áfonyás-levendulás // blueberry-lavender

Különleges alkalomra készült ez a csoki: a tesóm esküvőjére. Mivel az esküvőt a Balcsinál tartották, a témája természetesen a levendula volt. Két kérdés foglalkoztatott előtte: 1. vajon tényleg be akarom-e vállalni, hogy csak úgy meglepiből legyártok húsz emberre való bonbonmennyiséget? 2. vajon milyen íz illik a levendula mellé?
Az első kérdésen gyorsan túltettem magam, elvégre ez nem az az alkalom, amikor azt lehet mondani, hogy "majd legközelebb hozok csokit" :D A második kérdésnél pedig elakadt az agyam annál a gondolatnál, hogy ha már a levendula is sötétkék, akkor valami színben hozzá passzolót kéne választani, így döntöttem az áfonya mellett. Gondoltam, a gyümölcsös íz jól kiegészíti majd a leheletnyi levendulaillatot a ganache-ban. Egy délutánba tellett összerakni ezt a bonbont, és higgyétek el, a végére annyira besokalltam a levendula illatától (pedig tényleg nem használtam sokat!), hogy végül három nappal később mindössze egyetlen szemet bírtam megenni belőle :D Viszont a többieknek nagyon ízlett, szétkapkodták, szóval aki nem légfrissítőillatban élt két napig, azt szemmel láthatóan nem zavarja a levendula aromája a töltelékben :D
(ez az adag kb. 60 bonbonhoz elegendő)


Hozzávalók:
300+170 gr fehércsoki
0,2 dl tejszín
egy kiskanál levendula
két kiskanál vaj
100 gr áfonya
lüszterpor

Elkészítés:
Az áfonyát (két kanálnyi kivételével), a tejszínt, a vajat és a levendulát összeforralom. Leszűröm a lét - na ennél a pontnál bizonytalanodtam el először, amikor az egészen kis adag levendulától majdnem hogy keserű lett az áfonyalé. De nem adtam fel, löttyintettem hozzá még egy kis tejszínt, és beletettem a maradék áfonyát. Ismét felforralom, hozzáadok 170 gr fehércsokit. 
Ecsettel pici pöttynyi lila lüszterport teszek a bonbonforma mélyedéseibe. Temperálom a fehércsokit, és elkészítem a bonbonhéjakat. Megtöltöm őket a krémmel, és a hűtőbe teszem egy órára. Végül lezárom a bonbonokat. 


This chocolate was made for a special occasion: my sister's wedding. As the wedding was held at lake Balaton, naturally it's theme was lavender. Before that I had two questions on mind: 1. do I really want to make bonbons for twenty people just for the sake of the surprise? 2. what kind of flavour fits together with lavender?
I got over the first questions quite quickly, as this is not that occasion when I can say "I'll bring chocolate next time" :D The second one was tricky and I got stuck at the thought that since lavender is dark blue, I should choose something that fits the colour as well. That's how I decided on blueberries. I thought that the fruity flavour would be nice with the lavender scent in the ganache. It took an entire afternoon to put together this bonbon and trust me, by the end I got so fed up with the scent of the lavender (even though I really didn't use that much!) that three days later I managed to eat only one piece :D However, the others loved it and they ate it up immediately, so those who hadn't lived in air spray smell for two days, were not bothered by the aroma of lavender in the filling :D
(this portion will make appr. 60 pieces)


Ingredients:
300+170 gr white chocolate
0,2 dl cream
a small spoon of lavender
two small spoons of butter
100 gr blueberries
luster dust

Recipe:
I boil the blueberries (I leave two spoonfuls), the cream, the butter and the lavender. I sieve the liquid - at this point I started to doubt the success of the project as the blueberry juice became almost bitter because of the tiny portion of lavender. But I didn't give it up, I poured a bit more cream in it and I added the leftover blueberries. I boiled it up again and I added 170 gr white chocolate.
With the help of a brush I put tiny purple dots into the cavities of the mould. I temper the white chocolate and I prepare the bonbon shells. I fill them with the ganache and I put them in the fridge for an hour. Finally I seal the bonbons.

málnás-mentás // raspberry-mint

A versírás, na az soha de soha nem ment nekem. Egyszer próbálkoztam vele, de máig sem értem, miféle extra agytekervény kell ahhoz, hogy valaki úgy rakja össze a szavakat, hogy ritmusképlet, rím, sorok hossza, minden rendben legyen, ÉS még értelme is legyen a szövegnek. Nekem ez a mágia :D Olvasni persze szeretem őket, főleg a kedvenc költőimet, például Tóth Árpádot, Radnótit, Kosztolányit, az ő műveikben találom meg azt a varázslatot, amit én a meséimmel próbálok megragadni. 
Minden idők legkedvesebb verse - tudjátok, az a fajta, amit az év elején kézbe kapott szöveggyűjteményben egyből kiszúr az ember, és év végére már annyiszor elolvas, hogy kívülről ismer - az minden kétséget kizáróan a Hajnali részegség. Hogy a fenébe tudta Kosztolányi így megírni ezt a verset, egyszerűen nem értem, ebben minden benne van, amiért érdemes élni, sőt nem is, ez a vers maga az élet, olyan gyönyörűséges, az embernek lúdbőrzik a karja, míg olvassa. Ha a G2BA az én dalom, akkor ez pedig az én versem, ami a leghívebben kifejezi, amit nap mint nap érzek az életemmel, úgy általában az emberi létezéssel kapcsolatban. Elég hozzá fölnézni az égre...
Ezt a verset választottam a mai csokihoz, ami maga is tele van élettel :D A mentát imádom, és mindenféle kombinációkban jöhet. A málna-menta pedig frissítő, energikus, és "titkos összetevőként" feldobtam egy kis lime-mal is, ami még inkább kiemeli a savanykás ízvilágot :) A burokhoz magas kakaótartalmú étcsokit használtam (74%), ami igazán illik a töltelékhez.

ne is kérdezzétek, tele van a lakás hasonló, elfekvőben lévő füzetekkel,
szinte mániákusan gyűjtöm őket. A grafomán élete...

Hozzávalók:
0,1 dl tejszín
fél lime leve
30 gr málna
egy kiskanál szárított, vagy 3-4 levél friss menta
egy kiskanál vaj
80 gr fehércsoki
200 gr étcsoki
transzferfólia

Elkészítés:
A lime-ot belefacsarom az edénybe, hozzáöntök egy kis tejszínt, és beleteszem a málnákat, meg a mentát. Felrakom melegedni, belekanalazok egy kis vajat is. Hagyom forrni egy kicsit, hogy a mentából kifőjön az íz, közben összenyomkodom a málnákat. A finnyásabbak ezután leszűrhetik, én most benne hagytam a málnamagokat. Végül a még meleg lébe keverek 80 gr fehércsokit.
Elkészítem a bonbonok burkát: színben a málnával harmonizáló transzferfóliát teszek a mágneses forma aljába. Temperálok 200 gr étcsokit, és beleöntöm a mélyedésekbe, kiütögetem a légbuborékokat, majd kifolyatom a felesleget. Száradás után megtöltöm a mélyedéseket a krémmel, és beteszem a hűtőbe. Néhány óra hűtés után lezárom a bonbonokat. Nyamiii!


Kosztolányi Dezső: Hajnali részegség (részletek)

Elmondanám ezt néked. Ha nem unnád.

Writing poems, well, I've never managed to do that. I tried it once, but I still don't understand what kind of extra gyrus you need to put together words in a way that rhythm, rhyme, the length of the lines are all ok, AND the text actually makes sense. To me this is magic :D I like to read poems though, especially those of my favourite poets, like Árpád Tóth, Miklós Radnóti and Dezső Kosztolányi - I find that kind of magic in their poems that I try to grasp in my fairytales. 
My all-time favourite poem - you know, the kind that one immediately fancies in the new textbook and by the end of the academic year reads so many times that she knows it by heart - is undoubtedly Hajnali részegség [Dawnstruck]. I have no idea how Kosztolányi managed to write this poem, it tells about everything that is worth living for, no, this poem is life itself, it is so amazing that one gets goosebumps while reading it. If G2BA is my song, then this is my poem, it faithfully reflects how I feel about my life - or rather life in general. It's enough to glimpse at the sky...
I chose this poem for today's chocolate, as this chocolate is full of life too :D I adore mint, I could eat it in every combination. Raspberry-mint is refreshing, energetic and as a "secret ingredient" I added lime, which enhances the sour-ish flavour :) I used dark chocolate with high cocoa percentage (74%) for the shell, which really fits the filling.


Ingredients:
0,1 dl cream
juice of half a lime 
30 gr raspberry
one small spoon of dry mint or  3-4 mint leaves
a small spoon of butter
80 gr white chocolate
200 gr dark chocolate
transfer sheet

Recipe:
I squeeze the lime into the pot, and I pour a bit of cream in it. I add the raspberries and the mint. I start to warm them up and in the meanwhile I also add some butter. I leave it to boil so the flavour can boil out of the mint, in the meanwhile I crush the raspberries. If you are picky, you can sieve it at this point, but I left the seeds in the liquid. Finally I mixed it with 80 gr white chocolate.
I prepare the bonbon shells: I put a transfer sheet in the bottom of the magnetic mould. I temper 200 gr dark chocolate and I pour it into the cavities; by shaking it I get rid of the air bubbles, then I pour out the excess. After the chocolate gets dry, I fill the shells with the cream and I put the mould in the fridge. After a couple of hours of cooling I seal the shells. Yummmyyyy!

mangó-lime-bazsalikom mousse // mango lime basil mousse

Vannak olyan pillanatok az életben, amikor egy kicsit megáll a világ, és az ember átértékel mindent, mert egyetlen momentum annyira elgondolkodtatja. Jelenleg Chris Cornell halála az, amin két napja morfondírozok, és vele együtt az öngyilkosság. Sajnos nem valami vidám téma, ugyanakkor nem mehetek el mellette szó nélkül. Volt már nekem is ismerősöm, aki önként búcsúzott el az élettől, és mondhatom, egyáltalán nem volt jó érzés, hogy előtte pár hétig nem beszéltünk, bár tudtam, hogy magányos lehet az életében. Nem kezdek papolni arról, hogy "a modern, pörgős életvitel elidegeníti egymástól az embereket", mert szerintem ez marhaság, az egyetlen, ami fontos, és ide kívánkozik, az az, hogy ha úgy vélitek, valaki nincs jó passzban, írjatok neki, hívjátok fel, figyeljünk egymásra a saját kis köreinkben! Ez az, amivel igazán jobbá tehetjük a világot...
Christől, ettől a csodás énekestől pedig egy dalával búcsúzom - nehéz volt egyet választani, mert olyan sok szép dala van, végül egyszerűen a saját kedvencemet választottam, ami - minő meglepetés - egy kis mese :) 
És hogy ne csak ilyen borongós hangulatú írás álljon itt, jön egy recept is. 
Sok helyen olvastam, milyen frissítő és finom a mangó, a lime és a bazsalikom kombinációja, úgyhogy úgy döntöttem, adok neki egy esélyt. Csokimousse-t készítettem belőlük, és mondhatom, a sok gasztroblognak meg receptes oldalnak igaza volt :D Jól behűtve isteni desszert egy ilyen meleg, majdnem nyári napon, mint a mai!


Hozzávalók:
90 gr mangó
fél lime leve
5-6 nagy, vagy 7-8 kis levél bazsalikom
40 gr fehércsoki
3 pillecukor
0,1+1 dl tejszín
70 gr tejcsoki

Elkészítés:
0,1 dl tejszínt, a fél lime levét, a mangót és az összetépett bazsalikomleveleket felteszem melegedni. Amikor a lé felforrt, leveszem a tűzről és összeturmixolom. Ezután ismét felrakom a tűzhelyre, hozzáadom a pillecukrokat, és addig kevergetem, míg elolvadnak. Ekkor elzárom a tüzet, és belekeverem a fehércsokit. Megvárom, míg kihűl a massza, addig 1 dl tejszínből kemény habot verek. Összeforgatom a kettőt, és berakom a hűtőbe néhány órára.
Temperálom a tejcsokit, a kanálformába öntöm, és ezt is a hűtőbe teszem. A mousse-t habzsákból kis pohárkába nyomom, bazsalikommal díszítem, és csokikanállal tálalom.



There are moments in life when time stands still and one thinks over everything. Right now Chris Cornell's passing and suicide make me think a lot. Unfortunately it is not a very happy topic, but I cannot avoid it. I, too, have a friend, who took her own life and it was a very bad feeling that even though I knew that she must have been lonely in her life, we didn't talk for a couple of weeks before that. I won't preach that "our modern lifestyle alienates people from each other", because I think that's stupid. The only thing that matters is that if you know that someone is having troubles, call or write to him/her; we should take care of one another in our little circles! This is what makes the world a better place...
I would like to say farewell to Chris, this wonderful singer, with one of his songs - it was hard to choose only one as he has many beautiful songs, so finally I chose my personal favourite, which is, what a surprise, a little fairytale. :)
And in order not to write only about these sad things, here is a recipe.
I read in many places how refreshing and tasty the combination of mango, lime and basil is; therefore I decided to give it a try. I made chocolate mousse of them and I can say the gastroblogs and recipe pages were right :D It is a great dessert on such hot, almost summer-ish days as today!


Ingredients:
90 gr mango
juice of half a lime 
5-6 big, or 7-8 small basil leaves 
40 gr white chocolate
3 marshmallows
0,1+1 dl cream
70 gr milk chocolate

Recipe:
I warm up 0,1 dl cream, the lime juice, the mango and the basil leaves in a pot. When the liquid starts boiling I blend them, then I put them back on the stove and I add the marshmallows. I stir the cream until the marshmallows dissolve, then I turn off the stove and I mix the puree with the white chocolate. While it is cooling down, I whip 1 dl cream. I combine the two and I put the mousse in the fridge for some hours.
I temper the milk chocolate and I pour it in a mould with spoon-shaped cavities. I put that in the fridge as well. From a piping bag I squeeze the mousse into small cups, I decorate it with basil leaves and I serve it with a chocolate spoon.

erdei gyümölcsös // fruits of the forest

Áh, van hogy bemegyek a levéltárba, és kész, az ember csak kinéz az ablakon, és már máshol is jár gondolatban, mondjuk a saját kis mesevilágában, vagy épp azon az igen király koncerten agyal, ami augusztus 4-én lesz a Fezen fesztiválon. Ha eddig netán halogattátok volna, itt a jó alkalom meghallgatni Glenn papit, ne habozzatok sokat, mert már ő sem lesz fiatalabb, ki tudja, mikor vonul vissza, meddig hallhatjuk még a hangját - és ha van koncertélmény, amit nem érdemes kihagyni, hát akkor az ő éneklése az!
A lenti dalocskát azért teszem ide, mert ugyan ez majdnem tíz éves, de a Papi hangja hihetetlen módon azóta is ugyanaz maradt! (ellentétben bizonyos I.G.-ével, de ebbe most inkább ne menjünk bele :D). De közel áll ez a dal a szívemhez más szempontból is: minden, de minden repüléssel kapcsolatos számot imádok, az a legnagyobb álmom. És nem, nem repülővel, hanem csak úgy a szélbe kapaszkodva, a felhők között, az égben úszva szárnyak és gép nélkül! Néha, amikor azok a kócos, ragyogó fehér felhők utaznak a tiszta kék égen, a belső madár szárnyra kap, és csak úgy vonzanak magukhoz a távolból a hegyek 
Ennek örömére készítettem egy fincsi erdei gyümölcsös bonbonkát, aminek még a héja is rózsaszín :D


Hozzávalók:
0,1 dl tejszín
40 gr erdei gyümölcsök (pl. Sparban lehet kapni, tartalmaz: szeder, ribizli, málna, feketeribizli)
100 gr tejcsoki
150 gr fehércsoki
liofilizált málna

Elkészítés:
A töltelékhez a tejszínnel együtt felforralom a gyümölcsöket, majd szűrőn átpasszírozom őket. A maradék fincsi, meg lehet kajálni nyugodtan :D A lét visszatöltöm a fazékba, ismét felmelegítem, és összekeverem 100 gr tejcsokival.
Temperálok 150 gr fehércsokit, közben hozzákeverek egy adag liofilizált málnaport, amitől szép márványos rózsaszín lesz. Elkészítem a bonbonhéjakat, és száradás után megtöltöm őket a gyümölcsös krémmel. Hűtőben hagyom őket, míg a töltelék megszikkad, azután lezárom a bonbonokat.



Ahh, sometimes I just go to the archive and that's it, I look out the window and I'm already somewhere else, for instance in my fairytale world or I'm thinking about that supercool concert, which will be at Fezen festival on 4 August. If you have the chance, go to Glenn Hughes' concert, we can never know when he'd retire, he doesn't get younger and if there's an experience that you don't want to miss, it is listening to his freaking awesome voice!
The song above is almost ten years old, but Papa's voice is still the same ever since! (unlike a certain I.G.'s but let's not even mention that :D). But this song is dear to my heart also because it is about flying and I adore every song that is about flying. It is my biggest dream. And no, not in a plane but clinging to the wind, among the clouds, swimming in the sky without wings and machines! Sometimes, when those ruffled, shining white clouds are travelling in the blue sky, the inner bird flies with them and those mountains in the distance attract me.
This time I made bonbons with fruits of the forest, and even the shells are pink!


Ingredients:
0,1 dl cream
40 gr fruits of the forest (blackberry, raspberry, red currant and black currant)
100 gr milk chocolate
150 gr white chocolate
lyophilised raspberry

Recipe:
For the filling I boil the cream with the fruits, then I strain them. The leftover is very tasty, so you can eat it up :D I pour the liquid back in the pot, I warm it up again and I add 100 gr milk chocolate.
I temper 150 gr white chocolate and in the meanwhile I mix it with some lyophilised raspberry powder, which provides a nice pink colour. I prepare the bonbon shells, when they get dry, I fill them with the cream. I put them in the fridge until the filling sets, then I seal the bonbons.

mangós-sós karamellás // mango-salted caramel

Első házassági évfordulónkra különleges csokit akartam gyártani. A trópusi gyümölcs-sós karamell kombó igen népszerű manapság, a sós karamell kábé olyan, mint az ominózus kék pulóver Az ördög Pradát visel című filmben: a gourmet éttermekből és édességkészítők receptjeiből szivárgott le a köztudatba, és manapság már szinte minden formában fellelhető: a csokitól a fagylaltig és a süteményekig. Mivel az esküvőnk mediterrán helyen zajlott és a vacsorán mediterrán fogásokat ettünk, ezért úgy gondoltam, egy ilyen hangulatú csoki illeni fog az évfordulóhoz is :) Mangós változatban készült, és nem mondhatni, hogy rosszul sikerült :D


Hozzávalók:
150 gr fehércsoki
arany lüszterpor
mangós ganache:
40 gr mangó
50 gr fehércsoki
egy kiskanál vaj
két kiskanál méz
sós karamell:
100 gr cukor
30 gr vaj
0,6 dl tejszín

Elkészítés:
Először a karamellt készítem el: 100 gr cukrot addig melegítek, míg fel nem olvad, és kevergetem, míg sötétarany színt nem kap. Ekkor lehúzom a tűzről és hozzákeverem a vajat. Közben kissé megmelegítem a tejszínt, és azt is hozzáöntöm. Csak óvatosan, mert ilyenkor nagyon fortyogni kezd az olvasztott cukor. Végül kevergetés közben teszek hozzá pár csipet sót, és kóstolom, hogy mikor lesz elég.
A mangókrémhez a mangódarabokat, a mézet és a vajat kissé megmelegítem, és összeturmixolom, hogy sima állagot kapjon. Ismét fölmelegítem, és belekeverem a csokit. Ehhez a krémhez adok 50 grammnyit a sós karamellből, a maradék karamellt pedig szépen megeszegetem (vigyázat, addiktív!). 
Ecset hegyével kis adag arany lüszterport kenek a forma mélyedéseibe. Temperálok 150 gr fehércsokit, elkészítem a bonbonok burkát. Miután megszáradtak, beletöltöm a mangós krémet, és hűtőbe teszem. Ha a töltelék teteje megdermedt, a maradék csokit ismét temperálom, és lezárom a bonbonokat.



I wanted to make some special chocolate for our first wedding anniversary. Nowadays the tropical fruit - salted caramel combination is so popular; salted caramel is like that ominous blue pullover in The devil wears Prada: from gourmet restaurants and the recipes of chocolatiers it infiltrated our everydays and one can get it almost in every form: chocolate, ice cream, cookies, etc. Since our wedding was in a mediterranean place and we ate mediterranean food for dinner, I thought that a chocolate fitting this atmosphere would be great for the anniversary. I made my version with mango and I can't say that it wasn't delicious :D


Ingredients:
150 gr white chocolate
gold luster dust
mango ganache:
40 gr mango
50 gr white chocolate
one small spoon of butter
two small spoons of honey
salted caramel:
100 gr sugar
30 gr butter
salt
0,6 dl cream

Recipe:
First I prepare the caramel: I melt 100 gr of sugar and I stir it until it gets a nice dark golden colour. Then I turn off the stove and I add the butter to the caramel. I warm up the cream a bit and I pour it together with the sugar. Be careful bacuse it starts spouting. Finally I add some pinches of salt while constantly tasting it.
For the mango cream I warm up the mango, the honey and the butter, then I blend them in order to get a smooth texture. I warm it up again and I add the chocolate. I mix this cream with 50 gramms of salted caramel and I eat the rest of the caramel (be careful, it's addictive!)
I smear a tiny bit of golden luster dust with the help of a brush into every cavity of the mould. I temper 150 gr white chocolate and I prepare the shells. After they get dry, I fill them with the cream and I put the mould in the fridge. When the filling sets, I temper the rest of the chocolate and I seal the bonbons.

orgonalikőr és csoki anyák napjára // lilac liqueur and chocolate for mother's day

Ajj de nehéz úgy élni, hogy az ember egyszerre két univerzumban él, és legszívesebben éjjel-nappal írna! Na de csak összeszedtem magam, elvégre ma anyák napja van, és a második orgonacsokor már alkoholban végezte (igen, az elsőnél annyira belemerültem az írásba, hogy mire észbe kaptam, már el is hervadt XD).
A csokoládé-édesség boszorkánykonyha egyik kedvenc aspektusa nálam az ehető virágok feldolgozása lett. Korábban nem sejtettem, hogy az ibolya, orgona és társaik ehetőek, sőt igen finomak (talán csak a rózsát meg a jázmint), de most már alig várom a tavaszt, hogy kandírozott virágokat készíthessek, vagy likőrökhöz használhassam fel őket. Az orgona csodás, édes illata italba párolva is édes és különleges, a likőrkészítés pedig maga a varázslat: a virágok múlékony esszenciáját üvegbe zárni és megőrizni - egy egész kicsit úgy érzem magam ilyenkor, mint Grenouille, a Parfüm főhőse - persze a gyilkos hajlamok nélkül :DDD

Hozzávalók:
A likőrhöz:
6 kisebb, vagy 3 nagyobb fürt orgona
2 dl vodka
70 gr cukorszirup 
A bonbonhoz:
150+70 gr étcsoki
0,2 dl orgonalikőr
lüszterpor és kakaóvaj

Az orgonalikőrhöz, ha lehet, olyan helyről szerzem be a virágokat, ahol nem éri őket szennyeződés, mosni nem javasolt őket, mert attól elhalványul az illatuk. Az első fürtről pohárba szedem a virágokat, minél kevesebb zöldet hagyok rajta. Ráöntöm a vodkát, kissé megkeverem, hogy a virágok lemerüljenek. 12 órán át sötét helyen hagyom ázni őket, ekkor leszűröm, a virágokat kidobom. A következő, majd a harmadik fürttel is így járok el, végül sötét bronzszínű folyadékot kapok. 


Elkészítem a cukorszirupot, amihez 2:1 arányban öntök össze cukrot és vizet, felmelegítem, míg a cukor el nem olvad. Miután kihűlt, hozzákeverem a vodkához. 2-3 hétig tárolom, hogy az ízek összeérjenek.
A bonbonhoz kidíszítem a csokiforma mélyedéseit: lila lüszterport olvasztott kakaóvajhoz keverek, és márványozom őket. Felolvasztok 70 gr étcsokit, hozzákeverek 0,2 dl likőrt. Temperálok 150 gr étcsokit, elkészítem a bonbonhéjakat. Megtöltöm őket a krémmel, és hűtőbe teszem. Egy óra múlva kiveszem, temperálom a maradék csokit, és lezárom a bonbonokat.


God, it's so hard to live simultaneously in two universes! I would rather write all day long. But I pulled myself together, as it is mother's day today, and the second bunch of lilacs ended up in alcohol (yes, I focused so much on writing that the first bouquet withered by the time I realised that I should buy some vodka XD).
One of my favourite aspects of chocolate and sweets making is processing edible flowers. Previously I didn't know that violets, lilac and the others are edible, moreover, quite tasty (maybe only rose and jasmine), but now I can hardly wait for spring when I can make candied flowers or use them for liqueurs. The wonderful, sweet scent of lilac remains sweet and special distilled in a potion; liqueur making is magic itself: closing and keeping the transient essence of flowers in a bottle - I feel like Grenouille, the protagonist of Perfume, a tiny bit - but without the killing instinct :D


Ingredients:
Liqueur:
6 smaller or 3 bigger lilacs
2 dl vodka
70 gr sugar syrup
bonbon:
150+70 gr dark chocolate
0,2 dl lilac liqueur
luster dust and cocoa butter

For the liqueur, if possible, I get the flowers from a clean place where they could not get polluted, as it is not advised to wash them because their scent gets faded. I pluck the flowers and place them in a glass, I leave as small green as possible. I pour the vodka on them and I stir it a bit so the flowers submerge. I leave them  in a dark place to soak for 12 hours, then I strain them and I throw away the flowers. I do the same with the second and the third bunch of flowers, finally I get dark, bronze coloured liquid.


I prepare the sugar syrup, for which I mix sugar and water in 2:1, I warm it up until the sugar melts. When it gets cold, I add it to the vodka and I keep it in a dark place for 2-3 weeks until the flavour matures.
For the bonbons first I decorate the cavities of the mould: I mix purple luster dust and cocoa butter, and I marble them. I melt 70 gr dark chocolate and I add 0,2 dl liqueur to it. I temper 150 gr chocolate, I prepare the bonbon shells. I fill them with the cream and I put them in the fridge. An hour later I take them out, I temper the leftover chocolate and I seal the bonbons.

barackos-bazsalikomos // peach-basil

Jeeee, itt az első tavaszi vihar! A legkedvesebb természeti jelenségem, van abban valami megfoghatatlan méltóság, erő és titokzatosság, ahogy elsötétül a világ amikor gyűlnek a felhők, feltámad a szél, és rakoncátlanul száguld amerre kedve tartja, a távolból hangzik csak a morajlás, az ember először mintha nem is a fülével érzékelné, hanem a belső hatodik érzékével, a fenyegető sötétség egyre mélyül, és már bevilágítja az utcát, a szobákat, a villámok lobbanása. A vihar táltosok harca, a garabonciás diák bosszúja, a mennyei lovak patáinak dübörgése, kiszámíthatatlan, akár egy tündér, és kétarcú, mint Janus isten. A mai mese és zene is róla szól :)
A tavasz örömére egy tavaszias ízvilágú bonbont készítettem most. Már régóta rájöttem, hogy a bazsalikommal nem nagyon lehet mellényúlni, az egyik kedvenc fűszerem, nem lehet betelni jellegzetes, friss ízével. Barackkal párosítva pedig igazán különleges ízharmóniát ad ebben a könnyed csokimousse-ban!


Hozzávalók:
35 gr barackpüré
3-4 nagyobb, vagy 5-6 kisebb levél bazsalikom (lehetőleg friss)
0,1+0,5 dl tejszín
2 pillecukor
75+200 gr fehércsoki
kurkuma, kakaóvaj

Elkészítés:
A barackpürébe beletépkedem a bazsalikomleveleket, hozzáadok 0,1 dl tejszínt, a pillecukrokat, és felforralom. Végül belekeverek 75 gr fehércsokit. Kemény habbá verek fél deci tejszín, és miután a barackos krém kihűlt, beleforgatom a habot. Hűtőbe teszem.
A bonbonhéjakhoz előbb olvasztott kakaóvajhoz keverek két csipet kurkumát, és ezzel márványozom a forma mélyedéseit. Temperálok 200 gr fehércsokit, kiöntöm a formát. Miután a burkok megszilárdultak, megtöltöm őket a mousse-szal. Egy éjszakára hűtőbe teszem, hogy a hab megkeményedjen. Másnap temperálom a csoki maradékát, és lezárom a bonbonokat.


Cicka Bogdán bátyó kunyhójától néhány lépésnyire, a faluból kivezető úton ácsorgott. Szájában szalmaszál, kezeivel egy letépett bogáncsfej lila virágát birizgálta, míg elmélyülten figyelte a földek felett káprázó délibábot. A hőség néma csendjét csak néhány bágyadt tücsök réveteg ciripelése zavart meg időnként. Poros, kiszáradt, szürke kórók övezték a gyalogutat, két pillangó kergetőzött közöttük. Cicka kiköpte a szalmaszálat, szórakozottan szakított helyette másikat a kunyhó melletti gazból. Felpislogott a vakító kék égre. Felhő sehol.
A délibáb meglepően hosszú ideig tartott; ragyogó tükörként reszketett az ég alján. Alakok tűntek fel és enyésztek el benne: sötétebb foltok, színek, minták. Fekete pálcika-forma képződött középen, megnyúlt, kiszélesedett, a fény körbefolyta. Cicka tekintetét a délibábba vájta, nehogy elszalassza az égi kaleidoszkóp egyetlen villanását is.
Nőtt-nőtt a fekete pálcika, újabb kis vonalak jelentek meg mellette, amik azután valamiféle ritmikus mozgásban csatlakoztak hozzá. Végül együtt váltak ki a délibábból, és egy ember alakját öltötték.
A faluba az erdő felől kanyarodott az út, Cicka jól tudta; hogyne tudta volna! Az ismeretlen a földek felől valahogy mégis az úton jött, Cicka apja és Pityere apó szántása között. Amint közeledett, az ég úgy szűkült össze tompa, súlyos kupolává; a rög úgy száradt-aszott fekete kővé. A délibáb ránőtt az égre, tengervízként áradt szét az érkező mögött. Fiatal suhanc volt, batyuja hátára kötve, hóna alatt vaskos könyv. Hosszúra nőtt, elvadult haja félig eltakarta piszkos arcát, szemeiben a délibáb csillogott. Cicka elejtette a bogáncsfejet.
- Egy pohár tejet kérek.
Cicka két lépést hátrált, szemeit le nem véve a mezítlábas suhancról. Bezörgetett Bogdán bátyóhoz.
- Szia Cicka, mi kéne? – kérdezte Csomóca asszony.
- Egy… egy pohár tej – felelte a lány még mindig az ismeretlent bámulva.
Csomóca asszony térült-fordult és már hozta is a zsíros tejet kis agyagbögrében.
- Jól vagy, Cicka? Mi ez, vihar készül? Csak jég ne legyen, még leveri a zsengét! – Csomóca asszony az ajtóból kukucskált, az eget figyelve.
Cicka a suhanc felé nyújtotta a poharat. Ő egyetlen kortyban nyelte le az édes tejet, kézfejével megtörölte a száját. Elfordult,  könyvét könyökhajlatába eresztette vissza, és hosszú léptekkel folytatta útját az erdő felé.
Mintha hordókat gurítanának, úgy hangzott fel az első égzengés; a vihar súlyos szürke paplanja rászakadt a dombokra, diónyi jéggel verve el a fák lombjait. Cicka ujjai közt új szalmaszálat forgatva állt a haját cibáló szélben, gyengéd eső paskolta arcát.


Yay, the first spring storm has arrived! It is my favourite natural phenomenon, there is some kind of incomprehensible dignity, power and mystery in how the world gets dark when the clouds are gathering, the wind is rising and perkily running wherever it wants and the roaring can be heard from the distance, as if one sensed it not with one's ear but with the inner sixth sense; the threatening darkness gets deeper and the streets and rooms are illuminated by the flashing lightnings. The storm is the war of giants, the tramping of the horses of heaven; it is unpredictable just like a fairy and two-faced like the god Janus. Today's music and fairytale are about the storm :) the tale is based on a Hungarian folk belief about the wise "garabonciás", who is a learned student, but he also possesses supernatural powers and in case his wish (usually a jar of milk or some food) is not fulfilled by the villagers, his revenge arrives in the shape of storm and hail that beats down the crop.
In order to greet spring, today I made bonbons with a springish flavour. I realized a long time ago that one cannot mess things up with basil; it is one of my favourite spices, you can't get enough of its characteristic, fresh flavour. Paired with peach it provides a special aroma to this light chocolate mousse.


Ingredients:
35 gr peach puree
3-4 bigger, or 5-6 smaller basil leaves (preferably fresh)
0,1+0,5 dl cream
2 marshmallows
75+200 gr white chocolate
curcuma, cocoa butter

Recipe:
I tear the leaves into pieces and mix them with the peach, the marshmallows and 0,1 dl cream. I boil the mixture and finally I add 75 gr white chocolate. I whip 0,5 dl cream until it becomes a stiff foam. When the peach cream gets cold, I carefully combine it with the foam and I put the mousse in the fridge.
For the decoration of the bonbons I add two pinches of curcuma to the melted cocoa butter and I marble the cavities of the mould. I temper 200 gr of white chocolate and I prepare the shells. After they get solid, I fill them with the mousse. I leave them in the fridge for a night so the foam can set. The next day I temper the leftover chocolate and I seal the bonbons.


Cicka was loitering some steps away from the cottage of uncle Bogdán, on the road leading out of the village. A straw in her mouth, she was fiddling with the plucked purple flower of a thistle while she was observing the dazzling mirage above the lands. The silent stillness of the heat was interrupted only by the faint chirping of crickets. Dusty, dry, grey weeds fringed the road, two butterflies frisked among them. Cicka spat out the straw and abstractedly plucked another one from the weeds surrounding the cottage. She blinked up on the blinding, blue sky. No clouds anywhere. 
The mirage lasted surprisingly long; it trembled at the bottom of the sky as a blazing mirror. Shapes appeared and vanished in it: darker spots, colours, patterns. A black rod-shape formed in the middle, it expanded, broadened, the light poured around it. Cicka fixed her gaze on the mirage as she didn't want to miss any flash of the heavenly kaleidoscope.
The black rod grew and grew, other small lines appeared next to it, which then adjoined it in a kind of rhythmical motion. Finally they came out of the mirage and took the form of a man.
The road bent to the village from the forest, Cicka knew that; she knew it very well! Somehow the stranger still came on the road from the direction of the lands, between the arables of Cicka's father and uncle Pityere. As he was approaching, the sky shrunk to a dull, heavy dome; the clods dried to wizened, black stones. The mirage grew onto the sky, it flooded like seawater behind the arriving man. He was a young guy, his bundle was fixed on his back, a thick book under his arm. His long, fuzzy hair hid his dirty face, the mirage sparkled in his eyes. Cicka dropped the head of the thistle.
"I would like a jar of milk."
Cicka backed two steps, always keeping her eyes on the barefooted youngster. She knocked on uncle Bogdán's door.
 "Hi Cicka, what would you have?" asked aunt Csomóca.
"A... a jar of milk," answered the girl still staring at the stranger.
Aunt Csomóca went around and she brought the greasy milk in a small clay mug.
"Are you alright, Cicka? What is this, a storm is approaching? Just no hail I hope, it would beat down the crop!" Aunt Csomóca peeped at the sky from the door.
Cicka handed the mug to the man. He swallowed the sweet milk in one gulp and wiped his mouth with his hand. He turned away, let his book down in the crook of his arm and with long steps he continued his journey towards the forest.
As if barrels were rolled, the first thunder roared; the heavy, grey quilt of the storm descended on the hills, beating the foliage with nut-sized ice. Cicka was spinning a new straw between her fingers while she was standing in the wind that tousled her hair; gentle rain patted her face.
