mediterrán fűszeres // mediterranean

Imádom a fűszeres csokikat. Meg a fűszereket - főleg, ha frissek. Na most tudni kell, hogy valamiért a növények és én nem kedveljük egymást. Azazhogy ez a viszolygás inkább egyoldalú, és leginkább abban nyilvánul meg, hogy amint a közelembe kerül egy növény, inkább mihamar elpatkol, mint hogy velem kelljen megosztani az általa termelt oxigént. Ez alól eddig csak és kizárólag az eredeti olasz bazsalikom volt kivétel, meg aztán valamiért egy elárvult fokföldi ibolya is meggondolta magát, és mégis képes szimbiózisban élni velem. Aztán úgy döntöttem, hogy megpróbálkozom más fűszernövényekkel is, elvégre a mediterrán növényeket viszonylag nehéz kinyírni: csak hagyni kell őket napozni, és amikor kornyadoznak, alájuk önteni egy kis vizet. Ezen felbuzdulva a rozmaring mellé beszereztem kakukkfüvet, meg oreganót is, amiknek egyszerűen imádom az illatát. Szóval mostanra már egész kis fűszerkert van az erkélyen, és csodával határos módon még egyik sem döglött meg.
És hát ezek a fűszerek nemcsak a pizzán finomak, hanem csokiban is - az aromájuk buja, különleges, jellegzetes.


Hozzávalók:
150 gr 70%-os étcsoki
100 gr 60%-os étcsoki
0,5 dl tejszín
rozmaring, kakukkfű, oregano

Elkészítés:
5-6 ágacska kakukkfűről lecsipkedem a leveleket, összetépek 6-7 levél rozmaringot és 5-6 levél oreganót, beleteszem őket a tejszínbe, amit felforralok. Elzárom a tüzet, és letakarom a lábost, és néhány óráig hagyom állni. Ezután le lehet szűrni a tejszínt, de én benne hagytam a fűszernövényeket.
Ismét megmelegítem a tejszínt, hozzákeverek 100 gr 60%-os étcsokit.
150 gr étcsokiból elkészítem a bonbonok héját. Miután megszáradt, megtöltöm a fűszeres krémmel, és hűtőbe teszem. Végül temperálom a maradék csokit, és lezárom a bonbonokat. 

I love spicy chocolates. And spices - especially if fresh. Now you have to know that for some reason plants and I don't like each other. More precisely this antipathy is one-sided and it manifests through that whenever a plant gets in my vicinity, it rather bites the dust (hahaha, what a picture!) than to share with me the oxygen it produces. The only exception so far was the original Italian basil, and then later on an orphaned African violet, which changed its mind and decided that it can live in symbiosis with me. Then I thought I'd try other herbs, after all mediterranean plants are quite hard to kill: you only have to leave them in the sun and when they start to look weary, you water them a bit. Thus I bought rosemary, thyme and oregano, whose scent I really love. By now I have a real herb garden on the balcony and - a miracle! - none of them has died so far.
And these spices are not only good with pizza, but also with chocolate - their aroma is sensual, special and characteristic.


Ingredients:
150 gr 70% dark chocolate
100 gr 60% dark chocolate
0,5 dl cream
rosemary, thyme, oregano

Recipe:
I put the leaves of 5-6 small branches of thyme, 6-7 leaves of rosemary and 5-6 leaves of oregano in cream, which I then boil. I turn off the stove, I cover the pot and I leave it for some hours. Then you may sieve the cream, but I left the herbs in it. I warm up the cream again and I mix it with 100 gr 60% dark chocolate.
I prepare the bonbon shells of 150 gr dark chocolate. After they get dry, I fill them with the spicy cream and I put the mould in the fridge. Finally I temper the leftover dark chocolate and I seal the bonbons.

narancsos-rozmaringos // orange-rosemary

A brutális csokikészítő hét után most eljött a cuccok postolásának ideje :D Sokadik alkalommal készítettem el epres-rozmaringos bonbonjaimat (ezúttal a Segítsüti licitnyertesének kérésére küldtem el őket úgy, hogy advent elejére érkezzenek meg :)). És persze a rozmaringos ganache-ból megmaradt egy adag. Mit lehetne kezdeni vele? Ekkor jött az újabb kérés: szülinapi narancsos csoki. A kettő gyorsan összeállt egy izgalmas ízvilágú bonbonná, amit külsőleg is igyekeztem érdekessé tenni. Ez a fröcskölős technika már régóta tetszett, és most az újonnan vett bronz színű lüszterporral ki is próbáltam.


Hozzávalók:
egy narancs leve
rozmaring
0,2 dl tejszín
70 gr étcsoki
egy kupaknyi rum
150 gr fehércsoki
lüszterpor, kakaóvaj

Elkészítés:
A ganache-hoz a rozmaringot tejszínbe áztatom, felforralom, állni hagyom. Másnap leszűröm, ismét felmelegítem, és hozzákeverem az étcsokit. Belefacsarom egy közepes méretű narancs levét. Végül adok hozzá egy kupaknyi rumot.
Gyertyaláng felett megolvasztok fél kiskanálnyi kakaóvajat, és hozzákeverek egy kis bronz lüsztert. Ecsettel veszek fel belőle, és az ujjammal összefröcskölöm a bonbonforma mélyedéseit. Miután a kakaóvaj megszáradt, temperálom a fehércsokit, kiöntöm a formát. A héjakat megtöltöm a narancsos töltelékkel, és pár órára a hűtőbe teszem. Végül lezárom a bonbonokat.


After the brutal chocolate making week it's time to post stuff :D I've prepared my strawberry-rosemary bonbons again and a bit was left of the rosemary ganache. What could I do with it? Then a request came: chocolate with orange for a birthday. The two quickly came together in an exciting bonbon, which I tried to make more interesting with its outer appearance. I fancied this "splashing" technique for a while and finally I applied it with the newly bought copper luster dust.


Ingredients:
the juice of one orange
rosemary
0,2 dl cream
70 gr dark chocolate
one cap of rum
150 gr white chocolate
luster dust, cocoa butter

Recipe:
For the ganache I soak the rosemary in the cream, I boil it and I leave it for several hours. The next day I sieve the cream, I warm it up and I add the dark chocolate. I squeeze the juice of one orange in it, finally I add a cap of white rum.
With the help of a candle I melt half a spoonful of cocoa butter and I mix it with copper luster dust. I dip a brush in it and with my finger I splash it in the cavities of the mould. After the cocoa butter gets dry, I temper the white chocolate and I prepare the bonbon shells. I fill them with the orange cream and I pu them in the fridge. Finally I seal the bonbons.

barackos-rozmaringos // apricot-rosemary

Ó már július van. Szinte csak most kezdődött ez az év, már a fele elment. És mennyi minden történt! Csupa jó dolog. Meg egy pár rossz is, de hát az élet ettől lesz izgalmas. 
Múlt hétvégén családi összeröffenés volt. És hát mi mással készülhetne az ember, ha nem csokival?! :D sikere volt. A múltkori sárgabarack-Tokaji kombó egy másik változatát próbáltam ki, ezúttal rozmaringgal, mert a fűszer-gyümölcs páros igazán ütős tud lenni, ha az ember jól választja meg a hozzávalókat :) A rozmaring például passzol az édes gyümölcsökhöz (lásd még az epret). A fehérbor pedig egy kis extra aromát ad hozzá - a Tokaji fehérbor egyébként is finom gyümölcsös ízű.


Hozzávalók:
0,2 dl Tokaji fehérbor
50 gr sárgabarack
6-7 levél rozmaring
1 kiskanál vaj
40 gr tejcsoki
60+200 gr étcsoki
kurkuma és kakaóvaj

Elkészítés:
Felolvasztom a kakaóvajat, hozzákeverek egy csipet kurkumát, és márványozom a bonbonforma mélyedéseit.
A barackokat alaposan összeturmixolom, majd az összetépett rozmaringgal együtt felmelegítem. Hozzáadom a vajat, majd hozzákeverem a tejcsokit és 60 gr étcsokit. Legvégül beleöntöm a bort.
Temperálom a maradék étcsokit, elkészítem a bonbonok burkát. Miután megszilárdultak, megtöltöm őket a barackos krémmel, és beteszem a hűtőbe, míg a töltelék megdermed. Ismét temperálom a csokit, és lezárom a bonbonokat.


Ah it's July already! This year has just started and half of it is gone. And so many things have happened! A lot of good things. And some bad too, but that makes life more exciting.
Last weekend there was a family gathering. And what else can one prepare for that, if not chocolate?! :D It was a success. I tried another version of the apricot-Tokaji combination, this time with rosemary because the spice-fruit pairing can be superb if one chooses the ingredients carefully :) Rosemary, for instance, goes well with sweet fruits (see also strawberry). And the wine gives extra aroma to it - Tokaji white wines usually have a nice fruity flavour.


Ingredients:
0,2 dl Tokaji white wine
50 gr apricot
6-7 leaves of rosemary
1 small spoon of butter
40 gr milk chocolate
60+200 gr dark chocolate
turmeric and cocoa butter

Recipe:
I melt the cocoa butter and mix it with a pinch of turmeric, then I marble the cavities of the chocolate mould.
I blend the apricots, then I warm them up with the rosemary torn into little pieces. I add the butter, then the milk chocolate and 60 gr dark chocolate. Finally I pour the wine in the mixture.
I temper the leftover dark chocolate, I prepare the bonbon shells. After they get solid, I fill them with the apricot cream and I put the mould in the fridge until the filling sets. I temper the dark chocolate again and I seal the bonbons.

Strawberry dusk

Ez a bonbonkreáció, azt hiszem, egy "capolavoro" :D Az eperszezon kezdetén ötöltem ki a receptet. A cél az volt, hogy az eper édeskés ízéhez valami olyan ízt társítsak, ami azt kiegyensúlyozza. A választás a rozmaringra esett, aminek imádom az aromáját, olyan titokzatos és fűszeres. Mindig Itri (Olaszország) jut eszembe róla, ahol eső után bazsalikom- és rozmaringillatú a levegő az olajfák között; meg Carcassonne, ahol májusban jártam, és ahol mintha megállt volna az idő: a csodálatos középkori Cité utcáin a fűszerárusok boltjainak illata mindenhová elkísért. Carcassonne olyan hely, amit csak szeretni és csodálni lehet - amikor az ember megérinti a napsütötte falakat, érzi, hogy kétezer év történelme van a kövekbe zárva... Szinte tapintható a múlt. A várfal alatti domboldalon szabadon jár a szél, hajladoznak a vadvirágok és a magasra nőtt fű, alattuk termékeny, zöld földek között terül el a város. Ahogy a bástyákról körbenéz az ember és megpillantja a Noire-hegységet, elfogja az időtlenség érzése.
Egy kicsit úgy éreztem, mintha hazaérkeznék, amikor a vonatból először megláttam a város fölött szinte lebegni tetsző várat, és azóta a részemmé vált minden kis zuga, amit két napon át keresztül-kasul bejártam. Végül is Carcassonne középkori történelme miatt választottam a történelmet hivatásul, és olyan régóta vártam arra, hogy végre eljussak oda.





Egyszóval a most következő egy mediterrán hangulatú bonbon, nem túl édes, de fűszeres és lágy.
Nagy lyukú bonbonformában érdemes elkészíteni, mert két réteg töltelék van benne: friss eperpüré és krémes rozmaringos ganache.

Töltelékek:
6-7 szem nagy, vagy 10-12 szem kis eper
0,5 dl tejszín
friss rozmaring
100 gr étcsoki
1 teáskanálnyi vaj

Burok:
200 gr étcsoki (én 53%-ost használtam)

Elkészítés:
A tejszínt a kis darabokra tépett rozmaringgal felforralom, majd lefedem és egy teljes napig állni hagyom, hogy a fűszer íze áthassa.
Az eperből pürét készítek: összeturmixolom, szitán átpasszírozva megszabadulok a magoktól, majd felrakom főni. Amikor egy kicsit kezd besűrűsödni, akkor félreteszem - ez lesz az első töltelék.
A tejszínből kiszedem a rozmaringot, ismét megmelegítem, majd hozzákeverem az apróra tört csokit és a vajat. Ha nem elég fűszeres, őrölt rozmaringot is lehet még adni hozzá - és nem gond, ha kissé túl karakteres az íze, hiszen az eper és a csokiburok mellett is érvényesülnie kell majd.
Elkészítem a csokiburkot, majd ha megszilárdult, beletöltök néhány cseppnyit az eperpüréből. Erre jöhet a rozmaringos ganache, majd visszateszem a hűtőbe, hogy a töltelék megszilárduljon kicsit. Végül lezárom a bonbonokat.

  

This bonbon creation is, I believe, a "capolavoro" :D I found out the recipe in the beginning of strawberry season. My aim was to add a counterbalancing flavour to the strawberry's sweet flavour. I chose rosemary, because I love its aroma, it's so mystic and peculiar. It reminds me of Itri (Italy) where the air smells of basil and rosemary beneath the olive trees after the rain, and of Carcassonne, which I visited in May, and where time seems to stand still: the smell of the spice shops followed me everywhere on the streets of the wonderful medieval Cité. Carcassonne is a place that can only be adored and admired - when one touches the sunlit walls, one can feel that the history of two thousand years are sealed in the stones... The past can almost be sensed. The wind goes about freely on the hill below the bailey, the wild flowers and tall grass are rocking, and beyond them, between fertile, green fields, lies the town. As one looks around from the ramparts and glimpses the Noire Mountains, the feeling of eternity overcomes.
I felt like I arrived home when I first saw the castle which seemed to be floating above the town, and since then every little corner that I roamed there in those two days became a part of me. After all it was Carcassonne's medieval history that inspired me to choose history as my vocation and I'd been waiting for so long to get there.



So the following is a type of bonbon with mediterranean feeling, not too sweet but aromatic and tender.
We should prepare it in a mould with bigger cavities because there is a double layer of filling: fresh strawberry puree and creamy rosemary ganache.

Fillings:
6-7 pieces of bigger or 10-12 pieces of smaller strawberries
0,5 dl cream
fresh rosemary
100 gr dark chocolate
1 teaspoon butter

Shell:
200 gr dark chocolate (I used chocolate with 53% cocoa)

Recipe:
I boil the cream with the pieces of rosemary, then I cover it and leave it on the counter for an entire day so it can absorb the flavour of the herb.
I make puree of the strawberry: I blend it and pour it through a sieve in order to get rid of the seeds, then I start cooking it. When it becomes a bit dense I put it away - this will be the first layer of filling.
I take the rosemary out of the cream, I warm the cream and mix it with the chocolate and the butter. If it is not aromatic enough, I add a bit of ground rosemary - it is not a problem if the flavour is too strong, in the end it has to be felt beside the strawberry and the chocolate shell.
I prepare the shell, and when it solidifies, I pour in some drops of strawberry puree. Then I add the rosemary ganache and I put it back in the fridge so the filling can harden a bit. Finally I seal the bonbons.
