málna-rózsalikőr // raspberry-rose liqueur

Réges régen a virágok királynője a lótuszvirág volt. Csakhogy éjszaka a lótusz aludni tért és bezárta szirmait. Ez elégedetlenséggel töltötte el a többi virág szívét, és a mindenható Allahhoz fordultak.
- Ó Urunk, a lótuszt tetted meg királynőnkké, ő azonban éjszaka álmodik. Hozzánk olyan királynő illenék, aki egész nap teljes szépségében pompázik, és illata soha nem apad el.
Ekkor Allah teremtett egy bokrot, amelyen tündöklő fehér rózsák nyíltak, és tüskékkel látta el, amelyek megvédték a gyengéd virágfejeket. A virágoknak örömük telt a rózsában, amely még éjszaka sem zárta be kelyhét. Ám nem csak ők csodálták a rózsát: a fülemüle, aki napnyugta után énekelte legszebb dallamait, első pillantásra beleszeretett. Oda is repült a bokorhoz, hogy neki énekelhessen, de ó jaj, a tüskék belefúródtak a mellkasába. Földre hulló véréből másnap vörös színű rózsák nőttek, amelyek azóta is a szerelem jelképei.

A rózsalikőr készítése nálam a tavasz szerves része, amióta csak megleltem a receptet Vianne blogján. Megéri kivárni a hosszú érlelési időt, és persze mindig öröm vele a csokikészítés, a különböző ízek harmóniájának felfedezése. Ezúttal málnával és étcsokival párosítottam.


Hozzávalók:
20 ml rózsalikőr
25 ml málnapüré
90 gr étcsoki
1 kiskanál vaj
150 gr tejcsoki
lüszterpor

Elkészítés:
Átpasszírozom szitán a málnát, a püréhez hozzáadom a likőrt. Vízgőz felett megolvasztom az étcsokit és a vajat, majd a málnás léhez keverem.
Rózsaszín és fehér lüszterporral kevert kakaóvajat készítek elő; előbb rózsaszínnel, majd fehérrel festek csíkokat a bonbonforma mélyedéseibe. Miután a díszítés megszáradt, temperálom a tejcsokit, és kiöntöm a bonbonforma mélyedéseit. A kész bonbonhéjakat megtöltöm a málnás krémmel és hűtőbe helyezem. Egy-két óra múlva kiveszem a formát, és újratemperált tejcsokival lezárom a bonbonokat.


Once upon a time the lotus was the queen of the flowers. However, at night the lotus went to sleep and she closed her chalice. This filled the hearts of the flowers with discontent and they turned to Allah the Almighty.
- O Lord, you made the lotus our queen, but she is dreaming at night. We shall have a queen who demonstrates her beauty all day long and her scent never fades.
Then Allah created a bush on which splendid white roses grew and he put thorns on it, which protected the gentle flowers. The other flowers rejoiced because the rose did not close its chalice even at night. But they were not the only ones who admired the rose: the nightingale, who sang his most beautiful songs, fell in love with her at first sight. He flew to the bush to sing for her, but the thorns pierced his chest. From his blood, which fell on the ground, red roses grew the next day. They have been the symbol of love ever since.

Making rose liqueur has been a part of spring for me ever since I found Vianne's recipe. It is worthy to wait until it matures and it is always a joy to make chocolate with it and discover the harmony of various combinations. This time I matched it with raspberry and dark chocolate.


Ingredients:
20 ml rose liqueur
25 ml raspberry puree
90 gr dark chocolate
one small spoon of butter
150 gr milk chocolate
luster dust

Recipe:
I pass the raspberry through a sieve and I add the liqueur to the puree. Above steam I melt the dark chocolate and the butter, then I combine it with the raspberry puree.
I prepare cocoa butter mixed with pink and white luster dust. I paint stripes in the cavities of the mold first with pink, then with white. After this decoration dries, I temper the milk chocolate and I prepare the shells. I fill them with the raspberry cream; I place the mold in the fridge. Some hours later I take it out and I seal the bonbons with the tempered leftover milk chocolate.

citrom-pisztácia // lemon-pistachio

- Micsoda?! - kiáltott fel Athéné; a harag egyszeriben úgy elöntötte, hogy elejtette, amit a kezében tartott... 
...ami történetesen a Lükabettosz-hegy volt. Az Akropoliszra szánta, de még hibádzott odáig egy nyúlfarknyi távolság, viszont amikor meghallotta a hollótól, hogy mi történt, rohanvást indult Kekropsz lányaihoz. Egy fonott kosárkában ugyanis őrájuk bízta a csecsemő Erikhthonioszt, és a lelkükre kötötte, hogy ne nyissák ki a kosarat. Amint most a holló elsutyorogta neki, a három lány közül kettő mégsem tudott ellenállni a kísértésnek, és belekukkantott. Az ő büntetésükkel már nem kellett törődni, hiszen a kígyólábú gyermek láttán levetették magukat az Akropoliszról, viszont a pletykás holló igenis megérdemli, hogy hófehér tollai ezentúl feketék legyenek. És többé nem mutatkozhat Athéné mellett.
A mítosz szerint így lett fekete a holló, és elűzése után Athéné új segítőt választott magának a bagoly személyében. A bagoly nemcsak az ő jelképe lett (és egyúttal Athén városáé is), hanem kedvelt szimbólum is, amely mind a pénzérméken, mind a mindennapi használati tárgyakon is előfordult. 
Hanem a bagoly nem sokáig örvendhetett jó hírnevének: a Római Birodalomban már úgy tartották, hogy a bagolyhuhogás a halált jelzi előre, és a boszorkányok bagoly képében szívják ki a gyermekek vérét. Állítólag Caesar, Augustus és Agrippa halálát is bagoly jelezte. A "kutyaharapást szőrével" elvnek megfelelően halott baglyot szögeltek a házak ajtajára, hogy a rosszat elhárítsa.
E későbbi hiedelmek a 19. századig fennmaradtak Európában - a bagoly a legtöbb helyen rossz hírek hozója, rossz ómen volt. Ez nem kis részben köszönhető életmódjának: éjszakai állat révén a sötét órákban hallani a hangját, amikor csak a szellemek és holtak járnak odakinn. Talán külseje is közrejátszott negatív megítélésében: a hatalmas szemek mintha a lélek mélyére látnának, és teljesen körbe tudja fordítani a fejét, ami bizonyára félelmetesnek hatott.
A bagoly azonban nem csak Európában honos: az amerikai első nemzetek közül többnél is a próféciákhoz, jövendöléshez kötődött az alakja. A hopik úgy tartották, hogy az üregi bagoly az alvilág és a halottak istenének szimbóluma - ez a kis bagolyfajta a földben fészkel.

Mivel én legszívesebben Athéné állataként gondolok a baglyokra, és nagyon is kedvelem őket, ezért az alábbi rajzhoz egy görög ízvilágú trüffelt álmodtam meg. A citrom és pisztácia kellemesen üdítő együtt, és a savanykás-sós keveredése igazán különlegessé teszi ezt a csokit.


Még a karantén legelején kétségbe estem: mi lesz, ha rajzolni támad majd kedvem, és nincs itthon normális színes ceruza?! Rettentő rég rajzoltam, de most egyszeriben ellenállhatatlan vágyam volt, hogy színeket lássak, és alkossak. Nem volt más hátra, kellett venni egy doboz művész ceruzát. És elmondhatom, hogy az ember egészen másképp látja a világot, amikor rajzoló-módba kapcsol: mindenhol téma van, megrajzolandó részletek, amiket korábban talán észre sem vett, most azonban elgyönyörködik bennük, és nincs elég óra a napban ahhoz, hogy mindet papírra vesse. De amikor megláttam azt a szép fotót a fülesbagolyról (ami nem mellesleg az év madara), tudtam, hogy azzal fogom kezdeni. Négy hétig le is kötött. Ezúttal nem rajzoltam meg előre a részleteket, hanem mozaik-szerűen haladtam minden irányban a színekkel (ne kérdezzétek, hogy miért a jobb oldali szemével kezdtem. Csak. Hogy kitoljak magammal, amikor a bal szemét kell majd rajzolni :D).

Már el is feledtem, milyen kielégítő érzés tud lenni egy rajz befejezése. Főleg, ha az ember ennyi szabadidejét beleöli.
Na és akkor most jöjjön a csoki.

Hozzávalók:
120 gr fehércsoki
30 ml citromlé
reszelt citromhéj
10 ml tejszín
egy kiskanál vaj
pisztácia

Elkészítés:
Kifacsarom a citrom levét, és egybeöntöm a tejszínnel (azért rakok bele egy pici tejszínt, mert anélkül sokkal nehezebben formázható a lehűtött krém). Belereszelem egy citrom héját is. Vízgőz felett megolvasztom a fehércsokit és a vajat, majd elegyítem a citromlével. Hűtőbe teszem néhány órára. Amikor eléggé lehűlt, kis golyókat formázok, és mindnek a közepébe teszek egy-egy pisztáciaszemet. Én sós pisztáciát használtam, egész jól kiegészítette a savanykás krémet.


-What?! - yelled Athene; rage flooded over her and she dropped what she held in her hand...
... which happened to be Mount Lycabettus. She wanted to use it in the Acropolis, however, it was still a little bit further. However, when she was told by the crow what had happened, she rushed to the daughters of Kekrops. She entrusted them with taking care of baby Erikhthonois, who was in a wicker basket; instructing them not to look inside the basket. As the crow now whispered in her ear, two out of the three girls could not resist temptation and peeked into it. She would not have to deal with their punishment, as seeing the baby with the snake legs, they threw themselves off the Acropolis, but the gossiping crow deserved his snow-white feathered to be turned into black. Moreover, he cannot be seen together with Athene anymore. 
According to the myth, thus the crow became black and after banishing him, Athene chose a new sidekick: the owl. Not only did the owl become her symbol (and at the same time Athens' too), but also a popular ornament used both on coins and on everyday objects.
However, the owl did not enjoy a good reputation for long: in the Roman Empire it was believed that the hoot of an owl presaged imminent death; and witches transformed into owls sucked the blood of children. Allegedly the deaths of Caesar, Augustus and Agrippa were all predicted by an owl. According to the "hair of the dog" principle, a dead owl was nailed on the doors in order to avert the evil.
These beliefs persisted in Europe into the 19th century - in most places the owl was a harbinger of bad tidings, a bad omen. This is strongly connected to its habits: it is a nocturnal animal; it can be heard in the dark hours, when only ghosts and the dead walk the streets. Probably its appearance also contributed to its negative assessment: as if its enormous eyes were looking right into the soul, and it can rotate its head around, which might have been frightening.
Owls are indigenous not only in Europe: many of the First Nations in America associated its figure with prophecy and divination. The Hopis believed that the burrowing owl was the symbol of the god of the underworld and the dead - this small owl nests in the ground.

Since I prefer to think about owls as the bird of Athene, and I very much like them, therefore I paired up the above drawing with a Greek type of truffle. Lemon and pistachio are nice and refreshing together; and the mixture of sour and salty makes this chocolate special.


I got desperate at the beginning of the quarantine: what if I'll feel like drawing and I still don't have proper colour pencils?! I haven't drawn in ages, but now I felt the irresistible urge to see colours and to create. I really had to buy a box of artist pencils. And I can tell you, one sees the world in a different light in drawing mode: everywhere there are subjects, details to be drawn; maybe one didn't even notice them before but now finds them delightful and there aren't enough hours in the day to draw all of them. But when Is aw that beautiful photo of that long-eared owl, I knew that I'd start with that. It took four weeks. This time I didn't draw the details in advance, but coloured it like a mosaic (don't ask me why I started with the right eye. Just because. To mess up with myself when I'd have to draw the left eye :D) (see phase photos above).


I've almost forgotten how elevating it is to finish a drawing. Especially if one spends so much free time with it.
And now comes the chocolate.

Ingredients:
120 gr white chocolate
30 ml lemon juice
lemon zest
10 ml cream
one small spoon of butter
pistachio

Recipe:
I squeeze the lemon juice and mix it with the cream (I use a little bit of cream because without that it would be much harder to shape the ganache). I shred the lemon zest in it too. Above steam, I melt the white chocolate and the butter, then I combine it with the lemon juice. I put it in the fridge for some hours. When it gets cold, I shape small balls and I put a pistachio in the middle of each. I used salty pistachio, which harmonised nicely with the sour cream.

Húsvét // Easter

A tavasz legszebb napjait éljük: friss, éledező-zsenge levelek, virágillat, színes szirmok, meleg, távoli tájakról mesélő szél. Felüdítő ilyenkor a természetben járni - már persze ha az ember okosan választja meg úti célját, és nem a mindenki által látogatott Normafára meg János-hegyre megy. Felébredtek a növényeket gondozó tündérek és apró lények is, meg lehet pillantani egy-egy fa gyökerei között a leskelődőket, az ágakon kuporgókat, hintázókat, napnyugtakor a levegőben repkedőket.
Van, akire jó hatással van a tavasz és a karantén egyvelege. Én például vettem egy doboz művész színesceruzát, és nekiláttam rajzolni. A csokikészítés, írás, olvasgatás, zenehallgatás, sétálás napi szinten is megvan, viszont már rég rajzoltam. Most olyan jól esik meglátni a szépet a legkisebb virágban is, és lerajzolni. Elücsörgök a kertben egy párnával meg a ceruzákkal, és repül az idő. Beszélgettem a kertünkben lakó három tündérrel: Nárcisszal, Tulipánnal és Jácinttal, akik megengedték, hogy papírra vessem a portréjukat (lásd alant).
Na persze a Húsvét előtti egy-két napban nem igazán volt ilyesmire idő, miközben az ünnepi menüt meg a csokikat gyártottam nagyüzemben. Ezúttal kétféle készült: ibolyás, és mákos-citromos. Egy hobbiboltos gipszöntővel kicsit művészkedtem is, hogy igazán tavaszias legyen a csoki :)

Hozzávalók (mákos-citromos):
50 ml citromlé
darált mák
egy kiskanál vaj
100 gr fehércsoki
200 gr tejcsoki
transzferfólia

Elkészítés:
Kifacsarom egy fél citrom levét, és felteszem melegedni. Közben beleszórok 3-4 kiskanál darált mákot és egy kanálka vajat. Amikor a vaj felolvadt, egybekeverem a felolvasztott fehércsokival.
Méretre vágom a transzferfóliát, és beleteszem a mágneses formába. Temperálom a tejcsokit, elkészítem a bonbonok burkát. Amikor megszilárdult a csoki, megtöltöm a citromos krémmel, és a hűtőbe teszem. Egy-két óra múlva előveszem, és a maradék csokit temperálva lezárom a bonbonokat.

Hozzávalók (ibolyás):
25 ml ibolyaszirup
20 ml slivovica (vagy pálinka)
100 gr tejcsoki
150 gr étcsoki
lüszterpor

Elkészítés:
Az ibolyaszirupot és a slivovicát kis tényárkában összeöntöm. Érdemes semlegesebb ízű alkoholt választani, mert az ibolya íze elég halovány. Felolvasztok 100 gr tejcsokit, összekeverem az ibolyás folyadékkal. 
Különböző, élénk színű lüszterporokkal kifestem a gipszforma virágalakú mélyedéseit (illetve a hóvirágot temperált fehércsokival készítettem el). Ebbe öntöm aztán a temperált étcsokit, a kis táblákat megtöltöm az ibolyás krémmel. Hűtőbe teszem egy órára a formát, végül temperált étcsokival zárom le a táblákat.


We are in the middle of the most beautiful days of spring: fresh, reviving, tender leaves, the scent of flowers, colourful petals, and a wind talking about faraway lands. Walking in nature is truly refreshing at this time - of course if you choose your destination wisely and avoid popular places where crowds might gather. The fairies and other small creatures taking care of the plants also woke up; you might catch a glimpse of them: the ones peeping among the roots of trees and those huddling or swinging on branches and those flying about at sunset.
For some, the combination of spring and the quarantine is inspiring. I for one bought a box of professional coloured pencils and started to draw. Making chocolate, writing, reading, listening to music and walking have been parts of my everydays but I haven't drawn for a while. Now it feels so good to see the beauty in the smallest of flowers and to draw it. I'm just sitting in the garden with a pillow and the pencils and time is flying. I also talked with three of the fairies living in our garden: Daffodil, Tulip and Hyacinth, who allowed me to draw their portraits (see above).
Of course in the days before Easter I didn't really have time for such things while I compiled the festive menu and made chocolates. I prepared two different kinds: one with violet and another one with poppy seed and lemon. I went artistic a bit with a special plaster mould (can be bought in hobby stores) in order to get real springy chocolates :)

Ingredients (poppy seed-lemon):
50 ml lemon juice
ground poppy seed
one small spoon of butter
100 gr white chocolate
200 gr milk chocolate
transfer sheet

Recipe:
I squeeze the juice of half of a lemon and start to warm it up. I add 3-4 small spoons of ground poppy and some butter. When the butter melts, I combine it with the melted white chocolate.
I cut an adequate piece of the transfer sheet and place it in the magnetic mould. I temper the milk chocolate, I prepare the shells of the bonbons. When they get dry, I fill them with the cream and place the mould in the fridge. An hour later I take it out and I seal the bonbons with the leftover milk chocolate

Ingredients (violet):
25 ml violet syrup
20 ml slivovica (or pálinka)
100 gr milk chocolate
150 gr dark chocolate
lustre dust

Recipe:
I pour the violet syrup and the slivovica into a small bowl. Alcohol with neutral taste should be picked for this chocolate because the violet's flavour is quite faint. I melt 100 gr milk chocolate and mix it with the liquid.
I paint the flower-shaped cavities of the mould with colourful lustre dusts (I painted the snowdrop with tempered white chocolate). I pour the tempered dark chocolate in these, then I fill the small bars with the violet cream. I put the mould in the fridge for an hour, then I seal the bars with tempered dark chocolate.

Ratcatcher's truffles

Ratcatcher az én kis házi kedvencem, a házisárkányom (ha én magamnak nem lennék eléggé az :D). Ő vigyáz rám, amikor egyedül vagyok, és mindig mindenhova velem tart. Jól emlékszem, amikor rátaláltam a tojására - kis vörös rücskös drágakőként csillogott az erdő mélyén. Ott voltam, amikor kikelt az Éjféli Tűz izzásában, és akkorka kis gyík volt, mint az ujjam. Vele voltam, amikor csetlés-botlás közepette megtanult mindent, amit egy igazi sárkánynak tudnia kell, és akkor is, amikor szárnyra kelt a hír, hogy a világok egyikében ismét él egy sárkány, és ellenfeleink megpróbálták megszerezni őt. Amióta megnőtt, vele repülök hegyek és felhők között, egészen fel az égig. Egyszer pedig kóstoltam még a sárkányköpetből készült igen erős koktélt is (ha tehetitek, inkább hagyjátok ki, hacsak nem bírjátok igenigen jól a másnaposságot...). Kissé nehézkes most már a lakásban tartani őt, de persze ez nem szakíthatja el a köztünk lévő köteléket :) (nézzétek el, hogy nem rakok fel róla képet, csak a saját rajzaimat, de a csokifotózás közben épp vadászni volt).


Most az általa ihletett trüffel receptjét osztom meg veletek - természetesen ez is kellemesen tüzes, amilyen illik is egy sárkányhoz :)


Hozzávalók:
120+100 gr étcsoki
40 gr málnapüré
0,1 dl vodka
4 csipet csili
egy kiskanál vaj
egy kiskanál méz

Elkészítés:
A málnát lepasszírozom és leszűröm, a málnapürét vajjal és mézzel felmelegítem, majd hozzákeverek 120 gr magas kakaótartalmú étcsokit. Ezután adom csak hozzá a vodkát. Végül megszórom csilivel, és alaposan összekeverem. Hűtőbe rakom 3-4 órára, azután kiskanál segítségével kis adagokat veszek ki belőle, amiket golyókká formázok. Ezeket sütőpapírra ültetem.
Temperálok 100 gr étcsokit. A trüffelgolyókat konyhai tűre szúrva megforgatom a csokiban, lerázom róluk a felesleget, majd visszateszem őket a sütőpapírra, végül ismét a hűtőbe rakom őket, míg a burok megszilárdul.




Ratcatcher is my pet dragon (if I myself wasn't enough :D). He takes care of me when I'm alone and he comes with me everywhere. I can remember so well when I found his egg - it was shining like a little red coarse gemstone in the deep of the forest. I was there when the egg hatched in the glow of the Midnight Fire and he was a tiny lizard like my finger. I was with him while he, stumbling around, learnt everything that a real dragon needs to know, and also when news spread that a dragon lives in one of the worlds again and our enemies tried to seize him. Since he grew up I fly with him amid mountains and clouds, up in the sky. And once I even tasted a strong cocktail made of dragon spit (do not try it, only if you can handle hangover very very well...). Nowadays it is kinda difficult to keep him in the house but of course this cannot tear our bond :) (apologies that I can't upload a photo of him, only my drawings, but he went out hunting while I was taking pictures of the chocolates). 


Now I will share with you the recipe of truffles inspired by him - naturally they are pleasantly fiery as it befits a dragon :) 


Ingredients:
120+100 gr dark chocolate
40 gr raspberry puree
0,1 dl vodka
4 pinches of chili
one small spoon of butter
one small spoon of honey

Recipe:
I blend the raspberries and sieve them; I warm up this puree with butter and honey, then I add 120 gr dark chocolate with high cocoa percentage. I only add the vodka then, finally I sprinkle the ganache with chili and I stir it properly. I put it in the fridge for 3-4 hours, then with a small spoon I scoop little portions and I shape small balls. I put them on a parchment sheet.
I temper 100 gr dark chocolate. Pinning the truffles on a kitchen needle I dip them in the chocolate, I shake off the excess, then I put them back on the parchment paper. I put them in the fridge until the chocolate shell sets.
