mangós-kókuszos // mango-coconut

A minap valahol megpillantottam valahol azt a mondást, hogy "a szeretet mindent legyőz". Mekkora marhaság! Először is, a szeretet nem az a fajta, hogy nosza akkor kapjuk magunkat és öljük meg! Ha így lenne, nem szeretetnek hívnák, hanem ölésvágynak vagy könyörtelenségnek vagy törtetésnek. Másrészt meg még csak nem is igaz. A szeretet a legbonyolultabb érzelem, ami csak létrejöhet egy emberben, egy szivárványszín szövedék alázatból, elfogadásból, segíteni akarásból, odaadásból, empátiából, türelemből, barátságból, odafigyelésből, a másik iránti aggodalomból, és néha szomorúságból, egy rohadt vaspántból, amit valami kegyetlen isten az ember szíve köré kovácsol. Félreértés ne essék, nemcsak a szerelemről írok, hanem minden rendű-rangú rokoni és baráti kapcsolatról is. És néha a szeretet egyáltalán nem elég. Vagy csak létezik, de egyáltalán nem vonul hadba, hogy másokat legyőzködjön. Mert a népszerű életfelfogással ellentétben, miszerint az élet egy harc, a szeretet nem hirdeti a győztes hatalmát, és nem felülkerekedni akar. És néha még akkor is ott van, amikor már rég nem kéne, hogy létezzen, amikor maga a létezése irracionális: eltávozott emberek iránt, rég nem látott ismerősök iránt, akikkel évek óta nincs kapcsolat, mégis nosztalgiával gondolunk rájuk... De hát az érzelmek ilyenek - ha bármi közük lenne az észhez, akkor már nem érzelemnek hívnák őket :D
És azt hiszem, minden ételek közül a csoki a szeretet legközelebbi rokona, de ez is egy megmagyarázhatatlan kapocs, vagy inkább csak egy érzés :D A valaki iránt érzett szeretetet mégiscsak egy adag csokival lehet leginkább kifejezni, nem igaz? :) Furcsa lenne, ha tökfőzelékkel, vagy egy jó véres steakkel ajándékoznánk meg azt, akit szeretünk XD
No az alábbi bonbonok az én szeretteimnek készültek a családi hepajra, és mondhatni nagy sikerük volt: pár perc alatt elfogyott mind a harminc darab :D


Hozzávalók:
70 gr mangó
70 gr fehércsoki
40 gr tejszín
három kiskanál kókuszreszelék
200 gr magas kakaótartalmú tejcsoki
bronz lüszterpor

Elkészítés:
A mangót és a tejszínt összeturmixolom. Felmelegítem a keveréket, és hozzáadom a csokit. Elkeverem, majd beleadagolom a kókuszreszeléket, és egy kis ideig még melegítem.
Temperálom a tejcsokit, elkészítem a bonbonok burkát. Miután megszáradtak, megtöltöm őket a mangós krémmel, és hűtőbe teszem egy éjszakára. Másnap temperálom a maradék tejcsokit, és lezárom a bonbonokat. Végül lüszterporral színezem őket.



Some days ago somewhere I glimpsed the proverb "love conquers all". What bullshit! First of all, love is not the kind that would just go about and kill. If it was, then it'd be called a desire to kill or mercilessness or pushiness. Second, it is not even true. Love is the most complex feeling that can evolve in a human being; a rainbow-coloured fabric made of humility, acceptance, the will to help, devotion, empathy, patience, friendship, attentiveness, concern and sometimes sadness, a freakin iron strap that some cruel god forges around one's heart. Don't misunderstand, I'm not only writing about romantic love but also any kind of relationship with relatives and friends. And sometimes love is not enough at all. Or it exists but it doesn't go to war to conquer others. Because, contrary to the popular view that life is like a war, love doesn't propagate the power of the victor, and it doesn't want to overcome anything. And sometimes it is still there when it shouldn't exist anymore, when its mere existence is irreal: love for people who are gone, acquintances with whom there's been no contact for years, still we think of them with nostalgia... But feelings are like this - if they had anything to do with the brain, they wouldn't be called feelings anymore :D
And I think from all kinds of food, chocolate is the closest kin of love, but this is another unexplainable link, or rather just a feeling :D Giving some chocolate is the easiest way to express our love to someone, isn't it? :) It'd be weird to give vegetable stew or a good bloody steak to our loved ones XD
The following bonbons were made for my loved ones for the family gathering, and I can say they were a big success: all 30 pieces were gone in a couple of minutes :D


Ingredients:
70 gr mango
70 gr white chocolate
40 gr cream
three small spoons of shredded coconut
200 gr milk chocolate with high cocoa percentage
copper luster dust

Recipe:
I blend the mango and the cream. I warm up the mixture and I add the chocolate. I combine them, then I also add the coconut and I keep warming the cream for a little while.
I temper the milk chocolate, I prepare the bonbon shells. After they get solid, I fill them with the mango cream and I put them in the fridge for the night. The next day I temper the rest of the chocolate and I seal the bonbons. Finally I colour them with luster dust.

címer // coat of arms

Mit érdemel az az elvetemült történész, aki képes kitalálni és bejegyeztetni a saját címerét? Hát na, van akinél nem olyan sikeres a családfakutatás, mint nálam, nincsenek nemesi felmenők, de még egy ágrólszakadt  hétszilvafás nemes sem :D így aztán kénytelen maga lerakni az eljövendő dinasztia alapjait. Az ilyen erőfeszítések csak megérdemlik, hogy csokiba öntsék őket, nem? :D A módszer a már jól bevált volt ezúttal is: temperált fehércsoki alapra temperált étcsokival habzsákból rajzoltam meg a mintát. Azután fondantformázóval utánaigazítottam, ahol kellett. Nagyjából egy óra alatt megvolt :)


What does that determined historian deserve, who finds out and gets his own coat of arms registered? Well, not everyone can be as successful with family tree research as I was - sometimes there are no noble ancestors whatsoever :D so one has to establish the future dynasty himself. Such efforts deserve to be immortalised in chocolate, don't they? :D The method was the usual one: on a tempered white chocolate basis I drew the pattern with tempered dark chocolate, from a piping bag. Then I adjusted it with fondant shaper. It was ready in an hour :)

eper-banán turmix // strawberry-banana smoothie

Szép tavaszunk volt az idén, egy keddi napra esett. Most meg már itt a nyár :D de nem is baj, élvezem. Végre eljött a gyümölcsök és zöldségek ideje, a napsütés, a napozás, a teraszon/erkélyen evés ideje :) Amit különösen szeretek, most, hogy az erkélyről egyenest a budai várra nyílik igen csúnya kilátás :D 
A jó idő örömére egy extrán gyümölcsös csokit készítettem: banánnal és eperrel. Az eper egyike kedvenc gyümölcseimnek (a sárgabarackkal és a cseresznyével karöltve), végtelen mennyiségeket tudok megenni belőle, azok legnagyobb sajnálatára, akikkel együtt eszem XD


Hozzávalók:
150+90 gr fehércsoki
70 gr eper
40 gr banán
egy loccsintásnyi tej
egy kiskanál méz
piros lüszterpor

Elkészítés:
Az epret és a banánt a mézzel meg a tejjel együtt leturmixolom. Megolvasztok 90 gr fehércsokit, és a turmixhoz adagolom.
Temperálok 150 gr fehércsokit, elkészítem a bonbonok burkát. Száradás után megtöltöm őket a gyümölcskrémmel, és egy éjszakára a hűtőbe teszem. Másnap a fehércsoki maradékát ismét termperálom, lezárom a bonbonokat. Miután kifordítottam őket a csokiformából, lüszterporral megszínezem őket.



We had a nice spring, it was on a Tuesday. And now it's summer already :D but it's ok, I'm enjoying. Finally it's time for fruits and vegetables, sunshine, sunbathing, eating out on the terrace/balcony :) Which I particularly like now that there's a view on the Buda castle :D
On the occasion of the nice weather I prepared extra fruity chocolates: with banana and strawberry. Strawberry is one of my favourite fruits (together with melons and cherries), I can eat up endless amounts of it :D


Igredients:
150+90 gr white chocolate
70 gr strawberry
40 gr banana
a splash of milk
small spoon of honey
red luster dust

Recipe:
I blend the strawberry and the banana with the milk and the honey. I melt 90 gr white chocolate and add it to the smoothie.
I temper 150 gr white chocolate and I prepare the bonbon shells. When they get dry, I fill them with the fruity cream and I leave the mould in the fridge for a night. The next day I temper the leftover white chocolate and I seal the bonbons. After I take them out of the mould, I colour them a bit with luster dust.

cseresznyés-marcipános // cherry-marzipan

Ma van a költészet napja. Mások a FB-on postolgatják kedvenc verseiket, én viszont itt fogom ezt megtenni. Több is van belőlük, persze. Kedvenc költőim közé tartozik a tragikus sorsú Radnóti, Kosztolányi és Tóth Árpád. De most egy olyan verset fogok idemásolni, amibe első olvasásra beleszerettem, és azóta is tudom kívülről. Ritka az olyan vers, aminek ennyire magával ragadó, sejtelmes a hangulata, aminek az olvasásakor az ember megborzong, mert úgy érzi, a költőnek sikerült elkapnia azt az időn túli érzést, az élet titkát.
Az alábbi csokit anyukám születésnapjára készítettem. Ő nagy marcipánrajongó, úgyhogy nem is volt kétséges, hogy kétféle marcipános bonbont kap majd a születésnapjára :D


Hozzávalók:
100 gr marcipán
0,3 dl pálinka
40 gr aszalt cseresznye
150 gr étcsoki
lüszterpor

Elkészítés:
A cseresznyét 3-4 órára pálinkába áztatom. Amikor kellően átvette az alkohol ízét, a pálinka pedig megszínesedett tőle, az egészet aprítógépbe töltöm a marcipánnal együtt. Addig darálom, míg egynemű masszát nem kapok.
Temperálom az étcsokit, elkészítem a bonbonburkokat. Miután megszilárdultak, kiskanál segítségével megtöltöm őket a marcipánkrémmel. Ezúttal nem szükséges hűteni, mert a töltelék elég szilárd halmazállapotú. Alaposan lenyomkodom a krémet, temperálom a maradék étcsokit, és lezárom a bonbonokat. Vörös lüszterporral díszítem a kész csokikat.

Ady Endre: Párisban járt az Ősz

Párisba tegnap beszökött az Ősz.

Today is the day of poetry in Hungary. Others post their favourite poems on FB, I am going to share mine here. I have many, obviously. My all time favourite poets are Miklós Radnóti, Dezső Kosztolányi and Árpád Tóth. But now I will copy a poem, which I fell in love with instantly and I know it by heart ever since. Such poems are rare, which are fascinating, have such a mysterious tone; when one reads them, he has goosebumps because he feels that the poet managed to grasp that feeling beyond time, the secret of life.
This chocolate was prepared for my mum's birthday. She is a big fan of marzipan, so it was kind of obvious that I'd make her two different kinds of chocolates with marzipan :D


Ingredients:
100 gr marzipan
0,3 dl pálinka
40 gr dried cherry
150 gr dark chocolate
luster dust

Recipe:
I soak the cherries in pálinka for 3-4 hours. When they absorb the alcohol and the pálinka gets a bit of colour from them, I put the whole thing in a kitchen grinder, together with the marzipan. I grind them until I get a smooth mass.
I temper the dark chocolate; I prepare the bonbon shells. After they get dry, with a small spoon I fill them with marzipan cream. This time cooling is not necessary, as the filling is quite solid. I push down the cream, then I temper the leftover chocolate and I seal the bonbons. I decorate them with red luster dust.

málnás-barackos // raspberry-peach

Nos hát itt az újabb recept a hosszú, húsvéti kihagyás után. Ezúttal egy extrán gyümölcsös, színes, tavaszi csokit készítettem ^^ csak hogy mindenkinek jó kedve legyen, meg nekem is, miután fölfaltam :D És miután pillanatokon belül itt lesz a Dead Daisies koncertje, berakok egy kis kedvcsinálót, mivel egy tökös, hangulatos zenét játszó bandáról van szó, amiben a csodás Doug Aldrich gitározik :) én ott leszek.


Hozzávalók:
100+150 gr fehércsoki
30 gr málnapüré
30 gr barackpüré
egy kiskanál vaj
kurkuma, vörös lüszterpor, kakaóvaj

Elkészítés:
Gyertyaláng felett megolvasztok egy teáskanálnyi kakaóvajat, és belekeverek egy csipet kurkumát. Ujjbeggyel márványozom a csokiforma mélyedéseit. Egy teáskanálnyi kakaóvaj és vörös lüszterpor keverékével megismétlem a műveletet, így kétféle színárnyalatot kapok minden mélyedésben.
Egybekeverem a málna- és a barackpürét, és beleteszek egy kiskanálnyi vajat. Felmelegítem a keveréket, és 100 gr fehércsokit adok hozzá.
Temperálok 150 gr fehércsokit, elkészítem a bonbon burkokat. Száradás után megtöltöm őket a gyümölcsös krémmel, és a hűtőbe teszem a formát. Miután a töltelék megbőrösödött, kiveszem. Temperálom a maradék csokit, és lezárom a bonbonokat.



So here's the next recipe after the long Easter break. This time I made an extra fruity, colourful spring chocolate ^^ in order to get you in good mood - and myself too after I eat it up :D And since the Dead Daisies concert will be here in the blink of an eye, I attach one of their songs since they make cool, awesome music, plus the amazing Doug Aldrich plays the guitar :)


Ingredients:
100+150 gr white chocolate
30 gr raspberry puree
30 gr peach puree
small spoonful of butter
turmeric, red luster dust, cocoa butter

Recipe:
Above candle light I melt a tea spoon of cocoa butter and I mix it with a pinch of turmeric. With my finger I marble the cavities of the chocolate mould. I do the same with another tea spoon of cocoa butter and red luster dust, thus I get two shades in every cavity.
I combine the raspberry and peach purees and I add a spoonful of butter. I warm up the mixture, then I mix 100 gr white chocolate in it.
I temper 150 gr white chocolate, I prepare the bonbon shells. After they get dry, I fill them with the fruity cream and I put the mould in the fridge. When the filling sets, I temper the leftover chocolate and I seal the bonbons.
