rózsalikőr-cseresznye // rose liqueur - cherry

Néha olyan egyszerű de nagyszerű ötleteket lehet látni a neten! Amint megláttam az alábbit, egyből tudtam, hogy muszáj elkészítenem. És mivel váratlanul megtaláltam a tavalyi rózsalikőrömet, ezért egyből fel is használtam a töltelékhez :)))

Hozzávalók:
200 gr tejcsoki
100 gr étcsoki
40 ml rózsalikőr
40 gr feketecseresznye
15 gr vaj
alufólia
lüszterpor

Elkészítés:
A töltelékhez kimérem a rózsalikőrt. Felaprítom a cseresznyeszemeket, és belekeverem. 100 gr étcsokit és a vajat felolvasztom vízgőz felett, majd összekeverem a rózsalikőrrel.
Levágok egy akkora darab alufóliát, ami beleillik a mágneses formába. Kicsit meggyűrögetem, és a forma aljába teszem. Temperálom a tejcsokit, elkészítem a bonbonok burkát. Miután megszilárdultak, megtöltöm őket a rózsás krémmel, és a hűtőbe teszem. Végül a maradék temperált csokival lezárom a bonbonokat. Miután kiütögettem őket a formából, különböző fémszínű lüszterporokkal lefestem a bonbonok tetejét.


Sometimes one can see such simple yet amazing ideas on the internet! As soon as I saw the one above, I knew that I had to do it. And since I accidentally found the bottle of rose liqueur which I made last year, I used it for the filling :)))


Ingredients:
200 gr milk chocolate
100 gr dark chocolate
40 ml rose liqueur
40 gr black cherry
15 gr butter
kitchen foil
luster dust

Recipe:
For the filling, I pour the rose liqueur in a small bowl. I cut up the cherries and add them in the liqueur. I melt 100 gr milk chocolate and the butter in a bain marie, then I combine it with the liqueur.
I cut off a piece of kitchen foil which fits into the magnetic mold. I crinkle it a bit and I place it in the bottom of the mold. I temper the milk chocolate and I prepare the bonbon shells. Once they get solid, I fill them with the rose cream, and I place the mold in the fridge. Finally, I seal the bonbons with the leftover milk chocolate. After they fall out of the mold, I paint the top of the bonbons with various colors of metallic luster dust.

vadcseresznye // wild cherry

A múltkori adag másik szereplője: a vadcseresznye bonbon :) Cseresznye és chili - ezzel a párossal nem igazán lehet mellélőni. Ezúttal két réteg töltelék került a burokba; friss gyümölcszselé és sötét, krémes chilis ganache.

Hozzávalók:
120+60 gr étcsoki
egy kiskanál vaj
chili
agaragar
70 ml cseresznyelé
vörös csillám, lüszterpor

Elkészítés:
A bonbonforma mélyedéseibe egy-egy adag fehér lüsztert kenek körkörös mozdulatokkal. Ezután következik a rózsaszín, majd egy leheletnyi lila.
Temperálok 120 gr étcsokit, elkészítem a burkokat. Majd jöhet az első réteg: a zselé. Az összeturmixolt cseresznyét leszűröm, és 35 ml-nyit kimérek belőle. Felteszem forrni, közben hozzászórok egy csipet agaragart. Amikor az feloldódott, leveszem a tűrzől a lét, és belekeverek két csipet chilit. Addig kevergetem, míg szobahőmérsékletűre hűl, akkor betöltök fél-fél kiskanálnyit a bonbonhüvelyekbe. 
Elkészítem az étcsokis ganache-t: a maradék cseresznyeléhez hozzákeverek 60 gr olvasztott étcsokit, egy kiskanál vajat és 3-4 csipet chilit. Amikor szép sima krémet kapok, befedem a zselés tölteléket vele. A formát hűtőbe teszem egy órára, azután kiveszem és a maradék temperált étcsokival lezárom.
Végül egy-egy vörös csillám darabkát ragasztok a csokik tetejére egy kis olvasztott étcsokival.



The second round that I made last time: wild cherry bonbons :) Cherry and chili - a combination that hard to mess up. This time two layers were put in the shell; fresh fruit jelly and a dark, creamy chili ganache.

Ingredients:
120+60 gr dark chocolate
one small spoon of butter
chili
agar
70 ml cherry juice
red glitter, luster dust

Recipe:
With circular movements, I paint a layer of white luster in the cavities of the mold. Then comes the pink and a dash of lavender.
I temper 120 gr dark chocolate and I prepare the shells. Then the first layer is the jelly. I sieve the blended cherries and take 35 ml of the juice. I heat it with a pinch of agar 
until it starts boiling. When that dissolves, I turn off the stove and I add two pinches of chili in the liquid. I stir it until it cools to room temperature, then I pour half a spoonful of it into every bonbon shell.
I prepare the dark chocolate ganache: I combine the leftover cherry juice with 60 gr melted dark chocolate, a small spoon of butter and 3-4 pinches of chili. When I get a nice smooth cream, I cover the jelly filling with it. I put the mold in the fridge for an hour, then I cap the bonbons with the leftover tempered dark chocolate.
Finally I glue one piece of red glitter on the top of each bonbon.

cseresznyés-marcipános // cherry-marzipan

Ma van a költészet napja. Mások a FB-on postolgatják kedvenc verseiket, én viszont itt fogom ezt megtenni. Több is van belőlük, persze. Kedvenc költőim közé tartozik a tragikus sorsú Radnóti, Kosztolányi és Tóth Árpád. De most egy olyan verset fogok idemásolni, amibe első olvasásra beleszerettem, és azóta is tudom kívülről. Ritka az olyan vers, aminek ennyire magával ragadó, sejtelmes a hangulata, aminek az olvasásakor az ember megborzong, mert úgy érzi, a költőnek sikerült elkapnia azt az időn túli érzést, az élet titkát.
Az alábbi csokit anyukám születésnapjára készítettem. Ő nagy marcipánrajongó, úgyhogy nem is volt kétséges, hogy kétféle marcipános bonbont kap majd a születésnapjára :D


Hozzávalók:
100 gr marcipán
0,3 dl pálinka
40 gr aszalt cseresznye
150 gr étcsoki
lüszterpor

Elkészítés:
A cseresznyét 3-4 órára pálinkába áztatom. Amikor kellően átvette az alkohol ízét, a pálinka pedig megszínesedett tőle, az egészet aprítógépbe töltöm a marcipánnal együtt. Addig darálom, míg egynemű masszát nem kapok.
Temperálom az étcsokit, elkészítem a bonbonburkokat. Miután megszilárdultak, kiskanál segítségével megtöltöm őket a marcipánkrémmel. Ezúttal nem szükséges hűteni, mert a töltelék elég szilárd halmazállapotú. Alaposan lenyomkodom a krémet, temperálom a maradék étcsokit, és lezárom a bonbonokat. Vörös lüszterporral díszítem a kész csokikat.

Ady Endre: Párisban járt az Ősz

Párisba tegnap beszökött az Ősz.
Szent Mihály útján suhant nesztelen,

Füstösek, furcsák, búsak, bíborak,

Today is the day of poetry in Hungary. Others post their favourite poems on FB, I am going to share mine here. I have many, obviously. My all time favourite poets are Miklós Radnóti, Dezső Kosztolányi and Árpád Tóth. But now I will copy a poem, which I fell in love with instantly and I know it by heart ever since. Such poems are rare, which are fascinating, have such a mysterious tone; when one reads them, he has goosebumps because he feels that the poet managed to grasp that feeling beyond time, the secret of life.
This chocolate was prepared for my mum's birthday. She is a big fan of marzipan, so it was kind of obvious that I'd make her two different kinds of chocolates with marzipan :D


Ingredients:
100 gr marzipan
0,3 dl pálinka
40 gr dried cherry
150 gr dark chocolate
luster dust

Recipe:
I soak the cherries in pálinka for 3-4 hours. When they absorb the alcohol and the pálinka gets a bit of colour from them, I put the whole thing in a kitchen grinder, together with the marzipan. I grind them until I get a smooth mass.
I temper the dark chocolate; I prepare the bonbon shells. After they get dry, with a small spoon I fill them with marzipan cream. This time cooling is not necessary, as the filling is quite solid. I push down the cream, then I temper the leftover chocolate and I seal the bonbons. I decorate them with red luster dust.

Autumn slipped into Paris yesterday
