Miután megolvadt, hozzákeverem a tejcsokit. Amikor összeáll egynemű krémmé, beleöntöm a pezsgőt is.

naplemente // sunset
az út // the road

Tonight the blue moon (the second full moon of the month) will be perfectly round :) just on the eve of Imbolc. Imbolc marks the beginning of spring in the wheel of the year; the goddess Brigid goes around Ireland on this day and where her feet touch the ground, grass and flowers grow out. She brings revival and the light half of the year. The Irish leave her food and drink, and frequently even make a bed for her in the hope that she would bless the house with her visit.
On the occasion of this exceptional day I made a pilgrimage to my secret place, where I watch the sunset between earth and sky - although this time only a faint orange stripe indicated on the grey, gliding clouds, what was going on behind the scenes. On my photos it might seem a sombre, uninteresting place, but to me it has special significance, where magic lurks in the trees and the ground...
Yesterday we made chocolate with a good friend of mine, during which she familiarised herself with tempering :D I found out the filling some time ago; it became really tasty, hiding as a silky surprise behind the crunchy chocolate shell :) In honour of the spring festival, I used a mould with flower patterns.

Ingredients:
40 gr blueberries
100 gr milk chocolate
200 gr dark chocolate
15 ml champagne
small spoon of butter
blue luster dust

Recipe:
I warm up and mash the blueberries; I add a spoonful of butter. After it melts, I mix it with milk chocolate. When it becomes a smooth cream, I also add the champagne.
I temper the dark chocolate, I prepare the bonbon shells. I fill them with the blueberry cream and I put it in the fridge. As soon as the filling becomes solid enough, I temper the leftover dark chocolate and I seal the bonbons. I decorate them with some blue fairy dust :)

karamellás-balzsamecetes // caramel - balsamic vinegar

Jól emlékszem, régen, még csokikészítős korszakom előtt, valahányszor moziba mentünk valamelyik plázába, a büfében kapható, undormányos gumicukrok helyett mindig a Szamos standjánál vettünk némi csemegét a filmhez.

Temperálom a tejcsokit, elkészítem a burkokat. Miután megszáradtak, megtöltöm őket karamellkrémmel, és beteszem a hűtőbe. Végül miután a krém teteje megszilárdult, lezárom a bonbonokat.

I think next time I'll prepare the shell of this bonbon of some kind of dark chocolate with low cocoa percentage, because like this it became a bit too sweet. Nevertheless I think that sometimes one can eat this kind of sweets too and the sour taste of the balsamic vinegar balanced somewhat the milk chocolate shells. For the filling I used must combined with balsamic vinegar and wine vinegar (Glassa Gastronomica), which can be bought in Italy and it contains 38% balsamic vinegar of Modena.
I remember very well, before I started to make chocolate, whenever we went to the cinema in some mall, instead of the disgusting gummi candies that they sell in the buffet, we bought our sweets at the stand of Szamos. I could never resist buying one (or two) of the chocolate snails filled with caramel cream, which was similarly luscious as these bonbons :D Unfortunately I adore horribly sweet chocolates :D I admit, this is a mistake of mine (if one may call it like that :D)

Ingredients:
150 gr milk chocolate
one and a half small spoon of Glassa Gastronomica
75 gr sugar
0,5 dl cream
15 gr honey
15 gr butter
bronze luster dust, cocoa butter

Recipe:
I warm the sugar and the honey in a dish until the sugar melts and gets a nice golden colour. I add the butter and the cream and I warm it up again and stir it in order to get a silky cream. Finally I pour one and a half small spoon of Glassa Gastronomica in it and I taste it until it gets the adequate flavour.
I splash molten the mixture of cocoa butter and bronze luster dust in the cavities of the mould. I temper the milk chocolate and I prepare the shells. After they get dry, I fill them with caramel and I put the mould in the fridge. Finally when the surface of the cream gets solid, I seal the bonbons.

Temperálok 200 gr étcsokit, elkészítem a bonbonok héját. A kész kakaóbabokat bronz színű lüszterporral festem át.

At the end of winter (well, for me winter starts in November, it reaches its peak around Christmas, then fades away at the end of January and only agonizes in February while spring is around the corner :D), so at the end of winter a little bit of vitamin is needed. And as we all know, chocolate is a vegetable (because it is made of cocoa beans and beets or what :D), I was thinking, why not add a little fruit too, the ones rich in vitamin C blablabla. No, as a matter of fact I realised that orange and ginger are so good together, so why not?!
For the shells I used the  Valrhona 55% chocolate pastilles that I received as a gift; it has a nice fruity aftertaste and goes very well with the filling, moreover it melted easily, it was quite fluid and thus easy to temper :)
Others go shopping to malls and clothing stores, I go to the chocolate shop and that's how I bought, led by an irresistible desire, the cocoa bean shaped mould :) And of course I had to try it immmmmmediately :D This is the outcome :)

Ingredients:
170+200 gr dark chocolate
the juice of 2 oranges (ca. 70 ml)
orange peel
4-5 cm ginger
10 drops of orange balsamic vinegar
a small spoon of butter
7 ml cream
bronze luster dust

Recipe:
I squeeze the oranges and I shred the orange peel and the ginger in the juice. I add the cream, the balsamic vinegar and a spoonful of butter, then I warm it up. When it is close to boiling, I turn off the stove and I combine the liquid with 170 gr dark chocolate. If the cream is not spicy enough, I also add some pinches of ginger powder.
I temper 200 gr dark chocolate, I prepare the bonbon shells. After they get solid, I fill them and I put them in the fridge for an hour. Finally I temper the leftover chocolate and I seal the bonbons. I colour the cocoa beans with bronze luster dust.

Flight of the Silverbird

A post szövege magyarul lejjebb görgetve olvasható :)

This post is dedicated to Thomas Bergersen, the amazing composer and musician of Two Steps From Hell 💗

About a year ago I was hooked into epic music by a song that remained my all-time favourite ever since. This was Flight of the Silverbird. Oh how many times this song has inspired me! I wish I had a euro for every occasion I have listened to it; I'd be a millionaire already :D To me, this tune speaks about freedom, the infinite world, happiness, life. I adore every single note in it, its energy, the guitar sound, the strings! I adore that whenever I listen to it, pictures are rushing around in my head, this music tells me legends and stories that I must write down, it boosts every kind of creative drive.
It is a perfect subject for Fairytale Chocolate and even though under the youtube video you may read plenty of stories about how people imagine the Silverbird, I am a fairytale writer, and for me it was quite obvious who or what the Silverbird is :) So here are my tributes to this song in the three forms of art that I appreciate the most: chocolate, drawing and writing.

My first idea was to draw an art nouveau style picture about the Silverbird, which actually took more than a month, as December was quite busy and I had only bits of time here and there to work on it. I finalised the drawing just yesterday and scanned it today, however, the scan distorted it, so I rather took a photo of it and enhanced the colours a tiny bit.
Then I also planned a chocolate mask, which I prepared with the good old method. First I drew the bird and the flowers inside the mask with tempered white chocolate. I painted them with cocoa butter and various colours of luster dust, then I added another layer of white chocolate on them, as I wasn't sure whether the colours will be strong enough and te dark chocolate won't show through.

the inside of the mask, painting the pattern
I tempered 100 gr of dark chocolate and I smeared it throughout the inside of the mask, taking care that it goes everywhere, including the sides. When it got dry, I tempered another portion of dark chocolate and did the same with that. I left the mask for a couple of hours until the chocolate dried completely, then I pulled off the plastic mould.
And finally, before Christmas I also wrote the fairytale, which is going to be a prequel of one of my tales, but I can't tell more about this ;) Enjoy them!

Lora was staring out the window - even though there was not much to see outside, in the grey, wet autumn. Mist was sitting on the black, bare branches of the trees; a brown, dry leaf fell hopelessly. Lora followed its rhapsodic flight with her eyes and when the leaf gently stroked its brethren on the ground, she returned to her work.
Another stitch and another and another. If only she could count how many times she had pierced her needles through so many different fabrics... and still, she doesn't even have the gratifying feeling that every stitch brings her closer to a better life. No, what she earns is barely enough for maintaining the tiny shop, for meagre food, sleeping close to the fireplace and for the rent to be paid to the owner of the building.
Sighing she let the shirt down in her lap. If only it was spring! On bright, blooming days she could take delight at least in the colours outside, the blushing people, the tiny, colourful birds. But in late autumn...
She sipped her tea and took up her sewing. She fringed the sleeve of the white-green shirt with light green thread; one stitch after the other, diligently, until she was done. Then she put it aside, she stood up and stretched her numb limbs. It's time for lunch.
As soon as she turned away from her little table, the door opened behind her. An old man with curved back shuffled in; his hand on his cane looked like the rugged roots of a tree. Wheezing, he put down his bag on the floor.
"I came for my coat."
"Oh yes," Lora smiled at him. "I'll get it for you."
She opened the wardrobe standing next to the fireplace, where she kept the clothes that she'd finished.
"It was done quickly, I only had to patch the elbow," she said, while she brought the coat to her table. "And I found a hole at the bottom, I fixed that too."
She folded the cloth and placed it in front of the old man.
"Thank you," he returned her smile with a face like a mirror broken into a thousand pieces.
"One and a half crowns," mumbled Lora as she still could not get used to asking for money from paupers like herself.
The cough of the old man sounded like the rattle of dry paper.
"Unfortunately I don't have money. But I have something else that I will give you in exchange."
He bent down for his bag, placed it carefully on the table, opened it and pulled off the textile of its content.
Sad, dust-grey bird blinked at Lora from its cage.
"A... a bird?!" The girl stared at the creature then at the old man in astonishment. "What shall I do with a bird?!"
"Keep it as an attraction. Or release it." The man took his coat. "Freedom is more important than possession anyway."
He turned around and without waiting for an answer, he shuffled out of the shop.
Lora was still gazing at the bird with open mouth and it looked back at her with resignation; it didn't seem upset about the change of owners.
"What shall I do with you?" echoed Lora dumbly, she pushed the cage aside and sat back to her table. She unconsciously reached for another shirt; forgetting about her lunch, she started sewing again. One stitch after the other; and she kept thinking how much the last sentence of the old man resonated with her previous thoughts.
"How foolish!" she tossed down her sewing angrily. "How could one be free when she doesn't even have money for a pair of good shoes?! What does freedom mean at all? That you're not in prison? Or..."
She stopped when she realised that she was still talking to the bird. The bird, that was observing her indifferently from its prison.
Lora sprung up, the shirt fell on the floor from her lap. She grabbed the cage and rushed out of the shop, the door slammed behind her. She hurried along the cobbled road leading out of the city. A cart clattered next to her, a dog was barking in the neighbouring street. The road brought her to the top of the hill. Beyond that the wind was sighing, stuck in the greenless forest; above the hill dark grey clouds were whirling, cold raindrops drizzled in the girl's face, her long hair got wet in the mist.
"Now both of us will be free!"
She opened the door of the cage and held it up.
The bird didn't move.
"Go!" yelled Lora impatiently.
The bird glimpsed at her with its beady eyes, it stretched its neck towards the small square of freedom. Lazily, it tilted its quills, it rose and shook itself, thus it became a fluffy ball. It jumped on the cage door with its thin legs and finally it flew away.
Lora followed its zigzag flight with her eyes; it flew surprisingly fast in front of the trees. Then the bird flapped its wings and just like an unfurling tablecloth, its silver feathers unfolded. It was blazing in the grey autumn world, and it didn't look like a sparrow any more, rather like a proud falcon; its quills expanded, its neck bent, its remiges stretching like sails in the wind.
Lora rubbed her eyes.
"Silver bird!" she exclaimed. She ran after the bird, trampling in knee-high, dry weed in order to get closer and see the metamorphosis.
The bird made a full circle, when it reached the trees, it bent upwards into the sky; the grass was waving in the wind of its giant wings. Its flexible muscles strained at every move, as if it was climbing stairs. Higher and higher the bird soared; the whiff of its flight ripped blue sky among the clouds. Its body stretched, its spine twisted, its claws came out, on the track of its tail tufts of clouds got torn. As it started to dive, it opened its mouth; a thousand sharp teeth were sitting in its jaw; it fixed its ice-blue eyes on the girl.
Lora turned to stone.
"A dragon..." she whispered.
She roused only when the roar of the dragon shook the hill. She ran towards the trees, rushing as fast as she could, but the creature raced swiftly towards her. When her legs couldn't bear it any more, Lora crouched down in the grass, she curled up as much as she could and she didn't even dare to breathe. Around her the storm blustered and the dragon swooped...
to be continued

Ezt a postot Tomas Bergersennek, a Two steps From Hell lenyűgöző zeneszerzőjének és muzsikusának  ajánlom 💗

Ez a Flight of the Silverbird.

Néhány órára száradni hagytam a maszkot, azután lehúztam a műanyag formát.

Belekortyolt a teájába, újból fölvette a varrását.
Csomagját nehézkesen szuszogva a földre tette.
- A felöltőmért jöttem.
- Ó igen - Lora rámosolygott. - Azonnal hozom.
Egyáltalán, mit jelent a szabadság?
A madárhoz, aki börtönéből egykedvűen, mozdulatlanul figyelte őt.
Lora fölpattant, öléből az ing a földre hullt. Fölkapta a kalitkát, kirohant az üzletből, az ajtó keményen csapódott be mögötte. Szaporán szedte a lábát a városból kivezető, macskaköves úton. Szekér zörgött el mellette, kutya csaholt a szomszédos utcában. Az út a dombtetőre vitt. Azon túl a lombját vesztett erdőben megrekedve sóhajtozott a szél; a magaslat felett sötétszürkén örvénylettek a fellegek, esőcseppek szitáltak hidegen a lány arcába, hosszú haja átnedvesedett a párától.
- Most mindketten szabadok leszünk!
Kinyitotta a kalitka ajtaját, és feltartotta.
A madár meg se moccant.
- Menj már! - kiáltott rá türelmetlenül Lora.
A madár rápillantott fekete gombszemeivel, előrenyújtotta a nyakát a szabadság kis négyzete felé. Lustán megbillentette farktollait, fölemelkedett, megrázta magát, amitől pihés gombolyaggá változott. Pálcika lábain a kalitkaajtóra ugrott, s onnét végre kiröppent.
Lora megdörzsölte a szemét.
Magasan, egyre magasabban szárnyalt, suhanásának légárama kék eget hasított a fellegek közé. Teste hosszan elnyúlt, gerince elcsavarodott, karmai kimeredtek, farka nyomán felhőpamacsok szakadtak ki. Amint zuhanni kezdett, kitátotta száját, állkapcsából ezer hegyes fog meredt, jégkék szemét a lányra szegezte.
Lora kővé dermedve bámulta.
- Sárkány... - susogta.
Csak akkor ocsúdott föl, amikor a sárkány bömbölése megremegtette a domboldalt. Futásnak eredt a fák irányába.

A töltelék felét készítés közben "elkóstolgattam" :D

Hozzávalók:
20 gr maracujalé
20 gr fehér rum
chili
7 gr tejszín
90+200 gr tejcsoki

Hagyom megszáradni a díszítést.
Legvégül következik a chili.
Végül lezárom a bonbonokat.

Inspiration sometimes comes from the most unexpected places :) You always have to keep your eyes open, who knows when and where a good idea pops up! Sometimes while drinking cocktails with your friends - as it happened to me. The lovely bartenders of Boutiqbar surprised us with this vivid, tasty cocktail, which I couldn't find on the online menu, but if you visit them, you should not miss it! (anyway it is worthy to pay a visit to this bar, as they offer quality, special cocktails) The basis of this drink is vodka, then maracuja juice and chili. It is tingling, fiery and will make your day :D
This is the flavour experience I tried to reproduce with chocolate. Since I don't have vodka at home, I used white rum, which has the same alcohol percentage. In the filling there is Choceur creamy milk chocolate, whose flavour is more silky, so the other flavours can dominate. During the preparations, as a result of my "tasting", half of the filling was gone :D

Ingredients:
20 gr maracuja juice
20 gr white rum
chili
7 gr cream
90+200 gr milk chocolate
small spoon of butter
small spoon of honey
red and gold luster dust, cocoa butter

Recipe:
I put cocoa butter in two metal dishes; I add red luster dust to one of them and gold to the other. I melt the cocoa butter above a candle. With a brush I put dots of the red luster in each cavity of the bonbon mould, which I melt together with a bit of the gold luster, and paint little flames. I let the decoration get dry.
I sieve through the pulp of two maracujas (ca. 20 gr), the seeds are not needed for the filling. I add a bit of cream, butter and honey, then I warm up the mixture. I also add 90 gr milk chocolate, and after it melts, I pour a shot glass of rum in the cream. Then comes the chili. I wanted to achieve that after consuming the chocolate, one would feel that pleasant, hot taste in his throat. I used 6 small pinches of chili for the filling, but of course everyone can use as much as they prefer.
I temper 200 gr milk chocolate and in the meanwhile I thin it with some cocoa butter so the bonbon shells will be thin enough and the taste of the filling would dominate. I prepare the shells; after they get dry, I fill them, then I put the mould in the fridge. Finally I seal the bonbons.

Hűtőbe teszem néhány percre, míg a gyümölcszselé megszilárdul. Ezután lezárom a bonbonokat.

I made these bonbons for the birthday of a dear friend of mine :) The recipe is very simple, the basis is blueberry, which was boosted with some blackberry palinka. Some time ago I bought a bag of agaragar, which can be used for fruit fillings, in case you want to keep the intensity of the flavour and don't want to mix it with cream or other ingredients.

Ingredents:
100 gr blueberry
2 gr agaragar
3 cl blackberry palinka
150 gr milk chocolate

Recipe:
First I prepare the bonbon shells, as when the filling reaches the proper temperature, I will have to put it in the shells immediately. I temper the milk chocolate and pour it in the cavities of the mould, then I get rid of the excess.
I warm up the blueberries and I mash them. When there is a bit of liquid in the puree, I add a pinch of agaragar and I boil it for three minutes, until the agaragar dissolves. Then I start to cool it down and later I add the palinka, so the alcohol cannot evaporate. When the filling gets colder, but it still doesn't jellify yet, I fill the shells with it. I put the mould in the fridge for some minutes, then I seal the bonbons.

mangós-joghurtos // mango-yogurt

Szóval most pótolok :)

kurkuma

Megtöltöm őket a joghurtos krémmel. Néhány órára hűtőbe teszem a bonbonformát, végül lezárom a bonbonokat.

So happy new year to everyone! I hope 2018 will be all you dreamt of!
These bonbons were made as Christmas presents, but since I did not have internet connection for two weeks, I could not post either. Now I'm back again :)
Yogurt is so good in chocolate, it softenes its taste, and the slightly sour flavour makes even the sweetest filling fresh. Moreover, these kind of fillings are the easiest to prepare. This time I tried it with mango, but I have many other ideas in my head so there will be more yogurt-chocolate recipes coming :)

Ingredients:
150+20 gr white chocolate
80 gr mango
50 gr yogurt
turmeric

Recipe:
I blend the mango and warm it up together with the yogurt. I mix it with 20 gr white chocolate (this is necessary as otherwise the filling won't get solid enough for closing the bonbons). I marbled the bonbon shells with the mixture of 10 gr tempered white chocolate and some pinches of turmeric. It is enough to use your finger, going through the cavities of the mould a couple of times and that's it. After this layer dries, I temper the leftover white chocolate and I prepare the shells. I fill them with the yogurt cream. I put the bonbons in the fridge for some hours, then I seal them.
