nugát-ganache // nougat-ganache

Tavaly óta készült néhány adag csoki, viszont recepteket írni nem igazán volt időm sajnos. Az alábbi csokit Valentin napra készítettük, a díszítés teljes egészében 3.5 éves kisfiam munkája. A többit én tettem hozzá, de az már nem volt művészet :)

Hozzávalók
100 gr földimogyoró
70 gr cukor
só
fahéj
25 ml tejszín
50 gr tejcsoki
15 gr kókuszolaj
200 gr fehércsoki
ételfesték

Elkészítés
A mogyorót és a cukrot egy serpenyőbe öntöm és addig melegítem, amíg a cukor el nem olvad és egyenletes karamellréteggel vonja be a mogyorót. Megszórom sóval és fahéjjal, megkeverem, majd szilikonlapra öntöm és hagyom kihűlni. A mogyorót azután aprítógépbe töltöm és krémes nugáttá őrlöm.
Elkészítem a ganache-t: a felforralt tejszínt és kókuszolajat az apróra tört tejcsokira öntöm, és addig keverem, amíg fényes krémet kapok.
Ételfestékkel díszítem a bonbonforma mélyedéseit, majd temperált fehércsokit öntök beléjük. Az elkészült héjakat megtöltöm egy réteg nugáttal, és egy réteg ganache-sal. A formát egy órára hűtőbe teszem, azután a bonbonokat temperált fehércsokival lezárom.


I've prepared a couple of batches of bonbons since last year but I didn't really have the time to write down the recipes. These bonbons were made for Valentine's Day, they were decorated by my 3.5-year-old son. The rest was done by me but that wasn't art :)

Ingredients
100 gr peanuts
70 gr sugar
salt
cinnamon
25 ml cream
50 gr milk chocolate
15 gr coconut oil
200 gr white chocolate
food paint

Recipe
I pour the peanuts and the sugar in a pan, and warm it until the sugar melts and creates a caramel coat on the peanuts. I season the peanuts, sprinkle them with cinnamon, then pour them on a silicone sheet and let them cool. I put the peanuts in a food processor and grind them until I get a smooth nougat.
I prepare the ganache: I pour the boiling cream and coconut oil on the chopped milk chocolate, and stir it until I get a shiny ganache.
I decorate the cavities of the mold with food paint, then I pour tempered white chocolate in them. I fill the bonbon shells with one layer of nougat and one layer of ganache. I put the mold in the fridge for an hour, then I seal the bonbons with tempered white chocolate.

Valentin nap // Valentine's day

 Kedvenc pasijaimnak: Tamásnak és Erik babának 😍

Hozzávalók:
három kiskanál szárított rózsa
4-5 szem rózsabors
80 ml tejszín
1 kiskanál vaj
100 gr tejcsoki
150 gr fehércsoki
ételfesték

Elkészítés:
Kimérem a tejszínt, hozzáadom a rózsaszirmokat, a mozsárban összetört rózsaborsot, valamint a vajat. Kis lángon felmelegítem, amíg gyöngyözni kezd. Akkor elzárom, egy órát hagyom állni. Végül leszűröm a keveréket. Az így kapott tejszínhez hozzákeverek 100 gr olvasztott tejcsokit.
Vékony ecsettel virágokat festek a bonbonforma mélyedéseibe: fehéret, rózsaszínt és sötétrózsaszínt használtam; a leveleket zölddel festettem meg, és fogpiszkálóval húztam beléjük az erezetet.
Temperálom a fehércsokit, elkészítem a bonbonok burkát. Miután megszilárdult, megtöltöm a rózsás töltelékkel, és egy órára hűtőbe teszem a formát. Végül temperált fehércsokival lezárom a bonbonokat.

Ingredients:
three small spoons of dry rose petals
4-5 rose peppers
80 ml cream
one small spoon of butter
100 gr milk chocolate
150 gr white chocolate
food paint

Recipe:
I pour the cream in a small bowl, add the rose petals, the crushed rose peppers and the butter. I warm them on low heat until it starts to simmer. Then I put them aside for an hour. I sieve the mixture and discard the solid ingredients. I add 100 gr melted milk chocolate.
With a thin brush, I paint flowers in the cavities of the mold: I used white, light pink and dark pink; I painted the leaves with green and carved the veins with a toothpick.
I temper the white chocolate; I prepare the bonbon shells. After they dry, I fill them with the rose filling and put the mold in the fridge for an hour. Finally, I seal the bonbons with tempered white chocolate.

eper-tökmagkaramell // strawberry-pumpkin seed caramel

Bár Valentin napi köntösben van, ez a csoki mégsem arra, hanem születésnapra készült :) Eredetileg a tölteléket picit másképp képzeltem, de végül így is nagyon finom lett, épp annyira tömény csak, hogy még nem gejl.

Hozzávalók:
150 gr cukor
70 ml tejszín
két kiskanál méz
100 gr tökmag
30 gr porcukor
20 ml pisztáciaolaj
40 ml eperpüré
80+200 gr étcsoki
ételfesték

Elkészítés:
A tökmagot pisztáciaolajjal és porcukorral aprítógépben addig darálom, amíg krémes állagú nem lesz. Ezután elkészítem a karamellát: felolvasztom a cukrot, majd kis részletekben hozzákeverem a tejszínt, végül a mézet. 50 gr karamellába belekeverek ugyanennyi tökmagkrémet, és addig melegítem, kevergetem, amíg egynemű krémet kapok.
Elkészítem az eperkrémet: felolvasztok 80 gr étcsokoládét, és hozzáadom az eperpüréhez.
Piros festékkel belefestek a mélyedések közepébe. Miután megszáradt a festék, egy fogpiszkálóval EKG jelet rajzolok beléjük, majd fehér festékkel is átfestem. Temperálok 200 gr étcsokit, elkészítem a bonbonok burkát. Megtöltöm előbb az epres krémmel, azután a tökmagkaramellel. A maradék temperált csokival lezárom a bonbonokat.


Even thought these chocolates look like Valentine's day, they were made for a birthday :) Originally I imagined a slightly different filling but they became quite tasty in the end, dense but not cloying.

Ingredients:
150 gr sugar
70 ml cream
two small spoons of honey
100 gr pumpkin seed
30 gr caster sugar
20 ml pistachio oil
40 ml strawberry puree
80+200 gr dark chocolate
food paint

Recipe:
I grind the pumpkin seeds, the pistachio oil and the caster sugar in a food processor until I get a smooth cream. Then I prepare the caramel: I melt the sugar, then add the cream in small portions, and finally the honey too. I take 50 gr caramel, combine it with the same amount of pumpkin seed cream, and warm them until I get a creamy caramel sauce.
I prepare the strawberry cream: I melt 80 gr chocolate and I mix it with the strawberry puree.
I paint into the cavities of the mold with red food paint. After the paint dries, I draw EKG signs in it with a toothpick, then I paint it over with white paint. I temper 200 gr dark chocolate, I prepare the bonbon shells. I fill them first with the strawberry cream, then with the pumpkin seed caramel. I seal the bonbons with the leftover tempered chocolate.

Eper-chili // strawberry-chili

Nagymagyarok szeretnek minden egyes populáris ünnepkor azzal vagdalkozni, hogy "az nem magyar hagyomány", és "külföldről importált" és "micsoda giccsparádé". Ez a leegyszerűsítő hozzáállás dívik a Halloweennel kapcsolatban épp úgy, mint a Valentin-nappal. Nomármost tudjuk, hogy még a legmagyarabb hagyomány is százféle - és nem feltétlen csak magyar - gyökerű (lásd pl. busójárás, ugye), úgyhogy a "nem magyar hagyomány" kitételt el is vethetjük és kissé holisztikusabban szemlélve foglalkozzunk inkább az európai eredettel. Hiszen mi is ide tartozunk immár több mint egy évezrede, és ha történelmi ünnepekről, hagyományokról van szó, elkerülhetetlen, hogy szem előtt tartsuk, hányféle különböző kultúrkörrel, néppel álltunk és állunk kapcsolatban, szoros kölcsönhatásban.
A legenda szerint a római Valentin pap volt, 269-ben szenvedett mártírhalált. Keresztényként állítólag titokban adta össze a keresztény katonákat, akiknek II. Claudius megtiltotta, hogy megházasodjanak. Valójában ilyen tilalomról nem maradt fenn forrás, valószínűbb, hogy Valentin a saját vallására térítette az embereket. I
lyetén tevékenysége miatt kétszer is letartóztatták. Először bírája, Asterius azzal tette próbára őt, hogy megkérte, adja vissza vak leányának a látását. Állítólag Valentin imádkozás után Julia szemei fölé helyezte a kezét, és amikor elhúzta onnét, a lány látott. E csodatétel meggyőzte Asteriust arról, hogy Valentin istene az igaz isten, és teljes, több mint 40 tagot számláló háza népével együtt megkeresztelkedett.
Amikor Valentint másodszor is elfogták, maga II. Claudius hallgatta ki. Nagy hatással volt rá a pap személyisége, és megpróbálta megnyerni őt a római vallásnak, ám Valentin cserébe szintén igyekezett megtéríteni a császárt. Claudius ezért halálra ítélte őt. Kivégzése előtt Valentin üzenet Juliának, amit így írt alá: "a te Valentinod" - állítólag innét erednek a mai Valentin-napi üdvözletek. Sírja mellé maga Julia ültetett rózsaszín virágú mandulafát, ez azóta is a tartós szerelem, szeretet és barátság jelképe.
Végül a legenda szerint a katonákat titokban összeadó Valentin ujján lila ametisztköves gyűrűt viselt, amelybe Kupidó képét vésték -  a szerelemnek a Római Birodalomban is legális szimbólumát. E gyűrű alapján ismerték fel őt a katonák, és kérték, hogy adja össze őket a szerelmükkel. Talán ezért lett az ametiszt február hónap születésköve.


Az alábbi csoki elő-Valentin-napi ajándékként készült az én Valentinomnak :))) Mivel jelenleg ismét nem ehetek tejes ételeket, ezért ez is vegán bonbon - kókusztejszínnel készült. Külsőt és belsőt ismét összekomponáltam, hogy illeszkedjék az ünnep jellegéhez :)

Hozzávalók:
40 ml eperpüré
15 ml kókusztejszín
3 csipet chili
liofilizált eper
100+200 gr étcsoki
ételfesték

Elkészítés:
Készítek egy tömény csoki bonbont, és beleállítok egy koktélszúrókát. Ez lesz a pecsét. Amikor a bonbon megszilárdult, kiszedem a formából. Minden mélyedésbe néhány csepp kakaóvajas vörös festéket cseppentek, belenyomom a "pecsétet" és kihúzom - így kapom a vörös erezetet. Ezután arany színű festékkel festem be a mélyedéseket.
Elkészítem a tölteléket: összekeverem az eperpürét és a kókusztejszínt, megolvasztok 100 gr étcsokit és hozzájuk adom. Végül darabokra tépkedett liofilizált epret és chilit keverek a krémbe.
Temperálok 200 gr étcsokit, elkészítem a bonbonok burkát. Miután megszilárdultak, megtöltöm őket az epres krémmel. Temperálom a maradék étcsokit és lezárom a bonbonokat.


Nationalists like to shame every popular celebration by saying that they are "not a Hungarian tradition", they are "imported from abroad" and "they are corny". This simplistic attitude is fashionable when it comes to Halloween and also Valentine's day. Well, we know that even the most Hungarian tradition has a hundred different roots (such as Busójárás, for instance), so the argument that "this is not a Hungarian tradition" can be dismissed; perceiving things a bit more holistically, let's rather turn to European origins. After all, we've been living here for more than a millennia and thus if we're talking about historical celebrations, traditions, it is inevitable that we must consider the many cultures and ethnicities with which we were in touch and interaction.
According to legend, Valentine of Rome was a priest who was martyred in 269. As a Christian, allegedly he organized clandestine weddings for Christian soldiers who were forbidden to marry by Claudius II. In reality, such a marriage ban was never issued; it is more likely that Valentine was converting people. Due to this activity he was arrested twice. First, his judge/jailer Asterius tested him by asking him to heal his blind daughter. Allegedly after praying, Valentine placed his hands above Julia's eyes and when he removed his hand, she could see. This miracle convinced Asterius that Valentine's God was the real God and his entire household (more than 40 people) were baptized.
When Valentine was captured the second time, Emperor Claudius II himself interrogated him. He was impressed by the priest's personality and  tried to convert him to the Roman religion, however, in exchange Valentine also tried to convert the emperor. Claudius sentenced him to death because of this. Before his execution, Valentine sent a message to Julia, which he signed as "Your Valentine" - allegedly this is the origin of today's Valentine cards. Julia planted a pink flowering almond tree near his grave; this remains the symbol of abiding love and friendship.
Finally, according to legend, Valentine wore a purple amethyst ring with an image of Cupid engraved in it - this was the legal symbol of love in the Roman Empire. Roman soldiers who wanted to get married secretly, recognized the ring and asked him to perform marriage for them. Maybe this is the reason why amethyst became the birthstone of February.


I made these chocolates as a pre-Valentine gift for my Valentine :)) Since I can't eat milk again, these are vegan bonbons made with coconut cream. I composed matching filling and shell so they would fit the character of the celebration :)

Ingredients:
40 ml strawberry puree
15 ml coconut cream
3 pinches of chili
lyophilized strawberry
100+200 gr dark chocolate
food paint

Recipe:
I prepare a bonbon made entirely of chocolate and stick a cocktail needle in it. This will be my stamp. When the bonbon sets, I take it out of the mold. I pour a couple of drops of red cocoa butter paint in each cavity, and push the stamp in them - that's how I get the red "vein" pattern. Then I paint the cavities with gold.
I prepare the filling: I mix the strawberry puree and the coconut cream; I melt 100 gr dark chocolate and add it too. Finally, I tear the lyophilized strawberry into little pieces and add it and the chili in the cream.
I temper 200 gr dark chocolate, I prepare the bonbons hells. After they get solid, I fill them with the strawberry cream. I temper the leftover dark chocolate and I seal the bonbons.

Valentine

Valentin napra volt egy pár ötletem talonban, amiket végre megvalósítottam. Az egyik egy csokiból készült fonott kosárka, a másik pedig a házi marcipán, amit mindössze négy hozzávalóból készítettem el. A bonbonok töltelékei már nagyjából mind szerepeltek a blogon, ezért ezeket most külön nem írom le. Vannak köztük egyszerű rózsás ganache-sal, áfonyás-levendulás krémmel, mangós krémmel és sós karamellel töltöttek. Igazából a töltelékek egy másik projekthez (is) készültek, ezeket egyelőre azért sem akarom külön megosztani.


Csokikosár hozzávalók:
100 gr tejcsoki
lüszterpor
ceruza, sütőpapír

Elkészítés:
Először megtervezem a kosárkát: először egy 7 cm-es oldalú négyzetet rajzoltam fel sütőpapírra, majd a kosár oldalait külön-külön 7-7 cm-es alappal, 6 cm-es oldalhosszúsággal rajzoltam meg. Valójában elég egyet megszerkeszteni ezek közül, azt sablonként használva a többit - mivel a sütőpapír amúgy is átlátszó - át lehet kopírozni. Továbbá rajzoltam még egy szív formát is, a kosár tervezett oldalmagasságához igazítva.
Temperáltam a tejcsokit és habzsákba töltöttem, majd gyors mozdulatokkal többször körbehúztam a kosár egyik oldalát, két "merevítő" vonalat is húztam bele függőlegesen, aztán vízszintesen kezdtem megrajzolni a "vesszőket", amikből a kosár készült. Ugyanígy jártam el a kosár aljánál és a többi oldalánál, igyekeztem elég sűrűre "rajzolni" a vesszőket, de azért hagyni néhány lyukat is köztük. A szívet is hasonló módszerrel készítettem el.
Amikor az oldalak megszáradtak, lehúztam őket a papírról, majd elővettem 4 kisebb poharat, az egyiket a kosár alap mellé állítottam. Nekitámasztottam a kosár egyik oldalát, és megnéztem, milyen szögben kell majd állnia, hogy hozzá tudjam illeszteni egy másik oldalát is. Ebben a szögben ecsetre kent temperált csokival hozzáragasztottam az alaphoz. A következő pohárral kitámasztottam a kosár szomszédos oldalát, amit szintúgy hozzáragasztottam az aljhoz, valamint a már álló oldalhoz is. A hátralévő oldalakat ugyanígy rögzítettem, végül vártam negyed órát, hogy a csoki egészen megszilárduljon. Akkor elvettem a poharakat, és voilá! Kész is volt a kosár. Utoljára bronz lüszterrel befestettem a csokiszívet, és olvasztott csokival felragasztottam az egyik oldalra.

Marcipán hozzávalók:
200 gr mandula
200 gr porcukor
50 ml víz
mandulaaroma
rózsaméz

Elkészítés:
Ha héjas mandulával dolgozunk, érdemes előbb 3-4 percre lobogó forró vízben főzni, így könnyen lejön a héja. Utána egy napig szárítani kell.
Összedarálom a mandulát, a porcukor felét kimérem és hozzáadom. Én a darálóban elegyítettem a már felaprított mandulát és a cukrot is. Egy tálba szórom, hozzáadok két kiskanálnyi mandulaaromát és egy kiskanálnyi rózsamézet. A maradék porcukorból és fél deci vízből szirupot főzök, amit óvatosan adagolok a mandulához. Elkezdem gyúrni az egészet, és közben addig öntöm hozzá a szirupot, amíg megfelelő (formázható, de nem túl folyós) lesz az állaga. Golyókat formázok a marcipánból, meghempergetem őket kakaóporban.


I had some spare ideas for Valentine's day, which I finally realized. One of them was a wicker basket made of chocolate, the other one home-made marzipan which I prepared of only four ingredients. Most of the fillings of the bonbons have already been shared on this blog, therefore I won't write about them now. There are some filled with a simple rose ganache, others with blueberry-lavender cream, mango cream or salty caramel. Since I made these fillings for another project (too), that's another reason why I don't want to share them just now.


Chocolate basket ingredients:
100 gr milk chocolate
luster dust
pencil, parchment paper

How to prepare:
First, I design the wicker basket: I drew a square of 7 cm sides on the paper, then the sides of the basket with a 7-7 cm basis and 6 cm height. In reality it is enough to design one side, which can be used as template - as the parchment paper is transparent, it is easy to copy 3 more of it. Additionally, I drew a heart shape, whose size was adjusted to the height of the planned basket.
I tempered the milk chocolate and poured it in a piping bag. Then with quick movements, I drew the edges of one of the side panels and I also drew two more vertical lines which would serve as "braces". Afterwards, I drew short horizontal lines which would give the pattern of the wickerwork. I did the same with the bottom of the basket and the rest of the side panels; I tried to make the "wickerwork" dense but occasionally leaving some holes in it too. I made the heart with the same method.
When the sides were ready, I peeled them off the paper, then I took 4 smaller glasses and set one of them next to the bottom of the basket. I leaned one of the side panels to the glass and checked the right angle with which another side panel could join it. I glued the first side panel to the basis in this very angle, using tempered milk chocolate and a brush. I used the next glass to support the second side panel and glued that one to the basis, then to the first side panel too. I used the same method for the other two sides, then I waited 15 minutes until the chocolate set. Then I put away the glasses and voilá! The basket was ready. Finally, I painted the chocolate heart with bronze luster and glued it on one side of the basket with melted chocolate.

Marzipan ingredients:
200 gr almond
200 gr icing sugar
50 ml water
almond aroma
rose honey

Recipe:
If you use almonds which are not peeled, first boil them in hot water for 3-4 minutes, afterwards you can peel it easily. Then you need to dry them for a day.
I grind the almonds and add half of the icing sugar, too. I used the food processor to mix them properly. I pour the almond in a bowl, I add two small spoons of almond aroma and one spoon of rose honey. I add 50 ml water to the leftover sugar and I make sugar syrup of it. I add small portions of this syrup to the almond while I keep kneading it. I add the syrup until the consistency of the marzipan becomes perfect (shapeable but not runny). I shape small balls and roll them in cocoa powder.
