kávé-joghurt // coffee-yogurt

Az első adag csoki, amit az új lakásunkban készítettem! Akkor még eléggé szét voltunk hullva, ezért sokszor azzal szembesültem, hogy ajaj, ez vagy az az alapanyag épp nincs itthon. Így lett tejszín helyett joghurt a kávés ganache alapja, és meg kell mondjam, tök jó választás volt, mert üdítő savanykás ízvilágot kölcsönzött a csokinak. És hogy megadjam a módját, egyből mágneses formával és transzferfóliával kezdtem, hogy a lakásavató csoki ne csak finom legyen, hanem szép is!

Hozzávalók:
100+200 gr étcsoki
50 ml natúr joghurt
1 kiskanál instant kávé
transzferfólia

Elkészítés:
A joghurtot megmelegítem épp csak annyira, hogy felolvadjon benne a kávé. Vízgőz fölött felolvasztok 100 gr étcsokit és a joghurthoz keverem.
A transzferfóliát méretre vágom és beleteszem a mágneses formába. Temperálok 200 gr étcsokit, kiöntöm a bonbonformát. Miután a csoki megszilárdult, megtöltöm a kávés krémmel. A hűtőbe teszem a formát, majd egy óra múlva a maradék temperált étcsokival lezárom a bonbonokat.


The first portion of chocolate which I made in our new apartment! Back then we were still in a big (bigger) chaos, therefore it often happened that this or that ingredient was missing. That's how the basis of the coffee ganache became yogurt instead of cream; and I have to say that it was a good choice as it provided the chocolate a refreshing, sour-ish flavor. And to be stylish, I started with the magnetic mold and a transfer sheet so that the chocolate became not only yummy but beautiful too!

Ingredients:
100+200 gr dark chocolate
50 ml plain yogurt
1 small spoon of instant coffee
transfer sheet

Recipe:
I warm up the yogurt just as much as it takes for the coffee to melt in it. I melt 100 gr dark chocolate and mix it with the yogurt.
I cut up the transfer sheet and place it in the magnetic mold. I temper 200 gr dark chocolate and I prepare the bonbon shells. After the chocolate sets, I fill them with the coffee cream. I put the mold in the fridge and an hour later I seal the bonbons with tempered dark chocolate.

szeder-joghurt // blackberry-yogurt

Ami az egyiknek szerencsét hoz, a másiknak balszerencsét - és úgy tűnik, a szeder esetében ez hatványozottan igaz. Ahány mitológiai említése, annyi féle - ez talán nem is véletlen, ha figyelembe vesszük, milyen szép a virága és ízletes a gyümölcse, és mennyire szúrósak a bokrok ágai. Kalandozzunk egyet térben és időben, és fedezzük fel, milyen történeteket szőttek a szeder köré!
A kelták - természetesen - a tündérek gyümölcsének tartották, így emberi fogyasztásra alkalmatlannak ítélték; a tündérek útjai mentén szederbokrok húzódtak. Aki mégis megízlelte a gyümölcsöt, szerencsétlenséget hozott a saját fejére. 
Angliában a sérv, csonttörések, kelések gyógyításához vadszeder ágai alatt bújtak át.
Továbbá a szeder különféle szörnyek ellen is védelmet nyújtott: így például a vámpírokat azzal tartották távol, hogy szedret helyeztek a küszöbre vagy az ablakpárkányra, mert a vámpír megszállottan számolgatta a bogyókat és a tüskéket, és közben elfeledte, miért érkezett. A sírok köré is szedret ültettek, hogy a holtak ne kísérthessenek.
A keresztény mitológiában a szeder mind Krisztushoz, mint a Sátánhoz kapcsolódva megjelenik. Egyrészt Jézus töviskoronája vadszederből készült, ezért változtak a korábban vörös bogyók feketévé. Másrészt, amikor Isten levetette Lucifert az égből, ő egy szederbokorban landolt, és mérgében megátkozta, hogy csúnya legyen. 
Végezetül a kedvencem: a bolgár mitológia bumfordi óriásai, az ispolinok, akik az emberek előtt népesítették be a Földet, igencsak ódzkodtak a szedertől. A mítoszok szerint ugyanis hiába voltak hatalmasak és erősek, ugyanakkor igen lomhák is voltak, és nehezükre esett észrevenni és kikerülni a szederbokrokat. Az az óriás, akinek az útjába ilyen bokor került, elbotlott benne, összeszurkálta magát a tüskékkel, és odaveszett. Épp ezért az ispolinok áldoztak a szedernek.


Ebből kiderült, hogy miért nem lettünk még vámpírok martalékává: a kertünkben két szederbokor is nő :D Az én szedres csokim pedig csak kellemes ízélményt okozott, bár várom, hogy mikor átkoznak el a tündérek, amiért a gyümölcsüket fogyasztottam.

Hozzávalók:
15 gr joghurt
30 ml szederpüré
80 gr fehércsoki
200 gr tejcsoki
egy marék fahéjas müzli
transzferfólia

Elkészítés:
Átpasszírozom a szedret egy szitán, a léhez hozzákeverem a joghurtot (én meggyeset használtam, elég kellemes utóízt adott a krémnek. Szerintem natúr joghurttal is működne, vagy más, savanyú ízvilágú gyümölcsös joghurttal). Megolvasztom a fehércsokit, majd a szederhez adom.
Méretre vágom a transzferfóliát, belehelyezem a mágneses formába. Temperálom a tejcsokit, elkészítem a burkokat. Miután megszilárdultak, félig megtöltöm őket a szedres krémmel, majd hűtőbe teszem a formát. 
Amikor a töltelék teljesen áthűlt és szilárd lett, darabkákra tört fahéjas müzlit szórok a bonbonokba. Kicsit belenyomkodom a krémbe ezt a második réteget, hogy ne okozzon gondot a lezárásnál.
Temperálom a maradék tejcsokit, lezárom a bonbonokat.


What brings luck to one, may bring misfortune to another - and it seems, this is exponentially true in the case of the blackberry. All of its mythological references are different - which is probably not a coincidence, taken into account its beautiful flower and tasty fruit, as well as the thorny branches. Let's wander through space and time and let's discover what kind of stories were woven around the blackberry.
The Celts - naturally - considered it the fruit of the fairies, which also meant that humans were not allowed to consume it; brambles framed the paths of the fairies. Those who still ate the fruit, had bad luck.
In England, hernia, ruptures and boils could be cured by passing under the branches of a bramble.
Moreover, the blackberry meant protection against a variety of monsters: for instance, placing blackberries on the threshold or the window sill could keep vampires away, as the vampire would obsessively count the berries and the thorns and in the meantime would forget why he came. Blackberry was also planted around graves to keep the dead from haunting.
In Christian mythology, the blackberry is connected both to Christ and Satan. First, the crown of thorn of Jesus was made of brambles, thus the previously red berries were turned to black. Second, when God cast Lucifer down from heaven, he landed in brambles and cursed them in anger, so they would be ugly.
Finally, my favorite: the ispolini, the funny giants of Bulgarian mythology, who inhabited the Earth before humans, were afraid of blackberries. According to the myths, even though they were powerful and strong, they were also sluggish and thus were unable to spot and avoid blackberry bushes. The giant, who passed such a bush, would stumble in it, get stabbed by the thorns and perish. Therefore, the ispolini offered sacrifices to the blackberry.


This makes it clear why we haven't been eaten up by vampires yet: there are two blackberry bushes in our garden :D My blackberry chocolate has only caused a pleasant tasting experience, although I'm still waiting for the fairies to curse me for eating their fruit.

Ingredients:
15 gr yogurt
30 ml blackberry puree
80 gr white chocolate
200 gr milk chocolate
fistful of cinnamon cereal
transfer sheet

Recipe:
I pass the blackberry through a sieve; I add the yogurt to the juice (I used sour cherry yogurt, which gave a nice aftertaste to the cream. I believe it would also work with plain yogurt or any other sourish fruit yogurt). I melt the white chocolate and add it to the blackberry.
I cut up the transfer sheet and place it in the magnetic mold. I temper the milk chocolate and I prepare the shells. When they get solid, I half fill them with the blackberry cream. Then I put the mold in the fridge.
When the filling has completely cooled and it gets solid, I sprinkle crushed cinnamon cereal in the bonbons. I gently push it into the cream so that it wouldn't cause any trouble later. I temper the leftover milk chocolate and I seal the bonbons.

joghurtos-barackos // yogurt-peach

Az élet olyan csavaros és szép, mint egy történet, a maga furcsaságaival, nehézségeivel és kedves pillanataival. Általában épp amikor az ember berendezkedik és már rettentően jól érzi magát az újonnan kialakított komfortzónájában, jön valami, ami kibillenti és jöhet az újratervezés :D És az új helyzet csak még jobb, mint az előző, de újra kell értékelni sok mindent, elengedni bizonyos dolgokat, másokat pedig megtartani. Valójában az ezoterikusok által "vonzás törvényének" nevezett folyamat - vagyis ha megbékélsz önmagaddal és igazán akarsz valamit, azt "bevonzod" az életedbe - nem szól arról, hogy ez állandó változással is jár, mert amint belép az életedbe a bevonzani kívánt dolog, máris megváltozik a status quo, ismét rendezkedhetsz be, és így tovább. Ez persze nem baj, sőt, enélkül unalmas is lenne az élet valószínűleg. 
No és most vágjunk bele a legújabb csokiba, ami egy születésnapi bulira készült :)


Hozzávalók:
40 ml barackpüré
20 ml natúr joghurt
50+70 gr fehércsoki
200 gr tejcsoki

Elkészítés:
A joghurtot és a barackpürét összekeverem. Felolvasztok 70 gr fehércsokit, a barackhoz keverem azt is.
50 gr temperált fehércsokit habzsákba töltök, végigcsíkozom a bonbonforma mélyedéseit. Amikor a csoki kissé megszilárdult már, lekaparom a felesleget.
Temperálom a tejcsokit, elkészítem a burkokat. Megtöltöm őket a barackos krémmel, majd hűtőbe teszem a formát. Néhány óra múlva kiveszem, temperálom a maradék tejcsokit, és lezárom a bonbonokat.


Life is so twisted and beautiful like a story with its oddities, hardships and nice moments. Usually, when one adapts to and feels terribly good in her newly shaped comfort zone, something comes which upsets the balance and recalculation must start :D And the new situation is even better than the previous one, but many things must be re-evaluated, some must be let go of, others must be kept. In reality the process called "the law of attraction" in esotericism - i.e. if you come to terms with yourself and you really want something, you can attract it into your life - does not talk about that this comes with constant change, because as soon as the attracted thing enters your life, the status quo changes, you can re-adapt again etc. But this is not a problem at all, moreover, without this, life would be boring.
And now let's move on to the newest chocolate, which was made for a birthday party :)


Ingredients:
40 ml peach puree
20 ml plain yogurt
50+70 gr white chocolate
200 gr milk chocolate

Recipe:
I mix the peach puree and the yogurt. I melt 70 gr white chocolate and I combine it with the peach.
I pour 50 ml tempered white chocolate in a piping bag and I draw lines in the cavities of the bonbon mould. When the chocolate sets, I scrape off the excess.
I temper the milk chocolate, I prepare the shells. I fill them with the peach cream, then I put the mould in the fridge. Some hours later I take it out; I temper the leftover milk chocolate and I seal the bonbons.

mangós-joghurtos // mango-yogurt

Hát boldog új évet mindenkinek! Remélem 2018 épp olyan szép lesz, amilyennek megálmodtátok.
Még karácsonyi ajándékba készültek ezek a bonbonok, de mivel két hétig nem voltam internetközelben, ezért nem adódott alkalom a blogolásra. Szóval most pótolok :) 
A joghurt olyan fincsi csokiban, kellemesen lágyítja az ízeket, és kissé savanykás íze üdévé teszi a legédesebb tölteléket is. Ráadásul roppant egyszerű is az ilyen töltelék elkészítése. Ezúttal mangóval próbáltam ki, de többféle variáció is a fejemben van, úgyhogy majd jönnek még joghurtos csokik a továbbiakban is :)


Hozzávalók:
150+20 gr fehércsoki
80 gr mangó
50 gr natúr joghurt
kurkuma

Elkészítés:
A mangót pürésítem, és felmelegítem a joghurttal együtt. Hozzákeverek 20 gr fehércsokit (erre azért van szükség, mert különben a töltelék nem fog megszilárdulni eléggé a lezáráshoz). A bonbonhéjakat 10 gr temperált fehércsoki és néhány csipet kurkuma keverékével varázsoltam a mangóhoz illő sárgává. Márványozáshoz elég az ember ujját használni, párszor körbekanyarítani a forma mélyedésében, és kész is. Miután ez a réteg megszáradt, temperálom a maradék fehércsokit, és elkészítem a burkokat. Megtöltöm őket a joghurtos krémmel. Néhány órára hűtőbe teszem a bonbonformát, végül lezárom a bonbonokat.

These bonbons were made as Christmas presents, but since I did not have internet connection for two weeks, I could not post either. Now I'm back again :)
Yogurt is so good in chocolate, it softenes its taste, and the slightly sour flavour makes even the sweetest filling fresh. Moreover, these kind of fillings are the easiest to prepare. This time I tried it with mango, but I have many other ideas in my head so there will be more yogurt-chocolate recipes coming :)


Ingredients:
150+20 gr white chocolate
80 gr mango
50 gr yogurt
turmeric

Recipe:
I blend the mango and warm it up together with the yogurt. I mix it with 20 gr white chocolate (this is necessary as otherwise the filling won't get solid enough for closing the bonbons). I marbled the bonbon shells with the mixture of 10 gr tempered white chocolate and some pinches of turmeric. It is enough to use your finger, going through the cavities of the mould a couple of times and that's it. After this layer dries, I temper the leftover white chocolate and I prepare the shells. I fill them with the yogurt cream. I put the bonbons in the fridge for some hours, then I seal them.
