Most, hogy végre újraolvasom a Gyűrűk urát, ismét rácsodálkozok Tolkien összetett, mégis egyszerű, mitológiából és regékből táplálkozó világára, és valahányszor elgondolkodom egy-egy jeleneten vagy személyiségen, a jelentésrétegek úgy bomlanak ki mögötte, mint a virágszirmok. Csodás és a végtelenségig szórakoztató, lebilincselő olvasmány, ugyanakkor folyamatos elmélkedésre késztető.
A jelképes figurák közül Samu talán a legegyértelműbb: ő a szememben a hűség és a kitartás megtestesítője. Samu olyan egyszerű lélek, de mégis "megvan a magához való esze", a segítsége és kitartása nélkül Frodó bizonyosan nem tudná végihezvinni a küldetését. Samu talpraesett, gyakorlatias és a szívügye a növények gondozása. Épp ezért olyan ízvilágot képzeltem el a bonbonjához, ami ezt tükrözi. A körtére és a selyemfűmézre esett a választásom, a kettő simulékony, egyszerű ízharmóniája egy kis fahéjjal együtt akár a Zsáklak kis kertjéhez is illenék :)
Now that I'm finally re-reading the Lord of the Rings, I again admire Tolkien's complex, still simple world that is feeding on mythology and legends; and whenever I reflect on a scene or a character, the layers of meaning unfold behind them like the petals of a flower. It is wonderful and endlessly entertaining; an engaging reading, at the same time it inspires for constant contemplation.
From among the symbolic figures, Samwise is the most obvious: for me he is the symbol of loyalty and endurance. Sam is a simple soul but he is smart; without his help and endurance Frodo surely wouldn't have been able to carry out his mission. Sam is on the ball, he is practical and he cherishes plants and planting. Therefore I wanted a flavour which would reflect this. I chose pear and silkweed honey; the pliant, simple harmony of the two with some cinnamon would suit even the garden of Bag End :)
Hozzávalók:
120 gr étcsoki
30 gr körte
3 kiskanál selyemfűméz
2 csipet fahéj
étcsoki ganache:
40 gr étcsoki
20 gr tejszín
1 kiskanál vaj
lüszterpor
Elkészítés:
Papír ragasztószalagból vékony csíkokat vágok, és beragasztom őket a bonbonforma mélyedéseiben középre. Így készül majd a bonbok felszínén a sötét csík. Olvasztott kakaóvaj és bronz lüszter keverékével összefröcskölöm a mélyedéseket. Miután a cseppek megszáradtak, kakaóvajjal kevert sötétzöld lüszterrel márványozom a mélyedéseket. Ha ez is megszáradt, óvatosan kiszedem a ragasztószalagot (lásd alsó kép). Így egyenes, üres sávot kapok a mélyedések közepén.
Temperálom az étcsoki, elkészítem a bonbon burkokat.
Míg megszilárdulnak, a tölteléket is megcsinálom: a körtét meghámozom, a körtedarabokat összeturmixolom, hozzáadom a mézet és a fahéjat ízlés szerint. Végül belekeverem a ganache-t. Megtöltöm a bonbonokat, és a hűtőbe teszem a formát. Egy óra múlva kiveszem, temperált étcsokival lezárom a bonbonokat.
Ingredients:
120 gr dark chocolate
30 gr pear
3 small spoons of silkweed honey
2 pinches cinnamon
dark chocolate ganache:
40 gr dark chocolate
20 gr cream
1 small spoon butter
lustre dust
Recipe:
I cut thin stripes of paper tape and I stick them in the middle of the cavities of the mould. This is how I will get the dark stripes on the surface of the bonbons. With the mixture of melted cocoa butter and bronze lustre dust, I sprinkle the cavities. After the drops get solid, I marble the cavities with cocoa butter and green lustre dust. When this dries too, I carefully get rid of the tape (see photo above). Thus, I get a straight, empty stripe in the middle of the cavities.
I temper the dark chocolate and prepare the shells.
While the chocolate sets, I make the filling: I peel the pear, I blend the pieces and I combine them with honey and cinnamon. Finally I add the ganache. I fill the bonbons and I put the mould in the fridge. an hour later I seal the bonbon with tempered dark chocolate.
Hosszú kényszerpihenő után térek vissza - amit nem csak a nyár okozott, hanem egyéb más problémák is. Úgy döntöttem, hogy az újrakezdés örömére megújítom a dizájnt, és a blogon belül is különböző kategóriákat fogok létrehozni, hogy tematikussá és így sokszínűbbé tegyem.
Mostanra csak annyit, hogy az ember élete olyan színes és furcsa és szép, mint egy kaleidoszkóp üvegszilánkjai; és épp annyiféle mintát képes előállítani. És valahányszor megismerek egy új embert, az épp olyan, mintha egy kincsesládát nyitnék ki: némelyikben kedves apróságok vannak, másokban színes papírvirágok vagy épp szépen összerendezett kavicsok. Néha, nagy ritkán azért ráragyog az arany az emberre a láda nyílásából - de van, hogy az aranyról kiderül, hogy csak csillogó máz, ami alatt valójában még annyi érték sincs, mint a kacatokban. Ez az élet, csúfsággal és szépséggel együtt teljes, máskülönben nem lenne olyan változatos, és nem lenne érdemes élni. Én azért továbblépek, a szépséget igyekszem megtartani, a negatív dolgokat és embereket hátrahagyni, azoknak pedig, akik azt érdemlik, Ratcatcher kiégeti a szívét, már ha van nekik olyan egyáltalán :D
Körtés csokikat készítettem a minap, és ha már minden zöld, matchával társítottam a töltelékben. Igen fincsi lett :)
Hozzávalók:
150 gr étcsoki
50 gr körte
egy teáskanál matcha
egy kiskanál vaj
70 gr fehércsoki
Elkészítés:
A körtét meghámozom és kis darabokra vágom. Összeturmixolom, hozzáadom a teát, és felmelegítem. Összekeverem a vajjal, majd a fehércsokival.
Temperálom az étcsokit, elkészítem a bonbon burkokat. Miután megszáradtak, megtöltöm őket a körtés krémmel, és hűtőbe teszem. Néhány óra múlva kiveszem, temperálom a maradék étcsokit, és lezárom a bonbonokat.
After a long constrained pause - caused by the summer as well as other problems - I return. I decided that I'll renew the design and I'll categorize the posts according to new topics to make it even more colorful.
As for now the only thing is that life is so vivid and weird and beautiful like the glass pieces of a kaleidoscope; and it can create just as many different patterns. And whenever I get to know a new person, it is like opening a treasure box: in some of them there are lovely knick-knacks, in others colorful paper flowers or nicely arranged pebbles. Sometimes, quite rarely, gold is shining from under the lid of the treasure box - but sometimes it turns out that this gold is only a glittering glaze, under which there is not even as much value as in the junk. That's life - ugliness and beauty make it complete, otherwise it wouldn't be so diverse and worth living. I will move on, I will keep the beauty and leave behind negative things and people; and Ratcatcher will burn out the hearts of those who deserve that - if they have a heart at all :D and from now on I'll fly high with my dragons.
Some days ago I prepared pear bonbons; and since everything was green, I matched it with matcha. It became quite good :)
Ingredients:
150 gr dark chocolate
50 gr pear
one teaspoon matcha
one small spoon butter
70 gr white chocolate
Recipe:
I peel the pear and I cut it into small pieces. I blend it, I add the tea and I warm it up, I combine it with butter, then white chocolate.
I temper the dark chocolate, I prepare the bonbon shells. After they dry, I fill them with the pear cream and I put the mold in the fridge. After a couple of hours I get it out; I temper the leftover dark chocolate and I seal the bonbons.
Titkos kertem a szépség és nyugalom szigete, ahol mindig jó lenni, még akkor is, ha az idő nem tökéletes. A vízben úszva megszűnik a világ, csak az ég létezik alattam és felettem, valójában az égben úszom, a madarak úgy kapálóznak, akár az úszók, némelyik verdes a szárnyaival, mint egy gyorsúszó, mások méltóságteljesen, lassan lebegnek. És a felhők, a felhők mindig is arra emlékeztettek, mintha egy végeérhetetlen égi óceán hullámai és habjai lennének, örökké változók, akár az élet. Habfehérek, aranycirmos szegély fut rajtuk csipkeként, szürke szárnyukat puhán terjesztik a hegy fölé, mintha át akarnák ölelni. Az úszás egy egész kicsit arra emlékeztet... Most csak angolul lesz mese. Öt éve írtam, erre pontosan emlékszem. Nem szeretném és nem is tudnám lefordítani.
Na és ha már nyár, következzék egy igazán nyári finomság. Kedvenc gyümölcseim egyike a sárgadinnye, mérhetetlen mennyiséget meg tudok enni belőle. Csokiban is ki kell majd próbálnom természetesen, de ezúttal az egész családnak készült egy fincsi gyümölcssaláta ^^ Hozzávalók: 1 érett sárgadinnye 2-3 kis méretű körte 2 dl Garrone Elkészítés: Félbevágom a dinnyét. Kikaparom a magokat mindkét feléből. Kiskanállal, vagy magszedővel kis gombócokat vájok ki belőlük úgy, hogy a gyümölcshús legalább fele megmaradjon. Feltöltöm őket félig Garrone-nal, majd visszahelyezem beléjük a dinnyedarabkákat. Ha marad még hely, ne sajnáljuk belőle az alkoholt. Végül két körtét vékony szeletekre vágok, és a szélükre helyezem dísznek. Mindkét dinnye-felet beteszem a hűtőbe legalább 3-4 órára, hogy jól lehűljön, és legyen ideje megszívni magát Garrone-nal. Tálaláskor tejszínhab, édesszájúaknak akár cukor is mehet bele, bár az igazán érett dinnye nem kívánja a plusz cukrot szerintem.
My secret garden is the island of beauty and peace; it's always good to be there, even when the weather is not perfect. The world ceases to exist when I'm swimming, only the sky exists below and above, I am swimming in the sky; the birds are flapping like swimmers, some are fluttering quickly like freestyle swimmers, others float gracefully, slowly. And the clouds, the clouds have always reminded me of the waves and foam of an endless celestial ocean; forever changing like life itself. They are foam-white, golden fringes frame them as laces, they softly spread their grey wings aove the mountain as if they wanted to embrace it. The sunset is a door opening to another world, always from another place and always differently, but always to the same world. This world is so perfect and wonderful. I wish I could fly. Swimming reminds me a bit of that... Now here is a tale that I wrote 5 years ago.
And so if it's summer, here is a real summer delight. One of my favourite fruits is melon, I could eat up endless portions of it. I'll have to try it in chocolate as well, but this time I prepared a yummy fruit salad for the entire family ^^ Ingredients: 1 ripe melon 2-3 small pears 2 dl Garrone Recipe: I cut the melon into halves. I scrape out the seeds. With a small spoon I scoop little balls out of them, and I leave at least half of the fruit flesh. I fill the halves with Garrone, then I place back the melon pieces. If there is any space left, do not spare the alcohol. Finally I cut up two pears into thin pieces and I put them on the sides. I put the melons in the fridge at least for 3-4 hours until they get cold and absorb the Garrone. Serve it with whipped cream or even a bit of sugar but a really ripe melon doesn't need additional sugar.
Learning to fly
From the edge of the cliff the landscape looked like a glass globe.
Clear, green hills in the foreground; the river, oh the river like a silver
ribbon flowing among the familiar forests where so many of childhood’s miracles
had happened. Cottages hiding behind the trees; smoke rising to the sky like a
white-grey snake. Turquoise mountains on the horizon, below the sky, that
endless, vast blueness, the place out of reach, the other half of the world
which remained unknown to the villagers, a secret without boundaries. Even
those who knew the paths of the stars, who could translate the whisper of the
wind and were able to read such signs as a red moon or a rainbow, would never
dream of getting there: flying on the wings of the storm, touching the silk of
that rainbow, treasure-hunting among the stars.
But little Ilmailu did.
He was desperately attracted to the sky, in love with the Moon, that
mystical mother; his passion: staring at the wandering clouds. When wild winds
roared, he was sure to be found outside the village on the small field in front
of the forest, where the grass waved like a green sea. Every day he sat on the
cliffs for hours and watched the setting sun – his family had to have dinner
later then all the other villagers because of his habit. At first they tried to
persuade him to stay at home, to miss at least one sunset but when they locked
up the door, he escaped through the window. So they just gave it up. And thus
little Ilmailu was the only one who knew that every sunset painted different
colours on the sky and on the land.
However, when it came to real life, Ilmailu could hardly find his way.
Living among the clouds, he stumbled in stones and fallen branches; his mates
liked to tease him and killed little birds just to see the horror on his face.
He was old enough to help out his father in work, but nobody expected him to do
anything as they all knew that he would fail.
The shaman, a middle-aged man with white beard secretly appreciated the
boy: when Ilmailu was younger (after he passed through the fourth or fifth
cycle) he told him a tale about the Falcon, the forefather of their people. He
said – and of that little Ilmailu remembered perfectly – that in every third
generation the essence of the Falcon descended into a soul and that soul
surpassed even the shaman in wisdom, abilities and in the longing for the sky.
That evening, while sitting on the cliff and excitedly waiting for the
first stars to light up in the distance coated in mist, little Ilmailu
contemplated the Falcon once more. He knew it for sure that somehow he was able
to fly. At night his free spirit cleft the sky like a tiny owl – he saw the
village and the hills so clearly and next morning when he woke up he remembered
his dreams as real experiences.
Now, deep in thoughts, he caressed the brown feather held in his lap.
The other feathers wiggled as if they desired to float impatiently. Three times
three – the perfect form of the magical number: that might do it. Little
Ilmailu sighed and collected all his will. He fastened the nine feathers to the
sleeves of his tunic and to his rumpled, long, mahogany hair; then stood up and
backed nine steps. His free spirit jumped into his throat, suspecting that it
will break its chains soon. Running, then a quick leap into the air – the boy
gasped for a second, and then his wings unfolded, spread, flapped and shed some
purple feathers.
Little Ilmailu balanced and drifted on the borderline of daylight and
night, wakefulness and dreaming, on the star-spotted carpet of the night sky,
crying out in rapture. His eyes were watering in the biting wind; the unreal
radiance of the setting sun blinded him. He didn’t look down but held his head
up high to see the silver void and galaxies shining like golden ponds. His
newly gotten, ambitious wings took him higher and higher, to the glowing line
of dusk, where the world ceases to exist and consciousness burns out.
His body was found next day at the foot of the cliff, crushed but with a
sweet smile on his face, a smile of one who had found the meaning of his life.
Ma van advent negyedik vasárnapja, és ahogy kint egyre csökken a fény, úgy növekszik a házakban a gyertyák meggyújtásával. Ezzel a posttal véget ér a karácsonyi történetem, ám karácsonyi receptek továbbra is várhatók :) Az itt következő recept valójában egy leves bonbon-formába öntve. Az ötletet a Toll és fakanál blog egyik postjából vettem: chilis körteleves! Pikáns, izgató, ínycsiklandozó ízösszeállítás. Nem bírtam neki ellenállni. A bonbon meglehetősen finom lett: a krém szétolvad az ember szájában, és csak legvégül tűnik fel a chili aromája. Azt hiszem, finom desszert lehet egy karácsonyvárós téli ebéd végén.
Hozzávalók: 40 gr körtepüré 0,1 dl tejszín 1 kiskanál vaj 1 kiskanál méz 100+150 gr étcsoki chili Elkészítés: A körtét meghámozom, az előírt mennyiséget lábosba rakom és összetöröm (az enyém kellően szottyadt volt szerencsére :)). Hozzáadok egy pici tejszínt, egy kanál mézet és vajat, majd felmelegítem. Mielőtt forrni kezd, elzárom a tüzet és a masszához adok 100 gr étcsokit. Elkeverem, félreteszem hűlni. Közben elkészítem a kis csokikapszlikat. Miután megszilárdultak, kiveszem őket a formából és megtöltöm őket a körtés töltelékkel. A tetejükre szórok egy kis csilit, és kész is a bonbon.

felkeresem a püspök urat. Bánom, hogy hallgattam az eretnek beszédre és még
inkább, hogy hittem benne. Kész vagyok bűnbánatot gyakorolni, amelyet a püspök
úr kiszab rám.
Mit tudszGuilhèm és Miquèl pásztorokról, akik Raymond
családjánál álltak szolgálatban?
Amikor Raymondért jöttek, ők a város közelében legeltették a juhokat. Amint
eljutott hozzájuk a hír, magukhoz vették Estelát, aki viselős volt Raymond
gyermekével, és elmentek a katalán határ felé. Egy hónapja, amikor Bernard, a
pásztorunk visszatért, azt állította, hogy Ax-les-Thermes-nél látta őket, a
határ közelében.”
Angèle megkönnyebbült, mikor megtudta, hogy
Estela és a pásztorok megmenekültek. Amiel szerda este küldte el neki az újabb
jegyzőkönyv átiratát, amire sikeresen rálelt Toulouse-ban. Egyben felvetette,
hogy találkozzanak még egyszer karácsony előtt, mert valami fontosat akar
mondani. Végül abban egyeztek meg, hogy a Place Carnot-n találkoznak, ami
decemberben a La Magie de Noël fesztivál keretében forgalmas, színes,
szabadtéri vidámparkká változott: a karácsonyi vásár bódéiban megannyi
édességet, kézműves terméket árultak, a tér közepét korcsolyapálya foglalta el.
Mint mindig, ilyenkor is rengeteg turista számára kínált vonzó úti célt a bájos
városka karácsonyi forgatagával és az egyre rövidülő napok végén kivilágított
Citével.
Angèle a Rue Courtejaire és a tér találkozásánál
várta Amielt, aki néhány perc késéssel, kipirultan érkezett.
- Szia! Régóta vársz?
- Á, nem, nemrég érkeztem.
- Meghívhatlak egy forralt borra?
Angèle mosolyogva bólintott.
Elsétáltak a vásár bódéihoz, a borárushoz. A
papírpohárba töltött forralt bor kellemesen melegítette átfagyott kezüket.
- Nem megyünk fel a várba? Itt elég nagy a
zaj, útközben tudnánk beszélgetni – vetette fel Amiel. Angèle beleegyezett, így
elballagtak a Rue Aimé Ramondra, majd rákanyarodtak a Rue du Pont Vieux-re.
- Sokáig gondolkodtam, hogy elmondjam-e… -
szólalt meg Angèle. – Múltkor, miután találkoztunk, jártam egyet a Citében és…
láttam valamit, ami nagyon megrémisztett.
- Füstszag, parázsló szemek, keserves sírás?
Angèle megtorpant. – Te is találkoztál vele?
– suttogta.
Amiel biccentett. – Csütörtök este. Egyetlen
pillanatra láttam csak, utána eltűnt az árnyékban.
- Azt hiszem, ez ugyanaz a valami lehet,
amiről Pessolis írt a levelében. Tudom, hogy lehetetlennek tűnik, de minél
tovább töprengek rajta, annál biztosabb vagyok benne. A szívem ezt súgja. És
van még valami.
Felértek a Régi Hídra. Angèle megállt, hogy
megcsodálja a narancsszín fényben fürdő várat. Alattuk kitartóan ostromolta a
hétszáz éves híd pilléreit az Aude.
A lány nagy levegőt vett. – Nem hagyott
nyugodni ez a kísértethistória. Utánaolvastam az interneten, meg néhány
könyvben is, és azt találtam, hogy… bizonyos szellemek olyankor bukkannak fel
és kísértenek, ha valaki emlékezik rájuk. Az, hogy megpróbálja felhívni magára
a figyelmet és sír, állítólag mindkettő annak a jele, hogy elintézetlen dolga
maradt ezen a földön.
- Arnaud barátom is valami hasonlót mondott.
Pénteken leültünk beszélgetni, mert a csütörtöki eset egy kissé megrémített.
Szerinte nem szabad félni az ilyen kísértetektől, hanem értésükre kell adni,
hogy minden rendben van, és hogy ők már nem avatkozhatnak az élők dolgaiba.
Angèle egyetértően hümmögött. – Igen. Én is
ezt találtam.
- De gondolod, hogy ez a lény…
A lány bólintott.
Elhaladtak a St. Gimer templom előtt, ahonnét
már hallatszott a Cité zsongása.
- Örülök, hogy megtaláltad Pèire vallomását,
köszönöm, hogy elküldted. Egy kissé a szívemhez nőtt Raymond Garsie, tudod,
előfordul ilyen, amikor kutat az ember.
Amiel elmosolyodott. – Ó, hogyne. Olyan volt
az egész, mint egy detektívregény. Rengeteg iratot átnéztem, három napig
lemondtam miatta az összes csoportomat. Már kezdtem feladni, hogy bármit is
találok, amikor végre ráakadtam arra a jegyzőkönyvre. Elég rövid, de a lényeg
benne van. És végül Pèire is megúszta a sárga kereszt felvarrásával.
Felballagtak az Aude Kapu felé vezető meredek
úton.
- Milyen jó itthon lenni! – sóhajtott fel
Angèle, ahogy felnézett a Cité fenséges falaira. Végighúzta ujjait a köveken. –
Valahányszor itt vagyok, szinte érzem magam körül a történelmet – felnevetett. –
Azt hiszem, kicsit irigyellek is, hogy itt dolgozhatsz. Először engem is a
középkor fogott meg, de nem tudtam kibarátkozni a latinnal, aztán más témák is
érdekelni kezdtek.
- Tudom, mesélted. Ám gondolj bele: ha nem a 19.
századi historiográfiát kutatnád, sosem fedeztük volna fel Raymond történetét!
- Ez igaz. De azért néha még mindig bánom,
hogy nem voltam kitartóbb a latinnal.
Beléptek az Aude Kapun, a vidám zajok, az
ünnepi zene, illatok és fények egyből elárasztották az érzékeiket. A Château
Comtal felé indultak, az oda vezető úton minden vendéglő és kávézó egymást
túllicitálva igyekezett minél több vendéget elcsábítani. Kézművesek árulták
portékáikat, gyerekek viháncoltak sikongatva, kutyák ugattak, az emberek a
keskeny utcákon alig fértek el.
Angèle leállt egy árus pultja előtt, aki
helyben készült mézet árult. Amiel megvárta, míg mindent megnéz, majd
belekarolt, hogy el ne veszítsék egymást.
- Valami fontosat akartál mondani, azt írtad
az e-mailben – emlékeztette őt Angèle.
- Ja igen – Amiel zavartan mosolygott. –
Szóval… hogy is mondjam, hát elég régóta ismerjük egymást és arra gondoltam…
- Várj csak! – szakította félbe Angèle.
Hallgatózott. – Ne haragudj, azt hiszem el kell szaladnom egy percre. Megvársz?
Várj meg itt, kérlek! Rögtön visszajövök, egyetlen perc az egész – elfordult és
végigszaladt a Rue Viollet le Duc-ön. Igen, jól hallotta. A Rue de Toulouse
végéből jött a hang, az elhagyatott, sötét kis utcából.
Ráfordult a Rue du Moulin d’Avarra. Kétoldalt
régi-régi kőfalak húzódtak s az egyik előtt ott állt… Árnyék takarta az égett
arcot, panaszos hangja zavaros félelmet, szánakozást és aggodalmat keltett Angèle
lelkében. Nagyot nyelt, elszámolt magában háromig. Nem tudta, hogy van-e
értelme annak, amit tenni készül, de már elhatározta, hogy megpróbálja. Legyűrte
a félelmét és közelebb lépett. Az alak tekintete rászegeződött, ettől egy
pillanatra kirázta a hideg, de csak ment tovább. Orrát megcsapta a füstszag,
ahogy megállt karnyújtásnyira tőle. Majdnem leverte a lábáról az elmondhatatlan
szomorúság, önvád és az árulás felett érzett kétségbeesett keserűség. Önkéntelenül
a mellkasához kapott, mintha azzal csillapíthatná az érzelmeket. Hosszan
figyelte a gyér fényben alig kivehető arcvonásokat, elszorult a torka. Végül
összeszedte magát és kimondta amit eltervezett.
- Estela és a gyermek megmenekültek, nem kerültek
az inkvizíció elé. Rád várnak odaát.
A kísértet jajgatása elhalkult. Angèle-t
nézte, azután mintha felsóhajtott volna, alakja füstként foszlott szét az
éjszakában.
A lány fellélegzett. Nehezen bírt
megmozdulni, de végre megfordult. Az utca végében Amiel várta. Átölelték
egymást. Amiel kézen fogta, együtt sétáltak haza a fényben úszó
Citéből.
Only five days are left! Today is the fourth Sunday of advent and as the period of light decreases outside, it is growing inside the houses as the candles are lit. With this post my Christmas tale comes to an end, but you may still expect some Christmas recipes :) The following recipe is actually a soup in bonbon form. The idea cam from one of the posts of the Toll és fakanál blog: pear soup with chili! Spicy, exciting, enticing combination. I couldn't resist. The bonbon became quite tasty: the cream melts in the mouth and the chili shows up in the aftertaste. I think it could be a nice dessert at the end of a winter meal, preparing for Christmas :)
Ingredients: 40 gr pear puree 0,1 dl cream 1 small spoon of butter 1 small spoon of honey 100+150 gr dark chocolate chili Recipe:
I peel the pear and I blend the prescribed amount (fortunately mine was properly overripe :)). I add a bit of cream, a spoon of honey and butter, then I warm it up. Before it starts boiling, I turn off the stove and I add 100 gr dark chocolate to the mass. I stir it, and I put it aside. In the meanwhile I prepare the chocolate caps. After they solidfy, I take them out of the mould and I fill them with the pear filling. I sprinkle chili on the tops and the bonbon is ready.

Angèle was relieved when she learnt that Estela and the shepherds escaped. Amiel sent her the new protocol, that he'd successfully found in Toulouse, on Wednesday evening. At the same time he proposed that they should meet once more before Christmas as he had something important to say. Finally they agreed to meet at Place Carnot, which had turned into a buzzing, colourful, open-air amusement park in December in the framework of the La Magie de Noël festival: in the stands of the Christmas fair sweets and artisan products were sold, the middle of the square was occupied by an ice rink. As always, the charming town with its Christmas cavalcade and with the Cité lit at the end of the always shortening days, proved to be an attractive destination for tourists. Angèle was waiting for Amiel where Rue Courtejaire and the square met. He arrived a bit later looking flushed. - Hello! Have you been waiting long?
- No, I arrived a short time ago.
- May I invite you for some mulled wine?
Angèle smiled and nodded.
They walked to the huts of the fair, to the wine trader. The mulled wine poured into paper cups pleasantly warmed their freezing hands. - Won't we go up to the fortress? It's too noisy here; we could talk on the way there - suggested Amiel. Angèle agreed, so they strolled along the Rue Aimé Ramond, then they turned to the Rue du Pont Vieux. - I was thinking a lot whether I should tell you... - started Angèle. - Last time after we met I took a walk in the Cité and... I saw something that terrified me. - Smell of smoke, smouldering eyes, bitter crying? Angèle stopped. - You met him too? - she whispered.
Amiel nodded. – On Thursday evening. I saw him only for a second; then he disappeared in the shadow.
- I think this is the same thing that Pessolis wrote about in his letter. I know it seems impossible, but the more I contemplate, the more certain I become. My heart tells me that. And there is something else. They reached the Old Bridge. Angèle stopped in order to admire the fortress bathing in orange lights. Below them the Aude tenaciously besieged the pillars of the seven hundred-year-old bridge. The girl took a deep breath. - This ghost story bothered me so I read a bit on the internet and in some books and I found that... certain ghosts appear and haunt when they are remembered. If they try to call the attention of people and they cry, allegedly these are the signs of his unsettled issues. - Arnaud, my friend said something similar. We sat down to talk on Friday because that case on Thursday frightened me a bit. According to him one shouldn't be afraid of such ghosts, but they should be convinced that everything's all right and they can't interfere in the issues of the living. Angèle hummed in an agreeing manner. – Yes. I found the same too.
- But do you think that this creature...
The girl nodded.
They passed by the St. Gimer church, from where the buzz of the Cité could be heard. - I'm glad you found Pèire's testimony, and thanks for sending it to me. I kind of got to like Raymond Garsie; you know it happens when one is doing research. Amiel smiled. – For sure. It was like a detective novel. I looked through many documents; I cancelled all of my groups for three days. I was about to give it up when finally I found that protocol. It's quite short but it contains the essence of the story. And even Pèire managed to get off by sewing on the yellow cross. They walked up on the steep path to the Aude Gate. - How good it is to be home! – sighed Angèle, as she gazed up at the majestic walls of the Cité. She touched the stones with her fingers. – Whenever I'm here I almost feel that history surrounds me – she laughed. – I think I envy you a bit because you can work here. At first I was fascinated by the Middle Ages too but I couldn't get on well with Latin, then I became interested in other topics too.
- I know, you told me that. But think about it: if you weren't researching the historiography of the 19th century, we wouldn't have discovered the story of Raymond!
- That's true. But sometimes I still regret that I wasn't more persistent with Latin.
They entered the Aude Gate; the joyful sounds, festive music, scents and lights overwhelmed their senses. They went towards the Château Comtal. On the way there every restaurant and café tried to tempt as many guests as possible, by overbidding the others. Artisans were selling their products, children were sniggering and screaming, dogs were barking and the people could barely pass by the narrow streets. Angèle stopped at the hut of a merchant who was selling locally produced honey. Amiel waited for her then he took her arm in order not to lose each other. - You wanted to say something important, you wrote that in the e-mail – reminded him Angèle.
- Oh yes – Amiel smiled embarrassedly. – So… how shall I put it, we've known each other for some time and I was thinking…
- Wait! – interrupted Angèle. She listened intensly. – I'm sorry, I think I have to leave for a minute. Will you wait for me? Wait for me please! I'll come back soon, it'll take only a minute – she turned away and ran along Rue Viollet le Duc. Yes, she hard it right. The voice came from the end of Rue de Toulouse, from the abandoned, dark street.
She turned to Rue du Moulin d’Avar. Old stone walls ran on the two sides and he stood in front of one of them… Shadow covered the burnt face, his mournful voice woke confused fear, compassion and worry in the heart of Angèle. She swallowed and counted to three. She had no idea whether it made any sense what she was planning but she'd made up her mind to try it anyway. She overcame her fear and stepped closer. The creature fixed his gaze on her and for a second she shivered, but she still went on. When she stopped within arm's reach she could feel the smell of smoke. She almost collapsed when unutterable sadness, self-reproach and the desperate bitterness of treachery hit her. She instinctively reached for her chest as if she could soothe the feelings like that. She observed the features of his face in the dim light; she had a lump in her throat. Finally she pulled herself together and she said what she had planned. - Estela and the child escaped, they did not get in front of the inquisition. They are waiting for you on the other side.
The wailing of the ghost silenced. He looked at Angèle then as if he'd sighed, his body dissolved in the night. The girl respired. She could hardly move but finally she turned back. At the end of the street Amiel was waiting for her. They hugged each other. Amiel took her hand and they walked home together from the radiant Cité.
Szóval mit is csinál egy történész egész nap? Már amikor épp nem konferenciát szervez, könyvszerkesztésben segít, vagy tanulmányt ír (vagy konferenciaturizmuson vesz részt :D)? Hát épp egy másik tanulmány megírására készül: a levéltárban vagy a könyvtárban kutat. Na de mi az a kutatás? Többnyire egyhelyben ülésből és rizspapír vékonyságú dokumentumok ezreinek átnyálazásából - közben valami használható információmorzsa kereséséről -, valamint szimultán filozofálásból álló folyamat. Sajnos nálam általában a filozofálás része a hangsúlyos, mivel elég csak leülnöm és bedugnom a fülest, és máris valami másik univerzumban lebegek, mesékkel körülvéve :D Azért persze erre rásegítenek a kutatás tárgyai: a dokumentumok is, amelyek segítségével, mint egy időgéppel, az ember belelát a 60-80-100 (vagy még több) évvel ezelőtt élt emberek életébe. Igen, a történészé rettentő érdekes hivatás, olyan, mintha egy felfoghatatlanul hatalmas puzzle egyes darabkáit illesztené össze az ember: összefüggéseket kell kutatni, magyarázatokat lelni, és közben emberi sorsok tűnnek fel a szemünk előtt.
Mint például ennek a 70 évvel ezelőtt élt hivatalnoknak az az öt perce, ami alatt a kreativitás előtört belőle az unalmas munkaórák alatt (úgy látszik, nem csak én filozofálok meló közben :D)
És persze amikor épp egyetlen érdekes dokumentum sem kerül az ember kezébe, akkor hajlamos az aznap esti csokirecepten is filozofálni. A következőt már azóta tervezem, hogy megláttam a Citromdisznó blog egyik írójának postját a Facebookon a körtekaramellről. Azóta csak arra bírtam gondolni, hogy milyen kiváló bonbontöltelék lesz belőle, és tervezgettem, hogy milyen csokiba töltsem majd :D
A Citromdisznó blogon leírtak szerint elkészítem a körtekaramellt: a cukrot és a vizet együtt felfőzöm, míg el nem éri a kívánt színt és sűrűséget (az enyém egy kicsit sötétebbre sikerült, amihez még a brandy is hozzáadott). A körtét megpucolom és felvágom, majd összeturmixolom a citromlével és egy csipet sóval. A pürét a karamellbe öntöm, majd hozzákeverem a vajat is. Mikor kihűlt, adok hozzá a pikantéria kedvéért 2 cl brandyt.
A bonbonhüvelyeket elkészítem tejcsokiból. Száradás után beléjük töltöm a karamellkrémet. A mesebeli hatás eléréséért ecset hegyéről fehér lüszterport fújok rájuk.
So what is a historian doing all day long? Apart from organising conferences, helping in editing books or writing articles (or participating in conference tourism :D)? Well, she's preparing for the writing of another article: she's doing research in an archive or a library. Bu what the heck is researching? A process comprising mainly of sitting and going through thousands of documents made of rice-paper - in the meanwhile searching for some useful bits of information -, and simultaneously philosophising. Unfortunately in my case the philosophising part has more emphasis as for me it's enough to sit down, put in the earplugs and I'm already floating in another universe, surrounded by fairytales :D This is also assisted by the objects of the research: the documents, with whose help, like with a time-machine, one can gain insight in the lives of people who lived 60-80-100 (or even more) years ago. Yepp, the vocation of the historian is terribly interesting, it is like putting together the pieces of an incredibly huge puzzle: connections have to be researched, explanations have to be found and in the meanwhile the fate of people appear in front of our lives.
Like those five minutes of this clerk, who lived 70 years ago: creativity burst out of him during the boring working hours (it seems that I'm not the only one philosophising while working :D)
And of course when there is no interesting document in sight, then one tends to philosophise about the next chocolate recipe. This one has been planned since I saw the post of one of Citromdisznó blog's authors about pear-caramel (on the blog you can see phase photos about how to prepare the caramel). Ever since then I could only think about how awesome a filling it will become, and I was planning what kind of chocolate I should fill with it :D
Now this has been done too.
Ingredients:
200 gr pear
200 gr sugar
70 gr water
8-10 drops of lemon juice (they used ascorbic acid)
100 gr butter
salt
2 cl rum/brandy
170 gr milk chocolate
white luster dust
Recipe:
I prepare the pear-caramel: I boil the sugar and the water together until the desired colour and consistence are achieved (mine became a bit darker, also because of the brandy). I clean and cut up the pear, then I blend it with the lemon juice and a pinch of salt. I pour the puree into the caramel, then I add the butter too. When it gets cold, I also add 2 cl of brandy for the sake of fun :D
I prepare the bonbon shells of milk chocolate. After they get dry I fill them with the caramel cream. For getting a fairytale appearance, I blow luster dust on them from the tip of a brush.
