mogyorókrémes-vaníliás // peanut butter- vanilla

 Ezt a bonbont egyszer már elkészítettem, de akkor nem került fel a blogra, mert idő előtt elfogyott :D Ez már önmagában jelzi, hogy mennyire jó ez az ízkombináció: a karamellizált, mézes-sós magvakból készült, apró, ropogós darabkákat tartalmazó krém és a selymes, fehércsokis-vaníliás ganache összhangja igazán ütős! Előző alkalommal nem készítettem ilyen részletes kivitelezésű külsőt, de most valamiért kedvem támadt egy kis tavaszi hangulatot csempészni az őszbe :)


Hozzávalók:
200 gr tejcsoki
80 gr fehércsoki
40 ml tejszín
vanília
1 kiskanál vaj
100 gr karamellizált mogyorókrém
ételfesték

Elkészítés:
Először a töltelékeket készítem el: a fehércsokit felaprítom, leöntöm a felforralt tejszínnel. Hozzáadom a vajat és ízlés szerint vaníliát, majd összekeverem, hogy fényes krémet kapjak.
A kesut és mogyorót serpenyőbe öntöm, súlyuk egyharmadának megfelelő adag cukorral. Folyamatos keverés közben felhevítem, míg a cukor meg nem olvad és karamellizálódik. Ekkor adok hozzá egy nagy kanál mézet is. Ízlés szerint sózom. A kész keveréket szilikonlapra öntöm és hagyom kihűlni, majd robotgéppel addig aprítom, amíg krémes állagú nem lesz.
Ecsettel virágokat festek a bonbonforma mélyedéseibe. Temperálom a tejcsokit, elkészítem a bonbonok héját. Megtöltöm őket előbb a mogyoróvajjal, aztán a vaníliás krémmel, és hűtőbe teszem. Néhány óra múlva temperált csokival lezárom a bonbonokat.

I have prepared this bonbon once already, but then it couldn't make it to the blog because it had been eaten up before that :D This is a good indicator of how awesome this flavor combination is: the harmony of the crunchy butter made of caramelized nuts and the silky white chocolate - vanilla ganache is really splendid! Last time I didn't decorate the bonbons so neatly, but today I felt like bringing a bit of spring atmosphere into the autumn :)


Ingredients:
200 gr milk chocolate
80 gr white chocolate
40 ml cream
vanilla
1 spoonful of butter
100 gr caramelized peanut butter
food paint

Recipe:
First, I prepare the fillings: I chop up the white chocolate and pour hot cream on it. I add the butter and the vanilla, then I mix it until I get a shiny ganache.
I pour the cashew nuts and peanuts in a pan, with sugar weighing 1/3 of the nuts. Stirring constantly, I heat them until the sugar melts and the nuts get caramelized. Then I also add a spoonful of honey. I sprinkle the mixture with salt, then I pour it onto a silicone sheet. I let it cool down, and grind the nuts to get a creamy butter.
With a brush, I paint flowers in the cavities of the mold. I temper the milk chocolate and I prepare the bonbon shells. I fill them first with the peanut butter, then with the vanilla cream, and put the mold in the fridge. A couple hours later I seal the bonbons with tempered chocolate.

karamellizált kesu // caramelized cashew

Két gyerek - főleg picik - mellett külön művészet, hogy az ember időt találjon a hobbijaira. Ilyenkor a számtalan érdeklődési kör közül mindig azt választja az ember, amire épp a legjobban vágyik, így hát feloszlik a (nemlétező) szabadidő az olvasás, írás, ímmel-ámmal zenélés, és persze a csoki között. A tölteléket már elég régen elkészítettem, és mostanáig mint reggeliző krémet ettük (nutellánál biztosan jobb :D), de most végre elérkezett az idő, hogy megszülessen az alábbi, isteni finom csokoládé is!!

Hozzávalók:
200 gr natúr kesudió
100 gr cukor
fahéj
só
pisztáciaolaj
200 gr fehércsoki
ételfesték

Elkészítés:
Serpenyőben megpirítom a kesudiót, majd hozzáöntöm a cukrot és közepes lángon addig kevergetem, amíg karamellizálódni nem kezd. Megvárom, hogy teljesen felolvadjon, bronzos színt nyerjen, és ha kellően bevonta a kesudiókat, megszórom a keveréket fahéjjal és sóval. Szilikonlapra terítem a kesut. Miután kihűlt, aprítógépbe öntöm 2-3 kiskanál pisztáciaolajjal, és addig darálom, amíg krémes masszát kapok.
Bronz festékkel összefröcskölöm a bonbonforma mélyedéseit. Temperálom a fehércsokit, elkészítem a bonbonok burkát. Megtöltöm őket a kesukrémmel, egy órára hűtőbe teszem a formát, végül temperált fehércsokival lezárom a bonbonokat.


When you have two kids - especially while they are little - you can barely find the time for your hobbies. During this phase, one chooses from among various interests the one that one desires the most, therefore the nonexistent freetime is divided between reading, writing, playing music and of course, chocolate. I prepared the filling a long time ago and up until now we've been eating it as a spread (it's much better than nutella :D), but now the time has come to finally make this amazingly good chocolate!!

Ingredients:
200 gr cashew nuts
100 gr sugar
cinnamon
salt
pistachio oil
200 gr white chocolate
food paint

Recipe:
In a pan, I fry the cashew nuts, then I add the sugar and on medium heat, I stir it until it turns into caramel. I wait until it melts completely, becomes bronze, and covers the nuts, then I sprinkle the mix with cinnamon and salt. I spread the cashew on a silicone sheet. After it gets cooler, I pour it in a food processor together with 2-3 small spoonfuls of pistachio oil, then I grind it until I get a smooth cream.
I splash bronze paint in the cavities of the mold. I temper the white chocolate and I prepare the shells. I fill them with the cashew cream, and put the mold in the fridge for an hour. Finally I cap the bonbons with tempered white chocolate.

Málna-kesu // raspberry-cashew

Töredelmesen bevallom, hogy későn érő típus vagyok :D Másoknak bizonyára legkésőbb harmincas éveik elejére már jól felszerelt konyhájuk van, én most jutottam el odáig, hogy használni kezdjek egy alapdarabot. És ezt is csak a csokizás miatt. Mert hát mit tegyen az ember, ha ki nem állhatja a magvakat, viszont odavan a belőlük készült különböző krémekért, marcipánért stb.? Persze már évek óta beszerezhettem volna egy aprítógépet, csak hát lustaság fél egészség :D Most karácsonykor viszont ezt hozta a Jézuska, és megkezdődött a kísérletezés. Persze itt is uncle google volt a segítségemre, amikor az első három perc darálás során porított kesuból krémet akartam valahogy készíteni, mire kiderült, hogy ez még plusz öt perc darálásba fog kerülni :D Na de az eredmény!! Yumyum!

Hozzávalók:
6-7 szem málna
60 gr pörkölt, sós kesudió
200 gr tejcsoki

Elkészítés:
A kesudiót aprítógépben addig darálom, amíg krémes masszát nem kapok. Megpróbálom megfékezni magam, hogy ne kóstolgassam el az egészet. A málnaszemeket 2-3 darabba vágom.
Én sárga csokifestékkel pöttyöztem a bonbonforma mélyedéseit, viszont ez nem nagyon látszott sajnos a végeredményen. Temperálom a tejcsokit, elkészítem a burkokat. Miután megszilárdultak, minden burok aljába teszek egy-egy málnadarabkát, amit befedek a kesukrémmel. Ezután temperálom a maradék tejcsokit, és lezárom a bonbonokat.


I have to admit that I'm a late bloomer :D Others probably have a well-equipped kitchen by the beginning of their thirties, while I got to the point of using a basic equipment only now. And of course only because of chocolate. Because what can one do if one hates seeds but adores various creams and marzipan made of them? I could've bought a food processor, but you know, haste makes waste :D However, this Christmas, baby Jesus bought me such a machine and experimentation started. Of course, uncle google helped me find out how to make a cream out of the cashew dust that was the result of the first three minutes' grinding: additional five minutes of grinding :D And the result!! Yumyum!

Ingredients:
6-7 raspberries
60 gr roasted, salted cashew nuts
200 gr milk chocolate

Recipe:
I grind the cashews in the food processor, until I get a creamy mass. I try to contain myself from tasting away the whole thing. I cut up the raspberries into 2-3 pieces.
I sprinkled the cavities of the mold with yellow chocolate paint, however, it was way too faint on the end product. I temper the milk chocolate and I prepare the shells. After they get solid, I place one piece of raspberry in the bottom of each of them. I cover the raspberries with cashew cream. Then I temper the leftover chocolate and I seal the bonbons.
