colors of love

Ahhhh újabb igazán-igazi mesecsoki projekt! Olyan régóta ült bennem ez a dal, annyit hallgattam az elmúlt napokban (napokban? hetekben inkább), hogy tudtam, ebből csoki lesz. Na meg egy réges-régi mese, ami egyből eszembe jutott róla, és illik is hozzá. 
Természetesen mi más lenne a dal, ha nem a zseniális Thomas Bergersen egyik melódiája, a "dalszöveg" egy Szent György napjával kapcsolatos bolgár népdal, szerelmes tavaszi dal. A kihívást nem is annyira a csoki külseje, mint inkább a belseje jelentette. Mégis milyen íze van a szerelemnek? A szokásos, elcsépelt szólamokat, úgymint csilis csoki és társai igyekeztem figyelmen kívül hagyni, és végül a választásom három fő összetevőre esett. Ezek közül kettő teljesen egyértelmű, hogy miért és hogyan is kapcsolódik a szerelemhez: a rózsa a szerelmesek virága, a füge pedig a termékenység, a nőiség jelképe. A harmadik meghatározó hozzávaló a kardamom, ami aromás, füstös ízével még különlegesebbé tette az ízkompozíciót. 

Hozzávalók:
50 gr füge
20 gr tejszín
40 gr rózsalekvár
30 gr étcsoki
fél kardamom
200 gr fehércsoki
kakaóvaj, lüszterpor

Elkészítés:
A fügét darabokra vágom, és összeturmixolom. Hozzáöntöm a tejszínt, adok hozzá a rózsalekvárból, végül a fél kardamom mozsárban összetört magvait is beleöntöm. Szép, rózsaszín keverék lesz, kóstolásra mindhárom fő összetevő ízei harmonikusan érezhetőek benne. Épp ezért csak 30 gr olvasztott étcsokit kevertem hozzá, hogy ne nyomja el a többi ízt.
Gyertyaláng felett felolvasztok egy teáskanálnyi kakaóvajat, hozzáadok némi sárga lüszterport, amivel csíkokat vagy mintákat festek a csokiforma félgömb alakú mélyedéseibe. Ezután ugyanígy járok el a kék és a piros lüszterporral is, ezek keverékeiből pedig zöld, narancssárga és lila színeket állítok elő, hogy minél több színben pompázzanak majd a csokigolyók. Némelyik színcsíkot a másik fölé húzom, vagy egybeolvasztom. Néhány percre a hűtőbe teszem a formát, majd temperálom a fehércsokit, elkészítem a csokiburkokat. Ismét a hűtőbe teszem a formát, és amiután a csoki megszilárdult, kiütögetem a félgömböket a formából. Megtöltöm őket a fügés krémmel, majd olvasztott fehércsokit kenek ecsettel a peremükre, és összeragasztom őket.

  

Úgy tartották, ha valaki igaz szerelemmel csókolja meg a szobrot, az elnyeri a lány szívét, és megéled végre sok száz éves álmából. Számtalan fiatal próbálkozott, lehunyt szemmel illették a szobor kőajkait, ám egyikük sem járt sikerrel. A kőleány csak állt kitárt karral, széltépte ruhájában, fekete kőhaját lesodorta válláról a száz meg száz évvel ezelőtti szél, amikor meleg, emberi szíve gránittá változott. Jöhetett fagy, nyári hőség, zuhogó eső, vad szél, a szobor rendületlenül állt, és várta megváltóját. Sem az időjárás, sem a pergő napok nem fogtak rajta; nem repedt meg, nem kopott el. A falusiak illendő tisztelettel kerülték meg, amikor földjeikre tartottak, vagy látogatóba mentek rokonaikhoz. A kisfiúk elsőként a kővé vált leány meséjét hallották, ezért amint felcseperedtek, mind szerelmesek lettek belé, és mind megpróbálták visszahozni az életbe. A lánykák gyakran ücsörögtek a szobor talpánál, találgatták, vajon hogy nézhetett ki valójában, és a ruhája redői között bújócskáztak.
Egy kora tavaszi napon két ismeretlen érkezett a faluba. A kovácsnál szálltak meg, és hamarosan kósza hírek terjedtek el róluk: hogy a férfi egy távoli királyság trónörököse volt, kislánya pedig attól a nőtől született, akibe titkon szerelmes volt, ám, lévén rangján aluli, nem vehette el. A nő azután elhagyta, a király pedig szégyenében elüldözte fiát a gyermekkel együtt.
Igaz volt-e, vagy sem, a falusiak hercegnek nevezték el az ismeretlent, aki munkát vállalt a kovácsnál. Attól kezdve nap mint nap látták, ahogy lányával a kovács földjére igyekszik, hogy a napi betevő fejében azt művelje. Nem tellett sok időbe, hogy a herceg megismerje a kővé vált lány történetét. És egyik este hazafelé menet leült a szobor elé, nézte-nézte, míg gyermeke a kőlány szélfútta szoknyájával játszadozott. A másnap alkonya ismét ott találta néhány lépésnyire a szobortól. Harmadnap is ott ült, és attól fogva három hónapon keresztül minden este, egészen addig, míg a csillagok meg nem tették égi útjuk felét. És minden este egy kicsivel több hatotta át a lány titokzatos történetéből.

Szemerkélő eső mosta szürkévé a világot. A folyó megáradt, kiöntött medréből, feláztatta a fűcsombékokat. Apró patakokban ömlött lefelé a hegyoldalról az esővíz, benne mezítláb szaladt a lány, ruhája átázott, és a testére tapadt. Megfordult, nevetett. Ekkor ért oda a férfi, összeölelkeztek.
- Hogy világít a szemed ebben a szürke világban! – mondta a lány.
A férfi megcsókolta. – Gyere velem!
A lány megrázta a fejét. – Tudod, hogy ez nem ilyen egyszerű… idő kell. Várj még, kérlek!
- Már régóta várok. Engem szeretsz, velem kéne lenned. Hagyd hátra őt végre!
- Tudom, igazad van – sóhajtott a lány. – Sosem szerettem még úgy senkit, mint téged, és ez megrémiszt. Rémisztő és csodálatos. De mégsem olyan könnyű hátrahagyni mindent, ami az eddigi életemet jelentette…
- Igen, erre számítottam! Mióta enyelegsz másokkal a fiam háta mögött?  
A hang hallatán a pár szétrebbent. 
– Halljam! Ki ez a senkiházi? – a fekete ruhás nő fenyegetően lépett előrébb.
- Én… ő… – a lányt megcsalták a szavak.
- Tudtam, hogy nem vagy hozzá való! Hogy is szerethetett bele ilyen alávaló, hazug nőszemélybe! De nem fogom hagyni, hogy összetörd a szívét! Nem ám! – a nő felemelte kezeit.
Feltámadt a szél; nehéz, párás, forró levegő, és ahogy a lány szeretője felé szaladt segítségért kiáltva, tüdeje megtelt vele, szétáradt tagjaiban. Mielőtt lehunyta elnehezült szemhéját, a férfi sötétzöld szemeit látta maga előtt.
…
Felnézett. Zöld, mint a hajnali ég, mint a mohos köveken futó patak. Zöld szemek néztek vissza rá. Ott állt a férfi karjai közt az esti ég alatt.
- A szobor! – hallatszott a háta mögül, kíváncsi emberek gyűltek köréjük.
- Gyere! – mondta halkan a férfi, kézen fogta, és ő ment, nem tiltakozott többé.



Ohhh another really-real fairytale project! This song has been in my ear for such a long time, I've been listening to it so many times in these last days (days? rather weeks) that I knew I'd have to make a chocolate about it. It reminded me of an old-old tale, which matches it.
Naturally this is a melody of the genious Thomas Bergersen; the "lyrics" are those of a Bulgarian folk song about St George's day, a spring love song. The challenge was not so much the ouside of the chocolate, rather the inside. How does love taste? I tried to avoid the usual, banal combinations such as chocolate with chili, and finally I chose three key ingredients. It is quite obvious why two of them are connected to love: rose is the flower of lovers, fig is the symbol of fertility and femininity. The third significant component is cardamom, whose aromatic, smoky flavour made the composition even more special.



Ingredients:
50 gr fig
20 gr cream
40 gr rose jam
30 gr dark chocolate
half cardamom
200 gr white chocolate
cocoa butter, luster dust

Recipe:
I cut the figs into pieces and I blend them. I pour the cream in it, I add the rose jam and finally the crushed seeds of the cardamom. It becomes a nice, pink mixture and if you taste it, the flavours of all three ingredients can be felt harmoniously. Therefore I mixed it with only 30 gr of molten dark chocolate.
Above candle light I melt a teaspoon of cocoa butter, I add yellow luster dust, with which then I paint stripes or patterns in the hemisphere shaped cavities of the mould. I do the same with blue and red luster dust and from their mixtures, I make green, orange and purple colours so the chocolate globes will get even more colourful. Some stripes are painted above others, or merged. I put the mould in the fridge for some minutes, then I temper the white chocolate and I create the chocolate shells. After the chocolate gets solid in the fridge, I tap the mould and take the shells out of it. I fill them with the cream, then I smear molten white chocolate on the brims and I stick the two halves together.



It was believed that if someone kisses the statue with true love, he wins the girl's heart and finally she wakes up from her centuries-long sleep. Countless young man tried their luck, they kissed the stone lips of the statue with closed eyes, but none was successful. The stone girl was just standing with her arms spread, in her windtorn dress; her black stone hair floated in the wind that had blown centuries ago, when her warm heart turned into granite. Frost, summer heat, pouring rain, wild wind could come, the statue stood steadily and waited for its saviour. Neither the weather, nor the passing days could corrode it; it did not crack or deteriorate. The villagers passed by respectfully while going to their lands or visiting their relatives. The little boys heard first the tale of the girl who had turned to stone, therefore when they grew up, they all fell in love with her and all of them tried to bring her back to life. The little girls were frequently sitting at the foot of the statue, guessing how she might have looked in reality and playing hide-and-seek among the pleats of her dress.
One early spring day two strangers arrived in the village. They found lodging at the blacksmith's and soon the tidings spread about the man being the heir of the throne of a faraway kingdom and his daughter being born from the woman he had secretly loved. However, being a commoner, he could not marry her. Then the woman had left him and the king, being ashamed, had expelled his son together with the child.
Whether it was true or not, the stranger, who was working for the blacksmith, was named prince by the villagers. From then on they saw him day by day going to the land of the blacksmith with his daughter, in order to work on it for his daily bread. Not much time passed until the prince learnt about the story of the girl who had turned to stone. And one evening, while going back home, he sat down in front of the statue, he was watching it while his child was playing with the windtorn skirt of the stone girl. The next dusk found him there, sitting a few steps away from the statue. He was sitting there also on the third day and then every single evening, until the stars took half of their heavenly journey, for three months. And every single evening he absorbed a bit more of the mysterious story of the girl.

Sprinkling rain washed the world to grey. The river flooded, gushed out of its bed, it washed away tufts of grass. Rain water was pouring down on the hillside; the girl was running barefooted in it; her clothes soaked through and clung to her skin. She turned around and laughed. The man got there and they hugged. 
"Your eyes are shining in this grey world," said the girl. 
The man kissed her. "Come with me!"
The girl shook her head. "You know that this is not so simple... I need time. Wait a bit more, please!" 
"I've been waiting too long. You love me, you should be with me. Leave him finally!" 
"I know, you are right," sighed the girl. "I have never loved anyone like you and it frightens me. It is frightening and wonderful. But it is not easy to leave everything that was my life until now..." 
"Yes, I suspected it! Since when have you been flirting with others behind my son's back?"
Hearing the voice, the couple jumped apart. 
"Tell me, who is this rascal?" the woman in black threateningly stepped forward.
"I... he..." words eluded the girl.
"I knew you were not meant to be with him! How could he fall in love with such a despicable, lying woman! But I won't let you break his heart!" the woman lifted her hands.
The wind rose; heavy, humid, hot air, and as the girl was running to her lover, screaming for help, her lungs filled with it, it spread in her body. Before she closed her heavy eyelids, she saw the man's dark green eyes in front of her.
…
She looked up. Green like the dawn sky, like the stream running above mossy stones. Green eyes were looking back at her. She was standing under the evening sky, in the man's arms. 
"The statue!" she heard from behind her; curious people gathered around them. 
"Come!" said the man quietly, he took her hand and she went with him, she did not protest any more.

fügés-marcipános // fig-marzipan

Nem ezt a bonbont terveztem, de ha már hazahoztam a sok fügét,muszáj volt feldolgozni őket. Amint tavaly, idén is ősszel érett egy nagy második adag, ezúttal pedig az az ötletem támadt, hogy marcipánnal párosítom, elvégre a füge kellemes, édeskés ízéhez jól passzol a mandula, kissé megszelídítik egymást :)
A múlt hétvégét a Balatonon töltöttem - nem mondanám, hogy jó viszonyban vagyok az ősszel, vagyis igyekszem meglátni benne a szépet, de az esős-szürke napokon nem igazán megy. Most viszont mintha csak a nyár hagyta volna hátra a színes tollruhát: virágok nyíltak, zöldelltek a fák, a kertben termettek a zöldségek. Na és ott a dió! Hat fáról szedtük össze a termést, és a napon szárítottuk őket. És persze megérett a szőlő is, ami körül csak úgy döngtek a darazsak -  ők is akartak egy-egy falatot, de szerencsére a háló távol tartotta őket.
Valahányszor a Balatonon járok, a természet jelenléte egyszeriben értelmet ad a létnek, a zsúfolt hétköznapok után marad idő átgondolni és átérezni az életet. A sok szín, illat, a feltárulkozó ég, a télre készülődő föld, a madarak hangja megnyitja a lélek előtt ezt a titokzatos végtelent. 
Esténként a nap épp félúton bújik a dombok mögé a nyári és a téli napforduló két pontja közt, hisz nemrég volt a napéjegyenlőség. És ahogy ezen eltűnődöm, szinte magam előtt látom azt a hatalmas égi órát, ami most fordul át a nyárból a télbe, végeérhetetlen körforgásban.


Hozzávalók:
50 gr füge (két kisebb, vagy egy nagyobb darab)
70 gr marcipán
30 gr tejszín
150 gr étcsoki

Elkészítés:
A fügét darabokra vágom, és leturmixolom. Hozzáöntöm a tejszínt és a marcipánt kis darabokra tépve. Felmelegítem, míg a marcipán nagyjából fel nem olvad, de ha egy kicsit darabos marad, az sem baj. 
Temperálom az étcsokit, beleöntöm a formába, majd a felesleget kiöntöm. Hűtőbe rakom, míg a csokicsészék meg nem szilárdulnak, akkor kiütögetem őket a formából, és megtöltöm a marcipános krémmel.

I didn't plan this bonbon but since I brought home lots of figs, I had to process them. Just like last year, in this year we had a second round of figs and this time I thought that I'd pair them with marzipan, after all the sweet, nice flavour of the figs would fit with almond, they would tame each other a bit :)
I spent the last weekend at lake Balaton - I can't say that I'm on good terms with autumn; I try to see its beauty, but I don't succeed on the grey-rainy days. This time, though, it seemed that summer had left her colourful feathers behind: flowers were blooming, the trees were green and vegetable was growing in the garden. And the walnuts! We picked walnuts from six trees, and we dried them in the sun. And we also had grapes, the wasps were humming around but frotunately they were kept away by the net.
Whenever I go to Balaton, the presence of nature gives life a meaning; there is time to think about and feel life after the busy workdays. The colours, scents, the open sky, the earth preparing for winter, the songs of birds open this mystical infinity for the soul.
In the evenings the sun sets behind the hills right in the middle of the points of the summer and winter solstice, after all the equinox was anoly a couple of days ago. And as I contemplate this, I can almost see that mighty celestial clock that turns from summer to winter in an endless cycle.


Ingredients:
50 gr fig (two smaller or one bigger)
70 gr marzipan
30 gr cream
150 gr dark chocolate

Recipe:

I cut the figs to pieces and blend them. I add the cream and the marzipan, also in little pieces. I warm them up until the marzipan melts, but it's not a problem if some small pieces remain.
I temper the dark chocolate, I pour it in the mould, then I get rid of the excess. I put it in the fridge until the chocolate cups get solid. Then I take them out of the mould and I fill them with marzipan cream.

fügés-diós // figs and walnuts

Szóval egy évig jártam az Íróakadémiára, abban a hitben, hogy ők majd "megtanítanak írni". Micsoda téveszme! :DDD Minden csak százszor bonyolultabb lett azóta :D Előtte akármilyen ötlet jött, gyorsan lekörmöltem, és kanyarítottam belőle egy sztorit, ami természetesen nem volt sem irodalmi, sem kifinomult. Mivel a mesék iránt éreztem vonzalmat, és e műfaj sosem került be igazán a klasszikus szépirodalmi műfajok közé, egy kicsit mindig kisebbrendűségi érzésem volt (és van is). Az Íróakadémia után meg már csak arra tudtam gondolni, hogy belőlem soha nem lesz Esterházy Péter, szóval erőlködni is felesleges - meg amúgy is, ki a fenét érdekelnének az irományaim? Ez aztán rendesen leblokkolta az ihletet. Az írással (és főleg a meseírással) való kapcsolatom hosszú évekig csak gyötrődés volt, a korábbi heti egy mese helyett egy év alatt írtam egyet-kettőt. 
Most azonban új értelmet nyert az írás: a csokival párosítva más kontextusba került, valahogy felszabadultabb lett a kreatív folyamat. Azt hiszem, a sok évnyi gyötrődés is kellett ehhez, mert szép lassan normalizálódott az írás és a köztem lévő viszony - az efféle kapcsolatoknak mindig idő kell, hogy kiforrják magukat :) Remélem, tetszenek nektek a mesék, és olvasás közben képzeletben egy kicsit érzitek a csoki ízét is :)
Ezeket a bonbonokat apám születésnapi partijára készítettem. Különlegességük, hogy ismét balatoni alapanyagokból készültek: füge és dió a két alapíz.



Hozzávalók:
3-4 kis méretű füge
0,5 dl tejszín
5-6 szem dió
1 kiskanál méz
70 gr tejcsoki
200 gr étcsoki

Elkészítés:
A fügéket leturmixolom, hozzájuk reszelem a diót, beleöntöm a tejszínt és a mézet, és az egészet felmelegítem. Amikor majdnem forr, hozzákeverem a tejcsokit (épp csak annyit, hogy összeálljon és ne legyen túl híg a massza). Étcsokiból elkészítem a bonbonhéjakat, megtöltöm őket, majd lezárom a bonbonokat. A tetejét rózsaszín gyöngyökkel díszítem.





So I was frequenting the Writing Academy in the faith that "they are going to teach me how to write". What a misconception! :DDD Everything became a thousand times more complicated since then :D Before that I had quickly written down every idea that had come to my mind and I had turned it into a story, which had been neither literary, nor sophisticated. Since I was attracted mainly to fairytales and this genre never really made it among the classic literary genres, I always had (and still have) a bit of inferiority complex. After the Writing Academy I could only think about that I would never become Péter Esterházy so why bother at all? Moreover, who the hell would be interested in my writings? This, obviously, blocked inspiration. My relationship with writing (and especially with fairytale writing) used to be an agony for years; instead of one tale per week I wrote one or two per year.
However, now writing gained a new meaning: by matching it with chocolate there's a new context, the creative procedure became more free. I think the years of agony were necessary too, as our (writing's and my) relationship got back to normal - such relationships always need time to mature :) I hope that you like my fairytales and while reading, you can imagine the flavour of the chocolates too :)
These bonbons were made for my dad's birthday party. Their characteristic is that they were made of ingredients from Balaton: the two basic flavours are figs and walnuts.



Ingredients:
3-4 small figs
0,5 dl cream
5-6 pieces of walnuts
1 small spoon of honey
70 gr milk chocolate
200 gr dark chocolate

Recipe:
I blend the figs, shred the walnuts and mix them with cream and honey. I warm them up and when the mass is almost boiling I add the milk chocolate (just as much that makes the mass a bit more solid). I prepare the bonbon shells of dark chocolate, fill them, then I seal the bonbons. I decorate them with pink pearls.

fügés-levendulás // with figs and lavender

Sokan nem hisznek nekem, amikor azt állítom, hogy a Balatonon - legalábbis a mi kis csücskünkben - mediterrán az éghajlat. Nem is annyira a meleg, mint inkább a száraz nyár miatt: az esőfelhőket folyamatosan visszatartja a tóból felszálló pára, ezért előfordul, hogy hetekig nem is esik. A konyhakert persze nem bírja az ilyesmit, a mediterrán növények viszont annál inkább. A Tihanyi-félsziget tele van ültetve levendulával és mandulafákkal, na és persze a füge sem ritkaság errefelé. Mi több, a cocializmus idején kísérletképpen citromos kertet hoztak létre az egyik sétányon a hegyoldalban, ám természetesen a fák nem élték túl a telet... A kert romantikus, romos maradványaiban azóta fügét termesztenek, de a "Citromos" név rajtaragadt. 
A mi kertünkben is áll két megtermett fügebokor. Évente két termőidőszakuk van: július végén-augusztusban, és szeptemberben. Tavaly annyi termett, hogy nem győztük elrakni, idén viszont a nyár elég gyér termést hozott. Sajnos nem volt annyi, hogy kísérletezhessek valami csoki-füge kombinációval, az őszi termésből viszont szerencsére jutott erre is.
A füge igen tetszetős gyümölcs, ráadásul szerteágazó és összetett a szimbolizmusa: egyes vélekedések szerint például az Édenkertben az a bizonyos fa fügefa volt (hiszen amikor az első emberpár ráébredt, hogy meztelenek, fügelevéllel takarták el magukat). Több kultúrában a nőiséget és a termékenységet jelképezi.


Nos, azt hiszem ha a fügét az ember mediterrán ízekkel párosítja, nem igazán lehet mellélőni. Ezért aztán egy igazán dekadens édességet készítettem, amibe minden itthon fellelhető finomságot beleraktam, és mivel a félédes fehérbor, meg a füge is kissé savanykás, ezért ezúttal tejcsokival egészítettem ki őket.



Hozzávalók:
2-3 kis füge
0,5 dl félédes fehérbor
2 csipet levendula
70 gr tejcsoki
100 gr étcsoki

Elkészítés:
A fügéket megmosom, felvágom és összeturmixolom. Hozzájuk öntöm a bort és egy kis levendulát, majd felrakom őket melegedni. Amikor felmelegedett a keverék, de még nem forr, elkeverem benne a darabokra tört tejcsokit. Az étcsokit temperálom, elkészítem a kis csokicsészéket, és megvárom, hogy megszilárduljanak. Kifordítom őket a bonbonformából, majd mindet megtöltöm a fügés krémmel. Végezetül egy kis rózsaszín díszítőcukorral és tündérporral felöltöztetem a csészéket.


Many don't believe me when I say that at lake Balaton - or at least in our little corner of it - the climate is mediterranean. It's not because the summer is warm, but because it is dry: the vapor rising up from the lake pushes back the clouds, therefore sometimes it doesn't rain for weeks. The vegetable garden of course doesn't bear this; mediterranean plants all the more. The Tihany penninsula is fully planted with lavenders and almond trees, and figs are not rare either. Moreover, during socialism they created an experimental lemon tree garden on one of the paths at the mountain, but naturally the trees did not survive the winter... Today fig trees are cultivated in the romantically ruined garden but the "Lemon-garden" name got stuck on it.
We have two big fig trees in our garden. They bear fruits twice a year: at the end of July-August, and in September. Last year they bore so many figs that we had to preserve most of them; this year, however, the harvest was quite scant. Unfortunately it wasn't enough to experiment with some chocolate-fig combination, but from the autumn crop I managed to put away some for this purpose.
Figs are good looking fruits, moreover, they bear complex symbolism: it is possible that that certain tree in the Garden of Eden was a fig tree (after all the first couple covered themselves with fig leaves when they realized that they were naked). For many cultures it symbolises fertility and feminine principle. 
Well, I think that figs combined with other mediterranean flavours cannot really be messed up. Therefore this time I prepared really decadent sweets, in which I put everything good that I managed to find at home. Since semi-sweet white wine and figs are both a bit sour, this time I added milk chocolate to them.



Ingredients:
2-3 small figs
0,5 dl semi-sweet white wine
2 pinches of lavender
70 gr milk chocolate
100 gr dark chocolate

Recipe:
I wash the figs, cut them up and I blend them. I pour the wine on them and I add a bit of lavender, then I warm them up. When the mixture is hot but it doesn't boil yet, I mix it with milk chocolate. I temper the dark chocolate, and I prepare the little chocolate cups. I wait until they solidify, then I take them out of the mould and I fill them with the fig cream.
