mangós-sós karamellás // mango-salted caramel

Első házassági évfordulónkra különleges csokit akartam gyártani. A trópusi gyümölcs-sós karamell kombó igen népszerű manapság, a sós karamell kábé olyan, mint az ominózus kék pulóver Az ördög Pradát visel című filmben: a gourmet éttermekből és édességkészítők receptjeiből szivárgott le a köztudatba, és manapság már szinte minden formában fellelhető: a csokitól a fagylaltig és a süteményekig. Mivel az esküvőnk mediterrán helyen zajlott és a vacsorán mediterrán fogásokat ettünk, ezért úgy gondoltam, egy ilyen hangulatú csoki illeni fog az évfordulóhoz is :) Mangós változatban készült, és nem mondhatni, hogy rosszul sikerült :D


Hozzávalók:
150 gr fehércsoki
arany lüszterpor
mangós ganache:
40 gr mangó
50 gr fehércsoki
egy kiskanál vaj
két kiskanál méz
sós karamell:
100 gr cukor
30 gr vaj
0,6 dl tejszín

Elkészítés:
Először a karamellt készítem el: 100 gr cukrot addig melegítek, míg fel nem olvad, és kevergetem, míg sötétarany színt nem kap. Ekkor lehúzom a tűzről és hozzákeverem a vajat. Közben kissé megmelegítem a tejszínt, és azt is hozzáöntöm. Csak óvatosan, mert ilyenkor nagyon fortyogni kezd az olvasztott cukor. Végül kevergetés közben teszek hozzá pár csipet sót, és kóstolom, hogy mikor lesz elég.
A mangókrémhez a mangódarabokat, a mézet és a vajat kissé megmelegítem, és összeturmixolom, hogy sima állagot kapjon. Ismét fölmelegítem, és belekeverem a csokit. Ehhez a krémhez adok 50 grammnyit a sós karamellből, a maradék karamellt pedig szépen megeszegetem (vigyázat, addiktív!). 
Ecset hegyével kis adag arany lüszterport kenek a forma mélyedéseibe. Temperálok 150 gr fehércsokit, elkészítem a bonbonok burkát. Miután megszáradtak, beletöltöm a mangós krémet, és hűtőbe teszem. Ha a töltelék teteje megdermedt, a maradék csokit ismét temperálom, és lezárom a bonbonokat.



I wanted to make some special chocolate for our first wedding anniversary. Nowadays the tropical fruit - salted caramel combination is so popular; salted caramel is like that ominous blue pullover in The devil wears Prada: from gourmet restaurants and the recipes of chocolatiers it infiltrated our everydays and one can get it almost in every form: chocolate, ice cream, cookies, etc. Since our wedding was in a mediterranean place and we ate mediterranean food for dinner, I thought that a chocolate fitting this atmosphere would be great for the anniversary. I made my version with mango and I can't say that it wasn't delicious :D


Ingredients:
150 gr white chocolate
gold luster dust
mango ganache:
40 gr mango
50 gr white chocolate
one small spoon of butter
two small spoons of honey
salted caramel:
100 gr sugar
30 gr butter
salt
0,6 dl cream

Recipe:
First I prepare the caramel: I melt 100 gr of sugar and I stir it until it gets a nice dark golden colour. Then I turn off the stove and I add the butter to the caramel. I warm up the cream a bit and I pour it together with the sugar. Be careful bacuse it starts spouting. Finally I add some pinches of salt while constantly tasting it.
For the mango cream I warm up the mango, the honey and the butter, then I blend them in order to get a smooth texture. I warm it up again and I add the chocolate. I mix this cream with 50 gramms of salted caramel and I eat the rest of the caramel (be careful, it's addictive!)
I smear a tiny bit of golden luster dust with the help of a brush into every cavity of the mould. I temper 150 gr white chocolate and I prepare the shells. After they get dry, I fill them with the cream and I put the mould in the fridge. When the filling sets, I temper the rest of the chocolate and I seal the bonbons.
