Cremini

Rettentően szeretem az olasz kaját. Nem vagyok egy sütis fajta, de a legtöbb sütijük, a saját csokimárkáik, az olasz különlegességek, pl. gianduja, na azok mindig mentek. Nemrég végre találtam törökmogyorót egy helyi boltban, és ennek apropóján megint elkezdtem mogyorós krémeket készíteni. Már nem is tudom, hogyan jött szembe a cremini receptje, a lényeg, hogy egyszeriben olthatatlan vágyat éreztem iránta, ezért tegnap készítettem is egy jó nagy adagot. Amit erről a desszertről tudni illik, az az, hogy mindhárom rétege csoki és mogyorókrém kombinációjával készül, ezért nevéhez híven nagyon krémes, lágy, könnyen olvad. Épp ezért érdemes hűtőben tartani, és csak fogyasztás előtt egy negyed órával elővenni. Én egy olasz receptet használtam; eredetileg természetesen IGP piemonti mogyoróból kéne készíteni, de az itthon aranyárban van... Amit még tudni érdemes a creminiről, az az, hogy függőséget okoz, ezért csak módjával szabad fogyasztani!!!

Hozzávalók:
100 gr étcsoki
100 gr tejcsoki
150 gr fehércsoki
135 gr mogyoró
olívaolaj

Elkészítés:
A mogyorót robotgépbe teszem, néhány kiskanál olívaolajat öntök hozzá (én négyet tettem, hogy krémesebb legyen), és addig darálom, míg sima pasztát nem kapok.
Felolvasztom az étcsokit és a tejcsokit, kimérek 75 gr mogyorópasztát, és egybekeverem őket. Egy kb 25x15 cm-es négyszögletes, magas falú edényt kibélelek sütőpapírral, beleöntöm a krém felét, kicsit a pulthoz ütögetem, hogy szétterüljön. Ezután az edényt a mélyhűtőbe teszem 10-15 percre, míg a krém teteje megszilárdul.
Eközben felolvasztom a fehércsokit, összekeverem 60 gr mogyorópasztával. Kiveszem az edényt a hűtőből, beleöntöm a fehércsokis krémet, és elegyengetem. Ismét visszarakom a mélyhűtőbe egy kis időre, míg a krém megköt. Ekkor a tetejére öntöm a maradék étcsokis krémet, és még félórára hűtőzöm.
Amikor kész a cremini, a sütőpapírnál fogva kiveszem az edényből, lehámozom a papírt, és egy éles késsel levágom az egyenetlen széleket. Kb. 2x2 cm-es kockákat vágok, és tálalom.



I adore Italian cuisine. I don't usually like cookies, but most of their pastries, their own chocolate brands and Italian specialties like gianduja, well, I've always been a fan :D Not long ago I discovered hazelnuts in a local shop and I started to make various hazelnut spreads and creams. I don't even remember how I found the recipe of cremini, but suddenly I felt an unquenchable desire for them, so yesterday I made a huge portion. What you need to know about this dessert is that all three layers are made with the combination of chocolate and hazelnut paste, therefore it is very creamy, silky and melts easily. Therefore it is advisable to keep it in the fridge and take it out only 15 minutes before consuming. I used an Italian recipe; originally it would be best to use IGP Piemontese hazelnut, but that costs a fortune... What you also need to know about cremini is that it causes addiction, so eat it with caution!!!

Ingredients:
100 gr dark chocolate
100 gr milk chocolate
150 gr white chocolate
135 gr hazelnut
olive oil

Recipe:
I put the hazelnut in a blender and pour some olive oil on it to make it more creamy. Then I blend it until I get a smooth paste.
I melt the dark and milk chocolates, and add 75 gr hazelnut paste. I line a ca. 25x15 cm dish with parchment paper and pour half of the cream in it, then tap it on the counter so that it spreads evenly. Finally, I put the dish in the freezer for 10-15 minutes until the cream sets.
In the meantime, I melt the white chocolate and combine it with 60 gr hazelnut paste. I take the dish from the freezer and pour the white chocolate cream in it. I put it back in the freezer for a while until the cream sets. Then, I pour the leftover dark chocolate cream on the top and leave it in the fridge for about half an hour.
When the cremini are ready, I lift it out of the dish, peel off the parchment sheet and cut off the edges. Finally, I cut 2x2 cm cubes and they are ready to be served.

mézes-pekándiós // honey-pecan nut

Valamelyik nap hirtelen ötlettől vezérelve vettem egy adag pekándiót (igen, tudom... de néha kell egy kis luxus :D). Az eredeti ötlet az volt, hogy készítek pekándióvajat, ami meg is történt, de az meg olyan finom lett, hogy muszáj volt csokihoz is felhasználni. És mivel a dió- és mogyorófélék igazából mézzel a legfinomabbak, ezért aztán mézes ganache-sal párosítottam.
Az "új" lakás (ami valójában már 2.5 hónapos) alakul, de még mindig túl sok a cucc szerteszét - ennek már soha nem lesz vége?! Rettenet fárasztó napi 1-2-3 doboz kipakolása után azt látni, hogy a túlsó sarokban ott tornyozódik még egy adag teli doboz. Ez az átmeneti állapot pedig nem tesz jót az ihletnek sem. Még akkor sem, ha már alakul valamiféle végeredmény. Valójában az a fura, hogy az embernek soha senki nem mond semmit arról, hogy az ilyen "nagy dolgok" az életben, mint pl. gyerekvállalás, költözés stb. rettenetesen bonyolultak. Mert kívülről mindig csak a felszín látszik: elköltöztek, jaj de jó, 2-3 hónap múlva látogatáskor már minden csilivili. Napersze. Meg a rengeteg beleölt meló, pénz, energia, a sok rendelt cucc, aminek a felét vissza kell küldeni, a másik fele nem akar megérkezni, a szelektálás és egyéb kellemetességek. Tudom, tudom, emlékezhetnék rá, hiszen a családdal is költöztünk ekkor meg akkor. Na de az más, amikor nem neked kell intézni mindent, hanem csak "elszenvedője" vagy az egész macerának.
No mindegy is, nem panaszkodom tovább, elvégre az a lényeg, hogy van lakás, van hol aludni :) És persze van hol csokit csinálni! Alább a recept:

Hozzávalók:
100 gr pekándióvaj (pekándió, méz, só)
40 ml tejszín
30 ml méz
130 gr étcsoki
egy kiskanál vaj
mogyorótöret

Elkészítés:
Először a pekándióvajat készítem el: serpenyőben zsiradék nélkül megpörkölöm a diókat addig, míg kellemes aromája nem lesz. Ezután darálógépbe öntöm őket a mézzel és néhány csipet sóval együtt, és addig darálom, míg krémes állagú nem lesz. Állni hagyom néhány napig, hogy az ízek összeérjenek.
A ganache-hoz kissé felmelegítem a tejszínt, megolvasztom benne a vajat és a mézet. Ezután vízgőz fölött felolvasztom az étcsokit és a tejszínhez keverem. Hűtőbe teszem pár órára.
A pekánvajból kis golyókat gyúrok. A kihűlt ganache-ból kiveszek egy kiskanálnyit, palacsintává lapítom, a közepére teszem a pekángolyót, és körégyúrom a csokis krémet. A trüffeleket mogyorótöretben forgatom meg.

One of these days I bought a portion of pecan nuts (they are extremely expensive here around, but sometimes one needs a bit of luxury :D). The original idea was to make pecan nut butter, which I did, but it became so yummy that I had to use it in chocolate too. And since nuts are the best with honey, I paired it with honey ganache.
Our "new" home (which is actually 2.5 months old) is becoming cozy, but there's still way too much stuff all around - will this never come to an end?! It is extremely tiring to empty 1-2-3 boxes and then see another heap of full boxes in the other corner... This transitional state is not really inspiring. Even if some kind of end result is on the horizon. It is weird how no one tells you anything about how extremely complicated the "big things" in life are, e.g. having a child, moving etc. Because from outside only the surface can be seen: they moved, yay, 2-3 months later everything looks amazing in the new apartment. Of course. And all the work, money, energy that was spent. The lots of things ordered online - half of which had to be sent back, the other half did not want to arrive; selecting things and so on and so on. I know, I should've remembered from the time when we moved with the family, but it's different when you are not the one taking care of everything, you just "suffer" from all the trouble that accompanies moving.
Whatever, I don't want to complain - the most important is that we have a home and there's a place where we can sleep :) And make chocolate! Here is the recipe:

Ingredients:
100 gr pecan butter (pecan nuts, honey, salt)
40 ml cream
30 ml honey
130 gr chocolate
one small spoon of butter
hazelnut nibs

Recipe:
First, I prepare the pecan butter: I roast the pecans in a pan without any grease/oil, until they get a nice aroma. Then I pour them in a grinder with the honey and some pinches of salt and I grind this mixture until it gets a creamy consistence. I leave it for a couple of days.
I warm up the cream for the ganache, I melt the butter and the honey in it. Then I melt the dark chocolate in bain marie and combine it with the cream. I put the ganache in the fridge for a couple of hours.
I shape small balls of the pecan butter. I take a spoonful of the cold ganache, flatten in into a pancake form; I place the pecan ball in the middle and then cover it in the chocolate cream. I roll the truffles in hazelnut nibs.

Mozart praliné

Létezik olyan ember, aki ne szeretné a Mozartkugelt?! És létezik olyan ember, aki képes lenne annyit enni belőle, mint én, mégsem ismeri a történetét? Persze azt mindenki tudja, hogy Mozart Salzburgban született és az édesség róla kapta a nevét, de hogy ki készítette az elsőt, milyen rétegeket tartalmazott, hogy lett ennyire elterjedt, azt már kevesebben.
Az ausztriai Paul Fürst korán árvasorra jutott, és nagybátyja nevelte, akinek édességboltja volt Salzburgban. Az üzletet Paul vette át, miután több helyen inaskodott - többek közt Budapesten is. 1890-ben készítette el először azt az édességet, ami később világhírnévre tett szert - és ahogy egyre népszerűbb lett, végül saját céget alapított.
Fürst azonban elkövetett egy nagy hibát: nem védette le az ötletét, így végül a Mozartkugel Salzburg jellegzetes helyi csemegéje lett, amit minden magára valamit is adó cukrászda és édességbolt átvett és gyártott. Természetesen tovább is variálták. Az eredeti édesség egy nugátkrémmel bevont, pisztáciával dúsított marcipángolyó, amelyet étcsokoládéban mártottak ki. Több gyártó azonban harmadik ízként 
csokis mogyorókrémet is társított a marcipánhoz. Ennek megfelelően évtizedek óta zajlanak perek a különböző cégek Mozartkugeljei elnevezése és megjelenése miatt. Az eredeti megegyezés szerint csak Fürst cége használhatja az Original Salzburg Mozartkugeln elnevezést, míg a többieknek más nevet kell adniuk. Továbbá csak a Mirabell (ma Mondelez) nevű gyártó készíthet kerek Mozartgolyókat, minden más cég termékének egyik oldala lapos kell legyen.

Namármost, én imádom a Mozartkugelt (akármilyen variációban). Úgyhogy most, hogy végre van saját aprítógépem, és már a többedik adag nugátkrémet gyártom le, nem hagyhattam ki, hogy elkészítsem a saját verziómat. Hosszú idő óta először vettem egy új polikarbonát formát, amelynek jó mélyek a mélyedései - így elfért három réteg töltelék is a csokiban. A nugátot és a pisztáciamarcipánt sima marcipánnal egészítettem ki - NYAMI

Hozzávalók:
70+50 gr házi marcipán
25 gr pisztácia
70 gr nugátkrém (mogyoró, cukor, olívaolaj)
200 gr étcsoki
lüszterpor

Elkészítés:
50 gr marcipánt és 25 gr megtisztított pisztáciát az aprítógépbe teszek és alaposan összedarálok. Elkészítem a nugátkrémet: 150 gr pirított mogyorót és 150 gr cukrot addig darálok, míg krémes állagú nem lesz. Hozzáadok 6 kiskanál (kb 30 ml) olívaolajat, még egyszer összedarálom. Az így kapott krémből veszek 70 grammnyit.
Temperálom az étcsokit, kiöntöm a formát. A bonbonhéjak aljába teszek egy réteg marcipánt, arra egy réteg nugátot, végül arra egy réteg pisztáciamarcipánt. Temperálom a maradék étcsokit, lezárom a bonbonokat. Amikor készen kipotyognak a formából, ecsettel vékonyan megfestem a tetejüket arany lüszterrel. Kész is a Mozart praliné - abbahagyni az evést azután már nem lehet :D


Is there such a person who doesn't like Mozartkugeln?! Is there such a person who could eat as much of it as me and still doesn't know its story? Of course everyone knows that Mozart was born in Salzburg and the confection got its name after him, but less people know who made the first one, what kind of layers it had and how it became so popular.
The Austrian Paul Fürst became orphaned quite early and he was raised by his uncle, who had a confectionery in Salzburg. Paul took over the business after training in several places - among others, in Budapest too. He created the sweets which later became world famous in 1890 - and as it got more and more popular, he even established his own company.
However, Fürst made a mistake: he didn't apply for patent to protect his idea, therefore the Mozartkugel became Salzburg's typical delicacy, taken over and produced by every confectionery. Quite naturally, they created new variations. The original candy contained a marzipan ball enriched with pistachio, covered in nougat and dipped in dark chocolate. Several producers added a third flavor, the combination of nougat and chocolate. And obviously, for decades, disputes have erupted concerning the names and appearance of the Mozartkugeln of various companies. According to the original agreement, only Fürst's company can use the name Original Salzburg Mozartkugeln, while others must choose other names. Additionally, only Mirabell (today Mondelez) can produce round Mozartkugeln, every other company's product must have a flat side.

Now, I adore Mozartkugeln (whichever variation). Therefore now that I have my own food processor, and have made several portions of nougat cream, I couldn't miss creating my own version. I've bought a new polycarbonate mold whose cavities are deep enough to house three layers of fillings. I combined the nougat and pistachio marzipan with pure marzipan - YUMMY

Ingredients:
70+50 gr homemade marzipan
25 gr pistachio
70 gr nougat (hazelnut, sugar, olive oil)
200 gr dark chocolate
luster dust

Recipe:
I put 50 gr marzipan and 25 gr peeled pistachio in the food processor and grind them. Then I prepare the nougat cream: I grind 150 gr roasted hazelnut and 150 gr sugar until they get a creamy consistence. I add 6 small spoon (ca 30 ml) olive oil and mix them again. I take 70 grams of this cream.
I temper the dark chocolate and pour it in the mold. I place one layer of marzipan in the bottom of the chocolate shells, then one layer of nougat cream and finally a layer of pistachio marzipan. I temper the leftover dark chocolate and I seal the bonbons. When they fall out of the mold, I paint a thin layer of gold luster on the top of each praline. There you have your Mozart praline - but be aware that you won't be able to stop eating them :D
