Húsvét // Easter

A Húsvéthoz Európa minden országában más hagyományok kötődnek - azt hiszem, idehaza senkinek nem kell bemutatni a tojásfestést, a hagyományos ételeket (tojás, sonka, torma stb), a locsolkodást - de vajon honnan erednek ezek a szokások? És ismerünk ezeken kívül másokat is a gazdag néphagyományból? Úgy döntöttem, most erről fogok írni, mert az a gyanúm, hogy sokan nincsenek tisztában azzal, mennyi mágikus, pogány szokás övezi a kereszténység legnagyobb ünnepét.
A húsvéti ételeket sok helyütt megszentelték a templomban. Az ilyen étel maradéka különleges elbánásban részesült: több helyen elégették, máshol azonban meghagyták az elhalt rokonok szellemének. A szentelt sonka csontja termékenységvarázslásra is jó volt: a gyümölcsfára akasztották, hogy bő legyen a termés. A szentelt kalács morzsáját a tyúkok kapták, hogy sokat tojjanak, illetve úgy tartották, hogy ha elássák, vagy a földre szórják, virág kel ki belőle (hasonló vélekedés létezik a karácsonyi vacsora morzsáját illetően is).
Húsvétvasárnap hajnalban történt a határjárás, ami praktikus és transzcendens célokat egyaránt szolgált. A közösség fiatal tagjai ekkor ismerték meg a határjeleket. Ugyan a határjárás egyházi külsőségek között zajlott le, de valójában a célja a vetés mágikus védelme volt, amit jelez a különböző zajkeltő eszközök használata. A zajok ugyanis elűzik a rossz szellemeket, démonokat. A határjárók friss hajtásokkal, ágakkal tértek vissza a faluba, így jelképesen is magukkal hozták a tavaszt. 
Húsvéthétfőn szinte az egész országban a legények meglocsolták a leányokat. A víz tisztító, termékenységvarázsló ereje által ily módon a lányok megszépülhettek. E szláv szokás szerint eredetileg persze vödör vízzel öntötték nyakon őket, ami csak az 1940-es években változott át a ma is jól ismert kölnis locsolássá. A legények jutalma fáradozásukért a hímes tojás - termékenység- és szerelmi szimbólum (bár az egyház igyekezett elfedni ezt azzal a magyarázattal, hogy a piros tojás Jézus Krisztus vérének, illetve a feltámadásnak a szimbóluma). 


Ezúttal többféle húsvéti tojást készítettem: mivel a család étcsoki rajongó (úgy látszik, megint én lógok ki a sorból a fehércsoki imádattal XD), ezért leginkább azt használtam. 

Hozzávalók:
- üreges tojások (6 db):
30 gr fehércsoki
150 gr étcsoki
Smarties
- nyuszis bonbon
200+100 gr étcsoki
80 gr vegyes erdei gyümölcs
transzferfólia
- töltött tojások (12 db)
200 gr étcsoki
100 gr magas kakaótartalmú tejcsoki
40 gr fehércsoki
0,5 dl tejszín
2 kiskanál lótusztea


- üreges tojások:
Temperálom a fehércsokit. A szétszedhető műanyag tojásforma egyik felébe népies virágmintát festek ecsettel. Míg temperálom az étcsokit, a minta meg is szárad. Félig megtöltöm a tojás mindkét felét, és az ecsettel felviszem a csokit egészen a szélekig. Fejjel lefelé fordítva hagyom megszikkadni, utána hűtőbe teszem. Mivel a csokiréteg viszonylag vékony, gyorsan megszilárdul, és magától kipottyan a formából. A tojás egyik felébe néhány szem Smartiest teszek, temperált étcsokival végigkenem a peremét, és hozzáillesztem a másik felét. 

- nyuszis bonbon:
A töltelékhez felmelegítem az erdei gyümölcs keveréket. Átpasszírozom szűrőn, hogy sűrű, magoktól és héjtól mentes pürét kapjak. Ezt aztán ismét felmelegítem, és hozzáadok 100 gr étcsokit. 
A transzferfóliát méretre vágom, beillesztem a mágneses csokiformába. Temperálok 200 gr étcsokit, elkészítem a bonbonburkokat. Megvárom, amíg megszilárdulnak, ekkor megtöltöm őket a gyümölcsös krémmel, és a hűtőbe teszem egy órára. Végül temperálom a maradék étcsokit, és lezárom a bonbonokat.

- töltött tojások:
A tejszínt felforralom két kiskanál lótuszteával. Egy percig kis lángon hagyom forrni, végül leveszem a tűzről, és letakarom. 3 óra ázás után leszűröm. A teaszálakat kidobom, a tejszínt ismét megmelegítem, belekeverem a tejcsokit.
Temperálom a fehércsokit. A csokiformában kifestem a megfelelő részeket. Temperálom az étcsokit is, és kiöntöm a formát. Megtöltöm a lótuszos krémmel, a hűtőben hagyom 2-3 órára. Végül temperált étcsokival lezárom a tojásokat.

In every European country various customs are connected to Easter - in Hungary the most common are egg painting and young men throwing water over girls on Easter Monday. I am not certain, though, whether every Hungarian knows the origins of these traditions, or any other (mostly pagan) Easter customs. Now I am going to write about these folk traditions as I find them fascinating.
In many places Easter food (such as ham and kalács, sweet bread) was consecrated in the church. The leftover of such food was treated in a special way: in some cases it was burnt, in other places they left it for the spirits of dead relatives. The bone of consecrated ham was used for fertility spell: it was hung on fruit trees in order to have an abundance of fruits. The crumbs of consecrated sweet bread was given to the hens so they would lay many eggs; and it was thought that in case such crumbs fall on the ground, flowers will grow out of them (similar beliefs were held about the leftover crumbs of Christmas dinner).
On Easter Sunday the so-called "határjárás" (walking the borders) happened, which served both practical and transcendental purposes. The young members of the community learned about the border marks. Even though the formalities of this process were defined by the Church, its real aim was the magical protection of the crop, which is indicated by the usage of noise making instruments. Noises chase away bad spirits and demons. After the procession, the participants returned to the village with new sprouts and boughs. 
On Easter Monday boys splashed girls with water. Thus through the cleaning power and fertility spell that water possesses, girls could become even more beautiful. According to the original Slavic tradition a bucketful of water was thrown at them, which transformed into sprinkling with scented water only in the 1940s. The reward of young men was dyed eggs - a symbol of fertility and love (although the Church tried to obscure this with the explanation that red eggs are the symbols of the blood of Jesus Christ and his resurrection).


This time I made a variety of Easter eggs: since my family is dark chocolate fan (it seems again I'm the odd one because I love white chocolate XD), therefore I used mostly that one.

Ingredients:
- hollow eggs (6 pcs):
30 gr white chocolate
150 gr dark chocolate
Smarties
- bonbons with bunnies
200+100 gr dark chocolate
80 gr mixed fruits of the forest
transfer sheet
- filled eggs (12 pcs)
200 gr dark chocolate
100 gr milk chocolate with high cocoa percentage
40 gr white chocolate
0,5 dl cream
2 small spoons of lotus tea


- hollow eggs:
I temper the white chocolate. I  take apart the two halves of a plastic egg and with a brush I paint a folk motif in one of them. While I temper the dark chocolate, the pattern gets dry. I fill both halves of the egg halfway, and I spread the chocolate to the brims with the brush. I leave it upside down to set then I put the two halves in the fridge. Since the chocolate layer is quite thin, it will dry quickly and will fall out of the mould when ready. I put Smarties in one half, I smear tempered dark chocolate on the brim and I attach the two halves together.

- bonbons with bunnies:
I warm up the fruits for the filling. I strain them through a sieve in order to get a thick puree without seeds and skin. I warm up the puree and I add 100 gr dark chocolate. 
I cut the transfer sheet to shape and I insert it in the magnetic mould. I temper 200 gr dark chocolate, then I prepare the bonbon shells. I wait for them to set, I fill them with the fruity cream and I put them in the fridge for an hour. Finally I temper the leftover dark chocolate and I seal the bonbons.

- filled eggs:
I boil the cream with two spoons of lotus tea. I leave it to simmer for a minute, then I turn off the stove and I cover the pot. Three hours later I sieve the cream. I throw away the tea, I warm up the cream and I combine it with the milk chocolate.
I temper the white chocolate. I paint some of the patterns in the mould. I temper the dark chocolate too and I make the shells. I fill them with the lotus cream; I leave them in the fridge for 2-3 hours. Finally I seal the eggs with tempered dark chocolate.

szalmakalap // straw hat

Most pedig csakazértis tavasz van. Akkor is ha bújik a fák durva kérge alatt, ha szeszélyesen csípős kedvében van, ha csak zsugori kézzel szórja még a virágait. 
Ezt a kalapot még akkor készítettem, amikor pár napra igazi tavasz volt - azóta esett a hó, most meg olyan hideg van, mintha legalábbis november lenne. Értem én, hogy a globális felmelegedés miatt szegény télnek már nem marad elég ideje kibontakoztatni a képességeit, de hogy ezt most a tavasz rovására teszi, az már igazán nem szép tőle. No de ne kókadjunk, legalábbis a naptár szerint tavasz van ^^ Én mindent megteszek a hangulat megteremtése érdekében :D


Hozzávalók:
150 gr fehércsoki
30 gr tejcsoki
transzferfólia
cukordíszek

Elkészítés:
Sütőpapíron körzővel meghúzom a kalap karimájának körvonalát - ezt egy műanyag félgömbhöz mérem, amiben majd a kalap tetejét készítem. Temperálom a fehércsokit, és egy részét kiöntöm a papírra, ecset segítségével elegyengetem, és hozzáütögetem az asztalhoz, hogy egyenletesen szétterüljön. A csoki maradékát beleöntöm a félgömbbe, és szintén ecsettel széthúzom a belsejében, úgy, hogy egészen a pereméig érjen. Fejjel lefelé hagyom állni egy darabig, majd amikor a csoki már megdermedt, beteszem a hűtőbe.
Amikor a félgömb elkészült, kifordítom a formából, és temperált fehércsokival odaragasztom a kalap karimájának a közepére.
A transzferfóliát hozzámérem a kalap tetejéhez, és levágok belőle egy hosszú csíkot, valamint három másik csíkot: egy hosszabból lesz a masni, két másikból pedig a szalag két vége. Temperálom a tejcsokit, és késsel rákenem a transzferfóliára. A leghosszabb csíkot óvatosan a kalap teteje köré helyezem, és hagyom megszáradni. A masni csíkját masni formájúra hajtom, és beszorítom két kisebb tárgy (pl. pohár) közé. Megvárom, amíg a a csoki teljesen megszárad, ekkor lehúzom róla a fóliát. Temperált tejcsokival felragasztom előbb a szalag végeit, azután a masnit. A közepét és a szalagot cukorcsillagokkal díszítem.




And now whatever happens, it will be spring. Even if she is hiding beneath the rough bark of trees, if she is in a capricious mood, if she only avariciously sprinkles its flowers.
I made this hat when there had been real spring for some days - since then it was snowing and now it's as cold as in November. I understand that due to the global warming poor winter doesn't have enough time to completely unfold his talents, but doing it now in the time slot of spring is really not nice of him. But let's not be gloomy, at least according to the calendar it is spring ^^ and I do everything to create the proper atmosphere :D


Ingredients:
150 gr white chocolate
30 gr milk chocolate
transfer sheet
candy decorations

How to prepare:
With a compass I draw the contour of the brim on a parchment sheet - I measure it to a plastic hemisphere, in which I will prepare the crown of the hat. I temper the white chocolate and I pour a portion on the paper; with a brush I spread it and I softly tap the paper on the table so the chocolate becomes smooth. I pour the rest of the chocolate in the hemisphere and with the brush I extend it up to the rim. I leave it upside down until the chocolate sets, then I put it in the fridge.
When the hemisphere is ready, I take it out of the mould and with tempered white chocolate I glue it in the middle of the brim of the hat.
I measure the transfer sheet to the crown and I cut off a long stripe and three other stripes: one longer will be the bow and two others the ends of the ribbon. I temper the milk chocolate and I smear it on the transfer sheets with a knife. I place the longest stripe around the crown of the hat and I leave it to dry completely. I make a bow of the second stripe and I gently sqeeze it between two smaller objects (e.g. glasses). I wait until the chocolate dries then I peel off the foil. With tempered milk chocolate I stick first the ends of the ribbon on the hat, then the bow. I decorate the ribbon with candy stars.

epres-mandulás trüffel // strawberry-almond truffle

Igazából nem csodálkozom, hogy a görögök megszemélyesítették az ihletet, és múzsákként ábrázolták. Nekem négy is van belőle, és minddel más a viszonyom.
A festés/rajzolás múzsája vidám kisördög csillogó szemekkel, cinkostársak vagyunk, ő sosem sértődik meg rám, még akkor sem, ha sokáig felé sem nézek, és mindig ott terem, amikor kell. Az esetek többségében úgy vezeti a kezem, hogy épp az kerül a papírra, amit szeretnék :) Néha azért megmakacsolja magát, mert ő egy trixter, aki önfejű és cserben hagyja az embert, csak azért, hogy máskor jobban élvezd a társaságát.
A zene csodálatos, hosszú hajú, táncos lábú istennő, aki gyengéden és mindig szeretettel ölel át, megnyugtat, simogat, vagy épp felráz, mindig tudja, mi kell a léleknek. Ő a szín a sötétben, a gyertyaláng, ami elvezet a rögös úton. Az kezem alá simul, régi ismerősként üdvözöl, sosem haragszik, elringat.
Na most a csokoládé múzsája ahh egy primadonna! Édes és gyönyörű, színes, figyelemfelkeltő, vérvörös rúzst és tollboát hord. Simulékony, de szeszélyes: ha valami nem az akarata szerint történik, akkor lesz nemulass! Felhúzza az orrát, többé figyelemre sem méltat, és kezdhetem az egészet elölről...
Az írás múzsája... Nos hát vele a leghosszabb a történetem. Nagyon régen kebelbarátnők voltunk: én csak merítettem a végtelen tárházából, ő meg öntötte elém a kincseit. De aztán rájöttem, hogy ez a valóságban nem így megy: ha "komoly író" akarok lenni, ahhoz sokat kell tanulnom, olvasnom, meg kell küzdenem a "szépirodalom" átláthatatlannak és áthatolhatatlannak kikiáltott dzsungelével. És minél tovább küzdöttem magam előre e dzsungelben, annál távolabb kerültem az írás múzsájától. Végül olyannyira elvesztem, hogy többé ki se láttam az erdőből. Ekkor megelégeltem az elvárásokat, fogtam egy machetét, átkaszaboltam magam, és kijutottam. Időközben rájöttem, hogy az írás múzsája ugyan a barátom maradt, de ő is felnőtt - és titokzatos, sötét szemű istennővé vált, akinek a titkait egyesével, szelíden kell felfejteni. Őt sosem szabad kényszeríteni, mert akkor megretten, csak akkor jön, amikor ő úgy tartja jónak. De akkor viszont csodás, aranyszín fénybe borítja az ember lelkét :) 
És igen, szoktam beszélgetni a múzsáimmal (amire mások biztosan azt gondolnák, hogy csak magamban motyogok, mint valami megzavarodott vénember, de ez kicsit sem izgat), ez így normális, nem igaz?! :D No és most hódoljunk együtt az egyik múzsámnak ;)


Hozzávalók:
0,4 dl eperlé/eperpüré
0,1 dl tejszín
1 kiskanál vaj
100 gr fehércsoki
40+20 gr hámozott mandula

Elkészítés:
Felmelegítem az eperlét a tejszínnel és a vajjal. Beletördelem a fehércsokit, elkeverem. Ledarálok 40 gr mandulát, ezt is a ganache-hoz keverem. Lefedem, és egy napra a hűtőben hagyom.
Másnap ledarálom a maradék mandulát. Tányérra szórom, az epres krémből kiskanál segítségével golyókat formázok, és meghempergetem őket a mandulatöretben. Jó étvágyat! :)


After all I'm not surprised that the Greek imagined and depicted inspiration as muses. I have four of them and quite different relations to all four.
The muse of drawing/painting is a cheerful little devil with sparkling eyes; we are accomplices, she is never offended if I neglect her for some time and she's always ready when she's needed. Most of the time she obediently guides my hand so that I accomplish exactly what I planned :) Sometimes she bridles though because she's a real trixter, who is stubborn and abandones you just so you can appreciate her company even more when she's there.
Music is a wonderful, long-haired goddess with legs made for dancing. She always embraces me affectionately and tenderly, she calms me, caresses me or shakes me up - she always knows exactly what the soul needs. She is the colour in the dark, the flame that guides on the rocky road. She cuddles, greets me as an old friend, she is never angry, she cradles me.
Now the muse of chocolate, ahh she's a real primadonna! Sweet and stunning, colourful, narcissist; she is wearing crimson lipstick and a feather boa. She is easy but sassy: if something doesn't go according to her plans, then drama comes! She turns her nose up, she neglects me and I can start the whole thing all over again...
The muse of writing... Well, I have the longest story with her. A long time ago we were bosom friends: I just scooped from her endless repository and she poured her treasures in front of me. But then I realised that in reality it doesn't work like that: if I want to be a "real writer" then I must learn a lot, read and I have to fight my way through the jungle of "literature", which is said to be impenetrable and impassable. And the more I struggled forward in this jungle, the further I got from the muse of writing. Finally I got utterly  and hopelessly lost in the forest. Then I got fed up with expectations, I grabbed a machete, I cut my way through and got out. In the meanwhile I realised that even though the muse of writing remained my friend, she grew up too - and became a mysterious goddess with dark eyes. Her secrets must be unfolded gently, one by one, she mustn't be forced because that startles her. She only comes when she thinks it's appropriate, but then she engulfs the soul with a wonderful golden light :)
And yes, I am talking with my muses (others probably think that I'm just mumbling to myself like a confused old hag, but I don't really care); it is normal :D And now let's venerate one of my muses ;)


Ingredients:
0,4 dl strawberry juice/puree
0,1 dl cream
1 small spoon of butter
100 gr white chocolate
40+20 gr blanched almonds

Recipe:
I warm up the strawberry juice with the cream and the butter. I add the white chocolate and I combine them. I grind 40 gr almonds, I mix it with the ganache. I cover the dish and leave it in the fridge for a day.
The next day I grind 20 gr almonds, which I spread on a plate. With the help of a small spoon I take portions of the ganache, I shape them into balls and I roll them in the almond nibs. Buon appetito! :)

diópálinkás trüffel // truffles with walnut pálinka

Elfelejtettem megemlékezni arról, hogy (most már több, mint) három éve vettem részt a Szamos csokiiskolájának kurzusán :) Sorsfordító pillanat volt, ami olyan hobbival ajándékozott meg, amit imádok, nemcsak a végeredmény elfogyasztása szempontjából, hanem a kreativitás, a lehetőségek végtelen tárháza, a szépsége miatt is 💗 💖 💕 💓 A csoki mindig jól jön, mindig finom, mindig elérhető :) aprócska boldogság a nagy, néha szürke világban :)
Mindemellett meg kell emlékeznem március 15-ről is, arról a napról, amikor 1848-ban néhány lelkes fiatal (és ha belegondolok, hogy itt csupán 23-25 éves emberekről beszélünk...) elindított valamit, ami a Magyarország függetlenségéért vívott harcban csúcsosodott ki. Nem célom most a történelmi tények ismertetése, csak a csodálatomat akarom kifejezni ezen fiatal emberek iránt, akik mertek álmodni, méghozzá nagyot álmodni, mertek és tudtak tenni azért, hogy az álom megvalósuljon, vállalták a tetteik következményét, és mindent elkövettek, hogy elérjék végcéljukat. 
Csupán ezt már önmagában példaértékűnek gondolom (és akkor ne beszéljünk arról, milyen szerepet vállaltak a szabadságharcban és mi lett a sorsuk azután), ami ma is sokunknak adhat lelki-szellemi muníciót, útmutatást.


Az ünnep tiszteletére - na jó, nemcsak azért, hanem azért is, mert szeretjük a diót XD - extra diós trüffelt készítettem :) Minden dióimádónak kötelező!

Hozzávalók:
100 gr étcsoki
70 gr + egy maréknyi pörkölt dió
0,3 dl tejszín
egy kiskanál vaj
két kiskanál méz
0,4 dl diópálinka

Elkészítés:
A tejszínt, a vajat és a mézet felmelegítem, végül hozzájuk keverem a csokit. A pörkölt dióról ledörzsölöm a héját, és ledarálom. Belekeverem a pálinkát, majd hozzáöntöm a csokis masszát, és alaposan összekeverem. A ganache-t egy éjszakára a hűtőben hagyom. 
Másnap egy maréknyi hámozott pörkölt diót ledarálok, a ganache-ból kiskanállal darabkákat vájok ki, amiket golyóvá formálok, és meghempergetem a reszelékben. Jó étvágyat! :D


I forgot to commemorate that (already more than) three years ago I participated at the course of the chocolate school of Szamos :) This was a turning point as it gave me a hobby which I adore: not only eating up the outcome, but also its creativity, the endless possibilities in it and its beauty 💗 💖 💕 💓 Chocolate is always good, always yummy, always accessible :) a tiny bite of happiness in the big, sometimes grey world :)
And at the same time I must commemorate 15 March, the day when in 1848 some enthusiastic youngsters (to think about that they were only 23-25 years old...) started something that culminated in the Hungarian war of independence. It is not my aim to write about historical facts, I only want to express my admiration towards these young people, who dared to dream, they dared to dream big, they dared and were able to act in order to realise this dream, they took responsibility for the consequences of their deeds and they did everything to achieve their goals.
Only this in itself is exemplary (and let's not talk about the roles they undertook during the war and their fate afterwards), which, even today, may provide many of us with spiritual munition and guidance.


On the occasion of this day - well, maybe also because we love walnuts XD - I prepared walnut truffles :) It's compulsory for every walnut lover!

Ingredients:
100 gr dark chocolate
70 gr + one fistful roasted walnut
0,3 dl cream
one spoon of butter
two spoons of honey
0,4 dl walnut pálinka

Recipe:
I warm up the cream, the butter and the honey, finally I combine them with the dark chocolate. I peel the roasted walnuts and I grind them. I add the pálinka then the chocolate cream and I mix them. I leave the ganache in the fridge for a night.
The next day I grind a fistful roasted walnut. With a small spoon I scoop portions of the ganache, which I shape into balls and I coat them with the ground walnut. Buon appetito! :D

mirabella-narancs // Mirabelle plum-orange

Na most ez egy kissé furcsa ízkombináció, és jelen pillanatban a mirabella is nehezen beszerezhető, de valami fanyart akartam készíteni, ami épp illik az élethelyzetemhez. Meg kell mondjam, ugyan a töltelék tényleg épp olyan keserédes lett, mint az élet, a kész bonbonok az édes csokiburokkal együtt olyan ellenállhatatlanok... hát... épp, mint az élet :D
A mirabella neve talán nem sokaknak ismerős - amúgy sem egy közismert gyümölcs, pedig a fák nagyon hálásak, és nyáron rogyásig vannak terméssel. A mi családunk egyébként csak fosókának hívja, és meglepve láttam a neten, hogy nem vagyunk egyedül ezzel :D


A balatoni házunk kertjében nő egy mirabella fa, nyáron alkalmanként elrakunk néhány üveg befőttet. Az apró, fanyar bogyók még télen is őrzik a nap melegét és fényét :) Most aztán, míg azon gondolkodtam, milyen ízesítésű legyen a bonbon, valahogy felbontottunk egy üveg mirabella befőttet, így aztán a kérdés megoldódott :D A kiegészítő ízesítés kérdése pedig villámgyorsan eldőlt, amikor a boltban a fűszeres polc előtt nézelődtem. Porrá tört szárított narancshéj?! Még szép, hogy megveszem! :D

Mirabella

Hozzávalók:
120 gr tejcsoki
150 gr fehércsoki
50 gr mirabella 
szárított narancshéjpor
10 gr tejszín

Elkészítés:
A tejszínt és a mirabellát (egy kis befőttlével együtt) felmelegítem, míg a magok el nem válnak a gyümölcshústól. Eltávolítom a magokat, majd a keverékhez adok 100 gr tejcsokit, és homogén masszává keverem. Beleszórok 2-3 csipet narancshéjport, és hagyom kihűlni.
Temperálok 20 gr tejcsokit. Ujjal márványozom a bonbonforma mélyedéseit. Ezután temperálom a fehércsokit is, elkészítem a bonbonok burkát. Megtöltöm őket a gyümölcsös krémmel, és a hűtőbe teszem. Két óra múlva kiveszem, temperálom a maradék fehércsokit, és talpalom a bonbonokat.


Now this is a bit weird combination and at the moment Mirabelle is hard to get but I wanted to prepare something tart, which fits my life situation. I have to admit that even though the filling indeed became bittersweet like life itself, the bonbons with the sweet chocolate shell are just as irresistible as... well... life itself :D
Probably not many are familiar with Mirabelle (see photo above) - it is not a well-known fruit, even though the trees are very grateful and they are full of berries in the summer.
A Mirabelle tree grows in the garden of our house at lake Balaton, occasionally we put away some jars of it. The tiny, sour berries keep the warmth and light of the sun even in winter :) Now while I was thinking what flavours to add to this bonbon, somehow a bottle of Mirabelle was opened and thus I also got the answer :D The complementing flavour was decided while I was standing in front of the spice shelf in the shop. Powdered dry orange zest?! But of course I'll buy it! :D


Ingredients:
120 gr milk chocolate
150 gr white chocolate
50 gr Mirabelle
powdered orange zest
10 gr cream

Recipe:
I warm up the cream and the Mirabelle until the seeds can be separated from the flesh. I get rid of the seeds, then I add 100 gr milk chocolate and I stir it until it becomes a homogeneous cream. I sprinkle it with 2-3 pinches of powdered orange zest and I leave it to cool down.
I temper 20 gr milk chocolate. With my finger I marble the cavities of the bonbon mould. I also temper the white chocolate and I prepare the bonbon shells. I fill them with the fruity cream and I put the mould in the fridge. Two hours later I take it out, I temper the leftover white chocolate and seal the bonbons.

joghurtos-karamellás // yogurt-caramel

Nagynénémék 50. házassági évfordulója alkalmából készültek ezek a bonbonok :) Az aranylakodalomhoz illően dekoráltam őket, na meg belecsempésztem egy kis tavaszi varázst is, ami úgy látszik, sikerült is, mert két nappal később már melegedett az idő :)


Hozzávalók:
200 gr tejcsoki
50 gr fehércsoki
1 doboz krémjoghurt
75 gr cukor
0,5 dl tejszín
15 gr akácméz
15 gr vaj
lüszterpor

Elkészítés:
Először a fehércsokit temperálom, ecset segítségével megfestem a virágmintákat. Miután megszáradt a csoki, temperálom a tejcsokit is, elkészítem a csokiburkokat. Először a joghurtból töltök belőle - jó sűrű krémjoghurtot használok hozzá. Egy teljes éjszakát állni hagyom a hűtőben, hogy a joghurt felszíne kissé megszilárduljon.
Másnap elkészítem a karamellt: felolvasztom a cukrot, míg szép óarany színt nem kap. Ekkor óvatosan hozzáadom a vajat, a mézet és a tejszínt, és míg tovább melegítem, keverem, hogy összeálljon. Amikor kihűlt, a joghurtréteg tetejére adagolok néhány cseppet, és ismét a hűtőbe teszem, míg a karamell megszilárdul. Ekkor temperálom a maradék tejcsokit, és lezárom a bonbonokat. Végül lüszterporral díszítem, ami szépen kihozza a bonbonforma virágmintáit.


These bonbons were made on the occasion of the 50th wedding anniversary of my aunt&uncle :) I decorated them in a fitting way for the golden wedding and I added a tiny bit of spring magic, which was successful, it seems, as only two days later the weather started to warm :)


Ingredients:
200 gr milk chocolate
50 gr white chocolate
1 cup of yogurt
75 gr sugar
0,5 dl cream
15 gr honey
15 gr butter
luster dust

Recipe:
First I temper the white chocolate and I paint the flower patterns with a brush. After the chocolate hardens, I temper the milk chocolate and I prepare the chocolate shells. The first filling is the yogurt - for which I use thick cream yogurt. I leave it in the fridge for a night, until the surface of the yogurt sets.
The next day I prepare the caramel: I melt the sugar until it becomes golden. Then I carefully add the butter, the honey and the cream and while I keep warming it, I stir it until it becomes smooth. After it cools down, I portion some drops on the top of the yogurt layer and I put it in the fridge again until the caramel sets. Then I temper the leftover milk chocolate and I seal the bonbons. The final touch is some luster dust, which enhances the beautiful flower patterns of the mould.

dragon

Van az az emberfajta, aki él a való világban, és közben a belső világ(ok)ban is. Akár akarja, akár nem, a feje folyamatosan tele van mesékkel, a legváratlanabb pillanatokban bukkannak fel az ötletek, történetek, vagy csupán nevek, karakterek, helyszínek. Ez mókásan hangzik, de nem tréfadolog; a mese hasonlít a csokira abból a szempontból, hogy nagyon nem szereti, ha elhanyagolják vagy nem kezelik odaadással. Ugyanakkor mégsem cserélnék mással, imádom a folyamatos színes kavalkádot. És semmihez sem fogható érzés, amikor az ember cinkosra lel, akivel együtt szőhet történeteket, akinek mindez ugyanolyan valóságos, akiben ugyanúgy benne van a végtelen, és nem korlátozza magát a "való világra".  Ilyen találkozás nem adódik túl gyakran ebben a hosszú életben! 
Ezt a bejegyzés az ilyen találkozásoknak ajánlom :)
Az itt következő csoki valójában illusztráció a meséhez :) A mese pedig folytatása a januárban közzétett mesémnek. Mindemellett találtok még egy fotót egy üvegvázáról, amit nagyjából tíz éve festettem, és úgy gondoltam, illusztrációként szintén ideillik :)

Hozzávalók:
100 gr fehércsoki
100 gr tejcsoki

Elkészítés:
Temperálom a fehércsokit, majd kiöntöm egy ív sütőpapírra. Egy másik darab papírt helyezek fölé, és körkörös mozdulatokkal szétterítem a csokit, hogy kb. 2-3 mm vastag palacsinta képződjön. Hagyom megszilárdulni, közben egy tányért, vagy más súlyt helyezek fölé, különben felemelkedik a csokilap széle. Amikor elkészült, óvatosan lehúzom róla a sütőpapírt. Felmelegített késpengével körbevágom a szélét, hogy egyenes legyen, így egy csokilapot kapok, amelyre rajzolni lehet :) persze csokival...
Megtervezem a mintát. Temperálom a tejcsokit, habzsákba töltöm, és megrajzolom a sárkányt. Hagyom megszilárdulni.


Surrogott a fű, az esőcseppek halkan neszeztek, akár a hajban matató ujjak.
Lora pisszenés nélkül, összeszorított szemekkel hallgatta, moccanni sem mert.
Valami hideg és nedves ért a kézfejéhez. Ijedten ugrott hátra, majd négykézláb hátrált, amikor a sárkány hatalmas, ijesztő pofájával találta szemben magát.
"Ne félj tőlem!" hangzott a mély hang a homloka mögött, mire értetlenül rázta a fejét, kezeit a füleire szorította. Ismét behunyta a szemét, mintha azzal kizárhatná a valóságot.
"Nézz rám!" A sárkány hangja bársonyos, ellenállhatatlan volt, és Lora fölpillantott, egyenesen a szemébe. Jégkék kristály - a tél és a fagy könyörtelen, hideg szépsége tükröződött benne, jégcsapok áttetsző, fénylő pengéje, hópelyhek szabályos, szeszélyes fraktáljai, tavat páncélba vonó, csillogó zöldeskék jégréteg. A jég dermesztő fogsága szúrós forróságba fordult, érzéktébolyító, vad, halálhozó zsibbadásba.
Lora elszakította tekintetét a sárkányétól, végignézett félelmes fogain, lapos orrán, hosszú orrnyergén, a homloka közepén ülő opálkék gyöngyön, hókristályokként csillogó pikkelyein, ruganyos testén.
- Az ezüst madár... - motyogta, mint aki még mindig nem fogta fel, mi történt.
"Megszabadítottál és nevet adtál nekem," hangzott a sárkány hangja a fejében, "a szabadságom hozzád köt. Áruld el a neved!"
- Lora vagyok - kis gondolkodás után sután hozzátette: - Szabó.
Ezúttal a sárkány mustrálta végig őt, s a lány még az előbbinél is apróbbra kucorodott össze.
"Ne félj tőlem!" ismételte meg a sárkány. "Nem ártok neked. Ebben a városban laksz?" intett fejével a domb tövében elterülő településre.
Lora bólintott.
"Hagyd itt, és gyere velem!"
- Tessék?!
"Tarts velem!"
- De hová? Miért?
A sárkány derűsen tátotta ki a száját, hegyes fogai csillogtak a tompa fényben, kígyózó mozdulattal közelebb kanyarította magát.
"Itt él a családod?" kérdezte.
Lora nemet intett. - Árva vagyok.
"Van házad, birtokod, kincseid?"
A lány önkéntelenül elnevette magát, megrázta a fejét.
"Mindjárt gondoltam." A sárkány állát elülső mancsaira fektette, macskaként pislogott fel Lorára. "Amikor a félistenek fogságba ejtettek minket, azt a jóslatot kapták, hogy aki megszabadít egy sárkányt, annak az lesz az egyetlen kincse. Nem tudom, mi vitte rá Isimudot, hogy neked adjon, tudván, hogy beteljesítheted a jóslatot, de..."
- Várj, várj! - szakította őt félbe Lora. - Azt mondod, hogy Isimud egy félisten? Az öreg a felöltőjével?...
"Így van."
- De miért vetettek fogságba titeket a félistenek?
A sárkány előrébb dugta a fejét. "Látod azt a gyöngyöt a homlokomon? A sárkánygyöngy a világ legértékesebb kincsei közé tartozik, királyok ölnek érte. A félistenek pedig mágiával varázsoltak el bennünket, hogy megszerezzék a benne lévő bölcsességet. Egy madár könnyen kezelhető, kevés élelmet igényel és jóval kevésbé veszélyes, mint egy sárkány."
- Amíg a foglya voltál... - Lora elakadt.
A sárkány lehunyta szemeit.
"Hosszú évszázadokig tartottak fogva bennünket, a tudásunkat felhasználva vívtak háborút istenek, félistenek és emberek ellen, építettek és romboltak, a maguk szája íze szerint adagolták a tudást az emberek javára vagy kárára." Felnézett, átható tekintetét Loráéba fúrta. "De ennek most vége. Ezentúl a magam ura leszek. Tarts velem, és szabadítsuk ki a társaimat!"
Eltökéltsége hatására a lány zavartan fordította el a fejét.
- Én nem vagyok harcos, sem bölcs, sem stratéga. Egyedül ruhák készítéséhez értek. Nem hiszem, hogy a hasznomat vennéd...
Meglepetésére a sárkány érdes, jókedvű kuncogása töltötte be a tudatát.
"Nincs szükségem harcosra, bölcsre, stratégára. Rád van szükségem, rád, aki kiszabadítottál." Közelebb húzódott, "Gyere velem, csak egy pár napra. Amint megkérsz rá, visszahozlak ide. Ugyan mit veszíthetsz?"
Lora hosszan nézte a sárkány fehér pofáját, rücskös bőrét, kristálypikkelyeit. Aztán bólintott.
- Hamarosan jövök.
Fölkelt, leporolta a ruháját, s a szemerkélő esőben visszasietett a városba. A szabóüzlet elé érve megállt, hosszan nézte saját ajtaját. "Nem fog hiányozni," gondolta, míg lenyomta a kilincset.
Sebesen összeszedett néhány ruhadarabot, varráshoz való kis készletét, némi élelmet, batyuba kötötte őket, amit a vállára vetett. Ismét elgondolkodott, amikor elfordította a kulcsot a zárban, majd a batyuba süllyesztette. Egyhelyben toporgott, egyszerre nosztalgia szállta meg a varrás ütemes egyhangúsága iránt.
- Csak egy pár nap... - mormolta, majd megtette az első lépést a domb felé, s a lába átvette az irányítást. Mire elérte a kikövezett út végét, már szaladt.
A korábban szemerkélő eső rákezdett, szürke függönye homályba vonta a tájat. Lora megállt a sárkány előtt, arcán patakzott a víz, ruhái átáztak, átfagyott, de belül várakozás, eljövendő kalandok, sosem látott tájak izgalma fűtötte.
- Itt vagyok!
A sárkány elé tekergőzött, hosszú, vastag nyakát a fűre fektette. A lány kissé ügyetlenül mászott fel rá, batyuját szorosan a nyakába kötötte.
"Kapaszkodj!" szólt a sárkány, azzal elrugaszkodott a földtől.



There is that kind of people who live in the real world and at the same time in the inner world(s). Whether s/he likes it or not, her head is always full of fairytales; ideas, stories or simply names, characters, locations turn up in the most unexpected moments. Which sounds fun but actually it isn't: fairytales are like chocolate in the sense that they don't like to be neglected or treated without devotion. At the same time I would never give up on it, I love the constant colourful cavalcade. And there's nothing compared to finding a partner in crime with whom you can weave stories, for whom it is the same reality, who has infinity inside and does not limit himself to the "real world". Such encounters do not happen very often in this long life!
This post is dedicated to such encounters :)
The following chocolate is an illustration for the tale :) And the story is the second part of my tale published in January. Above you'll also find a photo of a glass vase, which I painted approximately ten years ago. I thought it would be a nice addition :)

Ingredients:
100 gr white chocolate
100 gr milk chocolate

Recipe:
I temper the white chocolate, then I pour it on a sheet of parchment paper. I place another sheet above and with circular moves I spread the chocolate in order to get an approximately 2-3 mm thick pancake. I leave it to dry, in the meanwhile I put a plate or another weight on the top, otherwise the sides would curl up. When it is ready, I peel off the paper and with a heated knife I cut the sides. Thus I get a chocolate disk on which I can draw :) with chocolate, of course...
I plan the pattern. I temper the milk chocolate, put it in a piping bag and I draw the dragon. I let it dry.


The grass was whispering; the faint noise of raindrops like fingers fiddling in the hair.
Lora was listening as still as a mouse, eyes shut tight, she didn't dare to move. Something cold and wet touched her hand. She jumped away, then she backed on all fours when she faced the enormous, dreadful face of the dragon.
"Don't be afraid!" sounded a deep voice behind her forehead; she shook her head in disbelief, she pressed her hands on her ears. She closed her eyes again as if like that she could exclude reality.
"Look at me!" The voice of the dragon was velvety and irresistible. Lora looked up, right in his eyes. Ice-blue crystal - it reflected the cruel, cold beauty of winter and frost; the translucent, shiny blades of icicles, the capricious fractals of snowflakes, gleaming, blue-green ice covering a lake. The chilling captivity of ice that turns into stinging heat, crazing, wild, fatal numbness.
Lora tore her gaze from the dragon's; she looked at his frightening teeth, his flat nose, long bridge, the opalescent blue bead sitting on his forehead, his scales sparkling like snowflakes, his flexible body.
"The silver bird..." she mumbled as if she still hadn't been able to comprehend what had happened.
"You liberated me and you gave me a name," sounded the dragon's voice in her head, "my freedom binds me to you. Tell me your name!"
"I am Lora," and after a while she added clumsily, "tailor."
This time the dragon looked at her intently and the girl curled up into an even smaller ball than before.
"Don't be afraid!" repeated the dragon. "I won't hurt you. Do you live in this city?" with his head he waved towards the settlement extending at the foot of the hill.
Lora nodded. 
"Leave it and come with me!"
"Excuse me?!"
"Come with me!"
"But where? Why?"
The dragon gaped his mouth joyfully, his sharp teeth glistened in the dull light; he twisted closer with a serpentine move.
"Does your family live here?" he asked.
Lora shook her head. "I'm an orphan."
"Do you possess a house, land, treasures?"
The girl involuntarily laughed and again shook her head.
"I thought so." The dragon laid his chin on his legs and blinked at Lora like a giant cat. "When the demigods captured us, they received a prophecy that the one who liberates a dragon, will have only that one treasure. I have no idea what made Isimud give me to you, knowing that you may fulfill the prophecy, but..."
"Wait, wait!" interrupted Lora. "You say that Isimud is a demigod? The old man with his coat?..."
"That's right."
"But why did the demigods capture you?"
The dragon pushed his head closer. "Do you see that pearl on my forehead? Dragon pearl is one of the most precious trasures in the world, kings would kill for it. Demigods put a magic spell on us in order to acquire the wisdom in it. A bird is easy to handle, it does not need much food and is much less dangerous than a dragon."
"While you were his prisoner..." Lora broke off.
The dragon closed his eyes.
"They kept us imprisoned for centuries, using our knowledge to fight wars against gods, demigods and humans, they built and destroyed and portioned the knowledge according to their own taste, for the good or bad of people." He looked up, his sharp gaze pierced Lora's. "But it's over now. From now on I am my own master. Come with me and let's liberate my mates!"
Sensing his detemination, the girl turned her head away.
"I am not a warrior, a wise man or a strategist. I only know how to make clothes. I don't think I would be useful..."
To her surprise, the rough, cheerful giggle of the dragon filled her mind.
"I don't need a warrior, a wise man, a strategist. I need you, you, who released me." He drew closer. "Come with me, only for a couple of days. As soon as you ask me, I'll bring you back here. What could you possibly lose?"
For a while Lora was staring at the white face, the coarse skin, the crystal scales of the dragon. Then she nodded.
"I'll come back soon."
She stood up, dusted off her clothes and she hurried back in the city in the drizzling rain. In front of the tailor shop she stopped, she was looking at her own door. "I won't miss it," she thought while pressing down the handle.
Quickly she gathered some clothes, her small sewing kit and food, she bundled them and lifted it on her shoulder. She was deep in thought when she locked the door, then sank the key in her bag. She was lingering, she felt sudden nostalgia for the rhythmical monotony of sewing.
"Only some days..." she murmured, then she took the first step towards the hill. Her feet took over, by the time she reached the end of the paved road, she was running.
The rain started, its grey curtain obscured the landscape. Lora stopped in front of the dragon. Water was streaming on her face, her clothes soaked, she felt cold but inside anticipation, the excitement of lands to be discovered and future adventures heated her.
"I'm here!"
The dragon wiggled in front of her, he laid his long neck on the grass. The girl clumsily climbed on him, she fastened her bundle to her shoulders.
"Hang on!" said the dragon, then he swung himself in the air.
