citrom-áfonya // lemon-blueberry

VÉGRE VÉGE a nyárnak!!
Na de most!

35 gr cukor
25 gr vaj
étkezési keményítő
egy kupak whisky
60 ml áfonyapüré
pektin
200 gr fehércsoki
ételfesték

Elkészítés:
A vajat felolvasztom, közben a citrom héját lereszelem, a levét kifacsarom. Kimérem a cukrot is.
Sárga festékkel összespriccelem a bonbonforma mélyedéseit. Temperálom a fehércsokit, elkészítem a burkokat. Kiskanállal egy-egy adag áfonyapürét teszek beléjük, amit letakarok a citrom curddel. A formát hűtőbe teszem pár órára, végül temperált fehércsokival lezárom a bonbonokat.

FINALLY summer is over!! Others might look forward to it and love it, I find this heat unbearable, not to mention that I couldn't make chocolate for three months (therefore, I was forced to try baking but I'll write about that another time). Due to this and other reasons, it was a difficult period; and as for me, half a year's rain may fall as long as there's no horrid 40 degrees.
But now! It's time for autumn flavors. I started with blueberries, and after some brainstorming, I decided to add lemon curd - with a white chocolate shell in order to counterbalance the sour flavors. I prepared the lemon curd without eggs (I don't like to eat raw eggs ever since the whole family caught salmonella :D). It became quite good; I think I'll make some more, it will be good as a gift too.

Ingredients:
one lemon
35 gr sugar
25 gr butter
starch
whisky
60 ml blueberry puree
pectin
200 gr white chocolate
food paint

Recipe:
I melt the butter; in the meantime I grate lemon zest and squeeze the lemon juice. I measure out the sugar too. I mix the starch in the butter, then add the other ingredients. Finally, I pour a little bit of whisky in it. I simmer the lemon curd on low heat for some minutes, and when it gets dense, I turn off the heat.
I squeeze the blueberries and sieve its juice. I boil the liquid and thicken it with two pinches of pectin. I put the puree aside.
I sprinkle yellow paint in the cavities of the mold. When the paint gets  dry, I paint the middle of the cavities purple with the help of a sponge. I temper the white chocolate and I prepare the bonbon shells. I put a small portion of blueberry puree in them, which I cover with the lemon curd. I put the mold in the fridge for some hours. Finally, I seal the bonbons with tempered white chocolate.

Whisky

Az ismételt helyreállítás a 80-as években fejeződött be.

200 gr tejcsoki
100 gr étcsoki
40 ml Ballantine's whisky
egy kiskanál vaj
lüszterpor

Elkészítés:
Kimérem a whiskyt. Ezzel kész is a töltelék.
A hatszögletű bonbonforma egy-egy harmadát kifestem bronz színű lüszterporral. Amikor megszáradt, temperálom a tejcsokit és elkészítem a burkokat. Ha megszilárdultak, megtöltöm őket a krémmel, a formát pedig a hűtőbe teszem pár órára. Végül temperálom a maradék tejcsokit, és lezárom a bonbonokat.

For me, the most beautiful building of Budapest is the original not-original Matthias Church (aka Church of Assumption). It sits on the Castle Hill like a lacy wonder; elegant, splendid. A proof that one medieval Gothic architecture existed here - even though the stones themselves are not medieval, the building itself is.
This wonderful church survived the storms of a thousand years, it was reborn from time to time and it is still here for us.
Originally, the church was founded by King Stephen I (first king of Hungary) in 1015; however, no written record exists about this; we only know it from tradition. According to Béla IV's orders, the first reconstruction happened after the Mongol invasion and ended in 1269. The building had a classical Gothic style at this phase. A hundred years later King Louis the Great reconstructed it, then during the reign of King Matthias a bell tower was erected with the king's symbol, the raven on top.
Under the Turkish occupation, the building was damaged, then transformed into a mosque in 1541. In 1686, it switched owners again: after Buda was retaken, the Jesuit Order received it and they restored it in Baroque style, moreover, they also built other edifices around it. In 1723 the church burnt down, and thus a major portion of the medieval elements were lost.
The rebirth of the Matthias Church started in 1874, when it was renovated under Frigyes Schulek's supervision. Schulek tried to reconstruct the church's medieval image; therefore during the rebuilding work, in some places the walls were demolished to the ground. The interior decoration was the responsibility of artists Bertalan Székely and Károly Lotz. Thus, the church revived in its old-new appearance: a Gothic, neo-Gothic, Art nouveau wonder.
Of course, its story does not end here, because after its heydays, two world wars came and during the second one, it was heavily damaged again and served as a German camp kitchen and as a Soviet stable. But these were only fleeting moments compared to the centuries of glory. The renovations finished in the 1980s.
Fun facts: Franz Joseph I and Queen Elizabeth were crowned here; during WW2 the beautiful windows designed by Székely and Lotz were hidden and thus you can see the originals even today; the roofs are covered with handmade Zsolnay tiles; this was the place where Franz Liszt's Coronation Mass was performed for the first time.
I saw this amazing photo of the church about a year ago in a Facebook group. I saved it because I decided that I wanted to draw it. And now, finally I finished it.

This time I also brought a chocolate, which I tried to make elegant inside and out. The filling is really simple, still it's silky and strong; the decoration is modest :)

Ingredients:
200 gr milk chocolate
100 gr dark chocolate
40 ml Ballantine's whisky
small spoon of butter
luster dust

Recipe:
I measure out the whisky. In a bain-marie I melt the dark chocolate and the butter then I combine it with the whisky. The filling is thus ready.
With bronze luster dust, I paint one-third of the hexagonal cavities of the mold. When it sets, I temper the milk chocolate and I prepare the shells. After the chocolate gets solid, I fill the shells with the filling and put the mold in the fridge for some hours. Finally, I temper the leftover milk chocolate and I seal the bonbons.

40 ml whisky
vanília, kardamom, fahéj
transzferfólia

Elkészítés:
A transzferfóliát méretre vágom és a mágneses bonbonformába helyezem. Temperálok 200 gr étcsokit, elkészítem a bonbonhéjakat.

These whisky bonbons were made for a birthday :) on that week when we didn't have to melt in the 40 degrees. I paired the whisky with warm, smokey-exotic spices again; I think these fit together the best. It resulted in a special bonbon with intense flavour.

Ingredients:
100+200 gr dark chocolate
40 ml whisky
vanilla, cardamom, cinnamon
transfer sheet

Recipe:
I cut out a piece of the transfer sheet and place it into the magnetic mould. I temper 200 gr dark chocolate and I prepare the bonbon shells.
In a bain-marie I melt 100 gr dark chocolate and I combine it with whisky; I also add the spices. I used a bit more cardamom in order to enhance the flavour of the whisky. I put the mould in the fridge for an hour. Finally, I temper the leftover dark chocolate and I seal the bonbons.

Pippin

Most, hogy újraolvastam a Gyűrűk Urát, ismét megállapítottam, hogy Pippin az egyik kedvenc szereplőm :) Benne van élet, vidám, bumfordi, kíváncsi, jókedvű, elszánt, szeret énekelni, egyszóval igazi karakter. Na, nem is volt nehéz kitalálni, milyen csoki illik hozzá. A választásom egyértelműen a meggyre esett.

20 ml whiskey
egy kiskanál vaj
60 gr meggy
agaragar
lüszterpor, kakaóvaj

Elkészítés:
Először ragasztószalagból levágott darabkákat ragasztok a bonbonforma mélyedéseibe, hogy megkapjam a választóvonalat. Ezután előbb aranyszínű, majd vörös lüszterporral fröcskölöm össze a mélyedéseket, úgy, hogy középre menjen a java. Végül eltávolítom a ragasztószalagot. Temperálom a fehércsokit, elkészítem a burkokat.
Ezután jön a meggyzselé (én mirelit magozott meggyet használtam).
Most jön a whiskeykrém. A krémet a megszilárdult meggyzselére rétegezem. Hűtőbe teszem a formát, és amikor a krém megszilárdul, temperálom a maradék fehércsokit és lezárom a bonbonokat.

Now that I re-read the Lord of the Rings, I acknowledged again that Pippin is one of my favourite characters :) there's life in him, he's cheerful, clumsy, curious, happy, determined, he loves to sing, he's basically a real character. It wasn't hard to find out what kind of chocolate fits him. I chose sour cherry. I wanted to pair it up with alcohol and as I was browsing through the bottles, I found the whiskey. Since one of Pippin's favourite activities is smoking the pipe, I had the other ingredient. Sour cherry jelly and smokey-creamy whiskey-dark chocolate ganache, hmm...

Ingredients:
150 gr white chocolate
60 gr dark chocolate
20 ml whiskey
one spoon of butter
60 gr sour cherry
agar
lustre dust, cocoa butter

Recipe:
First, I tear off pieces of the tape and stick them into the cavities of the mould to get the separating line. Then I sprinkle the cavities first with golden, then with red lustre dust in a way that the bulk of it goes in the middle. Finally I get rid of the tape. I temper the white chocolate and I prepare the shells.
Then comes the cherry jelly (I used frozen pitted cherries). I blend the cherries and I sieve them. I boil the liquid with a quarter spoon of agar, then I leave it to cool. When it's not too hot anymore, I pour a bit into every cavity.
Now comes the whiskey cream. In a bain marie I melt the dark chocolate and the butter, then I combine it with the whiskey. I put a layer of the cream on the top of the cherry jelly. I place the mould in the fridge and when the cream sets, I temper the leftover white chocolate and I seal the bonbons.

Ekkor leveszem a tűzről, hozzáadom a vajat. Ekkor hagyom kihűlni, végül belekeverem a whiskyt is.
Temperálok 150 gr étcsokit, elkészítem a kis csokicsészéket. Hűtőbe teszem őket, majd amikor megszilárdultak, kirázom őket a csokiformából. Megtöltöm a karamellel, dísznek hasonló színű cukorgyönggyel szórom meg.

I don't think too much commentary is needed here. The whisky-orange combination had been in my head for a while but when I glimpsed the blood oranges during shopping, I knew that this will be the ideal solution: the bitter taste of the blood orange fits burnt caramel perfectly, thus the end product with the whisky won't glue together your lips. And of course it all went into dark chocolate cups with high cocoa percentage. I believe this combination requires some bluesrock again :)
p.s. you can still play in my Lord of the Rings challenge, on my Facebook page ;)

Ingredients:
150 gr dark chocolate
80 gr sugar
half tablespoon butter
one blood orange
whisky
candy pearls

Recipe:
I caramelize the sugar: I let it warm up with occasional stirring, until it melts and its color becomes dark. Then I take it off the heat and I add the butter. I shred the peel of the orange and squeeze half of the orange in it. I put it back on the heat and I stir it until the caramel becomes a homogeneous mass. Then I let it cool down and finally I add the whisky.
I temper 150 gr dark chocolate, I prepare the chocolate cups. I put them in the fridge and when they become solid, I shake them out of the mould. I fill them with caramel and sprinkle candy pearls on them as decoration.

Southern rock whisky truffles

Karcos, őszinte stílus, amire rányomta bélyegét a déli kultúra, hagyományok, miliő. Itt most csak két dalt teszek be ízelítőnek, de remélem kedvet kaptok a további böngészéshez.
Az alábbi trüffelt pedig egy kedves barátom ötlötte ki a southern rockhoz: a két fő összetevő természetesen whisky (mi más), és a Mississippi partvidékéről származó pekándió - igazi déli ízkombináció :) A whisky füstös ízét némi fűszerezéssel igyekeztem hangsúyosabbá tenni.

Összetevők:
100+100 gr étcsoki
30 gr pekándió
35 ml whisky
egy kiskanál vaj
egy kiskanál méz
3 csipet ánizs
3 csipet vanília

Elkészítés:
Vízgőz felett megolvasztok 100 gr étcsokit. Elkeverem a vajjal, a mézzel, a fűszerekkel, végül hozzáadom a ledarált pekándiót. A masszát hagyom kihűlni.
Kész is a trüffel!

Southern rock is a fortunate hybrid of rock music: it developed in the Southern parts of the United States, from the mixture of rock, country and blues. Generally it is characterised by rich guitar sound. Names such as Lynyrd Skynyrd, ZZ Top and Blackfoot hallmark this genre. Even though from the end of the 80s its significance diminished, in the 2000s it renewed and the Black Crowes, Gov't Mule and other new bands popularise it. It is an honest, unpretentious style, formed by Southern culture, traditions and backdrop. I embedded only two songs here, but hopefully you'll feel like browsing further.
These truffles were found out by a friend of mine for Southern rock: the two main components are whisky (what else) and pecan nuts, originating from the region of the Mississippi - a real Southern combination :) I enhanced the whisky's smoky flavour with spices.

Ingredients:
100+100 gr dark chocolate
30 gr pecan nuts
35 ml whisky
a small spoon of butter
a small spoon of honey
3 pinches of anise
3 pinches of vanilla

Recipe:
In a bain-marie I melt 100 gr dark chocolate. I mix it with butter, honey, spices, and finally I add the shredded pecan nuts. I let the mass cool down. When it gets a bit solid, I take bits with a spoon and I shape them into balls.
I temper 100 gr dark chocolate. Pinned on a kitchen needle, I roll the balls in the chocolate, I shake off the excess, then I set them on parchment paper and I let the chocolate get solid. The truffles are ready!

Temperálom a tejcsokit, elkészítem a bonbonok burkát. Miután megszilárdultak, megtöltöm őket a krémmel, a formát hűtőbe teszem.

Some time ago a bottle of Ballantine's whisky ended up in my kitchen. Obviously the first thing was that I put it in chocolate :D To be frank, whisky belongs to those drinks that I just can't drink, however gourmands praise it. But combined with chocolate, it is pretty good :) (although this could be stated about almost every kinds of food, apart from tripe stew :D)
And this was the first chocolate of 2019 :) In addition, I'll tell you what I will do this year instead of useless new year's resolutions, which I consider stupid anyway.
If we perceive life as a movie, depending on their personality and life situation, everyone fills in different roles. There are people, who are protagonists, others are directors and again others are extras. I like to think that I am both the director and the main character of my life :) When I don't feel like this, then I must make corrections. Namely with experiences that I create for myself. With my beloved job, for which I struggled a lot, with travelling, a concert, meeting friends, with my countless hobbies... it doesn't really matter, because usually I try to enjoy every single day. And if by chance I failed to arrange an adventure for myself, then life takes care of that. Haha, this is funny and wonderful at the same time. So I saw the following idea on facebook and I immediately knew that it suits me and that it will be a great addition to this year. The idea is the following: put aside a jar and every week, write on a piece of paper, what was the best experience you had that week. Put it in the jar, then close it. At New Year's Eve, open the jar and read about what an amazing year you had! Today (but even tomorrow :)) you can still start it.

Ingredients:
80 gr dark chocolate
0,2 dl whisky
150 gr milk chocolate
2 pinches of cinnamon
2 pinches of vanilla
2 pinches of anise
2 pinches of allspice
luster dust

Recipe:
In bain-marie, I melt the dark chocolate. I combine it with the whisky and I add the spices.
I temper the milk chocolate, I prepare the bonbon shells. After they get solid, I fill them with the cream and I put the mould in the fridge. An hour later, I take it out, I temper the leftover milk chocolate and I seal the bonbons. In some drops of spirit, I mix a bit of golden luster dust and I paint the shell of the bonbons. If you want "antique" effect, once is enough, if the goal is "dense" gold, then paint them twice.
