karácsonyvárós csokik // chocolates for advent calendar

Már csak 19-et kell aludni!! Ugye ti is számoltok visszafelé? :)))
Két hete a konyha átalakult csokigyárrá, és egymás után készülnek a finomságok karácsonyvárókba, ajándékba, és így tovább. Az év végi hajtásban a munka és emellett alig volt idő másra, de azért persze a karácsonyi mesét folytattam. Akit érdekel a történelmi háttér, kíváncsi a katharok tragédiájára, az itt találhat róluk több információt. Az inkvizíció (legalábbis a középkori, mert azon kívül később volt még Spanyol és Római Inkvizíció is) valóban nagyrészt annak köszönheti létét, hogy az egyház megpróbált megbirkózni az eretnekmozgalom jelentette kihívással. Franciaországban és a Vatikánban több levéltárban is őriznek iratokat, amelyek a perek anyagát tartalmazzák, némelyik egész részletes leírást közöl. A modern technológia csodájának köszönhetően el sem kell zarándokolnunk Franciaországba, ha meg akarjuk tekinteni őket: a levéltárak honlapján, például itt és itt is közzétettek  befotózott jegyzőkönyveket.
Az alábbiakban pedig közlöm a kedves tesóim karácsonyváróiba készült csokikák receptjét: 2x24-et készítettem négyféle töltelékkel, hogy ne legyen unalmas minden nap ugyanazt enni ;) Én számokat is festettem rájuk, de persze anélkül is biztosan örülne nekik bárki :D Karácsonyvárókba egyébként olyan csokit érdemes készíteni, ami nem romlik meg hamar, tehát például marcipánosat, vagy olyat, amibe kerül egy kis alkohol.



Hozzávalók:
0,2 dl narancslé
50 gr étcsoki
1 kiskanál vaj
fahéj, gyömbér, szegfűszeg

50 gr gesztenyepüré
0,2 dl narancslé
narancshéj 
0,1 dl brandy
gyömbér

10 gr meggy
0,2 dl rum
fahéj
50 gr marcipán

20 gr szilva
50 gr marcipán
mézeskalács fűszer
0,3 dl vörösbor

kakaóvaj, négyféle ünnepi színű lüszterpor (ezüst, fehér, arany, vörös)
2x150 gr étcsoki

Elkészítés:
Először is kakaóvajjal kevert lüszterporral felrajzolom a számokat a csokiforma mélyedéseibe. Ügyelni kell arra, hogy tükörírással fessük őket! Érdemes közben kéznél tartani egy mécsest, hogy a gyorsan szilárduló kakaóvajat időről időre fel tudjuk olvasztani. 
Míg száradnak a számok, elkészítem a négyféle tölteléket. Egy fél narancs kifacsart levét felmelegítem, adok hozzá karácsonyi fűszereket (fahéjat, gyömbért, szegfűszeget), egy kanálka vajat, majd hozzákeverek 50 gr csokit. Egy másik edényben összekeverek 50 gr gesztenyepürét és 0,2 dl narancslét. Hozzáreszelek egy csík narancshéjat, és felmelegítem, hogy a massza összeálljon. Végül a tűzről levéve adok hozzá egy kis kupaknyi brandyt, valamint két csipet gyömbért. Következik a meggyes töltelék: 10 gramm aszalt meggyet előre beáztatok annyi rumba, amennyi épp elfedi, majd a töltelék készítésekor megszórom fahéjjal, belereszelek 50 gramm marcipánt, és kis lángon addig keverem, míg a marcipán fel nem olvad. Végül a szilvás töltelékhez az aszalt szilvákat felaprítom és 0,3 dl vörösborban a mézeskalácsfűszerrel felfőzöm. Belereszelem a marcipánt, kis lángon tovább melegítem, míg a marcipán felolvad. Utolsó lépésként összeturmixolom a krémet.
Ezután elkészítem a csokiburkokat. A töltelékekkel felváltva töltöm meg a bonbonokat, majd kis hűtés után lezárom őket. Érdemes venni hozzájuk csomagolóanyagot, hiszen majdnem egy hónapig kell majd elállniuk (legalábbis a karácsonyi daraboknak).

„Ahogy előre sejtettem, Raymond Garsie sorsa a máglyahalál lett. Nem kegyelmezett, nem kegyelmezhetett az inkvizíció. A 14. század elején, úgy tűnik, már nem vacilláltak, ha parfait-kra került a sor. Talán addigra megelégelték a csökönyös okszitánok ragaszkodását e kihalásra ítélt hithez.
Az iratot a toulouse-i könyvtárban találtam, néhány későbbi, gazdasági feljegyzés között. Egy évszázad elegendő volt, hogy jelentőségét veszítse, mert újrahasznosították: a hátoldalán a grófság gabonatermését írták össze.”

Mielőtt elindult a Citébe, hogy találkozzon Amiellel, Angèle utoljára végigolvasta jegyzeteit. Egy teljes hétbe telt, mire végre rábukkant e rövid bekezdésre Pessolis egyik levelében. A történész sűrűn levelezett kollégájával, François Mignet-vel, melynek során kutatásai mellett tervezett írásairól is beszámolt, és szemelvényeket küldött belőlük. Mivel Angèle egyszerre két levéltárban kutatott, a Mignet-nek címzett levelekre szánt néhány órában a folyamatos jegyzetelés mellett kellett arra ügyelnie, nehogy véletlenül elkerülje a figyelmét a Garsie-irat megfejtése. Amint rálelt, e-mailben egyeztetett egy találkozót Amiellel, hogy megbeszéljék a további kutatási stratégiát.
Amiel, amikor épp nem a saját kutatásával foglalkozott, a Château Comtalban, Carcassonne kastélyában tárlatvezetett. Angèle is itt találkozott vele először három hónapja, amikor szokásos zarándoklatán felfigyelt az érdekes előadásra, és a turistacsoporthoz csapódott. Amiel olyan adalékokkal gazdagította vezetését, amelyeket Angèle még sosem hallott korábban, pedig már jópár tárlatvezetőt meghallgatott. Így aztán miután a csoport távozott, ő szóba elegyedett a fiúval, és hamar megtalálták a közös hangot, nem utolsó sorban annak köszönhetően, hogy mindketten a vár szerelmesei voltak. Az Angèle által tervezett három kérdésből végül másfél órás beszélgetés kerekedett, melynek során átballagtak a lapidáriumon, aztán kétszer végigsétáltak az északi várfalon, miközben az őszi tájban és a vár fel-, majd eltűnő részleteiben gyönyörködtek. Amiel szakterülete a kathar eretnekmozgalom volt, nyomon követte a legfrissebb kutatási eredményeket és maga is eljárt a helyi és környékbeli levéltárakba.
Ezt az első beszélgetést aztán e-mailezés követte, és alkalomadtán, amikor Angèle időt tudott szakítani arra, hogy hazautazzon, beültek valahová egy kávéra, vagy a Cité utcáit rótták együtt.
Most a Château Comtalba beszéltek meg találkozót, és Angèle zavartan toporgott a bejáratnál, a nagy barbakán elkerített részén. Körülötte még most, a hűvös téli időben is turisták tolakodtak, a nyelvek sokasága bábeli zűrzavarként kavargott. Csak akkor vette észre Amielt, amikor ő magasba tartott kézzel integetett neki. A jegyiroda felé mutogatott, így Angèle arra vette az irányzékot. Gond nélkül beengedték a jegypénztárosok, és máris a kastélyhoz vezető kőhídon találta magát Amiel mellett.
- Megéri az ismerősödnek lenni! – nevetett Angèle.
- Amennyit ide jársz lassan már saját jogon is be fognak ereszteni – Amiel belekarolt és átsétáltak a hídon a központi udvarba. – Épp most végeztem egy csapat kiskölyökkel, komolyan mondom, ezután már csak egy kis csendre vágyom.
- Üljünk be az irodába, ott nyugodtan tudunk beszélgetni – javasolta Angèle.
Átosontak a bevezető filmet néző turisták csoportja mögött a főépület második emeletén, azután jobbra fordultak. Itt építettek ki néhány kisebb helyiséget a tárlatvezetőknek, muzeológusoknak; az ablakokból gyönyörű kilátás nyílt a Ville Basse-ra és a városra. Odakint egyre erősebben fújt a Marin a tenger felől, súlyos esőfelhőket tornyozott egymásra a látóhatáron.
- Utánanéztem Raymond Garsie-nak, de semmit nem találtam vele kapcsolatban – tért rögtön a tárgyra Amiel.
- Nos, akkor jó hírrel szolgálhatok: lehet, hogy felfedeztünk egy olyan jegyzőkönyvet, amiről eddig senki sem tudott – Angèle beszámolt Pessolis levelének tartalmáról, amit Amiel egyre nagyobb érdeklődéssel hallgatott. – Milyen érdekes! Biztosan elkerülte a kutatók figyelmét az a kopott szöveg a hátoldalon. Jövő héten elmegyek Toulouse-ba és megkeresem.
- Megírod majd a fordítását? Tudod, az én latinom már eléggé megkopott…
- Hát persze. Akár írhatnánk róla egy tanulmányt is együtt. Én a középkori kontextusról, te meg a historiográfiai vetületéről.
- Ez jó ötlet! De ehhez még tovább kell olvasnom Pessolis leveleit és Mignet válaszait.
- Ez csak természetes. Nem sürget minket senki.
Amiel az ablak felé fordulva figyelte, ahogy az első kövér esőcseppek a párkányra hullanak. Az eső sötétszürke függönye az apró, napszítta tetőkre ereszkedett, akár egy színdarab végén.
- Amit a múltkor írtál, Angèle…. a kísértethistória, tudod. Sokat gondolkodtam rajta. Talán Pessolis tényleg valami koldust látott, viszont azóta innen is, onnan is furcsa történeteket hallok. A húgod barátnőjének az esete volt az első, azután egy itteni kollégám, Pierre is valami hasonlót mesélt. Korán reggel, nyitás előtt a lapidáriumban volt és látta, ahogy Carcas úrnő szobra megmozdul, egyidejűleg nyöszörgést is hallott. Mondani sem kell, nagyon megijedt és leszaladt a biztonságiakhoz, de mire visszaértek, minden úgy állt, ahogy szokott. Azóta azon morfondírozik, hogy tényleg látta-e, amit látott… A másik pedig: több, a Citében, vagy a közelben lakó ismerős mondta, hogy éjszakánként vigasztalhatatlan zokogást hallanak, amitől olyan hideglelésük támad, hogy nem tudnak elaludni. Kísértetiesen hasonlít Pessolis sztorijára.
- De… gondolod, hogy valaki a bolondját járatja az emberekkel?
Amiel vállat vont. – Fogalmam sincs. Nem tudom hova tenni ezt az egészet. Egy barátom, Arnaud, akit érdekel az ilyesmi, meg van győződve róla, hogy poltergeist, valami olyan lélek, aki halála után itt rekedt. Én nem hiszek az efféle dolgokban, de más racionális magyarázatot még nem találtam.
Angèle elgondolkodva babrálta a blúza ujját. – Nem is tudom… Olyan megfoghatatlan ez az egész. Kísérteties, ahogy mondtad. És az a legrosszabb, hogy az ember nem tud mit kezdeni vele. Azt hiszem, sosem fogjuk megtudni, mi állhat a háttérben.
- Nem is biztos, hogy tudni akarom – mosolygott cinkosan Amiel. – Mielőtt elfelejtem: van egy új kiadványunk a könyvesboltban, ami a lapidárium gyűjteményéről szól. Szerintem elég tartalmasra sikerült. Ha gondolod, lemehetünk megnézni.
Angèle lelkesen bólintott. Amiel elkísérte őt, és a könyvek közt még folytatták a beszélgetést, végül azonban Angèle-nek indulnia kellett, mert véget ért a kastély látogatási ideje.
Szerencsére mire kiért a Place du Château-ra, alábbhagyott az eső, ezért úgy döntött, jár egy kicsit a karácsonyi fényekkel díszített Cité utcáin. Besötétedett, ezzel együtt a levegő is csípősebb lett, így a turisták nagy része a kávéházakban, éttermekben keresett menedéket, vagy visszatért a szállására. Angèle kimondottan élvezte, hogy csak elvétve akad az útjába egy-egy ember. Ilyenkor úgy érezte, mintha tényleg a középkorba csöppent volna. Végigsétált a Rue Trencavelen, majd jobbra fordulva a Szt. Nazaire katedrális felé indult. Megcsodálta az épület csipkés tornyait, a rózsaablakokat, a csúcsos támpilléreket. A Place Pont teljesen elhagyatott volt, csak a vadszőlővel befuttatott falú hotel ablakain szűrődött ki világosság.
Fájdalmas nyögdécselés hallatszott a templom mögül. Angèle gerincén végigfutott a hideg de úgy gondolta, ha valaki segítségre szorul, nem hagyhatja magára. Elindult a hang irányába, amely közben fokozatosan halk pityergéssé alakult.
- Hahó, ki van ott? – kiáltott a sötétbe Angèle. Válasz helyett csak az egyre hevesebb zokogást hallotta. Jóllehet mindene átfagyott a bénító félelemtől, még közelebb lépett. A sírás ekkor szívet tépő, már-már állati vonyításba csapott át és a homályból parázsló szemek meredtek rá. Angèle hátratántorodott, aztán megfordult és rohant.
Szívverése még akkor is a fülében dörömbölt, amikor elérte az Aude Kaput és leszaladt a Szt. Gimer templom előtti térre. Csak a Régi Hídon nyugodott meg valamelyest, biztos távolságban a Citétől és attól a valamitől.

Visszanézett a város felett szinte lebegni tetsző várra, két kezét a szívére szorította. Vajon több mint másfél évszázada Pessolis is ezt látta?... Mi lehetett az? Akármi is, biztos, hogy többé nem akar találkozni vele. Gyors léptekkel indult hazafelé a téli eső áztatta úton.

Two weeks ago my kitchen transformed into a chocolate factory and sweets are prepared one after the other for advent calendars, as gifts, etc. In the end-of-the-year rush, besides working and chocolate making, I barely had time for anything else, but of course I continued the Christmas tale. Those, who are interested in the historical background and in the tragedy of the Cathars, can find more information on them here. The inquisition (at least the medieval one, because later there were the Spanish and the Roman Inquisitions too) was created mainly because the Church tried to deal with the challenge of the heresy. Documents containing the material of the trials (some of them are quite detailed) are kept in several archives in France and the Vatican. Thanks to the miracle of modern technology we don't even have to go on a pilgrimage to France if we want to take a look at them: on the websites of archives, for instance here and here, the photos of protocols are published.
Underneath comes the recipe of chocolates made for my sisters' advent calendars: I prepared 2x24 pieces with four different fillings so it won't become boring to eat the same every day ;) I painted numbers on them, but of course anyone would be happy to eat them even without that :D Chocolates that don't get spoiled quickly are the best for advent calendars, for instance those with marzipan or alcohol.



Ingredients:
0,2 dl orange juice
50 gr dark chocolate
1 small spoon of butter
cinnamon, ginger, clove

50 gr chestnut puree
0,2 dl orange juice
orange peel
0,1 dl brandy
ginger

10 gr sour cherry
0,2 dl rum
cinnamon
50 gr marzipan

20 gr plum
50 gr marzipan
ginger bread spice mix

0,3 dl red wine

cocoa butter, four different types of luster dust (silver, white, gold, red)
2x150 gr dark chocolate

Recipe:
First of all I paint numbers in the cavities of the mould with the mixture of cocoa butter and luster dust. We have to be careful to write them backwards! It is useful to keep a candle at hand in order to melt the cocoa butter from time to time.
While the numbers dry, I prepare the four fillings. I warm up the freshly pressed juice of half an orange and I add Christmas spices (cinnamon, ginger, clove), a spoonful of butter, then I mix it with 50 gr chocolate. In another pot I combine 50 gr chestnut puree and 0,2 dl orange juice. I shred one stripe of orange peel in it and I warm them up. Finally I remove the mixture from the stove and I add a bit of brandy and two pinches of ginger. The next one is the sour cherry filling: I had soaked 10 gr dry cherries in as much rum that covers them. When I make the filling, I season them with cinnamon, I shred 50 gr marzipan and I stir them on small fire until the marzipan melts. Finally the plum filling: I cut up the dry plums and I cook them in red wine with ginger bread spice mix. I shred the marzipan in it and I keep cooking them on small fire until the marzipan melts. As the last step I blend the cream.
I prepare the chocolate shells. I fill them with the fillings, and after some cooling I seal them. It is useful to buy wrapping paper for them as they will have to endure almost a month (at least the last ones at Christmas)

„As I suspected, Raymond Garsie's fate became the stake. The inquisition did not, could not pardon him. In the beginning of the 14th century, it seems, they did not hesitate any more when it came to parfaits. Probably they got fed up with the obstinate Occitans who clung to this faith condemned to extinction.
I found the document in the library of Toulouse, among some later economic records. One century was enough for it to lose its relevance as it was re-used: on its back side the grain crops of the county were listed.

Before departing for the Cité in order to meet Amiel, Angèle read through her notes for the last time. It took an entire week to find this short paragraph in one of Pessolis's letters. The historian corresponded frequently with his colleague, François Mignet, during which, besides reporting on his research and planned writings, he even sent excerpts of them. As Angèle was simultaneously researching in two archives, during those few hours that she dedicated to the letters written to Mignet, she had to pay attention to the solution of the Garsie-document while constantly taking notes. As soon as she hit on it, she set up an appointment with Amiel in order to discuss the further research strategy.
Amiel, whenever he wasn't dealing with his own research, was guiding tours in Château Comtal, in the castle of Carcassonne. Angèle had met him there too three months ago, when, during her usual pilgrimage, her attention had been raised by his interesting presentation and she had joined the tourist group. Amiel enriched his guiding with such details that Angèle had never heard before, even though she had listened to several guides. Therefore, after the group had left, she got into conversation with him and they quickly found the common ground, not least thanks to that both of them were in love with the fortress. From the three questions planned by Angèle a one and a half hours long conversation became, while they strolled through the lapidary museum, then they walked over the northern ramparts twice, admiring the autumn landscape and the appearing then disappearing details of the fortress. Amiel's field of expertise was the Cathar heresy, he followed the newest research results and he frequented the local and nearby archives.
This first conversation was followed by e-mailing and occasionally, when Angèle managed to take the time to travel home, they met somewhere for a coffee or they walked the streets of the Cité together.
Now they agreed upon meeting in Château Comtal and Angèle was perplexedly loitering at the entrance, in the fenced off part of the big barbican. Around her, even in the cool winter weather, tourists were hustling; the multitude of languages swirled in a Babelic chaos. She noticed Amiel only when he waved to her with his hand raised up high. He pointed towards the ticket office, so Angèle went there. The ticket officers let her in without trouble and she found herself next to Amiel, on the stone bridge leading to the castle.
- It's worthy to be your friend! - laughed Angèle.
- Soon they'll let you in, in your own right, since you come here that often - Amiel took her arm and they walked through the bridge to the main courtyard. - I've just finished with a group of kids, honestly, I only long for some silence.
- Let's sit down in the office; we can talk there in quiet - suggested Angèle.
They sneaked through behind the tourists watching the introductory movie on the second floor, then they turned right. There some smaller rooms were built for the guides and museologists; from the windows the beautiful view of the Ville Basse and the city could be seen. Outside the Marin was blowing stronger from the sea, piling up heavy rain clouds on the horizon.
- I searched for Raymond Garsie but I didn't find anything - started Amiel.
- Well, in this case I have good news: maybe we discovered a protocol that no one knew before - Angèle told him about the content of Pessolis's letter. Amiel listened with increasing curiosity. - How interesting! Probably that worn-out text on the back side has slipped the attention of researchers. Next week I'll go to Toulouse and I'll find it.
- Will you write me the translation? You know, my Latin is quite weak...
- Of course. We could even write a paper about it together. I could write about the medieval context and you about the historiographical aspect.
- Great idea! But for this I'll have to read more from the letters of Pessolis and the answers of Mignet.
- That's natural. We're not hastened by anyone.
Turning to the window, Amiel observed the first large raindrops as they fell on the window sill. The grey curtain of the rain descended on the tiny, faded roofs, just like at the end of a theatre play.
- What you wrote last time, Angèle... you know, the ghost story. I was thinking about it a lot. Maybe Pessolis really saw some beggar, but since then I keep hearing weird stories from here and there. The first one was the story of your sister's friend, then a colleague, Pierre also told me something similar. He was in the lapidary early in the morning before opening and he saw that the statue of Madame Carcas moved, and at the same time he heard moaning. Needless to say he got frightened and he ran down to the security, but by the time they got back, everything stood as usually. He's still pondering whether he really saw what he saw... The other: several of my acquaintances living in or near the Cité told me that they keep hearing inconsolable sobbing at night, and they get such shivers because of it, that they cannot fall asleep. It uncannily resembles Pessolis's story.
- But... do you think that someone is fooling around?
Amiel shrugged. - I have no idea. I can't fathom it. A friend of mine, Arnaud, who is interested in such things, is convinced that it's a poltergeist, some soul that got trapped here after his death. I don't believe in these things, but I haven't found any rational explanation.
Angèle absentmindedly fiddled with the sleeve of her blouse. - I don't know... This whole thing is so incomprehensive. Uncanny, as you said. And the worst is that one cannot do anything about it. I believe we'll never get to know what is in its background.
- I'm not sure that I even want to know - smiled Amiel. - Before I forget: we have a new publication in the bookstore, about the lapidary. I think it turned out quite high-standard. If you want to, we can go downstairs to take a look at it.
Angèle enthusiastically nodded. Amiel accompanied her and among the books they continued their conversation, but finally Angèle had to leave as the visiting hours of the castle were over.
Fortunately by the time she got Place du Château the rain lightened so she decided to take a walk on the streets of the Cité decorated with Christmas lights. It grew dark and the air grew chillier thus the majority of the tourists looked for shelter in cafes and restaurants, or they returned to their accommodations. Angèle enjoyed that people crossed her way only occasionally. At this time she really felt like as if she'd popped up in the middle ages. She walked through Rue Trencavel, then she turned to the right towards the St. Nazaire cathedral. She gazed at its scalloped towers, the rose windows, the pointed buttresses. Place Pont was completely abandoned, light came only from the windows of the hotel.
Painful wailing could be heard from behind the church. It gave Angèle the creeps but she thought that if someone was in need of help she couldn't leave him alone. She went towards the sound, which gradually turned into quiet whining in the meanwhile.
- Hello, who's there? - shouted Angèle in the dark. Instead of an answer she could only hear the increasingly intense crying. Even though her entire body was frozen by paralysing fear, she stepped closer. The crying then transformed into heart-breaking, almost animalistic howling and from the shadow smouldering eyes glared at her. Angèle staggered back, then turned and ran away.
Her heartbeat was still pounding in her ears when she reached the Aude Gate and ran down to the square in front of St. Gimer church. She calmed down only on the Old Bridge, in a safe distance from the Cité and that thing.
She looked back at the fortress which seemed to be floating above the city, she pressed her hands against her heart. Is this what Pessolis saw more than one and a half centuries ago?... What could it have been? Whatever it was, for sure she doesn't want to meet it again. She started off for home with fast steps on the street washed by winter rain.

töklámpás csoki // jack-o-lantern chocolate

Mindenféle Facebookon és egyéb helyeken terjengő információkkal szemben a Halloween valójában a katolikus egyház egyik kísérlete arra, hogy hagyományai közé olvassza és megszelídítse a kelta Samhain ünnepét. Egy igen régi hagyományról van tehát szó, amely az év világos/napos és sötét felét választja el. Samhain átmeneti idő a kettő közt, és mint ilyen, sokféle szertartás kapcsolódott hozzá: ilyenkor hozták le az állatokat a téli legelőkről, örömtüzeket gyújtottak, alakoskodtak, és úgy hitték, hogy ekkor vékonyabb a világok közti válaszfal, ezért áldozati ételt helyeztek a küszöbre az arra kószáló démonoknak, tündéreknek és más lényeknek, és az asztalnál is üresen hagytak egy helyet a már eltávozott, de ilyenkor visszalátogató rokonok szellemeinek.
Már ennyiből is kitűnik, hogy sok áthallás van Samhain és a mai Halloween között. A gyertyagyújtás, a töklámpás arca mind a démonok elűzésére szolgáló modern, szelídített mágia. Ilyenkor megyünk a temetőbe, és az átmenetet jelképezi bizonyos országokban a nyári időszámításról a télire való átállás is.
Na és hogy ne maradjunk igazi mágia nélkül, arról a csoki is gondoskodik :)) a töklámpásokat vettem alapul külsőleg és belsőleg is, egy kis alkohollal az ünnep jegyében (ötletgazda 2: Minako) :D

Hozzávalók:
30 gr sütőtök
30 gr aszalt sárgabarack
8 cl brandy
két csipet gyömbér
50 gr tejcsoki
170 gr fehércsoki
a díszítéshez: 3 evőkanál kakaóvaj, vörös és arany lüszterpor, 10 gr étcsoki

Elkészítés:
Temperálom az étcsokit, majd vékony ecsettel töklámpás arcokat festek a bonbonforma félgömb alakú mélyedéseibe. Ha a csoki elkezd szilárdulni, a vízgőz felett újból fel lehet melegíteni kicsit. Az egyenetlenségeket egy fogpiszkálóval lehet kijavítani, és ne feledjük, hogy ha feliratot készítünk, azt tükörírással tegyük (én persze elfelejtettem, minő meglepő :D)


Ha az arcok megszilárdultak, 2-3 evőkanálnyi kakaóvajat megolvasztok, és arany, meg vörös lüszterpor segítségével narancsszínt keverek ki. Ezzel kétszer átfestem a mélyedéseket, hogy elég intenzív színt kapjanak a töklámpások.


Ezután elkészítem a tölteléket: az aszalt sárgabarackot felszeletelve egy órára brandybe áztatom, majd a sütőtökkel és ízlés szerint még egy kis brandyvel összeturmixolom. Megmelegítem, és adok hozzá 50 gr tejcsokit, meg pár csipet gyömbért, ami élénkebbé teszi az ízhatást.
Most jöhet a bonbon héja: temperálom a fehércsokit (azon fog szépen kijönni a lüszterporos réteg színe), beleöntöm a formába, majd kirázom. Amikor megszilárdult, megtöltöm a bonbonokat. Nem zárom le őket, hanem miután elkészültek, és kiszedtem őket a formából, melegítek egy kis fehércsokit. Kisméretű ecsettel felviszem a csokit azoknak a félgömböknek a peremére, amelyekre arcot festettem, és összeragasztom őket az arc nélküli félgömbökkel. Kész is vannak a finom csoki-töklámpások!

As opposed to information spreading on Facebook and other forums Halloween is in reality an attempt of the Catholic church to incorporate and tame Samhain, the Celtic feast, into its own traditions. So we're speaking of a quite old tradition, which divides the year into a sunny/bright and a dark half. Samhain is a liminal time between the two and as such, many rituals were connected to it: this was the time when cattle were brought back from the summer pastures, bonfires were lit, people guised themselves and they believed that the border between the two worlds was thinner, therefore they placed offerings on the doorsteps for demons, fairies and other creatures wandering around, and at the table they left an empty place for the ghosts of those dead relatives who visited them.
Even from these examples it is clear that Samhain and today's Halloween have much in common. Burning candles and the face of the jack-o-lantern are modern, tamed magic for scaring away the demons. We are going to the cemetery at this time, and the transition is also symbolised by changing back from daylight saving time in certain countries.
And chocolate also takes care that we don't stay without real magic :)) I was inspired by jack-o-lanterns - both in the case of the outside and the inside of these sweets; with some additional alcohol in the name of the feast (idea also by Minako)

Ingredients:
30 gr pumpkin
30 gr dry apricots
8 cl brandy
2 pinches of ginger
50 gr milk chocolate
170 gr white chocolate
decoration: 3 spoons of cocoa butter, red and gold luster dust, 10 gr dark chocolate

Recipe:
I temper the dark chocolate, then I paint jack-o-lantern faces with a thin brush into the hemisphere shaped cavities of the mould. When the chocolate starts to get solid, it can be warmed up a bit in a bain-marie. Mistakes can be corrected with a toothpick, and let's not forget to write inscriptions backwards (Of course I forgot it, what a surprise :D).
After the faces solidified, I melt 2-3 spoons of cocoa butter and I add gold and red luster dust in order to achieve an orange colour. I paint the cavities twice for an intensive colour.


After this I prepare the filling: I slice up the apricot and I soak the pieces in brandy for an hour, then I blend them with the pumpkin and with some more brandy (according to taste). I warm up the mixture and I add 50 gr milk chocolate and some pinches of ginger, which will intensify the flavour.
Then I make the bonbon shells: I temper the white chocolate (the layer of luster dust will look nicer with this kind of chocolate), I pour it into the cavities of the mould, then I shake out the excess. When the chocolate gets solid I fill the bonbons. I do not seal them, but when they are done and I take them out of the mould, I warm up some white chocolate. I paint chocolate on the brim of the hemispheres with faces and I stick them together with the other halves. The chocolate jack-o-lanterns are ready!

diós-brandys // walnut-brandy

Most, hogy itt az ősz, és érik a dió, nyilván mindenki diós kajákról fog postolni :D hát ebből a körből nem maradhatok ki én sem. Természetesen a diós recepteket nehéz elrontani, hiszen olyan egészen klasszikus hozzávalók állnak a rendelkezésünkre, mint például bor, mazsola, alma, stb. Az én bonbonom teljesen egyszerű, az egyetlen különlegessége a receptnek az, hogy az esküvőnkön ilyet csináltam minden vendégnek (voltak vagy 90-en :D). Kék csomagolásban kedves kis tasakokba kerültek, és minden tányérra kiraktuk őket :) Azóta is, ha ilyen őszi hangulatú bonbont készítek, a nagy nap jut eszembe róla :) Meg persze mesék is, mert az ősz is tündéreket rejteget a ködfátyolban.




Hozzávalók:
1 marék pucolt dió
200+60 gr étcsoki
0,5 dl tejszín
1 teáskanál vaj
brandy

Elkészítés:
A tejszínt megmelegítem, hozzákeverek 60 gr étcsokit és egy teáskanál vajat, majd beledarálom a diót, és elkeverem. Adok hozzá ízlés szerint brandyt is. Elkészítem a burkot, és amikor megszáradt, beletöltöm a tölteléket, végül lezárom a bonbonokat. 



A fák emlékezete
Winny ködös erdőben bolyongott. Már régóta elveszítette az utat, csapásról csapásra haladt őzek és szarvasok hátrahagyott ösvényein. Kopasz faágak szúrták át a fehéren örvénylő felhőket. A Nap csupán sápadt érmeként próbált lyukat égetni a ködbe – sikertelenül.
Winny  a nedves, sárgás, poshadtnak tűnő fűcsombékok között botladozott. Bokrok állták útját, rókalyukak tartották fogva a lábát, s a szűnni nem akaró ködtől káprázott a szeme. Talán épp emiatt lehetett, hogy amikor fölpillantott, nem a mozdulatlan, tömény fehér falat látta, hanem egy égre magasodó árnyat. Lába arra vitte tovább.

Kisvártatva mintha tisztás nyílt volna meg előtte – a fák sötét sziluettjei eltávolodtak, a vízcseppektől tompán csillogó gaz felburjánzott. A tisztás közepén létezhetetlenül óriási fa állt – törzsét tízen sem érték volna körbe, legalsó ágai az erdő lombkoronaszintje felett nyúltak ki a törzséből. Winny némán állt meg minden fák öregapja előtt. Tenyerét a karvastagságú repedésekkel borított kéreg zuzmótakarójára fektette. Mutatóujján megmelegedett a sárkánygyűrű.
Az óriási fán lomha, alig észlelhető remegés futott végig. Homályos álmai ködként gomolyogtak a teremtett világ hajnaláról, amikor magként hullt a termékeny, sötét talajba, amikor szörnyek lakták az erdőt és a láthatatlanok is a födet járták. Amikor még nem volt háború és tudomány, a híreket a szél hozta-vitte végeérhetetlenül, az erdők büszke birodalmai saját szeszélyes törvényeik szerint működtek, és ember meg állat között nem tátongott áthidalhatatlan szakadék.
Dobpergés hangja ébresztette a Napot, csatamének tiporták az erdő talaját, kürtöket fújtak és vonultak a hadak, páncéljukon megcsillant a fény, aztán már jöttek vissza horpadt, alvadt vérrel tarkított vértben, csorba karddal, tépett palásttal. Hömpölygött az emberáradat ide-oda, kivágták a fákat, új hajtások sarjadtak, a tavaszi árban térdig érő vízben álltak a fák és erdőtűz pusztított, a vörös, ordító halál fekete füstöt eregetve zabálta fel az erdőt, azután megjelentek az első hajtások, apró, zöld fejüket kíváncsian nyújtogatva a fakó napfényben.
És a fák öregapja végig itt állt, túlélt tűzvészt, árvizet, háborúkat, mert gyökerei oly mélyre nyúltak, hogy semmi el nem pusztíthatta. Kérgében, emlékezetében megőrizte az erdő históriáját az idők kezdetétől fogva.

Winny leeresztette a kezét. Fölnézett a fa ködbe vesző koronájára, amit fehér gyémántként díszített az ágak között járó Nap. Még egyszer megsimította a mohos törzset, mielőtt elfordította ujján a sárkánygyűrűt, és eltűnt az erdőből.



Now that autumn is here and walnuts are getting ripe, obviously everyone will post about foods with walnut :D I can't be left out of this either. Naturally walnut recipes are hard to mess up, as classic ingredients are at our disposal such as wine, raisins, apples, etc. My bonbon is very simple, its only peculiarity is that I made this for every guest at our wedding (there were around 90 of them :D). They were wrapped in blue wrapping paper and put into nice little sachets, and we put them on each plate :) Since then whenever I prepare these autumnish bonbons, they remind me of the big day :) And of course of fairy tales, as autumn is hiding fairies in its misty veil.

Igredients:
a handful of walnuts
200+60 gr dark chocolate
0,5 dl cream
1 teaspoon of butter
brandy

Recipe:
I warm up the cream, I mix it with 60 gr dark chocolate and a teaspoon of butter, then I grind the walnuts and add them too. I also add some brandy, according to taste. I prepare the bonbon shells, and when they get solid I fill them with the filling. Finally I seal the bonbons.


The memory of trees
Winny was roaming a misty forest. She lost her way long time ago, she went along trace by trace on paths left behind by fawns and deers. Bare branches pierced through the swirling white clouds. The Sun tried to burn a hole in the mist like a pale coin - without success.
Winny stumbled along the wet, yellow, stale looking tufts of grass. Bushes stood in her way, foxholes trapped her feet and her eyes dazzled due to the endless fog. Maybe because of this when she looked up, it wasn't the motionless, dense, white wall that she saw, but a shadow reaching towards the sky. Her feet brought her that way.
Suddenly as if a clearing opened up in front of her - the dark silhouettes of the trees distanced and weeds dimly sparkling with water drops pullulated. An impossibly giant tree stood in the middle of the clearing - its trunk couldn't have been embraced by ten people, its lowest branches grew out of its trunk above the foliage of the forest. Winny silently stood still in front of the forefather of all trees. She laid her palm on the moss-blanket of the bark covered with cracks of the width of an arm. The dragon-ring got warm on her index finger.
A torpid, barely percievable quiver ran through the giant tree. Its cloudy dreams about the dawn of the created world wreathed as mist, when he fell in the fertile, dark soil as a seed, when monsters lived in the forest and the invisible were walking the earth. When there were no wars and no science, news were endlessly carried by the wind, the proud realms of forests worked according to their own rhapsodic laws, and there was no insurmountable rift between humans and animals.
The Sun was woken by the sound of drums, war studs trod the soil of the woods, horns were blown and armies marched, their armour was gleaming, then they were coming back with bruised armours coloured by congealed blood, with jagged swords, torn robes. The mass of people was flowing, they cut down the trees, new saps sprang, the trees were standing in the knee-high water of spring tide, and bushfire was destroying them; the red, howling death devoured the forest with black smoke, then the first buds appeared, stretching their tiny, green heads in the faint sunlight.
And the forefather of the trees was standing there all the way, it survived bushfire, flood, wars because its roots grew so deep that nothing could kill it. In its bark and in its memory it kept the history of the forest from the beginning of time.
Winny let her hand down. She looked up on the crown of the tree lost in the mist, which was adorned by the Sun slipping among the branches as a white diamond. She caressed the mossy bark once again before she turned the dragon-ring on her finger and disappeared from the forest.
