Freddie's truffles

A rocktörténelem egyik legnagyobb alakja, zseni, énekes, zongorista, dalszerző, grafikus, legenda, showman, félénk, magányos, érzékeny lélek - ez mind Freddie Mercury. Nehéz lenne megfogalmazni, mi mindent jelent nekem, hányszor és milyen formában volt hatással az életemre zeneileg és emberileg. Furcsa belegondolni, hogy egy ember, akivel soha nem találkoztam, aki akkor halt meg, amikor 8 éves voltam, és még azt sem tudtam, hogy létezik egyáltalán, ilyen fontos szerepet tölthet be az életemben. De hogy így van, az nem kétséges, és még úgy is sokat köszönhetek neki, hogy "csak" a zenéjén keresztül álltam vele kapcsolatban.
Persze most a Bohemian Rhapsody film miatt elég nagy a felhajtás a Queen körül, és merem remélni, hogy sokan (legfőképp a Freddie halála után született generációk tagjai közül) felfedezik és megszeretik a Queen zenéjét. Én most csak egy dalt teszek ide - pedig higgyétek el, lehetne vagy százat -, ez volt a legnagyobb hatással az életem folyására. Történetesen ezt Freddie írta, és az 1995-ben kiadott Made in Heaven c. lemezen szerepel. A szöveg, a dal, a 3:02....

One of the biggest icons of rock history, genius, singer, pianist, songwriter, graphic designer, legend, showman, timid, lonely, sensitive soul - Freddie Mercury is all of this. It would be hard to describe what he means to me, how many times and in what ways he affected my life both on a musical and personal level. It's weird to think about how a man, who I've never met, who died when I was only 8 years old and didn't even know that he existed, can play such an important role in my life. But this is the case without doubt and I am grateful to him even if I've been connected to him "only" through his music.
Of course nowadays there's a big hype around Queen because of the Bohemian Rhapsody movie and I hope that many will discover and get to like Queen's music - especially from the generations born after Freddie's death. I'll put only one song here - believe me a hundred could be -, as this had the biggest impact on my life. Freddie wrote this one and you can find it on the 1995 Made in Heaven album. The lyrics, the melody, 3:02...


Nagyjából egy éve tervezem elkészíteni ezt a trüffelt, azóta, amióta elkezdtem a szériát Roger bonbonjával. Egy időben két hónapig tároltam a pezsgőt a hűtőben, de aztán valahogy mégis mindig másféle csoki készült, ezt pedig csak halogattam. Most a filmen felbuzdulva, továbbá egy kedves barátom születése napjára is, végre megcsináltam a Freddie által ihletett trüffelt. Alább egy fotó, ami a svájci Montreux-ben álló Freddie-szobornál készült :) na meg a recept.

I've been planning these truffles for a year, since I started the set with Roger's bonbons; once I even kept the champagne in the fridge for two months, but somehow I always ended up making other kinds of chocolate and this one was postponed. Now, after watching the movie and also on the occasion of the birthday of a good friend of mine, finally I prepared the truffles inspired by Freddie. Below is a photo taken in Montreux, Switzerland, at the Freddie statue :) and of course the recipe.



Hozzávalók:
100 gr 75%-os étcsoki
0,3 dl pezsgő
chili
egy kiskanál vaj
étcsokireszelék
arany lüszterpor

Elkészítés:
Valójában ez egy roppant egyszerű trüffel, aminek az összetevőit Freddie személyiségéhez válogattam. A kedvenc itala a pezsgő volt, egyértelmű, hogy bele kellet kerülnie. A chili csípős, színes egyéniségéhez illik, míg az aranypor a Queen fenségességéhez, pompájához.
Vízgőz felett felolvasztom az étcsokit és a hozzáadott vajat. Kis tálba öntöm, és hozzákeverem a pezsgőt, valamint ízlés szerint 3-4 csipet chilit. Kis időre hűtőbe teszem. 
Hámozóval egy sornyi étcsokiról kis darabokat farigcsálok. A csokikrémből golyókat formázok, belehempergetem a reszelékbe. Végezetül egy ecset segítségével megszórom a trüffeleket aranyporral.


Ingredients:

100 gr 75% dark chocolate
0,3 dl champagne
chilli
one small spoon of butter
grated dark chocolate
gold luster dust

Recipe:
This is a very simple truffle, whose ingredients were selected in relation to Freddie's personality. His favourite drink was champagne, obviously that had to be in it. Chilli fits his flamboyant character, while the gold dust stands for Queen's grandiose splendour.
In a bain-marie I melt the dark chocolate and the butter. I pour it in a small bowl and I add the champagne and 3-4 pinches of chilli. I put it in the fridge for a while
With a peeler I chip tiny pieces of a bar of dark chocolate. I shape small balls of the chocolate cream and I roll them in the grated chocolate. Finally with a brush I sprinkle the truffles with gold dust.

Queen I - Roger Taylor

Szóval egyszer már elkészítettem a Queen Hot Space borítóját csokiból, és már akkor tervbe vettem, hogy a tagokról egyesével is készítek bonbont olyan ízekkel, amelyek az egyéniségükhöz harmonizálnak. Nem mondhatnám, hogy nehéz dolgom van :D
Valójában csak akkor jöttem rá, hogy ez Roger csokija, miután elkészült, és megkóstoltam. Tudtam, hogy milyen ízt szeretnék elérni, és amikor ez sikerült, egyből ő jutott eszembe. A friss gyömbér ugyanis csípős, savanyú, élénk ízű, az alkohol pedig még inkább kidomborítja ezt a töltelékben. Épp olyan energikus, kicsattanó íz, amilyennek Rogert látni a Queen videóiban és koncertjein. 
És természetesen a recept alatt megtalálható két kedvenc Roger-dalom: az egyik a Queen 1986-os A Kind of Magic albumán szerepel, a Hegylakó filmzenéje, míg a másikat két évvel korábban vette fel Strange Frontier című szólóalbumához. Ez utóbbi, a Racing in the Streets valójában egy Bruce Springsteen-szám, de nekem sokkal jobban tetszik Roger verziója (bocs, Bruce :D), számomra nosztalgikus hangulata van :) Akinek ez újdonságot jelent: a Queen minden tagja dolgozott szólóprojekteken és/vagy más művészekkel is, Rogernek például öt szólóalbuma van, az utolsó épp négy éve jelent meg.


Hozzávalók:
200 gr étcsoki
100 gr tejcsoki
egy centi széles karika gyömbér
30 gr szederpüré
10 gr tejszín
két kupaknyi szederpálinka

Elkészítés:
A szederpürét és a tejszínt összeöntöm, belereszelek egy karika gyömbért, és felmelegítem. Elkeverem benne a tejcsokit. Ha nem elég csípős, adok hozzá még a gyömbérből, és belekeverek két kupaknyit a pálinkából. A végeredménynek kellően karakteresnek kell lennie, különben az íz nem fog átütni a burok csokiízén. 
Temperálom az étcsokit, elkészítem a bonbonhéjakat. Miután megszilárdultak, megtöltöm őket a krémmel, majd lezárom a bonbonokat.

So once I made Queen's Hot Space album cover of chocolate and even then I was planning to create bonbons inspired by the members of Queen, with flavours that match their personalities. I can't say it is a hard task :D
I only realised that this is Roger's chocolate once I finished and tasted it. I knew what kind of flavour I wanted to achieve and when I did, it reminded me of him, instantly. Fresh ginger has a hot, sour, intense flavour; alcohol enhances this in the filling. It is just as energetic and exuberant as Roger in the videos and concerts of Queen.
And naturally, above you can find my two favourite Roger-songs: the first one is from Queen's 1986 A Kind of Magic album, the soundtrack of Highlander; the other one was recorded two years earlier for his solo album Strange Frontier. This latter, Racing in the Streets is originally written by Bruce Springsteen, but I prefer Roger's version (sorry, Bruce! :D), to me it has a nostalgic feeling. To whom this is new: every member of Queen worked on solo projects and/or with other artists. Roger released five solo albums, the latest only four years ago.


Ingredients:
200 gr dark chocolate
100 gr milk chocolate
1 cm wide piece of ginger 
30 gr blackberry puree
10 gr cream
two bottle caps of blackberry palinka (at least 50% alcohol)

Recipe:
I pour together the blackberry puree and the cream, I shred the ginger in it and I warm it up. I mix it with the milk chocolate. If it is not spicy enough, I add more ginger; and I pour the palinka in it. The cream must be characteristic enough, otherwise its flavour won't be felt through the chocolate shell of the bonbons.
I temper the dark chocolate, I prepare the shells. After they get solid, I fill them with the cream, then I seal the bonbons.

Hot space

Zene nélkül nem élet az élet. És milyen vicces egybevonni a zenét és a csokit! Van ugye ez az ikonikus albumborító, amit Queen-rajongók milliói ismernek világszerte:
Na hát ez egyszerűen adja magát, hogy ilyet csokiból KELL csinálni. De nem akárhogy. A csokinak tükröznie is kell a zenészek személyiségét, hiszen a Queen négy különleges, és nagyon különböző egyéniségből állt - ezért is működött annyira jól.


Life wouldn't be the same without music. And how funny it is to unite music and chocolate! So there is this iconic album cover (see above), which is well-known by millions of Queen-fans throughout the world.
It is obvious that it MUST be made of chocolate. But not just anyhow. The chocolate must reflect the personality of the musicians, as the four members of Queen had special and very different characters - that's why they worked together so well.


Módszer: a temperált, fűszerezett csokit minden esetben sütőpapírra öntöttem, a széleket spaklival vágtam egyenesre. Miután a tábla megszilárdult, újabb adag csokit temperáltam, és ecsettel megfestettem az arcokat. A színezés minden esetben ehető lüszterporral történt, hol simán ecsettel, hol pedig kakaóvajjal keverve. Sajnos az étcsokit elég nehéz ily módon színezni, de talán így is látszik a lényeg.

Method: the tempered chocolate was mixed with spices and it was poured on baking parchment, then I cut the fringes with dough cutter. After the chocolate card solidified, I tempered some more chocolate and I painted the faces with a brush. Colouring was done with edible luster dust, sometimes just with a brush, sometimes by mixing it with cocoa butter. Unfortunately dark chocolate is hard to colour with this method but maybe it can still be appreciated.


Freddie - csak természetes, hogy chilis étcsokiból készült! Freddie, minden idők egyik legkarizmatikusabb előadóművésze a kreativitásáról, csípős, pimasz, energikus egyéniségéről volt híres, amit a chilis csoki híven kifejez. 
Naturally Freddie was made of dark chocolate with chili! Freddie, one of the most charismatic performers of all times, was famous for his creativity, his tongue-in-cheek, energetic, sassy character, which is mirrored by chili&chocolate.


John - a visszahúzódó, csendes Johnt fehér csokiból és szerecsendióvirágból készítettem el, mert az íze hasonlóképpen simulékony és meghúzódik a háttérben. 
The reserved, quiet John was made of white chocolate and nutmeg flower, as it is similarly pliant and its flavour stays in the background.


Roger - étcsoki és rózsabors fejezik ki szerintem a leghívebben Roger kirobbanó, vagány, erős, színes egyéniségét. 
Dark chocolate and rose pepper represent Roger's exuberant, cool, strong and colourful personality the best.


Brian - Brian szelíd, kedves, természetkedvelő, intellektuális egyéniség, aki a szívén viseli környezete sorsát. Ezért arcmásához fehércsokit és kókuszt használtam, ami édes, visszafogott ízt eredményezett.
Brian is a gentle, kind, nature-loving, intellectual person, who cares for his environment. Therefore I used white chocolate and coconut for his face, which resulted in a sweet, reserved flavour.

Hot Space Freddie

Szerény véleményem szerint a rockzene az emberi kreativitás egyik legkirályabb találmánya. Azt hiszem, zene nélkül nem létezhetnék (mint ahogy csoki, meseírás meg rajzolás nélkül sem, valószínűleg), egyszerűen létszükséglet. És persze a kedvenc együttesem a Queen, ezen nincs is további magyarázni való asszem. 
Nemrég megfogant a fejemben a gondolat, hogy ha már annyira szeretem őket, meg rajzolni is, meg csokit készíteni is, miért ne vonhatnánk egybe az összeset? Így született meg a csoki Hot Space albumborító ötlete. A háttér csilis étcsokiból készült (ez illik leginkább Freddie rapszodikus természetéhez), az arc pedig fehércsokiból.
Készítettem néhány fázisfotót, és levontam a következtetést, hogy a lüszterport ezentúl csak fehércsokin fogom alkalmazni :D 




In my humble opinion rock music is one of the most awesome inventions of human creativity. I think I wouldn't be able to exist without music (just like probably without chocolate, writing and drawing either), it is substantial. And of course my favourite band is Queen, I don't think there's anything else to explain about this.
A few days ago I thought that since I love them so much, and I love to draw and to make chocolate, why not connect all of them? This is how the idea of the Hot Space chocolate cover was born. The background is made of dark chocolate with chili (that fits Freddie's tongue-in-cheek personality), the face is made of white chocolate.
I took some phase photos and I drew the conclusion that I will use luster dust only on white chocolate :D
