Aztán amikor hazajöttem, egyből készülhettem is a párom meglepetésbulijára.

Felolvasztok 125 gr étcsokit, a szilvához keverem.

After ten years, finally I could travel to one of my favorite cities, Dublin. For some reason, even though back then I traveled there almost every year, now a lot of time has passed without that and I thought that probably it won't have the same effect on me - otherwise I surely would've returned. But still - even though Dublin is a "small" city with merely half a million inhabitants and it doesn't even have that many sights to see, still... Among all the countries and all the cities that I have seen (and I've been to many places indeed), nowhere does mythology and the past thrive as much as in Ireland. And I don't think about corny plush leprechauns, but something much more immense. Something that shines through details such as the five-volume Genealogy of Irish Families starting with the Invasions of Ireland and the genealogy of the Irish fairies. Probably only in Greece does mythological past weave through every aspect of life so much. And this floods over and swallows those who are responsive. Therefore, even if Dublin seems small and insignificant, it is still in the center of my heart and I want to hug it.
When I returned, I had to make preparations for my boyfriend's surprise birthday party. I made this chocolate for him and his guests, which became a real autumn treat :)

Ingreidents:
50 ml plum
10 ml cream
10 ml slivovica
1 small spoon of honey
2 pinches of cinnamon
125 gr dark chocolate
200 gr milk chocolate
luster dust

Recipe:
I clean the plums, pit them and blend them until I get a smooth puree. I take 50 ml of it, add the cream, slivovica and the honey. I also put a couple pinches of cinnamon in it. I melt 125 gr dark chocolate and combine it with the plum cream.
I paint the cavities of the mold with bronze luster. Then I temper the milk chocolate and I prepare the bonbon shells. After they get dry, I fill them with the plum cream and I put the mold in the fridge. An hour later I take it out and I seal the bonbons with tempered milk chocolate.

barackos pohárkrém // peach trifle

Ebben a hatvanzsillió fokos melegben kinek ne esne jól egy behűtött gyümölcszselés pohárkrém?! A héten vásárolt nektarinból készítettem, és mivel karamellfüggő is vagyok, feldúsítottam némi brandys karamellszósszal. Krémes vaníliás mascarpone, friss barackzselé és tömény karamell, mi más kellhet egy igazán finom desszerthez?
Alant pedig rövid beszámoló dániai utazásunkról :)

Hozzávalók:
100 gr mascarpone
50 gr fehércsoki
vanília
150 gr cukor
100 gr tejszín
40 gr vaj
40 gr méz
brandy
150 gr barackpüré
agaragar

In this six billion degrees heat who wouldn't love a good, cool, fruit jelly trifle?! I made it from the nectarine bought this week and since I'm addicted to caramel, I boosted it up with some brandy-caramel sauce. Creamy vanilla mascarpone, fresh peach jelly and dense caramel, what else would you need for a good dessert?
Below a short account on our trip to Denmark :)

Ingredients:
100 gr mascarpone
50 gr white chocolate
vanilla
150 gr sugar
100 gr cream
40 gr butter
40 gr honey
brandy
150 gr peach puree
agar

Recipe:
I mix the mascarpone, the melted white chocolate and two pinches of vanilla. I portion it into glasses. I prepare the caramel: I melt the sugar and when it becomes golden brown, I add the butter, then the cream and the honey in small doses. If needed, I put it back on the stove and stir it until it becomes creamy. I put it aside. When it gets cooler, I add the brandy.
I peel four nectarines, I chop them up and blend them. I sieve the puree; I take 150 gr from the liquid. I boil it together with the agar, then I leave it to cool. I pour it on the top of the mascarpone and I put the glasses in the fridge so the jelly can harden. Finally I pour a thin layer of caramel on the top and I decorate it with peach slices.

This castle, Rosenborg can still be visited, but soon I'll move in and I'll live int he tower room. Copenhagen is a wonderful, fabulous place where I'd love to live :D Rose bushes grow in every gate, their scent follows you; the buildings are friendly, colourful and diverse; people are smiling. And tidy parks filled with flowers everywhere! Under the trees the locals are reading, walking, relaxing. The streets are neat, clean, everywhere sights to see: palaces, gardens, fortresses, seaside, historical buildings... All of them can be found in Copenhagen :) Aristocratic, elegant and fabulous at the same time. Recommended destination to those who like to be enchanted by a city.

mangó-whiskey // mango-whiskey

25 ml whiskey
1 kiskanál vaj
100+180 gr tejcsoki
ételfesték, kakaóvaj

Elkészítés:
A mangópürét és a whiskey-t összekeverem. Megolvasztok 100 gr tejcsokit, amihez adok egy kanál vajat is. Elegyítem a mangóval.
Rózsaszín ételfesték és olvasztott kakaóvaj keverékével összefröcskölöm a bonbonforma mélyedéseit. Megvárom, míg megszáradnak a pettyek. Temperálok 180 gr tejcsokit, elkészítem a burkokat. Miután megszilárdultak, megtöltöm őket a mangós krémmel. Hűtőbe teszem néhány órára, végül a maradék csokival lezárom őket.

Calling Prague the City of a Thousand Spires doesn't really do justice - Prague should be called the City of a Thousand Tales. Every house, every building has a story; if one listens to them as he passes by, they'll tell him. But it's enough to look at them; history embraces them as a glory, which infiltrates one's heart and unconsciously enraptures him in order not to let him go anymore. But why would anyone get rid of it anyway - Prague is charming, magical and fabulous; as one walks there, every stone, every decoration, the lamp posts, the statues of the facades, every detail keeps telling stories. Under the thresholds house spirits are hiding - in bigger houses several generations of entire big families, where the elderly inherited the story of the house to which their own story is linked, through oral tradition. Smaller, simpler buildings are guarded by bachelor or young, single spirits. They are lurking at every corner, they talk to those who can hear them. Prague is a city of Thousand Tales and Thousand Wonders.

I made this chocolate to my Czech friends. The combination of mango and whiskey has roused my interest, I was curious how they fit together. They do :D

Ingredients:
30 gr mango puree
25 ml whiskey
1 small spoon butter
100+180 gr milk chocolate
food paint, cocoa butter

Recipe:
I mix the mango puree and the whiskey. I melt 100 gr milk chocolate, and I add a spoonful of butter. I combine it with the mango.
With the mixture of pink food paint and melted cocoa butter I sprinkle the cavities of the bonbon mould. I wait until the drops get dry. I temper 180 gr milk chocolate, I prepare the shells. After they get solid, I fill them with the mango cream. I put the mould in the fridge, then I seal the bonbons with the leftover chocolate.

This post is dedicated to my dear friend, Pontus.
Approximately twenty years ago I read an account on Lucia day in Stockholm. That is how I ended up in Stockholm on 12 December, one day before my birthday; making my dream, to be there and see the city on Lucia day, come true. Then I travelled to Göteborg to visit Pontus. Fortunately he has a sweet tooth just like me, and he requested fruity chocolates, so the bonbons below were made for him (my travel journal is under the recipe :))

Hozzávalók:
170 gr tejcsoki

Felmelegítem, hozzáadom a fehércsokit. Miután elkészül a ganache, beleöntöm és elkeverem a rózsalikőrt.
A bonbonhéjakat temperált tejcsokiból készítem el. Miután megszilárdultak, megtöltöm őket az epres krémmel. Hűtőbe teszem a csokiformát néhány órára. Végül temperált tejcsokival lezárom a bonbonokat.

Ingredients:
170 gr milk chocolate
30 gr strawberry puree
7-8 rose peppers
1 small spoon of butter
0,2 dl rose liqueur
80 gr white chocolate
luster dust

Recipe:
With the mixture of white and pink luster dust and melted cocoa butter, I marble the cavities of the chocolate mould.
I prepare the filling: I combine the strawberry puree with butter and crushed rose pepper. I warm it up, then I add the white chocolate. After the ganache is done, I put the rose liqueur in it.
I prepare the bonbon shells of tempered milk chocolate. When they get solid, I fill them with the strawberry cream. I put the mould in the fridge for some hours. Finally I seal the bonbons with tempered milk chocolate.

A sziget színes házikókból álló labirintusában egymást követik a kézműves boltok, kirakataikban kedves karácsonyi apróságok; lehetetlen mosoly nélkül végignézni őket.

It is impossible not to love Sweden: people are easygoing, friendly and smiling; cities are clean and traffic is relatively small; the buildings are beautiful and tidy and a certain love for life radiates from everything. Totally accidentally I booked a room in Gamla stan, the old town of Stockholm, in front of the building of the Academy. Even during the first evening stroll it turned out that the Swedes cultivate Christmas: in every window of every house lights: candles or stars sparkle, illuminating the streets. The royal palace stands on the island of Gamla stan, which is the heart of the city. In the island's labyrinth, made up of colourful houses, artisan shops hide, in their windows sweet little Christmas toys; it is impossible to watch them without smiling.

Stockholm ékességei közé tartozik a városháza, ami közvetlenül a Malaren-tó partján áll, árkádos udvarából lépcsők vezetnek a vízhez. A feldíszített, kivilágított utcákat itt-ott hidak váltják fel, amik egy-egy városrészhez vezetnek; közöttük a tó vize méltóságteljesen tükrözi vissza a fényeket. Különleges hely a Djurgarden nevű sziget is, ahol parkok között rengeteg múzeum bújik meg. Itt található a világ legrégibb szabadtéri múzeuma, a Skanzen is. Én a Vasa múzeumba mentem be, ahol az 1628-ban elsüllyedt majd 1961-ben kiemelt, gigantikus Vasa hadihajó látható.
14-én aztán továbbutaztam Göteborgba.

On 13 December, according to tradition, Swedish children dress in white in the church and holding candles in their hands, they sing Santa Lucia. A girl wearing a crown of candles leads the choir. I had the chance to listen to a singing group in front of a church; it was a real heartwarming experience.
The city hall belongs to the jewels of Stockholm; it stands right on the shore of Lake Malaren; from its courtyard, stairs lead to the water. Adorned, illuminated streets give way to bridges, which lead to different parts of the city; between them the water of the lake majestically reflects the lights. The island of Djurgarden is another special place, where museums nestle among the parks. This is the place of the world's oldest open-air museum, the Skansen. I visited the Vasa museum, where the gigantic warship Vasa can be seen, which sank in 1628, then was salvaged in 1961.
On 14, I travelled on to Göteborg.

In reality the birthday party started only in Göteborg, where I finally saw a friendly face :) Pontus is a big guy: he's tall, has strong voice and a big heart. He's entertaining and you can chat about everything with him (probably this skill is picked up quickly if one travels as much as he does). Besides, he's a brilliant drummer: check out his music here, here and here. As it happens, Pontus had two concerts this weekend and he invited me. 🎵 😁 The Pistvakt show tells the funny story of a ski resort, based on a series of famous songs. The performers are three renowned Swedish actors, the band and two absolutely lovely vocalist girls. Obviously everything was in Swedish so I didn't understand a single word, but it was good to see that both on stage and in the audience everyone had a great time. Below is a video, where you can see what the show was about more or less.

I have to say, every member of the team was hospitable, friendly and kind with me; they accepted my presence without objection even after the concerts, when they went out to socialise in some nearby pub. I had really nice chats with them.
And whenever I was alone, I took big walks in Göteborg: the city is much younger than Stockholm, therefore most of the buildings are more modern too. However, Haga, the old town is just as a charming Christmas-town as Gamla stan and one can have great walks on the banks of the canals. I absolutely must mention the Feskekörka, the Fish-church :D

And of course after all these wonderful experiences, the crown was put on my journey on the last day, which was a perfect day, I think. After my morning walk, we went to the city museum with Pontus, where we saw an interactive exhibition about the history of Göteborg. Then we drank a hot chocolate and headed to Universeum! I've never been to such a place; I especially liked the tank of the sharks, and of course the rain forest with the colourful birds :)
Finally in the evening we visited Liseberg. This experience is really hard to describe; I think the term "amusement park" is not adequate in this case. Liseberg is everything one desires before Christmas: lights, good food, snow, pine trees, games, skating rink, market, artisan huts, attractions! I must have looked funny while staring at all the miracles with my mouth open, but I've been to an amusement park only once before and that didn't look like this at all :D Pontus took me to the factory of Santa, where dwarfs were making the presents and the children could meet the real Santa :)
Then we sat on the roller coaster called Valkyria. You must know that this is a so-called "dive coaster", i.e. after the car is pulled up on the first slope, it drops down vertically 50 metres into an underground curve. Appropriate for a beginner like me! Naturally it did not even occur to me that I will fly out of the car and crash myself into pulp on the ground and I did not scream my lungs out. I have no idea whatsoever, how the others sitting next to me could giggle so merrily during the ride, but I suspect that it wasn't their first time on a roller coaster 😂 Anyway, afterwards a tasty wafer and the company compensated :)
But then I had to go to the airport :( I said goodbye to Pontus and Sweden with a heavy heart. But I'm sure that I'll return!!

sárgabarackos-mandarinos // apricot-tangerine

A short time ago I had the opportunity to spend some days in Croatia, at the seaside (see some photos above so no one can complain :D). We travelled through the entire country and the green mountains were gorgeous, and Fiume was love at first sight - my husband told me when I came back that probably I felt at home there (i.e. my great-grandma came from Fiume. Once I will write a long post about my entangled family tree but not now, as now I'm suffering with a hundred term papers...). We had great weather and it was awesome swimming in the sea at the shores of a tiny island, despite the attacks of the were-seagulls and were-pheasants, and rosemary was growing everywhere (I brought some sprigs, there were two different kinds).
When we departed, one of our companions wanted to leave there the apricot jam that he had bought for breakfast. How wasteful! I immediately took it with chocolate on my mind. Earlier I'd tried apricot-mandarin mineral water and I'd thought that this pairing should make great chocolate filling. Chili came naturally as an addition: my idea was that these two sweet and juicy fruits need a bit of piquancy. I did not add chocolate to the jam as I thought that it would be sweet anyhow. I put the jelly in dark chocolate cups, the chili tickles one's tongue only in the end :)

Ingredients:
70 gr apricot jam
0,1 dl cream
2 small spoons of mandarin honey
2 pinches of chili
150 gr dark chocolate

Recipe.
I put the cream, the jam and the honey in a small pot and warm them up a little bit so the ingredients melt together. In the end I add the chili and I keep tasting it to see when it's enough.
I melt and temper the dark chocolate, and I pour it in the mould. This time I prepared chocolate cups and after they hardened, I took them out of the mould. I filled them with the jelly and the yummy chocolate is ready!
