epres-mentás // strawberry-mint

Papír és szavak - ez az életem. Hiszen mindig írok: naplót, levelet, történeteket, tanulmányt; most is írok, míg a vonaton hazafelé zötyögök. Ahogy a kifolyó tintából vonal, girland alakul, épp úgy folyik az életem is, alakul egyik betűből a másikká, egyik szóból a másikká.

Paper and words - this is my life. After all I write all the time: diary, letters, stories, essays; I am writing even now while jolting along on the way home home on the train. Brown paper, ink running out. If I had to describe my soul I would see this in front of me: words as they are being shaped under my hand. Just like the lines and garlands are being formed from the flowing ink, my life flows and transforms from one letter to the other, from one word to the other. Just like written words are unchangeable and unerasable, so is my past. They can only be reinterpreted. The emotional prism of the present is ever-changing and the past is also changing through it.
Just like the paper is empty before words are written on it, my future is open in front of me; it is up to me what I will write in it, what kind of paper I will pull in front of myself, what the colour of the ink will be.
Words and writing are connected to our deepest self; they connect a multitude of souls through a mystical thread. It is not by chance that every ancient culture considered writing a holy entity originating from god. Maybe those old signs came from such depth which we cannot penetrate any more, but the letters, which are being formed at the tip of my pen, probably only serve our comfort and they don't have much to do with their long-gone ancestors...

Ingredients:
120 gr dark chocolate
25 gr strawberry puree
10 gr cream
70 gr milk chocolate
2 spoonful dry mint
one spoonful butter
red luster dust

Recipe:
I warm up the strawberry, the butter and the cream, I add the mint and I boil it for 1-2 minutes. Then I mix it with 70 gr milk chocolate.
I temper the dark chocolate, and prepare the bonbon shells. After they get dry, I fill them with the strawberry cream and I put the mould in the fridge. Two hours later I take it out, I temper the leftover dark chocolate and I seal the bonbons. Finally I decorate the tops with a bit of red luster dust.

60 gr cukor
80 gr vaj
6 ek tejszínhab
100 gr szeder
mentalevél

Elkészítés:
Gőz fölött megolvasztom a csokit és a vajat. Egy üvegtálban összekeverem, a tojássárgájákat a cukorral, hozzáöntöm a csoki-vaj keveréket. A tojásfehérjéket felverem, hozzákeverem a csokis krémhez, majd ugyanígy teszek a tejszínhabbal is. A tálat hűtőbe teszem egy fél napra.
Tálalás előtt a szedret szitán átpasszírozom, és a kockákra vágott márkizt szederszósszal, mentalevéllel tálalom.

Finally the weekend is within arm's reach; therefore here is a recipe, which even those can prepare to whom chocolate tempering seems some kind of a magic procedure :D
I must admit that I've made cookies only twice in my life - the first time the consistency of the outcome resembled that of a jellyfish; the second time I managed to cook the sponge cake and I even improved the outer appearance with a tempered chocolate coat :) still, it didn't prove to be a success big enough to induce enthusiasm for cookie making. Moreover - a heretical thought, I know - to me in most cookies the sponge cake is an absolutely unnecessary stomach-filler; the cream/jam/filling/chocolate are the essentials; and since one can eat them in themselves, why would one  need anything else? :D This also motivated me to stay with chocolate and leave the rest.
The other day, though, I took the booklet entitled 30 recipes with chocolate (since I'd received it as a gift, it shouldn't just gather dust on the shelf, right?); and I chose a recipe from that. This is not really a cookie (moreover, I'd rather say it's a mousse), but not simple chocolate either, easy to prepare and quite tasty. I am not fond of recipes with raw egg, but once you can try this too :) I boosted it with some blackberry sauce. So here is the chocolate marquise, then maybe once, in a galaxy far, far away, I'll bestir myself to cookie making :D

Ingredients:
120 gr dark chocolate
3 eggs
60 gr sugar
80 gr butter
6 ek cream
100 gr blackberry
mint leaves

Recipe:
In a bain marie I melt the chocolate and the butter. I mix the egg yolks and the sugar in a glass bowl, then I pour the chocolate-butter mixture in it. I whip the egg whites and I add them to the chocolate cream; thne I do the same with the cream. I put the bowl in the fridge for 12 hours.
Before serving, I strain the blackberries through a sieve; I serve the marquise with blackberry sauce and mint leaves.

Mivel valami hűsítő, nyárias kombinációt akartam alkotni, végül a meggyre esett a választásom, ami kellemesen kiegészíti a mentát. Továbbá, hogy még krémesebb legyen a töltelék, feláldoztam két kanálnyi Pernigotti csokis mogyorókrémet is, ami - mellesleg megjegyzem - igen nehezemre esett... :D

Hozzávalók:
5-6 mentalevél
50 gr meggy

150 gr étcsokit temperálok, beleöntöm a formába.

Well, the end of this semester became quite busy. And it's still not over yet. But life is beautiful like this, and I shouldn't complain as I don't have to sit 8 hours at a boring workplace, but I work wherever I want to. Besides working I don't have much time for making chocolate, and this heat is not the optimal weather for it either, so I decided that as long as it's above 30 degrees, I'll rather make only mousse and other cold goodies.
Still, a bit more than a week ago I managed to get a couple of mint leaves and I had to prepare chocolate with them. Since I wanted to create a cooling, summer-ish combination, I chose sour cherry, which was quite pleasant with mint. Moreover, in order to have an even creamier filling, I sacrificed two spoonfuls of my Pernigotti dark chocolate cream, which wasn't easy...:D

Ingredients:
5-6 mint leaves
50 gr sour cherry
60+150 gr dark chocolate
2 spoonful of dark chocolate cream

Recipe:
I blend the sour cherries and the leaves. I warm them up, I add 60 gr dark chocolate and I stir it until it melts. Then I add two spoonfuls of chocolate cream.
I temper 150 gr dark chocolate, I pour it in the mould. I made mini cupcakes this time, for which it is enough to shake out the excess; I leave the mould upside down so the last bit of excess can drop on the paper, then I put it in the fridge. When the chocolate cups are ready, I take them out of the mould and I fill them with the cream. I decorate them with mint candies and I cool them down again.

A grafomán élete...

A finnyásabbak ezután leszűrhetik, én most benne hagytam a málnamagokat. Végül a még meleg lébe keverek 80 gr fehércsokit.
Elkészítem a bonbonok burkát: színben a málnával harmonizáló transzferfóliát teszek a mágneses forma aljába. Nyamiii!

Kosztolányi Dezső: Hajnali részegség (részletek)

Elmondanám ezt néked. Ha nem unnád.
Múlt éjszaka - háromkor – abbahagytama munkát.

Le is feküdtem. Ám a gép az agyban

zörgött tovább, kattogva-zúgva nagyban,

csak forgolódtam dühösen az ágyon,

nem jött az álom.

Hívtam pedig, így és úgy, balga szókkal,

százig olvasva, s mérges altatókkal.

Az, amit írtam, lázasan meredt rám.

Izgatta szívem negyven cigarettám.

Meg más egyéb is. A fekete. Minden.

Hát fölkelek, nem bánom az egészet,

sétálgatok szobámba, le-föl, ingben,

köröttem a családi fészek,

a szájakon lágy, álombeli mézek,

s amint botorkálok itt, mint a részeg,

az ablakon kinézek.

[...]
Én nem tudom, mi történt vélem akkor,
de úgy rémlett, egy szárny suhant felettem,
s felém hajolt az, amit eltemettem
rég, a gyerekkor.

a csillagok szikrázva, észrevétlen
meg-meglibegtek, és távolba roppant
fénycsóva lobbant,
egy mennyei kastély kapuja tárult,
körötte láng gyúlt,
valami rebbent,
oszolni kezdett a vendégsereg fent,
a hajnali homály mély
árnyékai közé lengett a báléj,
künn az előcsarnok fényárban úszott,
a házigazda a lépcsőn bucsúzott,
előkelő úr, az ég óriása,
a bálterem hatalmas glóriása,
s mozgás, riadt csilingelés, csodás,
halk női suttogás,
mint amikor már vége van a bálnak,
s a kapusok kocsikért kiabálnak.

Egy csipkefátyol
látszott, amint a távol
homályból
gyémántosan aláfoly,
egy messze kéklő,
pazar belépő,
melyet magára ölt egy drága, szép nő,
és rajt egy ékkő
behintve fénnyel ezt a tiszta békét,
a halovány és túlvilági kékét,
vagy tán egy angyal, aki szűzi
szép mozdulattal csillogó fejékét
hajába tűzi,
és az álomnál csendesebben
egy arra ringó
könnyűcske hintó
mélyébe lebben,
s tovább robog kacér mosollyal ebben,
aztán amíg vad paripái futnak
a farsangosan lángoló Tejutnak,
arany konfetti-záporába sok száz
batár között, patkójuk fölsziporkáz.

[...]

Writing poems, well, I've never managed to do that. I tried it once, but I still don't understand what kind of extra gyrus you need to put together words in a way that rhythm, rhyme, the length of the lines are all ok, AND the text actually makes sense. To me this is magic :D I like to read poems though, especially those of my favourite poets, like Árpád Tóth, Miklós Radnóti and Dezső Kosztolányi - I find that kind of magic in their poems that I try to grasp in my fairytales.
My all-time favourite poem - you know, the kind that one immediately fancies in the new textbook and by the end of the academic year reads so many times that she knows it by heart - is undoubtedly Hajnali részegség [Dawnstruck]. I have no idea how Kosztolányi managed to write this poem, it tells about everything that is worth living for, no, this poem is life itself, it is so amazing that one gets goosebumps while reading it. If G2BA is my song, then this is my poem, it faithfully reflects how I feel about my life - or rather life in general. It's enough to glimpse at the sky...
I chose this poem for today's chocolate, as this chocolate is full of life too :D I adore mint, I could eat it in every combination. Raspberry-mint is refreshing, energetic and as a "secret ingredient" I added lime, which enhances the sour-ish flavour :) I used dark chocolate with high cocoa percentage (74%) for the shell, which really fits the filling.

Ingredients:
0,1 dl cream
juice of half a lime
30 gr raspberry
one small spoon of dry mint or  3-4 mint leaves
a small spoon of butter
80 gr white chocolate
200 gr dark chocolate
transfer sheet

Recipe:
I squeeze the lime into the pot, and I pour a bit of cream in it. I add the raspberries and the mint. I start to warm them up and in the meanwhile I also add some butter. I leave it to boil so the flavour can boil out of the mint, in the meanwhile I crush the raspberries. If you are picky, you can sieve it at this point, but I left the seeds in the liquid. Finally I mixed it with 80 gr white chocolate.
I prepare the bonbon shells: I put a transfer sheet in the bottom of the magnetic mould. I temper 200 gr dark chocolate and I pour it into the cavities; by shaking it I get rid of the air bubbles, then I pour out the excess. After the chocolate gets dry, I fill the shells with the cream and I put the mould in the fridge. After a couple of hours of cooling I seal the shells. Yummmyyyy!

Dezső Kosztolányi: Dawnstruck [excerpts]

I'd like to tell you this, if you agree.
Last night I staid up working late again,
until three.
I turn in, but the cog-wheels of the brain
go rattling on and on. Almost insane
I'm tossing, turning, even counting sheep,
but cannot sleep.
I try in vain the mantras and the cures,
the bitterest medicinal liqueurs,
my script still leers at me with grisly threats,
my heart still blames those forty cigarettes
and else. The lethal coffees, I presume.
I give up trying and admit defeat,
then slowly, in my shirt-sleeves, pace the room.
Inside the dreaming family retreat
half-open lips are moist with honey-sweet
saliva, and on drunk, staggering feet
I look out on the street.
 [...]
What has happened to me, that's hard to know.
It seems, a shadow flew above my head,
my childhood, that I'd given up for dead,
and buried long ago.

By and by,
among the stunning treasures of the sky
I see a secret wisp of lightness, oozing
a hue of dawn, and blushfully perfusing
the levitating stars. Out in the east
light beams are released,
a sparkling palace fills the heavenly sphere,
a chandelier
is glowing in a blaze,
until the guests disperse and go their ways.
Out on the lawn the shadows of the night
are floating on the castle's candlelight.
The guests are leaving now, in groups or pairs,
descending on the stately marble stairs,
and coming to the end of their descent,
the noble giant of the firmament,
the host, farewells them in the evening cool,
outside the vestibule.
Then girlish whispers, jangling of a brooch,
end of the party, hailing for a coach.

A veil of point lace
descends from distant space
to adorn and grace
a ravishingly beautiful young girl's
rich auburn curls
with the delicate gold-trace
of plaited purls,
and priceless precious pearls.
The veil spreads peaceful light upon the true
celestial landscape's otherwoldly blue,
or it descends upon an angel, who
carries with the poise of maidenhead
the richly jewelled thread
upon her head and, light as a butterfly,
leaps into a landau
to raise a graceful hand, or
to cast a flirty eye
into another carriage passing by,
and then she lets her horses romp away
along the fairy-lighted Milky Way
where mingling with the coaches until late
their horseshoes touch the stars and scintillate.

[...]
I know that one fine day I'll have to leave,
and I have nothing in which to believe,
but tightening my heart-strings as a chord
I sang and sang until the music soared
to one who can't be seen and can't be guessed,
not in this life, nor in our final rest.
Before they come to throw me overboard,
I know that here, where I am so distressed,
stumbling through quicksands and souls, on my quest,
there is a great unfathomable Lord,
I was His guest.

téli fagyi Hulk krémmel // winter ice cream filled with Hulk cream

A következőt gépelte unatkozó barátunk:

3-4 csipet menta

Elkészítés:
Először a fagyikrémet készítem el: a tejszínt felmelegítem a matchával és a mentával, a tűzről lehúzva hozzákeverem a fehércsokit is. Szép zöld lesz, azért is kapta a Hulk nevet :D Ezt aztán beteszem a hűtőbe.
Következhet a téli fagyi tölcsére.

Today I had a funny day so this is going to be a funny post.
In case someone thought that the life of the historian is a terrible, boring thing, I am going to refute that now. The following short story was found among documents from 1945, on a yellow piece of paper, crossed out with red pencil - there was something else on the other side too, but this side was the real treasure. Reading such a thing immediately stimulates imagination, moreover, the style is unique and good at depicting. Our bored friend typed the following:
"Like the neigh of a stallion, the stomach of the notary rumbled when it was eleven in the morning. From this prolonged, deep and abundant rumble the notary got to know two things every day, first, that it is eleven o'clock, second, that he has to leave to the pub. Because the notary was used to taking his daily dose at this time at Gebi's. The notary made a dot, he shook out the pen and placed it carefully next to the ink pot; first he looked out of the lattice window and then he indifferently stepped into the courtyard. Indifferently, so that in case his wife caught sight of him, she wouldn't get suspicious. The woman would have been mad to think anything bad, had she seen her wedded husband anyway. In nine years the notary's wife got used to the notary getting up from the table every morning at nine o'clock, slipping out of the room on tiptoes and not stopping only at the pub, where Gebi is selling schnaps for five deniers, which, even if it scrapes around Adam's apple, but it tickles imagination. It makes spirit and clever thoughts come. The notary's wife knew this very well and even if she'd threatened the notary with the broomstick, in nine years she became so weary of the uneven fight that since last year she wouldn't have minded even if the whirlwind had taken away the pen of the village."

Some days ago in a bookstore I looked into a chocolate book, that's where I found this idea, but of course I changed it according to my taste. I don't remember the title of the book so there won't be any credit now. Phase photos above.

Hozzávalók:
parchment paper
100 gr dark chocolate
0,5 dl cream
100 gr white chocolate
2-3 small spoons of matcha tea
3-4 pinches of mint

Recipe:
First I prepare the ganache: I warm up the cream with matcha and mint, then I turn off the stove and I add the white chocolate. It is going to become nice green, hence the name :D I put it in the fridge.
Next are the cones: I cut up the parchment paper and I make cones of the pieces, I fix them with Scotch tape. I temper the dark chocolate and I put a small spoon of it into every cone, then I use a brush to smear it on the inner side - no hole should remain. I leave them to get dry - probably they'll get flattened a bit (I still have to work on this method, how to make nice, round cones :D). When the chocolate cones are ready, I tear off the paper and I fill them with the ganache, then I put them back in the fridge until the cream gets cold.

mojito csoki // mojito chocolate

Ugyanakkor kissé elszomorít a nagy csillaghullás...

1 lime leve
0,2 dl rum (ami nálam pálinka volt)
0,1 dl tejszín
0,2 dl lime-menta szörp
200+130 gr fehércsoki
3 csipet szárított menta
kakaóvaj
ételfesték
bonbonkapszli

Temperálok 200 gr fehércsokit, egyharmadig megtöltöm a kapszlikat. Ecsettel felviszem a csokit a kapszlik oldalára is, egészen a tetejéig, majd hagyom megszilárdulni. Végül megtöltöm a mojitós töltelékkel, és színes díszekkel dekorálom. Evés előtt a kapszlikat egyszerűen lehúzom a csokiról.

I've been planning this chocolate for a long while and now that New Year's Eve is coming, I thought I'm gonna prepare it for the party. There's a decent amount of alcohol in it, coz it's party timeeeeee!! :D I have to say this year was pretty good - I travelled a lot, I met new people, I worked a lot and I studied about interesting things. Music and fairytales were part of my everydays, as well as chocolate :D As my dear Uncle G says, one has to surround oneself with positive persons and things, as life is too short to be angry or stressed.
At the same time I'm a bit sad that so many stars passed away... I believe the members of the great generation (I'm thinking of the golden age of cinema and rock music here) reached that age that strikingly many of them pass away - I fear the next year won't be any better from this point of view.
But let's remember the good things and after all what's better to celebrate the new year with, than chocolate?! This recipe was inspired by one of my favourite singers, JSS: when I first saw him on stage, he drank 6-7 mojitos during the concert XD Even though this cocktail is not my favourite, lime and mint are perfect with chocolate, especially if you add some alcohol :D Above is the matching song, performed by the awesome Jeff, and with this, I wish everyone a very happy new year!

Ingredients:
the juice of one lime
0,2 dl rum
0,1 dl cream
0,2 dl lime-mint syrup
200+130 gr white chocolate
3 pinches of dried mint
cocoa butter
edible food paint
bonbon caps

Recipe:
For the ganache I pour together the cream, the freshly pressed lime juice and the syrup, I add some pinches of dried mints. I warm them up, and I also add 130 gr white chocolate. I stir the cream, then I pour in the alcohol (I used palinka, but obviously white rum is the real thing).
I decorate the inside of the aluminium bonbon caps with green cocoa butter: for this I melt the cocoa butter and mix it with edible green paint. I spray the caps with the help of a brush. I temper 200 gr white chocolate, I fill the caps to 1/3 with it. I paint the inner sides with chocolate, up to the top then I leave them to dry. Finally I fill the caps with the mojito cream and I decorate the top of the bonbons with colourful candies. Before eating, I pull off the cap of the chocolate.
