maracuja-chili-rum cocktail

Az inspiráció néha a legváratlanabb helyekről jön :) De hát nyitott szemmel kell járni a világban, ki tudja, mikor és hol bukkan fel egy jó ötlet! Néha barátokkal való koktélozás közben - mint ahogy az esetemben is történt. A Boutiqbar kedves pultosai leptek meg bennünket ezzel az ütős, ízletes koktéllal, amit ugyan nem találtam az online itallapon, de ha arra jártok, semmiképp ne hagyjátok ki (a bárt amúgy is érdemes meglátogatni, mert minőségi, különleges koktélokat kóstolhattok náluk)! Az ital alapja vodka, ehhez jön némi maracujalé, és a chili. Kellemesen bizsereg, tüzes, és feldobja az ember hangulatát :D
Na hát ezt az ízélményt próbáltam elérni csokiban. Mivel itthon nincs vodka, ezért fehér rumot használtam, az alkoholtartalom ebben is ugyanannyi. Choceur tejszínes tejcsoki van a töltelékben, ami kissé lágyabb, így jobban dominál a többi hozzávaló íze. A töltelék felét készítés közben "elkóstolgattam" :D


Hozzávalók:
20 gr maracujalé
20 gr fehér rum
chili
7 gr tejszín
90+200 gr tejcsoki
egy kiskanál vaj
egy kiskanál méz
vörös és arany lüszterpor, kakaóvaj

Elkészítés:
Két fémedénybe kakaóvajat teszek, az egyikben vörös, a másikban arany lüszterrel keverem el, majd gyertyaláng felett megolvasztom mindkettőt. A bonbonforma mélyedéseibe ecsettel egy-egy pötty vörös lüsztert teszek, amit aztán összeolvasztok az arannyal, és lángnyelveket festek. Hagyom megszáradni a díszítést.
Egy edény felett szitán átpréselem két maracuja húsát (kb. 20 gr), a magok nem kellenek  a töltelékbe. Adok hozzá egy kis tejszínt, vajat, mézet, majd felmelegítem. Hozzákeverek 90 gr csokit, és miután elolvadt, beleöntök egy feles pohárkányi rumot. Legvégül következik a chili. Olyan ízhatást akartam elérni, hogy aki megkóstolja a csokit, miután elrágcsálta, az a kellemesen csípős íz maradjon a torkában. Én 6 kis csipetnyi chilit tettem a töltelékbe, de nyilván mindenki ízlés szerint adagolhatja.
Temperálok 200 gr tejcsokit, közben kissé elvékonyítom némi kakaóvajjal, hogy a bonbonhéjak kellően vékonyak legyenek, és a töltelék íze domináljon. Elkészítem a burkokat, száradás után megtöltöm őket a töltelékkel, majd hűtőbe teszem a formát. Végül lezárom a bonbonokat.



Inspiration sometimes comes from the most unexpected places :) You always have to keep your eyes open, who knows when and where a good idea pops up! Sometimes while drinking cocktails with your friends - as it happened to me. The lovely bartenders of Boutiqbar surprised us with this vivid, tasty cocktail, which I couldn't find on the online menu, but if you visit them, you should not miss it! (anyway it is worthy to pay a visit to this bar, as they offer quality, special cocktails) The basis of this drink is vodka, then maracuja juice and chili. It is tingling, fiery and will make your day :D
This is the flavour experience I tried to reproduce with chocolate. Since I don't have vodka at home, I used white rum, which has the same alcohol percentage. In the filling there is Choceur creamy milk chocolate, whose flavour is more silky, so the other flavours can dominate. During the preparations, as a result of my "tasting", half of the filling was gone :D


Ingredients:
20 gr maracuja juice
20 gr white rum
chili
7 gr cream
90+200 gr milk chocolate
small spoon of butter
small spoon of honey
red and gold luster dust, cocoa butter

Recipe:
I put cocoa butter in two metal dishes; I add red luster dust to one of them and gold to the other. I melt the cocoa butter above a candle. With a brush I put dots of the red luster in each cavity of the bonbon mould, which I melt together with a bit of the gold luster, and paint little flames. I let the decoration get dry.
I sieve through the pulp of two maracujas (ca. 20 gr), the seeds are not needed for the filling. I add a bit of cream, butter and honey, then I warm up the mixture. I also add 90 gr milk chocolate, and after it melts, I pour a shot glass of rum in the cream. Then comes the chili. I wanted to achieve that after consuming the chocolate, one would feel that pleasant, hot taste in his throat. I used 6 small pinches of chili for the filling, but of course everyone can use as much as they prefer.
I temper 200 gr milk chocolate and in the meanwhile I thin it with some cocoa butter so the bonbon shells will be thin enough and the taste of the filling would dominate. I prepare the shells; after they get dry, I fill them, then I put the mould in the fridge. Finally I seal the bonbons.
