twice for an intensive colour.


After this I prepare the filling: I slice up the apricot and I soak the pieces in brandy for an hour, then I blend them with the pumpkin and with some more brandy (according to taste). I warm up the mixture and I add 50 gr milk chocolate and some pinches of ginger, which will intensify the flavour.
Then I make the bonbon shells: I temper the white chocolate (the layer of luster dust will look nicer with this kind of chocolate), I pour it into the cavities of the mould, then I shake out the excess. When the chocolate gets solid I fill the bonbons. I do not seal them, but when they are done and I take them out of the mould, I warm up some white chocolate. I paint chocolate on the brim of the hemispheres with faces and I stick them together with the other halves. The chocolate jack-o-lanterns are ready!

kókuszos-mandarinos ropogós // crunchy with coconut and mandarin

Ebben a borongós őszben az embernek igazán kedve támad harapni valami finom, lédús déligyümölcsöt, nem igaz? Egy kis "karibi hangulat" jegyében született meg ez az édesség, na meg a múltkor leírt mandarinmézes bonbonról eszembe jutott az is, hogy már rég használtam a mézet. Ideje volt ismét elővenni :) A végeredmény egy csokicsészébe töltött, roppanós kókuszos réteggel lezárt lágy ganache lett. Az ízélmény akkor bontakozik ki, amikor az ember ráharap az édességre, amiből kiömlik a finom mandarinos krém.


Kíváncsi vagyok, hogy az olvasók közül van-e olyan, aki maga is vezet receptes blogot - ha igen, írd meg kommentben, és kiteszem a linket a blogrollba :) olyan jó a mások által készített guszta kajaleírásokat nézegetni - és aztán nem megcsinálni őket :D vagy esetleg ihletet, ötletet kapni egy-egy ízkombinációról, és mégis kipróbálni!



Hozzávalók:
1 kiskanál kókuszolaj
50 gr tejcsoki
4 kiskanál kókuszreszelék
0,3 dl tejszín
3 kiskanál mandarinméz
1 kiskanál vaj
50+150 gr étcsoki
arany lüszterpor, dekorcukorka

Elkészítés:
A mandarinos ganache-t a múltkorihoz hasonlóan készítem: a felmelegített tejszínhez hozzákeverem a vajat, a mandarinmézet (ízlés szerint) és 50 gr étcsokit. Alaposan elkeverem, majd a ganache-t a hűtőbe teszem.
Elkészítem a kókuszos krémet: egy kanál kókuszolajat felmelegítek, beletördelem a tejcsokit, elkeverem és végül hozzáadok néhány kiskanál kókuszreszeléket. A csoki vissza fog dermedni, így előfordulhat, hogy töltés előtt még egyszer fel kell melegíteni kicsit.
Elkészítem a bonbonkapszlikat. Hűtés után 2/3-ig megtöltöm őket a mandarinos ganache-sal, majd egy kis adag kókuszos csokit teszek a tetejükre. Végül dekorcukorkával díszítem őket, és a kapszlikat megfestem egy kis aranyporral.

In this gloomy autumn one is really in the mood of biting into some tasty, juicy tropical fruit. These sweets were born in the name of some "Caribbean mood", and also because from the latest post about the mandarin honey bonbons it came to my mind that I haven't used that honey in a while. It was time to utilise it again :) The result is a soft ganache filled in chocolate cups and sealed with crispy coconut layer. The taste unfolds when one bites into it and the tasty mandarin cream spills out.


I'm curious whether among the readers there's anyone who also writes a gastroblog - if yes, write down the link in a comment and I'll put it out in the blogroll :) it's so nice to look at the appetizing food descriptions made by others - and then not to do them :D or to get inspiration from certain flavour combinations and try them!

Ingredients:
1 small spoon of coconut oil
50 gr milk chocolate
4 small spoons of grated coconut 
0,3 dl cream
3 small spoons of mandarin honey
1 small spoon of butter
50+150 gr dark chocolate
gold luster dust, deco candies

Recipe:
I prepare the mandarin ganache like last time: I mix the warm cream with butter, mandarin honey (according to own taste) and 50 gr dark chocolate. I stir them then I put the ganache in the fridge.
I make the coconut cream: I warm up one spoonful of coconut oil, I add the milk chocolate, I stir them and finally I add some spoons of grated coconut. Probably it will have to be warmed up a bit again before filling because the chocolate will get solid in the meanwhile.
I prepare the bonbon caps. After cooling I fill them 2/3 full with the mandarin ganache, then I put some coconut cream on their tops. Finally I decorate them with candies and I paint the cups with some golden dust.

Mandarinmézes // mandarin honey

Ha az ember azt mondja: Olaszország, vagy Franciaország, valami érthetetlen, évszázadok óta beidegződött reakció miatt mindenkinek az az elvágyódó, ábrándozó-romantikus tekintet jelenik meg az arcán, mintha ez a két ország lenne a világ non plus ultrája. Igazából sosem voltam odáig az olyan dolgokért, amiket tömegek bálványoznak (na jó, a Queent leszámítva :P), és bár most is azt gondolom, hogy minden országnak megvan a maga bája, azért Olaszország tényleg elég szép, és tényleg elég jó ott a kaja :D Lévén kedves férjem olasz, van szerencsém évente jópár napot eltölteni ott, és sosem jövök haza üres kézzel. Mostanában pedig már a csokizáshoz is keresgélek ötleteket. Ezen felbuzdulva tavaly a városi kézműves fesztiválon vettem egy kis üvegcse mandarinmézet. A kóstoláskor elsőre beleszerettem intenzív mandarinízébe, de utólag persze kiderült, hogy "csak" mandarinlével készült. Azért nem voltam rest felhasználni. Alább olvasható egy igen egyszerű recept - majd lesz talán még eggyel fifikásabb is :) Ennél csak arra törekedtem, hogy az édes mézízt kiegyensúlyozzam az étcsokival.

Hozzávalók:
100 gr étcsoki
4 kiskanál mandarinméz
0,5 dl tejszín
1 kiskanál vaj
150+5 gr fehércsoki
1 csipet kurkuma

Elkészítés:
Megmelegítem a tejszínt, hozzákeverem az étcsokit, a vajat és a mézet - kóstolás és egyéni ízlés alapján. Fehércsokiból elkészítem a bonbonok héját, és száradás után beletöltöm a ganache-t. Lezárom a bonbonokat. Miután kifordítottam őket a formából, temperálok egy kis adag fehércsokit, amit elkeverek egy csipet kurkumával (csak óvatosan, mert elég intenzív az íze). A sárga csokival díszítem a bonbont.




If one says Italy or France, due to some incomprehensible reaction conditioned centuries ago, that yearning, daydreaming-romantic expression appears on everyone's face as if these two countries were the non plus ultra of the world. Actually I've never been a fan of things that masses idolise (ok, except for Queen :P) and even though I still think that every country has its charm, I have to admit that Italy is quite beautiful and food is quite good there :D Having an Italian husband I have the opportunity to spend some days there every year and I never come back home empty-handed. Recently I even started to look for chocolate ideas. Becoming enthusiastic over that I bought a small jar of mandarin honey last year at the town's artisan festival. While tasting, I immediately fell in love with its intensive mandarin flavour but later it turned out that it was only made with mandarin juice. This didn't keep me from utilising it. Here you can read a simple recipe - probably there'll be another, bit more sophisticated one later :) In this case my aim was simply to counterbalance the sweet taste of the honey with the dark chocolate.

Ingredients:
100 gr dark chocolate
4 small spoons of mandarin honey
0,5 dl cream
1 small spoon of butter
150+5 gr white chocolate
1 pinch of turmeric

Recipe:
I warm up the cream an mix it with the dark chocolate, the butter and the honey - according to personal taste. I prepare the bonbon shells of white chocolate and after they get solid, I fill them with the ganache. I seal the bonbons. After they can be taken out of the mould, I temper a bit of white chocolate which I mix with a pinch of turmeric (carefully because it has a very characteristic flavour). I decorate the bonbons with the yellow chocolate.

Glenn

Asszem nincs olyan, a rendelkezésemre álló módszer, amivel még ne tisztelegtem volna Glenn Hughes előtt. Nincsenek illúzióim afelől, hogy az olvasók nagyjából hány százaléka ismeri e nevet, de ha azt írom, hogy Deep Purple, az már bizonyára többeknek ismerős. Glenn évtizedek óta tartó pályafutása során több nagynevű zenekarban megfordult, mostanában pedig szólóban tevékenykedik. A zenei berkekben a Rock Hangjaként ismert énekes-basszeros személyes kedvencem több okból kifolyólag, amiket más fórumokon már többször is leírtam. Itt legyen elég annyi róla, hogy a legközvetlenebb, legkedvesebb ember a rockzenészek közt, aki mindig ügyel arra, hogy személyesen is tartsa a kapcsolatot rajongóival.

Az első dal a legújabb albumáról

Valahányszor hazajövök Glenn egy koncertjéről, mindig késztetést érzek, hogy valahogyan kifejezzem iránta érzett elismerésem; ennek egyik eredménye lett az egyik basszusgitárja, fehércsokiból. A folyamatot egy kissé túlbonyolítottam, de nem baj, ebből is tanulunk, legközelebb már egyszerűbben csinálom majd. A gitár alapját sütőpapíron mintáztam meg, kék elemeit lüszterporral festettem, a többi részletet pedig dekorcukorkákkal oldottam meg :)




Deep Purple: Burn

I don't think there's any mode at my disposal that I haven't used to pay tribute to Glenn Hughes. I don't have illusions about how many of my readers know this name, but probably Deep Purple sounds more familiar. Glenn has been a member of many famous bands during his long career, and nowadays he's pursuing a solo career. The singer- bass guitarist, known as the Voice of Rock, is my personal favourite for several reasons that I have written down on other forums. Here it would suffice to write that he's the most genial, the nicest man among rockstars, who always takes care of keeping in touch with his fans personally.

BCC: Song of Yesterday


Whenever I come home from one of Glenn's concerts, I feel the urge to express my honour to him; a result of this was one of his bass guitars made of white chocolate. I overcomplicated the process a bit, but it doesn't matter, I learnt from that and next time I will do it in a simpler way. I prepared the basis of the guitar on parchment paper, and I painted the blue parts with luster dust. The other details were made of deco candies :)

Hold bonbon // Moon bonbons

Számomra a teremtett világ legszebbje a Hold. Bele kell szeretni, ahogy minden éjjel ott fénylik az égen, titokzatos, szinte megérinthetném, mégis elérhetetlenül távol van. Folyton változik, mégis állandó, egymaga megtestesíti az egész, ellentmondásos emberéletet. Az összes hozzá kapcsolódó mítosz és istenség (Szeléné, Hekaté, Artemisz, Diána, Luna, Máni, Arianrhod, a holdbéli ember, a Holdban életelixírt készítő nyúl, stb. stb.) mind a lélek legmélyebb érzéseire rezonál; a Hold ciklusa a születés-halál-feltámadás hármasságát jelképezi. Bár a legtöbb mitológiában férfi istenség, a mai ember mégis a nőiséggel, az éjszakával, sötéttel, vízzel kapcsolja össze: a növekvő Holdat a fiatal, vad leánnyal, a teliholdat az érett, termékeny asszonnyal, míg az újholdat az öregasszonnyal, aki ért a mágiához, a boszorkánysághoz. Ezen archetípusok felölelik az életet, az élet misztériumát, amikor a Holdra nézünk saját tükörképünket látjuk. Talán nem véletlen az sem, hogy oly sokak életére van hatással.
Amint kipróbáltam a félgömb alakú bonbonformát, tudtam, hogy ebben fogom elkészíteni a Hold-bonbont. Az ötlet másrészt Cucutól származik, aki kitalálta a bolygó-csokit, de aztán kiderült, hogy előtte már más is kitalálta ugyanezt :D Az eredeti terv természetesen már jóval korábban megfogalmazódott a fejemben: amikor a szeptemberi teliholdat bámultam, arra gondoltam, hogy ha a szépségét csokiba kéne öntenem, biztosan a kedvenc virágomat, a jázmint választanám hozzá nőies, csodás illata miatt. Ehhez pedig természetesen fehércsokit társítanék, hogy az íz könnyed maradjon.
Számtalan mesét írtam már a Holdról, ezek közül választottam most egyet, amelyet egy közismert és közkedvelt - szintén a Holdról szóló - dal ihletett. 


Hozzávalók:
80+200 gr fehércsoki
1 dl tejszín
3 kiskanál szárított jázminvirág
egy kiskanál vaj
világoskék lüszterpor

Elkészítés:
0,5 dl tejszínt felforralok három kiskanál szárított jázminnal, majd egy egész napra félreteszem, hogy felvegye a virág illatát.
Másnap elkészítem a jázminos mousse-t: leszűröm a tejszínt, ismét megmelegítem és elkeverem egy kiskanál vajjal, és 80 gr fehércsokival. Nem baj, ha kissé kesernyés a ganache, mert a tejszínnel, és a fehércsoki burokkal együtt épp jó lesz az íze. Felverek 0,5 dl tejszínt, és összeforgatom a krémmel. Félreteszem hűlni.
Felolvasztok egy púpozott kiskanál kakaóvajat, és elkeverem benne a lüszterport. A Hold mintájának megfestéséhez igen "trükkösen" tükröztem egy Hold-fotót. A kakaóvaj nagyjából úgy viselkedik, mint a viasz, és épp középmelegen az igazi a festéshez - ha túl meleg, lefolyik, ha túl hideg, akkor pedig már összeragad.
Elkészítem a bonbonok héját, és száradás után beléjük töltöm a mousse-t. Végül egy részüket lezárom - ezek lesznek a félholdak. A többit kiszedem a formából, és a félgömböket összeragasztom. Erre két módszer is van: egy enyhén megmelegített edény aljához érintjük a félgömb karimáját - ettől a csoki megolvad, és a másik felét hozzá lehet illeszteni. Én a másik módszert alkalmaztam: egy vékony ecsettel vittem fel olvadt csokit a félgömb peremére, ezután ragasztottam hozzá a másik félgömböt. És voilá, már a kezünkbe is foghatjuk a Holdat! :)



A Hold fia
Egyszer volt, hol nem volt, élt egyszer egy szegény gitano lány, Clarita nevezetű, egy apró kasztíliai faluban, Chinchónban. Családja, a többi gitano családhoz hasonlóan szerény kis házikóban élt Chinchón szélén. Clarita apja kovács volt, de ünnepnapokon a falu főterén játszott hegedűjén, Clarita pedig táncolt.
Sok gitano férfi szeretett bele a lány táncába, sokan akarták őt magukénak, ám Clarita rendre kikosarazta kérőit. Mikor szülei kezüket tördelve faggatták, miért, minden egyes alkalommal csak annyit mondott, “mert nem volt elég tűz a szemében.”
Tizenhatodik nyarán a nyárközepi ünnepség idején vándorló gitano közösség érkezett Chinchónba. A falu határán túl telepedtek le, de mutatványosok és zenészek lévén a karneválra mind a főtérre mentek mulatni.
Ropogott a tűz, patakokban folyt a bor; a vigasság zaja mérföldekre űzte a démonokat és a szívekbe hívta a szerelem szellemeit. Clarita is ott táncolt a víg, italtól részegült emberek között. Tekintete ekkor akadt meg az egyik vándor gitano legényen. Megakadt, és többé el sem szakadt tőle. Abban a pillanatban szerelemre gyúlt iránta. Az ő olajzöld szemében olyan vad tűz lobogott, hogy Clarita tudta, sosem lesz az övé, de azt is tudta, hogy ha nem lehet az övé, akkor inkább meghal. Egyszer táncoltak, egyetlen egyszer, azután a férfi eltűnt a sokaságban. Akkor Clarita hazaszaladt és kitárta ablakát. A Hold felé fordította arcát, úgy kezdett fohászkodni. Könyörgött, zokogott, gránátalmát áldozott, egész éjjel kérlelte a Holdanyát, hogy adja neki Heliost. Mindent odaígért egyetlen éjszakáért.
Már hajnalodott, amikor Clarita könnyáztatta arcát párnájába rejtette és elaludt. Álmában egy csodaszép asszony látogatta meg, akinek homlokán a Hold fénye ragyogott. “Mit áldoznál fel a szerelmedért?” kérdezte.
“Bármit, amit kérsz.” felelte Clarita.
“Az elsőszülött fiadat kérem.”
“Odaadom, csak Helios legyen az enyém.”
Az asszony és az álom is szertefoszlott, ahogy a kakaskukorékolással új nap virradt. Kopogtattak a házikó kapuján. Clarita apja nyitott ajtót. Odakint egy magas, sötétzöld szemű gitano férfi állt. “Azért jöttem, hogy feleségül vegyem Claritát.” mondta.
Három napra rá megülték a lakodalmat. Három nap, három éjszaka tartott a mulatozás, végül Claritát befogadta a vándorló gitano közösség, és ő újdonsült férjével tartott, amikor hátrahagyták Chinchónt.
Házaséletük első éjszakáján Clarita Heliosnak adta virágát, megfogant és első magzatukkal a szíve alatt vándorolt nyolc hónapig. A kilencedik hónapban azután visszatért Chinchónba, hogy szülei házánál hozhassa világra gyermekét.
A szülőágynál csak a bába és Clarita anyja lehetett jelen, a férfiak kint várakoztak. Hosszú ideig tartott a vajúdás, egészen besötétedett, mire a kisfiú megszületett. Se a bába, se Clarita anyja nem hitt a szemének, amikor meglátták. Claritának viszont rögvest eszébe jutott az álma, amint a gyermek fehér bőrére és ezüstszürke szemére nézett.
A kisbaba sírását hallván Clarita apja és Helios benyitottak a szobába. A bába takaróba csavarva szorította magához a gyermeket, így próbálta elrejteni a férfiak elől. Helios elől azonban nem bújtathatta el: ő lehúzta a takarót, és megpillantotta a fiát. Azonnal éktelen haragra gerjedt. “Házasságtörő!” ordította Clarita felé fordulva. Az ágyhoz lépett, előkapta tőrét és felesége szívébe mártotta. Kikapta a bába kezéből a gyermeket, és elrohant.
Felszaladt a falun túli dombra. Annak kopár tetején a földre helyezte a fehér bőrű gyermeket. “Vedd magadhoz, Éjszaka, nekem nem fiam ez a gyerek!” kiáltotta az ég felé, azzal magára hagyta a babát.
Miután eltávolodott, halovány holdsugár nyúlt le a földre. Gyengéden fölemelte magához a gyermeket, és bölcsőjébe fektette. Amikor a kisfiú sírt, azontúl a Hold mindig bölcsőként ringatta, de ha nevetett, vele nevetett szépséges arany korongként. Így lett anyává a Hold.
Vigyázzatok tehát, hogy mit áldoztok fel a boldogságért, és hogy mit kívántok az égi hatalmaktól!





For me the most beautiful of this whole big world is the Moon. You have to fall in love with her as she's shining in the sky every night, mysteriously, I feel like I could touch her but she's still unreachable. She's constantly changing, but she's still eternal, she embodies the whole, paradoxical human life. All the related myths and deities (Selene, Hekate, Artemis, Diana, Luna, Mani, Arianrhod, the man in the Moon, the rabbit preparing the elixir of life etc.) resonate to the deepest feelings of the soul; the cycle of the Moon symbolises the triplicity of birth-death-resurrection. Even though the Moon is a male deity in most mythologies, today we associate her with femininity, night, darkness and water: waxing Moon with a young, wild girl, full Moon with a mature and fertile woman, while new Moon with an old woman who knows magic and witchcraft. These archetypes embrace life, the mystery of life; when we look at the Moon, we see our own reflection. Probably it's not by chance that she has an impact on the lives of so many.
As soon as I tried the hemisphere mould, I knew that I'd make the Moon-bonbons in this one. The idea also comes from my best friend, who found out planet-chocolate, but then it turned out that someone else had already invented it before her :D Naturally I had found out the original plan much earlier: while I was staring at the full Moon of September, I thought that if I had to express its beauty through chocolate, I'd choose jasmine, my favourite flower because of its wonderful scent. And naturally I would add white chocolate to it so that the flavour would remain light.
I have written numerous fairytales about the Moon; I chose one of these, which was inspired by a well-known and popular song - also about the Moon (see embedded above).



Ingredients:
80+200 gr white chocolate
1 dl cream
3 small spoons of dry jasmine flowers
one small spoon of butter
blue luster dust

Recipe:
I boil 0,5 dl cream with three spoons of dry jasmine, then I put it away for a whole day so that it absorbs the scent of the flowers.
The next day I prepare the jasmine mousse: I sieve the cream and I warm it up. I mix it with a spoon of butter and 80 gr white chocolate. It doesn't matter if the ganache is a bit bitter: together with the whipped cream and the white chocolate shell it will be fine. I whip 0,5 dl cream and mix it with the ganache. I put it away in the fridge.
I melt a small spoon of cocoa butter and I add a bit of luster dust to it. For painting the pattern of the Moon I used a simple trick: I mirrored a photo of the Moon. Cocoa butter functions almost like wax and it's best for painting when it's warm - if it's too hot, it flows too easily, if it's too cold, it sticks.
I prepare the bonbon shells and after they solidify, I fill them with the mousse. Finally I seal some of them - these are going to be the half Moons. I take the rest out of the mould and I attach together the hemispheres. There are two methods for this: the brim of the hemisphere is put on the warm surface of a dish, which melts the chocolate and the other half can be attached to it. I used the other method: I put molten chocolate on the brim of the hemisphere with a brush and I attached the other half afterwards. And voilá, we can grab the Moon! :)




The son of the Moon
Once upon a time there was a poor gitano girl called Clarita, who lived in Chinchón, a tiny village in Castile. Her family, like the other gitano families, lived in a modest little cottage on the border of the village. Clarita's father was a blacksmith, but on feast days he played his violin on the main square of the village while Clarita was dancing.
Many gitano men fell in love with her dance, many wanted her but Clarita rejected her suitors, one after the other. When her parents, wringing their hands, inquired why, she only said, "because there wasn't enough fire in his eyes."
On her sixteenth summer, at the time of the midsummer feast, a wandering gitano community arrived in Chinchón. They settled beyond the village border, but being conjurors and musicians, they went to carouse at the carnival.
The fire was crackling, wine was flowing like a river; the noise of the feast expelled the demons miles away and invited the spirits of love in the hearts. Clarita was dancing among the jolly, intoxicated people. Then she caught sight of one of the wandering gitano lads. She caught sight of him and she couldn't take her eyes off of him. She fell in love with him instantly. In his oil green eyes such wild fire was blazing that Clarita knew that he would never be hers, but she also knew that if he couldn't be hers, then she would rather die. They danced once, only once, then the man disappeared in the crowd. Clarita ran home and opened her window. She turned her face toward the Moon and she started pleading. She was begging, sobbing, she sacrificed a pomegranate, she beseeched Mother Moon all night long to give her Helios. She promised everything for one night.
Dawn came when Clarita hid her tearful face in her pillow and fell asleep. In her dreams a beautiful woman visited her, on whose forehead the Moon's light was sparkling.
"What would you sacrifice for your love?" she asked.
"Whatever you wish," answered Clarita.
"I want your first born son."
"I will give him to you, if I'll have Helios."
The woman and the dream dissolved at the break of the new day. Someone knocked on the door of the cottage. Clarita's father opened the door. A tall, green-eyed gitano man stood outside. "I came to marry Clarita," he said.
Three days later they celebrated the wedding. The feast lasted for three days and three nights, finally the wandering gitano community took Clarita in and she accompanied her new husband when they left Chinchón.
On the first night of their wedded life Clarita gave her flower to Helios, she conceived and she was wandering for eight months with their first child under her heart. She returned to Chinchón in the ninth month in order to give birth to the child in her parents' house.
Only the midwife and Clarita's mother were allowed to be present at the birth bed, the men were waiting outside. The labour lasted for a long while, it grew dark when finally the little boy was born. Neither the midwife, nor Clarita's mother believed their eyes when they saw him. But Clarita remembered her dream as soon as she glimpsed the child's white skin and silver eyes.
Hearing the baby's cry, Clarita's father and Helios entered the room. The midwife clutched the child covered in a blanket, in order to hide him from the men. But she couldn't hide him from Helios: he pulled off the blanket and saw his son. He got furious. "Adulterer!" he shouted, turning to Clarita. He stepped to the bed, pulled out his dagger and stabbed in her heart. He snatched the child from the midwife's hand and ran away.
He ran on the hill beyond the village. On its barren top he placed the white child on the ground. "Take him, Night! This child is not my son!" he shouted to the sky, then he left the baby alone.
After he left, a faint moonbeam reached to the ground. She gently lifted the child and placed him in her cradle. When the little boy cried, the Moon cradled him but when he laughed, the Moon laughed with him as a beautiful golden coin. This is how the Moon became a mother.
So be aware what you sacrifice for happiness and what you wish for!

Variációk eperre // Variations on a theme: strawberry

A történész szakma szépségeihez tartozik, hogy az egyszeri kutató a legváratlanabb pillanatokban lel az alább olvasható kincsekre. A történet a századfordulós Párizsban játszódik, főhősünk a trixter tipikus esete :D A trixter a mitológiák egyik archetípusa, aki játékos, pajkos, szeret borsot törni mások orra alá és kijátszani a szabályokat; ugyanakkor eszes, így a csínytevésekért járó megtorlást el tudja kerülni, és ha szükséges, ravasz tanácsaival kisegíti társait is a bajból. A legnevesebb mitológiai trixter talán Loki, a germán tűzisten - de azt hiszem mindannyian ismerünk hasonló karakterű embereket is :))
A több mint százéves újságban talált pikáns cikk kétféle bonbont ihletett: az eredeti ötlet az eper és a bor házasítása volt (hisz ki mondta, hogy csak az eper-pezsgő páros lehet jó?). De mivel nem tudtam eldönteni, hogy vörös vagy fehér bor legyen-e, végül mindkettővel kipróbáltam - elvégre az érmének is két oldala van ;) A fehérboros bonbonhoz a Balatonboglári Irsai Olivérjét választottam, egy friss, citrusos, könnyed édes bort, ami mousse-ba keverve a trixter játékos, szellemes oldalát képviseli. Ezzel szemben a Szekszárdi Meridián Barrique testes, száraz, érzéki bora az étcsokis ganache-ban a trixter ármányos személyiségjegyeit testesíti meg. A díszítés terén szintén kétféle ötletem volt, de nem tudtam dönteni, hogy melyik bonbont hogyan dekoráljam, így mindkét fajtánál elkészítettem mindkét díszítést. Így lett igazi bábeli zűrzavar a végeredmény! :D


Hozzávalók:
-Sötét oldal:
100+150 gr étcsoki
30 gr eperpüré
1 kiskanál vaj
0,4 dl vörösbor
kakaóbabtöret

-Világos oldal:
120+150 gr fehércsoki
30 gr eperpüré
0,7 dl fehérbor
7-8 szem pillecukor
2 kiskanál  vaj
1,5 dl tejszín
liofilizált eperdarabok

-Díszítés:
2x1 kiskanál kakaóvaj
30 gr fehércsoki
piros lüszterpor

-Sötét oldal:
Felmelegítem az eperpürét, hozzákeverem a vajat és 100 gr étcsokit, majd beleöntöm a bort. Végül hozzáadom az apró darabokra tört kakaóbabokat, amik majd ellenpontozzák a ganache krémességét, és hangsúlyozzák a kissé kesernyés, sötét ízvilágot. 
Vízgőz felett megolvasztok egy kis kakaóvajat, majd hozzákeverek egy adag piros lüszterport. A bonbonforma mélyedéseinek egy részét a piros kakaóvajjal kifestem, vagy az ujjammal "márványozom". Temperálok 150 gr étcsokit, és miután a minta megszáradt, beletöltöm a formába. A megszilárdult héjakba belenyomom a tölteléket, majd hűtőben hagyom állni egy kicsit. Végül lezárom a bonbonokat.

- Világos oldal:
Az eperpürét, a vajat, 120 gr fehércsokit és a pillecukrokat fölteszem főni. Míg melegszenek, egyneművé keverem őket, és miután a massza kihűlt, hozzáadom a fehérbort és a liofilizált eperdarabokat, amelyek mind az íz, mind a textúra szempontjából feldobják majd a mousse-t. Felverem a tejszínt, majd a krémbe forgatom, és hűtőbe teszem egy estére. 
A bonbonforma mélyedéseinek felét hasonlóképp díszítem, mint az étcsokis bonbonok esetében. Temperálok 150 gr fehércsokit, elkészítem a burkokat, és megtöltöm őket mousse-szal. Ismét a hűtőbe teszem őket, hogy a hab visszanyerje a tartását. Lezárom a bonbonokat.
Miután mindkét adagot kifordítottam a formából, a minta nélküli bonbonokat kis távolságra helyezem egymástól. Melegítek 30 gr fehércsokit, és adok hozzá némi lüszterport, hogy szép rózsaszín legyen. Temperálás után habnyomóból csíkokat húzok a bonbonokra.

A két töltelékkel igazán franciás hangulatú desszert lesz ez egy finom vacsora után - aki pedig nem akar a bonbonkészítéssel bajlódni, az magában is elkészítheti a mousse-t!


A telefon koboldja
“Mulatságos bírósági tárgyalás folyt a napokban Párisban, melynek egy pajkos, vöröses  szőke, nagyon pikáns bakfis, Rodier Clemence volt a főszereplője. A kisasszony mint a párizsi telefonközpont egyik hivatalnoknője mindenféle bolond csínyt követett el, melynek fölsorolása a tárgyaláson nemcsak a közönséget, hanem a bírákat is többször nagy derültségre hangolta. A bírónak ama kérdésére, hogy mint egy jómódú család leánya, miért választotta a telefonkisasszonyok nem épen csábító foglalkozását, a szép Clemence azt felelte, hogy egy ismerősétől hallotta, micsoda érdekes titkokat lehet megtudni sokszor a telefonközpontban és ez nagyon csábította. A biró ezután fölolvasta a följelentéseket. A főpanaszos így szól: “Augusztus 5-én egy nőismerősömmel akartam beszélni és a telefonszámát kértem. – Halló, ki az? – Én vagyok, Irma. Ott ki beszél? – Pierre. – Eljössz ma este? – Még nem volt időm felelni, mikor mindakettőnk halálos ijedtségére egy idegen, tompa hang közbeszólt: – Ide hallgasson, asszonyom.- És nem várva választ, folytatta – Ön egy megromlott, bűnös nő, férje meg fog tudni mindent. – De hát ki ön az isten szerelmére? – A lelkiismeret- szólt a válasz még tompább és egészen síri hangon. A telefonban valami sajátságos zörgés hallatszott és aztán végkép elnémult. Barátnőm beteg lett az ijedtségtől, én pedig a rendőrségre mentem.
Egy másik vádló, egy Mureau nevű vén reszketős úr, aki maga jelent meg a tárgyaláson, következőket beszélte: “Egy este irtózatos boszuság ért. Unokaöcsém, aki egyike a legkönnyelműbb fickóknak egész Párisban, azt telefonozta nekem, hogy küldjek neki 600 frankot azonnal, kártyaadóssága kifizetésére, mert különben főbelövi magát. Nem küldtem neki egy sout se, mert unokaöcsém már vagy negyvenszer fenyegetett így és ma sincs semmi baja. Este 11 órakor feküdtem le, de pontban éjfélkor a telefon éktelenül elkezd lármázni. Nem tetszett a dolog. Rögtön  az unokaöcsém, az az átkozott fickó jutott eszembe, hátha tényleg agyonlőtte magát és most a szerencsétlenség hírét jelentik. Odamentem a telefonhoz. – Halló- hangzik felém a kagylóból egy hang, mely mintha csak a sírból jött volna. – Halló, ki beszél? – kérdem és végigborsódzott a hátam a válaszra:- A halál. – Nem vagyok babonás, de éjfél volt épen… a “halál” pedig tovább beszél:- Tudd meg vén uzsorás, hogy unokaöcsédet, ha a kellő támogatásban nem részesíted, még ebben a hónapban elviszem- Aztán iszonyú nyikorgás hallatszott a telefonban, mintha száz halottaskocsi egymás után haladna a kövezeten. Kilelt a hideg és másnap reggel elküldtem unokaöcsémnek a 600 frankot.

Aztán a tanúk egész sora következett, akiknek a vallomásaiból kitűnt, hogy a telefonközpont egy darabig úgy viselte magát, mintha megbolondult volna. Ha az árfolyamot kérdezte valaki, a legújabb léghajóról beszéltek neki; aki a színházat kérte, azt temetkezési intézettel kötötték össze és mindenkivel bolondot űztek a telefonkisasszonyok, kik a kis szőke ördöggel mind egy húron pendültek. Ez pedig egész fizetését arra használta, hogy kollégáit frissítőkkel tartsa, úgy, hogy a hivatal néha egy csemegeüzlethez hasonlított. A kis telefon-kobold különben elég jól járt, mert a főpanaszos visszavonta a panaszt, főképen azért, mert időközben a kisasszony vőlegénye lett. A többiek is megbocsátottak és így a leíró is csak egy kis barátságos dorgatóriumra szorítkozott.”



The beauties of being a historian is that the researcher finds treasures such as the one you can read below in the most unexpected moments. The story takes place in fin-de-siecle Paris, our protagonist is a typical trickster :D Tricksters are one of the archetypes of mythology; they are playful, mischievous, they like to pull pranks on others and break the rules; however, they are witty, therefore they can avoid the punishment for their pranks, and if necessary, they help their peers with their canny advices. The most famous mythological trickster is probably Loki, the Germanic god of fire - but I presume all of us know people with the same character :))
The piquant article found in a more than a hundred years old newspaper inspired two bonbons: the original idea was matching strawberry and wine (who said that strawberry can be good only with champagne?). But since I couldn't decide whether it should be red or white wine, in the end I tried it with both of them - after all every coin has two sides ;) For the bonbons with white wine I chose Irsai Olivér from Balatonboglár winery, which is a fresh, light sweet wine with citrus aroma. Mixed in mousse it represents the playful, witty side of the trickster. On the other hand the full-bodied, dry, sensual Meridián Barrique from Szekszárd in the dark chocolate ganache embodies the cunning characteristics of the trickster. I had two ideas also for the decoration, but I couldn't decide which one to apply to which bonbons, so I decorated both types of bonbons with both of them. That's how I got a Babel-like chaos :D


Ingredients:
-Dark side:
100+150 gr dark chocolate
30 gr strawberry puree
1 small spoon of butter
0,4 dl red wine
cocoa nibs

-Bright side:
120+150 gr white chocolate
30 gr strawberry puree
0,7 dl white wine
7-8 marshmallows
2 small spoons of butter
1,5 dl cream
lyophilised strawberry

-Decoration:
2x1 small spoon of cocoa butter
30 gr white chocolate
red luster dust

-Dark side:
I warm up the strawberry puree, I mix it with butter and 100 gr dark chocolate, then I pour in the wine. Finally I add the cocoa nibs, which will counterbalance the creaminess of the ganache and emphasise the bitterish, dark flavour.
Above hot water I melt some cocoa butter and I mix it with a bit of red luster dust. I paint some of the cavities of the chocolate mould or I "marble" them with my finger. I temper 150 gr dark chocolate and after the pattern dried, I pour it in the mould. I fill the solidified shells with the filling, then I let them stand in the fridge a bit. Finally I seal the bonbons.

- Bright side:
I warm the strawberry puree, the butter, 120 gr white chocolate and the marshmallows. I stir them until they become creamy and when the mass gets colder I add the white wine and lyophilised strawberry pieces which will freshen both the texture and the flavour of the mousse. I whip the cream then I mix it with the cream and I leave it in the fridge for a night.
I decorate half of the cavities of the mould like in the case of the dark chocolate bonbons. I temper 150 gr white chocolate, I prepare the shells then I fill them with mousse. I put them back in the fridge until the foam gets hard again. I seal the bonbons.
After I took both portions of bonbons from the mould, I put the ones without decoration close to each other. I warm up 30 gr white chocolate, I add some luster dust so that it becomes pink. After tempering, I line the bonbons with the chocolate.

These bonbons with the two different fillings will become a real French dessert after a tasty dinner - and those, who do not want to waste time with making bonbons, can prepare the mousse in itself!


The spirit of the telephone
“A funny trial took place in Paris in these days, whose protagonist was a playful, red haired, naughty filly, Clemence Rodier. The young lady, as the operator of the telephone exchange, pulled crazy pranks whose enumeration at the trial caused exhilaration not only among the audience but also among the judges. To the question of the judge that as the daughter of a wealthy family why had she chosen exactly the not very tempting job of the telephone operators, the beautiful Clemence answered that she had heard from a friend that such interesting secrets can be learnt at the telephone exchange and this had tempted her. Then the judge read out the charges. The main accuser said: "On 5 August I wanted to talk with my lady friend and I asked for her number. "Hello, who is that?" "It's me, Irma. Who is talking?" "Pierre." "Will you come tonight?" I didn't have time to reply because we were both frightened when an alien, flat voice interrupted: "Listen, madame." And not waiting for answer, continued: "You are an evil, sinful woman, your husband will get to know everything." "But who are you, for God's sake?" "Your self-conscience," said the voice in an even flatter and deadly tone. A peculiar noise was heard in the telephone then it went mute. My friend became sick with fear and I went to the police.
Another accuser, an old, shaky gentleman called Mureau, who showed up personally at the trial, said the following: "One night a nuisance happened. My nephew, who is one of the most frivolous guys in the whole Paris, phoned me and asked me to send him immediately  600 francs for his gambling debts otherwise he'd shoot himself in the head. I didn't send him even a sou because my nephew had threatened me like this at least forty times and he is still safe. One night I went to sleep at 11 but exactly at midnight the telephone started to ring wildly. I didn't like it. I immediately thought of my nephew, that goddamn guy, maybe he'd really shot himself and now they reported the news to me. I went to the telephone. "Hello," sounded a voice from the receiver, that seemed to come from the grave. "Hello, who is talking?" I asked, and I got the goosebumps to the answer: "Death." I am not superstitious, but it was exactly midnight... Death continued: "You'd better know, old usurer, that if you do not support your nephew, I will take him in this month." Then a terrible squeaking could be heard in the telephone as if a hundred funeral coaches proceeded on the pavement. I was horrified and the next morning I sent 600 francs to my nephew.
Then a whole line of accusers came, from whose testimonies it turned out that the telephone exchange behaved for a while as if it had gone mad. If someone asked for the exchange rate, they talked about the newest zeppelin to him; the one who asked for the theatre, was connected with the funeral service institute and the operators, who were birds of a feather with the little blond devil, pulled pranks on everyone. And she used all of her salary to buy refreshments to her colleagues so the office sometimes resembled a grocery store. The spirit of the telephone is doing well as the main accuser repealed the charge, mainly because in the meanwhile he had become the finace of the young lady. The others forgave her too so the judgement was limited to some friendly reprimand."
