szedres-gyömbéres // blackberry-ginger

A macskakő kopogott lakkcipője sarka alatt, amint apró, sietős léptekkel, suhogó szoknyával haladt végig a Belvedere utcán. Fűtötte az indulat, arca egészen kipirult, magában mormolt, amit csak akkor vett észre, amikor a szembe jövő férfi kissé illetlenül megbámulta, mielőtt elkapta a tekintetét. Nagy levegőt vett, visszafojtotta érzéseit, leszaladt a kormányzói palota mellett a lépcsősoron, végig a Municipio úton. Bal kéz felé az óváros szélén épült új és régi házak sorakoztak: szürke és sárga falak, apró erkélyek, zárt zsaluk, behúzott függönyök. Minden ilyen a Nagy Háború kezdete óta - bár lenne már vége.

The cobblestones clacked under her heels as she proceeded along the Via del Belvedere with small, hasty steps and swishing skirt. Temper heated her, her face was blushing and she was murmuring, which she realized only when the man coming across her way stared at her a bit impolitely before looking away. She took a deep breath, suppressed her feelings and ran down the stairs beside the governor's palace, then along the Via del Municipio. On the left hand side, on the border of the old town, old and new houses lined up: grey and yellow walls, tiny balconies, closed shutters, pulled curtains. Everything is like that since the Great War had begun - if only it came to an end finally.

Útja keresztezte a Korzót, innét már látszott a kikötő és a korábban oly forgalmas Mária Terézia rakpart. Most puszta hullámtörőként fogta fel a tenger zöld hullámait, csupán néhány személyszállító hajó ringott hátrébb, a Baross-kikötőben. Befordult balra. Elszorult a szíve az elhagyatott Korzó láttán: ahol korábban pezsgett az élet; nyelvek bábeli zűrzavara, különböző rendű és rangú emberek sokasága nyüzsgött, most alig egy-két járókelő sietett a dolgára.

Her way crossed the Korzo, from there the port and the formerly so busy Maria Theresa quay could be seen. Now it caught the green waves of the sea as a mere breakwater, only a couple of passenger ships rocked in the back, at the Port Baross. She turned left. Her heart sank at the sight of the abandoned Korzo, which had previously been bustling with life, the chaos of languages, the multitude of people from various backgrounds. Now barely a couple of passers-by hurried along.

Amint közeledett céljához, egyszeriben kellemetlenül forrónak érezte az eddig megnyugtatóan melegítő őszi napot. Leült az óratoronnyal szemben álló padra, kezével legyezte magát.
"Mégis hogy gondoltad ezt, Adriana, nem elég, hogy fiatalabb nálad, még csak nem olasz! Egy pénzügyőr!" 
Apja fel-alá rótta a köröket a szalonban, míg a maga visszafogott módján mérgelődött. Időről időre leányára nézett, szúrós pillantása súlya alatt Adriana még most is úgy érezte, leginkább elbújna valahová, hogy ne kelljen szembenéznie vele. De nem, ezúttal ki kell állnia magáért. Nagy levegőt vett, hogy közbeszóljon, de apja folytatta:
"Verd ki a fejedből, nem engedélyezem ezt a viszonyt! Keress magadnak tisztes, jóravaló férfit, van épp elég a városban!"
Adriana tekintete támogatást remélve édesanyjára villant, aki a zöld selyemmel borított karosszékében ült az ablak előtt, ám ő néma maradt.
"Édesapám, Gyula tisztességes ember. Rendes munkája van, birtoka, és mindenek felett jó hozzám. A városban valóban van sok férfi, de egyikük sem kérte meg a kezem, és én nem akarok pártában maradni. Kérlek, édesapám..."
"Nem akarok erről többet hallani. Az eljegyzést felbontod, és megmondod annak az embernek, hogy többé nem találkozol vele."

As she approached her destination, suddenly the tranquil, warm autumn sunshine felt unpleasantly hot. She sat down on the bench in front of the clock tower, she fanned herself with her hand.
"What were you thinking, Adriana, him being younger than you is one thing, but he is not even an Italian! An excise officer!"
Her father had been walking up and down  the length of the parlour while he had been quarreling in his moderate way. From time to time he had looked at his daughter; under the weight of his piercing gaze Adriana had felt like hiding even now so she wouldn't have to face him. But no, this time she must stand up for herself. She had taken a deep breath to interrupt, but her father had continued:
"Forget it, I do not approve this relationship! Look for a respectable, good man, there are plenty in the city!"
Adriana had glimpsed at her mother for support, who had been sitting in front of the window in her armchair covered in green silk, but she had remained silent.
"Father, Gyula is a decent man. He has a good job, he has an estate and above all, he is good to me. There are indeed many men in the city, but none of them asked for my hand and I do not want to remain unmarried. Please, father..."
"I don't want to hear about this any more. Call off the engagement and tell that man that you will never meet him anymore."

Adriana keze ökölbe szorult. Hamarosan betölti a huszonkilencet, az összes barátnője házas, és most, hogy végre neki is alkalma adódik, a szülei ellenzik a házasságot...
Gyula holnap visszatér Magyarországra, egyetlen délutánja maradt a döntés meghozatalára - amit addig odázna, ameddig csak lehet. 
Felkelt, elsietett a hotel előtt. Elsétált a Recina folyóhoz, majd tovább, el a Susak városrész vágányai mellett. Tekintete megakadt a késő délutáni napfényben sárgálló Tersattón, a középkori váron s az alázatosan az erőd lába alá simuló parkon, és szívét megtöltötte az otthona iránt érzett szeretet. Akárhogyan is lesz, sosem fogja elfelejteni Fiumét: az óvárosban két épület közé szorult, általuk támogatott római kaput, a dombokon ülő mediterrán házikókat, a kikötő és a Korzó klasszicista, cifra palotáit, a várost minden porcikájában átitató kulturális és nyelvi sokszínűséget, és a tengert...

Adriana clenched her fist. Soon she would turn twenty-nine, all of her friends are married and now that finally she had the chance, her parents are against her marriage...
Gyula would return to Hungary the next day; she had only one afternoon to make up her mind - which she would postpone as long as she could.
She stood up and hurried away from the hotel. She walked to the Recina river, then onward along the rail tracks of Susak district. The Tersatto, the medieval fortress bathing in the yellow afternoon sunshine and the park snuggling to the castle's foot caught her eyes; her heart filled with love for her hometown. Whatever happens, she would never forget Fiume: the Roman gate blocked between and supported by two houses in the old town, the mediterranean cottages sitting on the hills, the classicist, ornamented palaces of the Korzo and the port, the cultural and linguistic diversity impregnating every bit of the city, and the sea...

A Tersatto felől zöld folyamként hömpölygött le az erdő, hogy a tengerparton parkká szelídüljön, lombernyői hűvössé szűrték a napsugarakat. Adriana ráérősen lépkedett a virágokkal szegélyezett ösvényen, míg a fák mögött átsejlő tengerparti villákat nézte. Mily békésnek tűnik minden - pedig valójában a családapák és fiaik már nincsenek ott azokban a szobákban, és ki tudja hazatérnek-e valaha. Hirtelen elhatározásból jobbra kanyarodott, ahol két ház kőbábos kerítése között vékony gyalogút vezetett a tengerhez. Megállt a sziklapárkány tetején kialakított kilátón. Mint mindig, a tükörzöld vízfelszín fodrozódása elandalította, gondolatai lustán görögtek tova a felhők takarta horizont felé, ahol Krk és Cres szigeteit ringatta a Kvarner-öböl vize.
Maga elé idézte a férfi arcát. Becsületes, nyílt tekintete van; ritkán mosolyog, de a mosolya szívet melengető. Meleg a keze, udvarias, csendes, ám a felszín alól időről időre előbukkan sajátos humora.

The forest flowed from Tersatto like a green river in order to tame into a park at the seaside; its foliage strained and cooled the rays of the sun. Adriana walked leisurely along the path lined with flowers while she was watching the seaside villas behind the trees. Everything seems so peaceful - even though fathers and sons were not there in those rooms any more, and who knows whether they would ever return. Suddenly she turned right, where between the stone fences of two houses a narrow path led to the sea. She stopped at the lookout built on the top of the cliff. As always, the rippling of the mirror-green water soothed her; her thoughts lazily rolled towards the horizon covered in clouds, where the water of the Kvarner Bay rocked the Krk and Cres islands.
She recalled the man's face. He had an open, honest gaze; he rarely smiled but his smile was heart-warming. His hands were warm, he was polite, silent, but his characteristic humor appeared from time to time.


Adriana felegyenesedett. Amint elindult vissza a központ felé, léptei határozottan koppantak a köveken. Elsétált a folyó felett a hídon, és már ott is volt a Korzón. Belépett a hotel kapuján. A recepción öltönyös, ápolt szakállú úr fogadta udvarias mosollyal.
- Üzenetet szeretnék hagyni. Kaphatnék egy papírt és tollat?
- Hogyne, hölgyem.
Míg a tollal bajlódott, Adriana a papírlapra meredt. Végül a lapra illesztette a tollhegyet. A kocka el van vetve.
"Gyulám,
Bár a szüleim ellenzik a kapcsolatunkat, én úgy döntöttem, veled tartok. Találkozzunk holnap a vasútállomáson, hajnali 5 óra 30 perckor indul a vonat Károlyváros felé. Kérlek, ha fenntartod ígéretedet, amit nekem tettél, légy ott időben - csak ily módon tarthatom be én is az ígéretemet, amit tenéked tettem.

Adriana straightened up. As she set off for the centre, her steps clacked determinedly on the stones. She walked across the bridge on the river and she was there at the Korzo already. She entered the hotel. A man in suit, with neat beard and a polite smile greeted her.
"I would like to leave a message. May I get a paper and a pen?"
"Certainly, madam."
While she was fiddling with the pen, Adriana stared on the paper. Finally she placed the nib on the paper. The die is cast.
"My Gyula,
Even though my parents are against our relationship, I decided that I would come with you. We shall meet at the train station tomorrow; a train departs for Karlstadt at 5.30 o'clock at dawn. Please, if you would keep your promise that you made to me, be there on time - that is the only way I can keep my promise that I made to you.

Az alábbi bonbonokat valójában azért készítettem, hogy kipróbáljam az új, szépséges transzferfóliámat 😍 Persze a töltelék is igen fincsi lett, egy kicsit visszahozta a nyarat a szürke őszbe :)


Hozzávalók:
150+50 gr fehércsoki
40 gr szederpüré
5 csipet gyömbér
egy csipet agaragar
transzferfólia

Elkészítés:
A szederpürébe beleszórom az agaragart és ízlés szerint gyömbért, és felmelegítem. Addig forralom, amíg az agaragar fel nem olvad benne. Míg hűl a püré, adok hozzá 50 gr fehércsokit, és ha nem elég pikáns, még gyömbért.
Méretre vágom a transzferfóliát, belehelyezem a mágneses formába. Temperálok 150 gr fehércsokit, elkészítem a bonbonok burkát. Miután megszilárdult, megtöltöm az addigra kocsonyás szederkrémmel, és hűtőbe helyezem egy kis időre. Végül ismét temperálom a fehércsokit, és lezárom a bonbonokat.



I made these bonbons in order to try my new, beautiful transfer sheet 😍 Of course the filling is very yummy, it brought back a bit of summer in the autumn :)


Ingredients:
150+50 gr white chocolate
40 gr blackberry puree
5 pinches of ginger
one pinch of agar-agar
transfer sheet

Recipe:
I put the agar-agar in the in the blackberry puree, and also some ginger, then I warm it up. I boil it until the agar-agar melts. While the puree gets cooler, I add 50 gr white chocolate and if it's not spicy enough, a bit more ginger.
I cut up the transfer sheet and place one piece in the magnetic mould. I temper 150 gr white chocolate, I prepare the shells. After they get dry, I fill them with the jelly-like blackberry cream and I put the mould in the fridge for some time.Finally I temper the leftover white chocolate and I seal the bonbons.

extra fahéjas-meggyes // cinnamon-cherry

Ha ez még nem lenne egyértelmű: imádom a hivatásomat, és valószínűleg szellemi harakirit követnék el, ha valaha fel kéne adnom, és mást kéne csinálnom. A történész-lét sokféle készséget megkíván, úgy mint előadói, oktatói képességek, kutatás, írás és így tovább. Mostanában pedig rákaptam az ismeretterjesztés gondolatára, elvégre mit ér az egész, ha az ember elvonul az elefántcsonttornyába, ahol saját kutatásának él, az eredményeket meg nem osztja meg a nagyközönséggel?! Pedig épp ez a lényege a kutatásnak: az új ismeretek átadása, beépítése a köztudatba. 
Épp ezért most kísérlet következik arra, hogy egyetlen forrást hogy lehet(ne) érdekesen bemutatni. 



Tehát Sík Sándor tanár volt a Horthy Miklós Tudományegyetemen. Nem, ez nem Horthy halála után történt, hanem még életében, vicces is lehetett leugrani megnyitni a tanévet, "én, Horthy Miklós üdvözöllek benneteket a Horthy Miklós Tudományegyetemen" :D 
Sík Sándor hivatali esküjének hosszadalmas és bürokratikusan megfogalmazott szövege tulajdonképpen két csomópont köré épül: az egyik, hogy betartja Magyarország törvényeit, a másik pedig, hogy tiszteletben tartja az egyetem szabályait, hivatali kötelességeit lelkiismeretesen teljesíti. 
Na jó, és mi a fene olyan érdekes ebben az egészben?
Egyrészt az időpont, ami sokat elárul a körülményekről:



Szeged, 1940. október 29. A tanév nyilván nem akkor kezdődött, elkéstek volna az eskütevéssel a tanárok? Nem. Az ok ennél jóval érdekesebb: a Horthy Miklós Tudományegyetem 1940-ben jött létre, jogi értelemben Szeged városának ekkor lett saját egyeteme. Korábban ugyanis a trianoni békeszerződés után Magyarországra költöző kolozsvári Ferenc József Tudományegyetemnek adott otthont a város. 1940 augusztusában azonban a náci Németország segítségével a második bécsi döntés során visszacsatolták Magyarország területéhez Észak-Erdélyt, így a kolozsvári egyetem hazatérhetett, Szegeden pedig jogilag önálló, új egyetem nyitotta meg kapuit a diákok előtt. Első rektora Szent-Györgyi Albert volt. A régi tanári gárda nagy része Szegeden maradt, köztük Sík Sándor is, azonban mivel új intézményben kezdte meg munkáját, nyilván új esküt is kellett tennie. (Ha érdekelnek az új egyetem létrejöttének és megnyitójának részletei, ajánlom ezt a honlapot).
A másik, még ennél is izgalmasabb kérdés: hogy létezik, hogy Sík Sándor magyar állami egyetemen taníthatott? És most biztos felmerül a kérdés, hogy ez egyáltalán miért is kérdés?
Sík Sándor Budapesten született 1889-ben, de nem sokkal később Gödöllőre költözött a családjával együtt. Vallásos neveltetése igen korán kezdődött, a Piarista Gimnáziumba járt Pesten, és 14 évesen már a rend tagja volt. Budapesten végzett magyar-latin szakon az egyetemen, tanári oklevelet és doktori diplomát is szerzett. Vácott, Budapesten, Szegeden tanított; tanítványai emlékezete szerint karizmatikus tanár és remek előadó volt. Az oktatás mellett költőként, műfordítóként működött, a magyarországi cserkészmozgalom egyik alapítója volt. 1930-tól 1944-ig tanított Szegeden, ez idő alatt Radnóti Miklós mesterévé és barátjává vált, ő keresztelte meg a költőt 1943-ban a Szent István Bazilikában.



Amit kevesebben tudnak: maga Sík Sándor is zsidó volt, méghozzá mindkét szülői ágon. Apja, Sík Sándor és anyja, Winternitz Flóra még gyermekeik születése előtt megkeresztelkedtek. Ez persze mit sem számított a második zsidótörvénytől kezdve, ami a következőképpen határozta meg, ki számít zsidónak: akinek egy szülője vagy két nagyszülője az izraelita hitfelekezet tagja volt, vagy a törvény hatályba lépésekor, 1939-ben is oda tartozott. E törvény szerint, továbbá, a szellemi, közigazgatási, értelmiségi pályákon zsidók csupán 6%-ban képviseltethették magukat. Természetesen az egyetemek is ide értendőek. 
Sík Sándor vajon épp beleesett volna ebbe a 6%-ba? Nem. Ő mint a katolikus egyház felszentelt papja, mentesült a törvény alól. Rá tehát nem vonatkoztak a megszorítások, így a közelgő holokausztot is hitének köszönhetően vészelte át. Amikor az 1930-as évek végén meghozták a zsidótörvényeket, sok kikeresztelkedett és szekuláris zsidóéhoz hasonlóan Sík Sándor identitása is megkérdőjeleződött: zsidónak kéne éreznie magát csak azért, mert a törvény szerint ebbe a csoportba tartozik, annak ellenére, hogy soha nem volt az izraelita felekezet tagja? Ő így fogalmazta meg érzéseit: "Fajilag nincsen bennem egy csepp magyar vér sem: nem vagyok keverék: tiszta vér. És mégis: nincs bennem semmi, amit magyarnak ne éreznék mindenestül. [...] Magyar vagyok, az lennék, akkor is, ha a magyarságnak nem kellenék: ez nálam nem program, hanem tény: nem tudok másképp érezni!" 
E sorok a kor fajbiológiai/fajvédő politikai diskurzusának hatása alatt születtek, a ma embere számára már egyértelmű, hogy a faj maga az emberiség, és hogy egy egyénnek lehet kettős, sőt többes identitása - amint a magyar zsidók túlnyomó többsége is zsidó magyarnak/magyar zsidónak ("Mózes hitű magyarnak") érezte magát. Nem kell és valószínűleg nem is lehet választani az ember sokféle identitása közül.
Sík Sándor mentesítettként túlélte a vészkorszakot és az üldöztetést, a háború után tagja lett az MTA-nak, azonban a kommunizmus idején személyét háttérbe szorították a vallása miatt. 1963-ban halt meg.

Ezeket a trüffeleket Ani szülinapjára készítettem. Mivel a fahéj a kedvenc fűszere, ezért extra adagot kevertem bele :)

Hozzávalók:
0,1 dl sütő rum/likőr
9 szem aszalt meggy
0,2 dl tejszín
100 gr étcsoki
egy kiskanál vaj
fahéj
kakópor

Elkészítés:
A meggyszemeket megszórom fahéjjal és egy órára beáztatom a likőrbe. 
A tejszínt és a vajat összekeverem és felmelegítem, hozzáadom a csokit, pár csipet fahéjat, végül beleöntöm a likőrt és sima ganache-sá keverem. Beteszem a hűtőbe, hogy elérje a könnyen formázható állagot.
Kiskanállal gombócnyi adagokat veszek a krémből, a közepébe nyomok egy-egy szem meggyet, és trüffellé formázom. Fahéjjal kevert kakaóporba forgatom a trüffeleket.


If it wasn't obvious enough, I love my vocation and I think I would commit mental harakiri if I had to give it up and do something else. Being a historian requires many different skills, such as presenting, teaching skills, researching, writing and so on. And nowadays I'm more into popularising history, after all what's the point of hiding in one's ivory tower and living for one's own research if one doesn't share his research results with the public?! This is the essence of research: transmitting new knowledge.
Therefore here comes an experiment of how to interpret and introduce one source in a (hopefully) interesting way.



This is a certificate, which states that dr. Sándor Sík, teacher of the Miklós Horthy University, made an official teacher's oath. So Sándor Sík was a teacher at that university. No, this did not happen after the death of Miklós Horthy, regent of Hungary between the two world wars, but still during his lifetime. It must have been funny when he went there to open the academic year: "I, Miklós Horthy, greet you at the Miklós Horthy University" :D
The long and bureaucratic text of Sándor Sík's oath is built on two main topics: first, that he would keep the laws of Hungary, second, that he would respect the rules of the university and he would perform earnestly as a teacher.
OK, but why is this so interesting?
Firstly, because of the date, which tells us a lot about the circumstances:
Szeged, 29 October 1940. Obviously the academic year did not start at that time, so were the teachers late with taking the oath? No. The reason is even more interesting: the Miklós Horthy University was established in 1940; in legal terms the city of Szeged has an own university from this time. Previously, after Hungary had lost WW1 and the Treaty of Trianon had been signed causing the loss of 2/3 of the country's territory, the Franz Joseph University was moved to Szeged from Kolozsvár (Cluj-Napoca). However, in August 1940, with the help of Nazi Germany, Northern Transylvania was reassigned to Hungary in the Second Vienna Award. Therefore the university of Cluj could return to its hometown, while a new, independent university opened its gates for the students in Szeged. Its first rector was Nobel prize laureate Albert Szent-Györgyi. Most of the teachers, among them Sándor Sík, remained in Szeged, but since they started to work in a new institution, they had to make a new oath.

Another, even more exciting question: how come that Sándor Sík was allowed to teach at a Hungarian state university? And now the question emerges, why is this a question at all?
Sándor Sík was born in Budapest in 1889 but not much later his family moved to Gödöllő. His religious education started quite early; he frequented the Piarist Secondary School in Pest and at age 14 he was already a member of the order. He studied Hungarian and Latin at the university of Budapest; he obtained a teacher's degree and a doctorate. He was teaching in Vác, Budapest and Szeged; according to the recollections of his pupils, he was a charismatic educator and an outstanding presenter. Besides teaching, he also worked as a poet and translator and he was one of the founders of the boy scout movement in Hungary. He was teaching in Szeged between 1930 and 1944; he became a mentor and friend of Miklós Radnóti (one of my favourite poets); he baptised the poet in 1943 in the Saint Stephen Basilica.


What is not so well-known: Sándor Sík himself was Jewish - both of his parents were Jews. His father, Sándor Sík and his mother, Flóra Winternitz, had converted even before their children were born. This did not count though according to the Second Anti-Jewish Law, which defined Jews as follows: people with one parent or two grandparents who had been members of the Israelite denomination, or they were still members of it in 1939, when said law was introduced. Moreover, this law restricted the number of Jews to 6% in intellectual and administrative fields. Naturally this included universities too.
So did Sándor Sík fall into this 6%? No. He, as a priest of the Catholic church, was exempted from the restrictions. He also survived the approaching Holocaust due to his faith. When the anti-Jewish laws were passed at the end of the 1930s, just like that of many converted and secular Jews, the identity of Sándor Sík was also questioned: shall he consider himself Jewish just because according to a law he is defined as one - even though he had never been a member of the Israelite denomination? He wrote about his feelings like this: "Racially there is not a single drop of Hungarian blood in me: clear blood. And still: there is nothing in me that I wouldn't feel fully Hungarian. [...] I am Hungarian; I would be even if Hungarians didn't want me: it's not my program, it's a fact: I cannot feel otherwise!"
These lines were conceived under the influence of the era's racial biological/racial political discourse; today it is evident that humanity per se is one race and that one person may have double or multiple identities - just like most of the Hungarian Jews considered themselves Hungarian Jews/Jewish Hungarians ("Hungarians of the Mosaic faith"). One does not have to and should not choose between one's identities.
Sándor Sík survived the Shoah and the persecutions as exempted; after the war he became a member of the Hungarian Academy of Sciences but during the communist times he was marginalised because of his religion. He died in 1963.

I made the above truffles for Ani's birthday. Since cinnamon is her favourite spice, I put an extra portion of it in the truffles :)

Ingredients:
0,1 dl rum/liqueur
9 dried sour cherries
0,2 dl cream
100 gr dark chocolate
one spoonful of butter
cinnamon
cocoa powder

Recipe:
I sprinkle the cherries with cinnamon and I soak them in the liqueur for an hour.
I mix the butter and the cream, I warm it up, I add the chocolate and some pinches of cinnamon. Finally I pour the liqueur in it and I stir it until it becomes a smooth ganache. I put it in the fridge until the texture becomes easily mouldable. 
I take small portions from the cream, I put one cherry in the middle and I shape it into a truffle. I roll the truffles in cocoa powder mixed with cinnamon.

pisztáciás-slivovicás // pistachio-slivovica

Tudom, hogy ijesztő, de az utcán járva és tömegközlekedés közben szeretem figyelni az embereket. Amolyan írói gyakorlatként a gyerekeket elképzelem, milyenek lesznek felnőtt korukban, a felnőtteket pedig kisgyerekként, képzletben meglágyítom az arcvonásaikat, ragyogóbbá, csodálkozóvá varázsolom a szemüket, pufókká az arcukat. A viselkedésük, a könyvük vagy telefonjuk alapján elképzelem, mit őrizhetnek a lelkükben: van aki egész úton csak csetel, más logikai játékot vagy sudokut játszik, megint más az olvasmányába temetkezik, és vannak, akik bámulják a többieket - mint én. Az embereket figyelni épp olyan, mint amikor esténként az utcát járva, és a kivilágított ablakokat nézve megpróbálom kitalálni, milyen lehet odabent a család élete. Milyen álmokat dédelgetnek, szeretik-e a munkájukat, vagy épp alig várják, hogy hazaérjenek és végre ne kelljen a munkahelyükre gondolniuk? Elébük szalad-e csaholva egy kutyus, vagy a cicájuk lesi a vacsorát? Vajon milyen hobbik várják otthon őket, kreatívkodnak-e, vagy egyszerűen leülnek a fotelba olvasni, vagy az ágyból nézik a tévét? Mi élteti őket, mit szeretnének elérni az életben? Vagy már el is érték? Jóban vannak-e a családjukkal, együtt költik el a vacsorát, vagy mindenki amikor épp hazaér, aztán ki-ki elvonul a saját szobájába? Járnak-e az eszükben mesék, elképzelik-e, milyen lehetett volna az életük, ha mégis másik egyetemre veszik fel őket, vagy máshol kezdenek dolgozni? Gondolkodnak-e életútjuk furcsa kanyarulatain, megpróbálják-e értelmezni azokat?
Az emberek megfigyelésének legizgalmasabb része pedig a szemük meglesése. Az emberi szem csodálatos, oly kifejező és oly sokat mesél. Én hiszek a színekben és különösen szeretem őket, és az emberi arc legszebb részének tartom a szemet épp a színei miatt. A barna, amiről csak a beletűző napfényben derül ki, hogy valójában sötétzöld belül barna gyűrűvel, a szürkéskék, ami az éggel együtt változik, a sötétkék, ami néha már-már lilának tűnik, a sárga cirmos csokoládébarna. A szemben ott a válasz az összes kérdésre, és minden ember szeme egy történet, csak el kell olvasni.


Ezúttal slivovicával készítettem trüffeleket - már régóta dédelgettem ezt a receptet magamban, csak nem tudtam eldönteni, hogy dióval, vagy pisztáciával készüljön. Végül a pisztáciára voksoltam, az egy kicsit különlegesebb :)

Hozzávalók:
0,3 dl slivovica
0,15 dl tejszín
egy kiskanál vaj
70 gr étcsoki
30 gr pisztácia
egy maroknyi pisztácia vagy liofilizált eper

Elkészítés:
A tejszínnel és a vajjal együtt felmelegítem és megolvasztom az étcsokit. Miután elkészült a ganache, leveszem a tűzről. 30 gr megpucolt pisztáciát ledarálok, hozzáadom a krémhez, alaposan összekeverem, végül beleöntöm a slivovicát. 
Hűtőbe teszem a ganache-t két órára. Ledarálok egy adag pisztáciát és tányérra szórom, külön kistányérra pedig az apróra tört liofilizált epret. A csokikrémből kiskanállal szedek, gombóccá formálom, és meghempergetem vagy a pisztáciában, vagy az eperben. Kellemesen alkoholos trüffel lesz a végeredmény :)

I know that this is creepy but I like to observe people while I'm on the street or using public transport. As a kind of writer's exercise I imagine how children will look like when they grow older, and adults when they were young: I soften their feature, in my imagination I make their eyes brighter and marvelling, their faces chubby. Based on their behaviour, books or phone I envision what they might hold in their soul: some are only chatting, others play games or sudoku, another buries himself in his reading and there are those who stare at the others - like me. Observing people is like when I walk in the evening and looking at the illuminated windows I try to figure out how the family's life might be inside there. What kind of dreams are they nurturing, do they love their jobs or on the contrary, they cannot wait to get home when finally they won't have to think about their workplace anymore? Does a dog greet them barking, or a kitty is looking forward to its dinner? What kind of hobbies await them at home; are they creative, or they simply sit in an armchair to read, or they watch the TV from bed? What keeps them going, what do they want to achieve in life? Or they have achieved it already? Are they on good terms with their family, do they have dinner together, or everyone eats when they get home and then they go to their own room? Do they think about tales; do they try to imagine how their life would have been, had they been accepted to another university or started another job? Do they contemplate the weird turns of their life path, do they try to figure them out?
The most exciting part of observing people is looking at their eyes. Human eyes are so wonderful, expressive and they tell a lot. I believe in colours and I particularly like them; I consider the eyes the most beautiful part of the face, exactly because of the colours. That brown, which turns out to be green with an inner brown circle when the sun shines in it, the grey-blue, which changes with the sky, the deep blue, which sometimes seems to be purple, the chocolate brown with yellow lines. The answers to all questions are right there in the eyes and every person's eyes are a story, it just has to be read.


This time I made truffles with slivovica - I've been thinking about this recipe for a while but I couldn't decide whether I should use walnuts or pistachio. Finally I picked pistachio, which is a bit more exotic :)

Ingredients:
0,3 dl slivovica
0,15 dl cream
one small spoon of butter
70 gr dark chocolate
30 gr pistachio
one fistful of pistachio or lyophilised strawberry

Recipe:
I warm up the dark chocolate together with the cream and the butter. After the ganache is done, I turn off the stove. I grind 30 gr cleaned pistachio, I mix it with the cream and I stir it. Finally I add the slivovica.
I put the ganache in the fridge for two hours. I grind some more pistachio and I sprinkle it on a plate; in another plate I put the tiny pieces of lyophilised strawberry. I take small spoonfuls of the chocolate cream, I form small balls of them and I roll them in the pistachio or in the strawberry. The end product is pleasantly alcoholic truffles. :)

virágzó csoki // blooming chocolate

A szürke ég alatt még szürkébb felhőpamacsok függtek, akárha az ég is elkísérné az úton, ami kifelé vezet, el szülőfalujából. Sötéten ülték körbe a házakat a dombok, a fák alatt sugdolózott a szél; a szél, ami mindig más tájakra csábította, de most, hogy mennie kellett, gúnyolódva, hűtlen társként húzódott vissza az erdő mélyére. Finoman szállt fel a por a léptei nyomán, majd ugyanolyan csendesen ült vissza. Szürke volt az út is, esteli félhomály borult a falura, mintha a nap meggondolta volna magát, és inkább elvonult volna a dombok mögé, ahelyett, hogy a magasba hágva szétszaggatta volna a felhők pókhálóját.
Fázósan húzódott meg a kis templom a dombtetőn, sírok körében. Hátranézett, ahol Újfalu házainak fehér és szürke falai úgy leskelődtek a fenyők és orgonabokrok közül, akár a bújócskázó gyerekek; a kora tavasz fátyla, könnyű köd ülte meg a dús, fekete földet. Hamarosan a vetés rajzol majd zöld kontúrt a rögökre, a hegyek felől szelíd kézzel mossa a háztetőket az eső, fehér dunyhát tereget az ég.

Under the grey sky even greyer tufts of clouds hung as if the sky itself accompanied him on the way leading out, away from his village. Dark hills surrounded the houses, the wind whispered under the trees; the wind, which always lured him to other places but now that he had to leave, it unfaithfully drew back, jesting in the deep of the forest. His steps raised the dust delicately, then it settled again, just as silently. The road was also grey, dusk covered the village as if the sun had changed its mind and instead of rising in the heights of the sky and tearing apart the cobweb of clouds, it vanished behind the hills.
The little church snuggled in a chill on the top of the hill, surrounded by graves. He looked back to where the white and grey walls of Újfalu's houses were peeping from among pines and lilac bushes like children playing hide-and-seek; the veil of early spring: light mist sat on the rich black soil. Soon the crops will draw green contour on the clods of earth; rain from the mountains will wash the roofs with a gentle hand; the sky will hang out white eiderdowns.



De akkor ő már messze jár majd innét. Ahol az út Trencsén felé kanyarodott, ott állt a kordé, rajta két másik suhanc - egyikük sem töltötte még be a huszonegyet, de a városban már várta őket a sorozóbizottság. Felkászálódott, maga mellé ejtette csomagját, köszöntésképpen biccentett a többieknek. Jól ismerte őket: a sötét hajú Sumichrast fiút Szkaláról és Zubo Jóskát, mindketten rokonok szegről-végről. 
Legfiatalabb fiúnak karrierlehetőség a katonaság - így mondta az apja, és ez még most, öt évvel a szabadságharc leverése után is így van. Bármennyire is szorítja vasmarkába az országot a király, katonákra mindig szüksége lesz, biztos megélhetés. Hiába a kutyabőr, kisnemesek, főleg egy olyan aprócska hely, mint Újfalu, Nova ves helyi nemessége, már nem jelent jóformán semmit. Az sem számít, hogy több mint két évszázada kapta a család a nemességet, ha a legfiatalabbaknak már nem jut betevő.

But by then he will be far away from here. Where the road bent towards Trencin, there stood the cart, on it two other lads - none of them had turned twenty-one yet but the draft board was waiting for them in the city. He climbed on the cart, dropped his bag and nodded to the others. He knew them well: the Sumichrast boy with dark hair from Skala and Jozko Zubo, both of them his collateral kin.
The army provides career for the youngest boy - that's what his father said and this was true even now, five years after that the war for independence had been crushed. Even though the king squeezed the country in his iron fist, he will always need soldiers; it is a firm livelihood. Nobility, especially the nobility of such a tiny place as Újfalu, Nova ves, doesn't mean anything. It also doesn't mean anything that the family received this nobility more than two hundred years ago, if the youngest one cannot earn a living.



Megdöccent a kordé, összeharapta a fogát. Épp hat éve kezdődött a forradalom, napra pontosan hat éve. És azóta minden összekuszálódott, felborult a korábbi rend... már ha rendnek lehetett azt nevezni. Itt, Szkalán régóta így éltek: tótok, németek, magyarok, mit sem számított, ki hova sorolta magát, ameddig megértették egymást. Apja régi német család sarja, szlovák leányt vett el, otthon németül beszéltek, de a rokonság és az iskola révén a gyerekekre ragadt a szlovák is. Újfalu és Szkala, a két egybenőtt falu nyelvi sokszínűsége persze nem számított különlegesnek a vidéken. A felmenői között mindhárom nemzetiség képviseltette magát, szoros kapcsolat fűzte őket Sumichrastékhoz, a szkalai szlovák kisnemesekhez, de ugyanúgy magyar családokhoz is.

The cart bumped, he clenched his teeth. The revolution started six years ago, exactly six years ago. And since then everything got entangled; the previous order collapsed... if it can be called an order at all. Here, in Skala they had lived like that for a long while: Slovaks, Germans, Hungarians, it didn't matter where one belonged as long as they understood each other. His father was the offspring of an old German family; he married a Slovak girl, they spoke German at home but the children picked up Slovak from the relatives and in the school. The multilingualism of Újfalu and Skala, the two villages grown in one, was not unique in the region. Among his ancestors all three ethnicities were represented; they were bound by kinship to the Sumichrasts, the Slovak noble family of Skala, but also to Hungarian families. 




Elgörögtek a szkalai zarándokhely előtt; a romok úgy ültek a hegyoldalban, akár a hűvös széllökések elől összehúzódó madarak. Mennyit bújócskáztak a kolostortól nem messze nyíló barlangfolyosókban! András bátyja volt a legmerészebb, ő a barlangok legmélyére mászott, kézzel tapogatva az állandóan nedvességtől csepegő, gödrös falakat, jól ismerte a kanyarokat, beugrókat, és a legváratlanabb pillanatokban ugrott elő, halálra rémisztve bárkit, aki az útjába került. De egy ideje már elkerülték a romokat és a barlangokat, felnőttek, s idő sem volt a játékra. És most végleg hátrahagyja a jól ismert tájat, ki tudja, viszontlátja-e még valaha? 
A kanyar mögött Trencsén vára koronázta a város fölé magasodó dombot. A nap még mindig felhőfüggönnyel takargatta magát, de északon szürkésfehér sávok között bátortalanul átsandított a kék ég. A három fiú és az öreg, görnyedt hátú kocsis némán hagyta, hogy a kordé rázza őket, minden kanyarral egyre közelebb a városhoz.

They rolled past the pilgrimage site of Skala; the ruins sat in the hillside like birds snuggling against the chilly gusts of wind. How many times they played hide-and-seek in the caves opening nearby the monastery! His brother Andreas was the boldest, he climbed into the deep of the corridors, feeling his way with his hands on the damp, dripping walls; he knew all the curves, arches and he jumped out in the most unexpected moments, scaring to death anyone in his way. But for some time they had avoided the ruins and the caves; they grew up and they didn't have time for playing. And now he will leave behind the well-known landscape; who knows if he will ever see them again?
Behind the curve the castle of Trencin crowned the hill mounting over the city. The sun still covered itself with cloud-curtain; but in the north the blue sky timidly peeped from behind grey-white stripes. The three lads and the old, hunched coachman silently let the cart shake them; with each bend closer to the city.

Sercegett a toll a papíron, ahogy az írnok feljegyezte az adatait. A sorozóbizottságot vezető nagybajuszú, bozontos szemöldökű, szikár arcú férfi bólintott, és szótlanul intett egyet. Innét a katonaorvos vette át az irányítást, aki döntött az újoncok alkalmasságáról. 
S míg a vizsgálat tartott, ő engedte repülni a gondolatait, vissza haza a szülei házához, a kis kúriához, amelynek fakult cserepeire zuzmó és moha vetett csipkét, a kertben a loncsos Csibész loholt előre valahányszor idegent sejtett a kapuban, tyúkok kotyogtak elégedetten. Édesanyja sötét haja előbukkant a kendő alól, míg a mosott ruhát vitte hátra teregetni.
Mikor térhet majd haza? Merre fogják küldeni vajon, hová veti majd a sors a seregben? Kérdések, kérdések...

- My name is Joseph Klacsmann, I was born in Újfalu, on 18 April 1833. My parents are Georg Klacsmann and Anna Zubova.
The pen scraped as the scribe noted down his personal data. The leader of the draft board, a haggard faced man with big moustache and bushy eyebrows, nodded and waved with his hand. The army surgeon, who decided on the suitability of the draftees, took over the lead.
While the examination lasted, he let his thoughts fly, back home, to his parents' house, the small mansion, on whose roof tiles moss and lichen drew lace; the draggled Csibész scurried to the front whenever he suspected a stranger in the gate; hens clucked contentedly. The dark hair of his mother flowing from under her scarf as she took the laundry in the back of the garden to hang it out.
When can he return home? Where will they send him, where will his destiny lead him in the army? Questions, questions...





Virágzó bonbonok

Hozzávalók:
Rózsalikőrös
170 gr tejcsoki
10 gr fehércsoki
100 gr étcsoki
0,4 dl rózsalikőr
egy kardamom magjai
egy kiskanál vaj

Jázminlikőrös
170+70 gr fehércsoki
két kiskanál szárított jázmin
egy pillecukor
0,4+0,2 dl tejszín
0,3 dl jázminlikőr
fehér lüszterpor




Elkészítés:
Rózsalikőrös:
Megolvasztom az étcsokit, hozzáadom a vajat és a kardamom mozsárban összetört magvait, majd a rózsalikőrt. Homogén állagúvá keverem.
Temperált fehér csokival kifestem a virágokat a bonbonforma mélyedéseiben. Temperálom a tejcsokit, elkészítem a burkokat. Miután megszáradtak, megtöltöm őket a likőrös krémmel, és hűtőbe teszem. Végül temperált tejcsokival lezárom a bonbonokat.

Jázminlikőrös:
Felmelegítek 0,2 dl tejszínt, és beletépkedem a pillecukrot. Addig keverem, amíg felolvad, ezután beleszórok két kiskanál szárított jázmint. Lefedem az edényt, és hagyom állni. Néhány óra múlva leszűröm, ismét felmelegítem a tejszínt, belekeverek 70 gr fehércsokit, végül hozzáadom a jázminlikőrt. Felverek 0,3 dl tejszínt, óvatosan összeforgatom a likőrös krémmel. Kis tálban a hűtőbe teszem, ameddig a mousse habos állagát el nem érem.
Temperálom a fehércsokit, elkészítem a bonbonok burkát. Megtöltöm őket a mousse-szal, és ismét a hűtőbe teszem. Másnap temperálom a maradék fehércsokit, lezárom a bonbonokat. Miután kiszedtem a formából, fehér lüszterporral megfestem a tetejüket.




Blooming bonbons

Ingredients:
Bonbons with rose liqueur
170 gr milk chocolate
10 gr white chocolate
100 gr dark chocolate
0,4 dl rose liqueur
the seeds of one cardamom
one small spoon of butter

Bonbons with jasmine liqueur
170+70 gr white chocolate
two small spoons of dry jasmine
one marshmallow
0,4+0,2 dl cream
0,3 dl jasmine liqueur
white luster dust




Recipe:
Bonbons with rose liqueur:
I melt the dark chocolate, I add the butter and the seeds of the cardamom crushed in a mortar, then the rose liqueur. I stir them until it becomes a smooth ganache.
I paint the flowers of the cavities in the mould with tempered white chocolate. I temper the milk chocolate, I prepare the bonbon shells. After they get dry, I fill them with the cream and I put the mould in the fridge. Finally I seal the bonbons with tempered milk chocolate.

Bonbons with jasmine liqueur:
I warm up 0,2 dl cream and I combine it with the marshmallow cut up into small pieces. I stir it until the marshmallow melts, then I add two spoonfuls of dry jasmine. I cover the dish and let the flowers infuse. Some hours later I sieve the liquid, I warm it up again and I add 70 gr white chocolate, then finally the jasmine liqueur. I whip 0,3 dl cream, I carefully mix it with the ganache. I pour it in a small bowl and put it in the fridge, until the mousse reaches its foamy consistency. 
I temper the white chocolate, I prepare the bonbon shells. I fill them with the mousse and I put the mould in the fridge. The next day I temper the leftover white chocolate, I seal the bonbons. After they fall out of the mould, I paint the tops with white luster dust.
