túrókrém szederszósszal // quark cream with blackberry sauce

Az elmúlt heteket a családfám kutatásával töltöttem. Ez egyrészt igen hálátlan feladat, mivel aprólékos kutatómunkát igényel, ugyanakkor hálás is, mert az ember egyszerre teljesen más perspektívából tekint az életére: apró, mulandó, az időben elveszett lény helyett egy századokon átívelő hálózat fontos összekötő pontjaként látja magát. Én vagyok olyan szerencsés, hogy rengeteg anyakönyvi kivonat megmaradt apai nagyapámtól, a másik ágon pedig még van, aki emlékszik, és volt, aki összegyűjtött adatokat, így mindkét ágon legalább 150 évre vissza tudom vezetni a családfámat, de van olyan ág, amelyet egészen a 18. század elejéig is. Jó érzés név szerint ismerni a dédszülőket, ükszülőket, tudni, hogy mikor, honnét származtak, mikor volt a születésük napja, mikor és kivel házasodtak. 
Aztán amikor már napok óta böngészem a 18. századi anyakönyveket, óhatatlanul az jut az eszembe, hogy ha az a bizonyos ősöm aznap este a családi élet helyett mondjuk a vadászatot választotta volna, akkor bizony most nem ülnék itt. Milyen apróságokon múlik az ember élete! Elég lett volna egy eltévedt golyó a második világháborúban, és anyám sosem született volna meg. Na meg amikor az ember már szinte ismerősként üdvözli a családja származási helyén élő, kiterjedt 19. század eleji családokat, akkor az is megfordul a fejében, hogy rákeressen egy-egy különleges hangzású vezetéknévre a facebookon, és amikor három találat áll előtte, ingerenciát érez, hogy rájuk írjon: heló, tudsz róla, hogy N.-ből származik a családod, és egykor az egyik felmenőmmel házasságot kötött a te egyik felmenőd? :D
Különben a családom elég tipikus közép-európai család, mondhatni lemodellezi Magyarország történelmét: eleinte mindenki a saját kis falujában élt, legfeljebb a helyi nemzetiségek keveredtek egymással, majd amikor létrejött az Osztrák-Magyar Monarchia, egyben egy hatalmas olvasztótégely, akkor aztán mindenki utazott mindenhová, kvázi mint ma az EU-ban, határok nélkül. Így történt, hogy a családunk felmenői között cipszerek (felvidéki németek), szlovákok, horvátok, olaszok, osztrákok, szlovének, erdélyiek éppúgy megtalálhatók, mint a tősgyökeres magyar nemes, akinek 1262-ben V. István adta nemesi címét.
Végeérhetetlen a keresgélés, mindig lehet találni újabb és újabb információkat, és visszafelé haladni az időben, elveszni ebben a hatalmas szövevényben. 
Na de hogy a kutatásról se legyen annyira száraz, jól jön mellé egy kis édesség. Mivel a csoki továbbra is reménytelen eset a nyári melegben, ezért inkább valami máshoz használtam fel a megvásárolt fehércsokimat :) A túrókrémet imádom, és persze szederrel igazán klasszikus párosítás ^^


Hozzávalók:
A túrókrémhez:
250 gr túró
150 gr fehércsoki
100 gr mascarpone
egy citrom héja
fél citrom leve
fél zacskó vaníliás cukor
A szederszószhoz:
250 gr szeder
két kiskanál cukor
kb. 3 gr tortazselé por

A túrót egy tálba teszem, a mascarponéval krémesre keverem. Közben felolvasztom a fehércsokit, és hozzákeverem. Belereszelem egy citrom héját és belefacsarok a levéből is egy kicsit, valamint hozzáöntök egy fél zacskó vaníliás cukrot. Alaposan elkeverem az egészet, és beteszem a hűtőbe.
Egy másik edénybe 250 gr szedret szűrőn átpasszírozok. A lé elég sűrű lesz így is, úgyhogy épp csak annyi cukrot teszek hozzá, amennyit megkíván, és elkeverek benne egy fél zacskónyi tortazselé port. Ezután felrakom főni, és addig melegítem, míg be nem sűrűsödik egy kissé. Ekkor megvárom, hogy kihűljön, végül kis üvegbe töltöm, és szintén beteszem a hűtőbe. 
Tálalás előtt néhány kanálnyi szederszószt a túróra öntök, szederszemekkel díszítem.


I spent the last weeks with researching my family tree. From a point of view this is a quite ungrateful task as it requires exhaustive research; at the same time it is special, as suddenly you percieve your life from a completely different perspective: instead of a tiny, evanescent creature lost in time, you see yourself as a significant connecting point in a network arching over centuries. I am lucky enough to have the copies of several certificates from my paternal grandfather; on my mother's side there is someone who still remembers and another, who collected data, so on both sides I can trace back my family for at least 150 years; but there are branches which lead back as far as the beginning of the 18th century. It's a good feeling to know your great-grandparents and great-great-grandparents by name, to know where and when they were born, to whom they got married.
And when I'd been browsing through 18th century matriculae for days, I kept thinking that had this certain ancestor gone hunting instead of choosing family life, then I wouldn't be sitting here. One's life depends on such tiny things! One bullet would have been enough in the second world war and my mother wouldn't have been born. Also, when one salutes almost as friends the extended 19th century families, living at his family's place of origin, then it comes to one's mind to search for certain peculiar surnames on Facebook. And when Facebook shows three results, one feels the urge to write to these people: hello, did you know that your family comes from N. and one of your ancestors got married to one of mine? :D
Apart from that, my family is a quite typical Central European family, we could say it's the model of Hungary's history: at first everyone lived in their villages, they intermingled with members of the local nationalities. Then when the Austro-Hungarian Empire - a huge melting pot - came into existence, everyone was traveling everywhere without borders, just like today in the EU. Among my ancestors there are Zipsers (Germans living in the Northern towns of Hungary, which are parts of Slovakia today), Slovaks, Croats, Italians, Austrians, Slovenes, Transylvanians, as well as an ancient noble Hungarian family who were ennobled by King Stephen V in 1262.
The search is endless, you can always find further and further pieces of information and go back in time, get lost in this huge labyrinth.
But this search should be sweetened a bit, so this time I made a nice dessert: since making chocolate in the summer heat is still hopeless, I used my white chocolate for something else :) I adore quark cream, and together with blacberries it's a classic combination ^^


Ingredients:
Quark cream:
250 gr quark
150 gr white chocolate
100 gr mascarpone
lemon zest
lemon juice
vanilla sugar
Blackberry sauce:
250 gr blackberries
2 small spoons of sugar
ca. 3 gr jelly powder

I put the quark in a bowl and I mix it with the mascarpone. In the meanwhile I melt the white chocolate and I add that too. I scrape one lemon's skin in the mixture and I squeeze some of its juice as well. I also add a small sachet of vanilla sugar. I stir the ingredients and I put the cream in the fridge.
In another pot I press 250 grams of blackberries through a sieve. The liquid will be quite thick so I add only a bit of sugar and half a sachet of jelly powder. I warm it up until it gets more dense, then I wait for it to cool down. I pour it in a small jar and I put it in the fridge.
Before serving, I pour 2-3 spoonfuls of the sauce on the quark and I decorate it with blackberries.

pisztácialikőrös // with pistachio liqueur

Hjajj a múltkori családi hepajra vittem egy üveg pisztácialikőrt, amit a többi nőnemű családtaggal bőszen ittunk XD Persze azzal a nem (jól) titkolt szándékkal is vettem a likőrt, hogy majd egy kis adagot felhasználjak belőle csokihoz. Most, hogy otthon voltunk a hétvégére, egyből neki is láttam - bár meg kell mondjam, nagyjából száz ötletem van talonban, egy-két hozzávalót már hetek óta őrzök a hűtőben (nem, nem romlandókat), szóval lassan be kell hoznom majd magamat :D 
Pisztácialikőr+pisztácia az egy álompárosítás, ezt meg kell jegyeznem későbbre, mondjuk a likőrhöz nehéz lesz hozzájutni, de lehet, hogy elspejzolok egy üveggel a biztonság kedvéért, amit aztán majd felhasználhatok kísérletezéshez a csokikkal :D Szóval ha van lehetőségetek, próbáljátok ki ezt a csokit, mert nagyon nagyon finom!!!


Hozzávalók:
0,5 dl pisztácialikőr
20 gr pisztácia
70 gr fehércsoki
150 gr étcsoki
pisztáciatöret

Elkészítés:
A pisztáciát beleőrlöm a likőrbe. Megolvasztom a fehércsokit, és hozzákeverem azt is, így egynemű krémet kapok. Temperálom az étcsokit, elkészítem a bonbonhéjakat. Szilárdulás után megtöltöm őket a krémmel, majd beteszem a hűtőbe egy-két órára.
Miután a töltelék kellően összeáll, temperálom a maradék étcsokit, és lezárom a bonbonokat. Ezután már elég egy egész kicsi hűtés nekik, és ki lehet rázni őket a formából, úgyhogy a még olvadt étcsokit felhasználom arra, hogy pöttyöket fessek a szívecskék sarkára. Ezeket megszórom pisztáciatörettel. Ami így beleragad, az lesz a díszítés :)


For the last family gathering I brought a bottle of pistachio liqueur, which we drank together with the other female family members XD Obviously I bought the liqueur with the not (well) concealed intention to use a bit of it for chocolate. Now that we spent the weekend at home I made it - although I have to admit that I have about a hundred ideas on mind, I've been keeping some ingredients in the fridge for weeks already (no, not spoilable ones), so soon I'll have to get done with them :D
Pistachio liqueur+pistachio is a dream pairing, I'll have to remember this; although the liquor is hard to acquire, maybe I'll put away an entire bottle for myself to make my little experiments with chocolates :D So if you have the chance, try this chocolate because it's very very tasty!!!


Ingredients:
0,5 dl pistachio liqueur
20 gr pistachio
70 gr white chocolate
150 gr dark chocolate
pistachio nibs

Recipe:
I grind the pistachio into the liqueur. I melt the white chocolate and add that too until I get a smooth cream. I temper the dark chocolate and I prepare the bonbon shells. After they have dried, I fill them with the cream, then I put them in the fridge for a couple of hours.
Once the filling sets, I temper the leftover dark chocolate and I seal the bonbons. Just a little bit of cooling is enough this time and they can be shaken out of the mould, so I can use the still molten dark chocolate to paint little dots on the corner of the hearts. I sprinkle these with pistachio nibs and whatever gets stuck there, is going to be the decoration :)

Garrone-os gyümölcssaláta // fruit salad with Garrone

Titkos kertem a szépség és nyugalom szigete, ahol mindig jó lenni, még akkor is, ha az idő nem tökéletes. A vízben úszva megszűnik a világ, csak az ég létezik alattam és felettem, valójában az égben úszom, a madarak úgy kapálóznak, akár az úszók, némelyik verdes a szárnyaival, mint egy gyorsúszó, mások méltóságteljesen, lassan lebegnek. És a felhők, a felhők mindig is arra emlékeztettek, mintha egy végeérhetetlen égi óceán hullámai és habjai lennének, örökké változók, akár az élet. Habfehérek, aranycirmos szegély fut rajtuk csipkeként, szürke szárnyukat puhán terjesztik a hegy fölé, mintha át akarnák ölelni. A naplemente ajtó egy másik világba, mindig máshol, mindig másként, de mindig ugyanabba a másik világba vezet. Olyan tökéletes és gyönyörű ez a világ.
Bárcsak tudnék repülni. Az úszás egy egész kicsit arra emlékeztet... 
Most csak angolul lesz mese. Öt éve írtam, erre pontosan emlékszem. Nem szeretném és nem is tudnám lefordítani. 




Na és ha már nyár, következzék egy igazán nyári finomság. Kedvenc gyümölcseim egyike a sárgadinnye, mérhetetlen mennyiséget meg tudok enni belőle. Csokiban is ki kell majd próbálnom természetesen, de ezúttal az egész családnak készült egy fincsi gyümölcssaláta ^^

Hozzávalók:
1 érett sárgadinnye
2-3 kis méretű körte
2 dl Garrone

Elkészítés:
Félbevágom a dinnyét. Kikaparom a magokat mindkét feléből. Kiskanállal, vagy magszedővel kis gombócokat vájok ki belőlük úgy, hogy a gyümölcshús legalább fele megmaradjon. Feltöltöm őket félig Garrone-nal, majd visszahelyezem beléjük a dinnyedarabkákat. Ha marad még hely, ne sajnáljuk belőle az alkoholt. Végül két körtét vékony szeletekre vágok, és a szélükre helyezem dísznek. Mindkét dinnye-felet beteszem a hűtőbe legalább 3-4 órára, hogy jól lehűljön, és legyen ideje megszívni magát Garrone-nal. 
Tálaláskor tejszínhab, édesszájúaknak akár cukor is mehet bele, bár az igazán érett dinnye nem kívánja a plusz cukrot szerintem.




My  secret garden is the island of beauty and peace; it's always good to be there, even when the weather is not perfect. The world ceases to exist when  I'm swimming, only the sky exists below and above, I am swimming in the sky; the birds are flapping like swimmers, some are fluttering quickly like freestyle swimmers, others float gracefully, slowly. And the clouds, the clouds have always reminded me of the waves and foam of an endless celestial ocean; forever changing like life itself. They are foam-white, golden fringes frame them as laces, they softly spread their grey wings aove the mountain as if they wanted to embrace it. The sunset is a door opening to another world, always from another place and always differently, but always to the same world. This world is so perfect and wonderful.
I wish I could fly. Swimming reminds me a bit of that...
Now here is a tale that I wrote 5 years ago.



And so if it's summer, here is a real summer delight. One of my favourite fruits is melon, I could eat up endless portions of it. I'll have to try it in chocolate as well, but this time I prepared a yummy fruit salad for the entire family ^^

Ingredients:
1 ripe melon
2-3 small pears
2 dl Garrone

Recipe:
I cut the melon into halves. I scrape out the seeds. With a small spoon I scoop little balls out of them, and I leave at least half of the fruit flesh. I fill the halves with Garrone, then I place back the melon pieces. If there is any space left, do not spare the alcohol. Finally I cut up two pears into thin pieces and I put them on the sides. I put the melons in the fridge at least for 3-4 hours until they get cold and absorb the Garrone.
Serve it with whipped cream or even a bit of sugar but a really ripe melon doesn't need additional sugar.






Learning to fly

From the edge of the cliff the landscape looked like a glass globe. Clear, green hills in the foreground; the river, oh the river like a silver ribbon flowing among the familiar forests where so many of childhood’s miracles had happened. Cottages hiding behind the trees; smoke rising to the sky like a white-grey snake. Turquoise mountains on the horizon, below the sky, that endless, vast blueness, the place out of reach, the other half of the world which remained unknown to the villagers, a secret without boundaries. Even those who knew the paths of the stars, who could translate the whisper of the wind and were able to read such signs as a red moon or a rainbow, would never dream of getting there: flying on the wings of the storm, touching the silk of that rainbow, treasure-hunting among the stars.
But little Ilmailu did.
He was desperately attracted to the sky, in love with the Moon, that mystical mother; his passion: staring at the wandering clouds. When wild winds roared, he was sure to be found outside the village on the small field in front of the forest, where the grass waved like a green sea. Every day he sat on the cliffs for hours and watched the setting sun – his family had to have dinner later then all the other villagers because of his habit. At first they tried to persuade him to stay at home, to miss at least one sunset but when they locked up the door, he escaped through the window. So they just gave it up. And thus little Ilmailu was the only one who knew that every sunset painted different colours on the sky and on the land.
However, when it came to real life, Ilmailu could hardly find his way. Living among the clouds, he stumbled in stones and fallen branches; his mates liked to tease him and killed little birds just to see the horror on his face. He was old enough to help out his father in work, but nobody expected him to do anything as they all knew that he would fail.
The shaman, a middle-aged man with white beard secretly appreciated the boy: when Ilmailu was younger (after he passed through the fourth or fifth cycle) he told him a tale about the Falcon, the forefather of their people. He said – and of that little Ilmailu remembered perfectly – that in every third generation the essence of the Falcon descended into a soul and that soul surpassed even the shaman in wisdom, abilities and in the longing for the sky.
That evening, while sitting on the cliff and excitedly waiting for the first stars to light up in the distance coated in mist, little Ilmailu contemplated the Falcon once more. He knew it for sure that somehow he was able to fly. At night his free spirit cleft the sky like a tiny owl – he saw the village and the hills so clearly and next morning when he woke up he remembered his dreams as real experiences.
Now, deep in thoughts, he caressed the brown feather held in his lap. The other feathers wiggled as if they desired to float impatiently. Three times three – the perfect form of the magical number: that might do it. Little Ilmailu sighed and collected all his will. He fastened the nine feathers to the sleeves of his tunic and to his rumpled, long, mahogany hair; then stood up and backed nine steps. His free spirit jumped into his throat, suspecting that it will break its chains soon. Running, then a quick leap into the air – the boy gasped for a second, and then his wings unfolded, spread, flapped and shed some purple feathers.
Little Ilmailu balanced and drifted on the borderline of daylight and night, wakefulness and dreaming, on the star-spotted carpet of the night sky, crying out in rapture. His eyes were watering in the biting wind; the unreal radiance of the setting sun blinded him. He didn’t look down but held his head up high to see the silver void and galaxies shining like golden ponds. His newly gotten, ambitious wings took him higher and higher, to the glowing line of dusk, where the world ceases to exist and consciousness burns out.


His body was found next day at the foot of the cliff, crushed but with a sweet smile on his face, a smile of one who had found the meaning of his life.

meggyes-mentás // sour cherry-mint

Hát ez az év vége elég sűrűre sikeredett. És még mindig nincs vége a tennivalóknak. Na de így szép az élet, és még mindig nem panaszkodhatom, mert nem kell napi 8 órát egyhelyben ülnöm valami unott munkahelyen, hanem ott dolgozom, ahol épp kedvem van. Mindemellett viszont a csokizásra alig jut időm mostanság, na meg ez a nagy meleg sem kedvez neki annyira, szóval úgy döntöttem, hogy amíg 30 fok felett leledzünk, inkább csak mousse-t, meg egyéb hűthető finomságokat fogok készíteni.
Minden esetre másfél hete beszereztem néhány mentalevelet, és muszáj volt csokit készítenem velük. Mivel valami hűsítő, nyárias kombinációt akartam alkotni, végül a meggyre esett a választásom, ami kellemesen kiegészíti a mentát. Továbbá, hogy még krémesebb legyen a töltelék, feláldoztam két kanálnyi Pernigotti csokis mogyorókrémet is, ami - mellesleg megjegyzem - igen nehezemre esett... :D


Hozzávalók:
5-6 mentalevél 
50 gr meggy
60+150 gr étcsoki
2 kiskanál étcsokis krém

Elkészítés:
A meggyet és a mentaleveleket összeturmixolom. Felrakom melegedni, és hozzáadok 60 gr étcsokit, elkeverem, míg el nem olvad. Ekkor adok hozzá még két kanál csokikrémet. 
150 gr étcsokit temperálok, beleöntöm a formába. Én most mini cupcake-eket készítettem, amelyhez elég elvégezni ezt az egy műveletet, és miután kiráztam a felesleges csokit, hagyom kicsepegni, majd beteszem a hűtőbe a bonbonformát. Amikor megszilárdultak a csokicsészék, kiütögetem őket a formából, és megtöltöm őket a krémmel. Mentolos cukorkával díszítem, majd alaposan behűtöm.


Well, the end of this semester became quite busy. And it's still not over yet. But life is beautiful like this, and I shouldn't complain as I don't have to sit 8 hours at a boring workplace, but I work wherever I want to. Besides working I don't have much time for making chocolate, and this heat is not the optimal weather for it either, so I decided that as long as it's above 30 degrees, I'll rather make only mousse and other cold goodies.
Still, a bit more than a week ago I managed to get a couple of mint leaves and I had to prepare chocolate with them. Since I wanted to create a cooling, summer-ish combination, I chose sour cherry, which was quite pleasant with mint. Moreover, in order to have an even creamier filling, I sacrificed two spoonfuls of my Pernigotti dark chocolate cream, which wasn't easy...:D


Ingredients:
5-6 mint leaves
50 gr sour cherry
60+150 gr dark chocolate
2 spoonful of dark chocolate cream

Recipe:
I blend the sour cherries and the leaves. I warm them up, I add 60 gr dark chocolate and I stir it until it melts. Then I add two spoonfuls of chocolate cream.
I temper 150 gr dark chocolate, I pour it in the mould. I made mini cupcakes this time, for which it is enough to shake out the excess; I leave the mould upside down so the last bit of excess can drop on the paper, then I put it in the fridge. When the chocolate cups are ready, I take them out of the mould and I fill them with the cream. I decorate them with mint candies and I cool them down again.

barackos-rozmaringos // apricot-rosemary

Ó már július van. Szinte csak most kezdődött ez az év, már a fele elment. És mennyi minden történt! Csupa jó dolog. Meg egy pár rossz is, de hát az élet ettől lesz izgalmas. 
Múlt hétvégén családi összeröffenés volt. És hát mi mással készülhetne az ember, ha nem csokival?! :D sikere volt. A múltkori sárgabarack-Tokaji kombó egy másik változatát próbáltam ki, ezúttal rozmaringgal, mert a fűszer-gyümölcs páros igazán ütős tud lenni, ha az ember jól választja meg a hozzávalókat :) A rozmaring például passzol az édes gyümölcsökhöz (lásd még az epret). A fehérbor pedig egy kis extra aromát ad hozzá - a Tokaji fehérbor egyébként is finom gyümölcsös ízű.


Hozzávalók:
0,2 dl Tokaji fehérbor
50 gr sárgabarack
6-7 levél rozmaring
1 kiskanál vaj
40 gr tejcsoki
60+200 gr étcsoki
kurkuma és kakaóvaj

Elkészítés:
Felolvasztom a kakaóvajat, hozzákeverek egy csipet kurkumát, és márványozom a bonbonforma mélyedéseit.
A barackokat alaposan összeturmixolom, majd az összetépett rozmaringgal együtt felmelegítem. Hozzáadom a vajat, majd hozzákeverem a tejcsokit és 60 gr étcsokit. Legvégül beleöntöm a bort.
Temperálom a maradék étcsokit, elkészítem a bonbonok burkát. Miután megszilárdultak, megtöltöm őket a barackos krémmel, és beteszem a hűtőbe, míg a töltelék megdermed. Ismét temperálom a csokit, és lezárom a bonbonokat.


Ah it's July already! This year has just started and half of it is gone. And so many things have happened! A lot of good things. And some bad too, but that makes life more exciting.
Last weekend there was a family gathering. And what else can one prepare for that, if not chocolate?! :D It was a success. I tried another version of the apricot-Tokaji combination, this time with rosemary because the spice-fruit pairing can be superb if one chooses the ingredients carefully :) Rosemary, for instance, goes well with sweet fruits (see also strawberry). And the wine gives extra aroma to it - Tokaji white wines usually have a nice fruity flavour.


Ingredients:
0,2 dl Tokaji white wine
50 gr apricot
6-7 leaves of rosemary
1 small spoon of butter
40 gr milk chocolate
60+200 gr dark chocolate
turmeric and cocoa butter

Recipe:
I melt the cocoa butter and mix it with a pinch of turmeric, then I marble the cavities of the chocolate mould.
I blend the apricots, then I warm them up with the rosemary torn into little pieces. I add the butter, then the milk chocolate and 60 gr dark chocolate. Finally I pour the wine in the mixture.
I temper the leftover dark chocolate, I prepare the bonbon shells. After they get solid, I fill them with the apricot cream and I put the mould in the fridge until the filling sets. I temper the dark chocolate again and I seal the bonbons.

mangós-sárgabarackos // mango-apricot

Hát ez eredetileg trüffelnek indult, de ebben az elviselhetetlen hőségben végül inkább a mousse mellett döntöttem. Nagyon könnyed, finom desszert lett és hamar elkészült, mondjuk a nyári gyümölcs-fehércsoki kombináció általában eléggé bejön, és persze egy gyümölcsös fehér bor csak jót tehet az összeállításnak :) Ugyanis nagy nehezen kikönyörögtem kedves férjemtől, hogy hagyjon a múltkor vásárolt isteni Tokajiból egy kicsit, mivel két ötletem is volt a Tokaji-sárgabarack együttesére :) Ez az egyik. A másik majd hamarosan jön :)
Meglátogattak minket a szülei, és az ő tiszteletükre készült ez a mousse, ami persze gyorsan elfogyott a vacsora végén :D 


Hozzávalók (4 főre):
50 gr sárgabarack+ egy fél barack a díszítéshez
50 gr mangó
0,2 dl Tokaji fehérbor
150 ml tejszín
160 gr fehércsoki
4 pillecukor
1 kiskanál vaj

Elkészítés:
A barackot és a mangót alaposan összeturmixolom. Hozzájuk adom a vajat és a pillecukrokat, és felforralom, addig keverem, míg a pillecukrok el nem olvadnak. Ekkor lehúzom a tűzről, hozzáadom a fehércsokit, alaposan összekeverem. Végül beleöntöm a bort.
Egy másik lábosban felverek másfél deci tejszínt. Megvárom, míg a a gyümölcsös krém kihűl, azután egybeforgatom a tejszínhabbal. Kis tálakba töltöm, és alaposan lehűtöm. Tálalás előtt barackszeletekkel és cukordísszel díszítem.


Originally this was going to be a truffle but in this unbearable heat I rather made a mousse. It is a very light, tasty dessert and it didn't take much time to prepare. I usually like the combination of summer fruits and white chocolate anyway and they can only benefit from some fruity white wine. So I begged my husband not to consume the last bit of the wonderful Tokaji wine that we'd bought the other day, as I had two ideas featuring the wine and apricot :) This is one of them. The other one will come soon :)
His parents visited us and I made this mousse for them - it disappeared very quickly after the dinner :D


Ingredients (4 persons):
50 gr apricots+ half an apricot for decoration
50 gr mango
0,2 dl Tokaji white wine
150 ml cream
160 gr white chocolate
4 marshmallows
1 small spoon of butter

Recipe:
I blend the apricot and the mango. I add butter and marshmallows and I boil the mixture until the marshmallows melt. Then I turn off the stove and I add white chocolate to the cream. I stir it, then I pour white wine in it.
In another pot I whip the cream. I wait until the fruit cream cools down, then I combine it with the whipped cream. I put the portions into small bowls and I put it in the fridge for some hours. Before serving, I decorate the mousse with apricot pieces and candies.

glam rock

Van az úgy, hogy az ember bemegy a munkahelyére, gyanútlanul berak valami chillout zenét, mondjuk Mike Oldfield-től a Sailinget, és hoppá, szembetalálja magát az ifjú Freddie Mercuryval! Aztán persze nincs megállás, meló helyett addig kutat, míg ki nem deríti, hogy a fiatalember a The Struts nevű banda énekese, azután pedig egy héten keresztül rongyosra hallgatja a dalaikat, mert egyszerűen addiktív a zenéjük.
Youtube kommentekben sokféle zengzetes hasonlatot lehet olvasni róluk, úgy mint: az új Queen; Luke, az énekes mint Freddie, Mick Jagger, Steven Tyler, David Bowie, és így tovább. Nekem elég annyi, hogy a srácok igyekeznek egyik kedvenc zenei zsáneremet, a 70-es évek glam rockját visszahozni, ami igazán dicséretes dolog tőlük, manapság sajnos nem vagyunk elkényeztetve ilyen téren. Na és milyen érzés volt azt olvasni, hogy Luke színpadi kosztümjeit Zandra Rhodes tervezi?! Oh yeah!
Luke az a fajta frontember, akire egy rockegyüttesnek szüksége van: stílusos, karizmatikus, mosolygós, a hangja odavág, nem lehet nem szeretni! A The Struts dalai pedig a legborúsabb napot is képesek feldobni: hajat-szélben-lobogtatós, táncra-ingerlő, kocsiban-letekert-ablak-mellett-hallgatós, felpörgetős dalok, muszáj repeaten hallgatni őket!
Na persze, hogy csokikészítésre inspiráltak...:D A cél az volt, hogy minél tiritarkább, csillogóbb, és ízében is figyelemfelkeltő csoki készüljön :))
A The Struts tiszteletére itt a glam rock csoki, badumm-tss!


Hozzávalók:
200 gr tejcsoki
150 gr magozott meggy
10-12 szem pezsgős cukor (eredetileg robbanós cukrot akartam, de sehol nem lehetett kapni, így fizzy pez maradt helyette :D)
4-5 csipet gyömbér
2 kiskanál cukor
0,2 dl meggypálinka 
6 gr tortazselé (egy kis zacskó fele)
maradék transzferfóliák, csillámzselé, cukordíszek, lüszterpor

Elkészítés:
A maradék transzferfóliákat méretre vágom és beteszem a mágneses csokiformába.
Temperálom a tejcsokit, elkészítem a csokiburkokat. Miután megszilárdultak, apróra tört pezsgős cukrot teszek beléjük.
Most jöhet a meggyzselé: a meggyeket összeturmixolom és átszűröm egy szitán, míg sima meggylét kapok. Hozzáadok két kiskanál cukrot és gyömbért, míg az íze egészen karakteres csípős-savanykás nem lesz. Felforralom a zseléporral, végül hozzákeverem a pálinkát. Amikor a zselé kihűl, kiskanállal a csokiburkokba adagolom. Hűtöm egy pár percig, temperálom a maradék csokit, és lezárom a bonbonokat. Miután kiszedem őket a bonbonformából, azokat, amelyeket nem transzferfóliával díszítettem, megkenem egy kis csokival, és cukordíszeket ragasztok rájuk, lüszterporral, vagy ehető csillámzselével dekorálom őket.



It happens that one goes to work, guilelessly puts in some chillout music, for instance Sailing from Mike Oldfield and boom, finds herself eye to eye with the young Freddie Mercury! Then there's no stopping, instead of working, she is researching until she finds out that the young man is the singer of a band called The Struts and then for a week she's listening to their songs on repeat because they are addictive!
In Youtube comments a lot of pompous metaphors, such as: they are the new Queen; Luke, the singer is like Freddie, Mick Jagger, Steven Tyler, David Bowie etc. For me it is enough that the guys are trying to bring back one of my favourite musical genres, 70s glam rock, which is praiseworthy as we are not spoiled nowadays with such music. And how does it feel to read that Luke's stage costumes are designed by Zandra Rhodes?! Oh yeah!
Luke is the kind of frontman that a rock band needs: he has style, charisma, smile on his face and his voice is superb, it's impossible not to love him! The songs of The Struts can cheer up even the gloomiest days: they are hair-in-the-wind, inspiring-to-dance, listening-while-driving type of songs!
And of course they inspired me to make chocolate...:D My aim was to make colourful, glittering bonbons whose flavour also strikes :))
So in honor of The Struts, here is the glam rock chocolate, badumm-tss!


Ingredients:
200 gr milk chocolate
150 gr sour cherry
10-12 pieces of fizzy candy 
4-5 pinches of ginger
2 small spoons of sugar
0,2 dl cherry palinka (or any other drink that contains at least 45% alcohol)
6 gr jelly powder
leftover transfer sheets, glitter jelly, candies

Recipe:
I cut the leftover transfer sheets to size and I put them in the magnetic mould.
I temper the milk chocolate, I prepare the bonbon shells. After they get solid, I put crushed fizzy candies in them.
Now comes the sour cherry jelly: I blend the cherries and sieve them until I get plain juice. I add two spoons of sugar and ginger until its flavour becomes characteristic spicy-sour. I boil it with the jelly powder, finally I mix it with palinka. When the jelly cools down, I put it in the chocolate shells with a spoon. I put them in the fridge for a while; I temper the leftover chocolate and I seal the bonbons. After I take them out of the mould, I smear a bit of chocolate on the top of those that were not decorated with transfer sheets, and I glue candies on them or I decorate them with luster dust and edible glitter jelly.

ribizlis-rózsaborsos // red currant-rose pepper

Az alábbi bonbon a tesóm szülinapjára készült. Általában ha valahova látogatóba megy az ember, akkor házi pálinkával kínálják - nos, nálunk a ribizlibor a menő, házi gyártású aperitif. Sajnos egy-két éve már nem termett elég ribizli a bokrokon, úgyhogy ki kellett vágni őket és újakat ültetni helyettük, ezeknek az első termése most érett be. És ha már így alakult, természetesen nem tudtam megállni, hogy ne kerüljenek bonbonba :D A ribizli olyan kellemesen savanykás, és mindig az volt az érzésem, hogy a rózsabors jól passzol az efféle gyümölcsökhöz, úgyhogy nem is kellett sokat töprengeni a ganache összetételén :)


Hozzávalók:
100 gr fehércsoki
200 gr étcsoki
0,4 dl ribizlilé
0,1 dl pezsgő
5-6 szem rózsabors
egy kiskanál vaj
3-4 szem liofilizált vörösáfonya

Elkészítés:
A ganache-hoz először felmelegítem a ribizlilét és a vajat, valamint a mozsárban apróra tört rózsaborsot. Hozzáadom a 100 gr fehércsokit, összekeverem, végül hozzáöntök egy kis pezsgőt, ami kellemesen feldobja majd a krémet.
Temperálom az étcsokit, és megtöltöm a bonbonforma mélyedéseit, majd kiöntöm a felesleget. Miután megszilárdult a burok, megtöltöm a krémmel, és beteszem a hűtőbe. Amikor a töltelék megbőrösödik, lezárom a bonbonokat. A talp megdermedése után kiütögetem őket a formából. Díszítésként a maradék temperált csokival liofilizált vörösáfonya darabkákat ragasztok a tetejükre.


These bonbons were made for my sister's birthday. Usually when one visits someone, they are offered home made pálinka - well, our cool, home made aperitif is redcurrant wine. Unfortunately in the last couple of years the bushes didn't grow enough berries so we had to cut them out and plant new ones. The first portion of redcurrants became ripe nowadays and obviously I couldn't withhold myself from putting them into chocolate :D Redcurrants are pleasantly sour and I always had the feeling that rose pepper goes well with such fruits, so I didn't have to speculate too much on the ingredients of the ganache :)


Ingredents:
100 gr white chocolate
200 gr dark chocolate
0,4 dl redcurrant juice
0,1 dl champagne
5-6 rose peppers
one spoonful of butter
3-4 lyophilised cranberries

Recipe:
I warm up the redcurrant juice, the butter and the crushed rose peppers. I add 100 gr white chocolate and I stir the mixture, finally I pour 0,1 dl champagne in it, which will zing up the ganache. 
I temper the dark chocolate and I fill the cavities of the mould, then I get rid of the excess. After the shells harden, I fill them with the cream and I put the mould in the fridge. When the filling sets, I seal the bonbons. I take them out of the mould and I decorate them with pieces of lyophilised cranberries: I stick them on the top with tempered chocolate.

Tokaji boros // Tokaji wine

Ez egy nosztalgikus post lesz :) Ilyenkor, a félév végén mindig abban a "szerencsés" helyzetben vagyok, hogy mint doktori hallgató (mégnemtanár-márnemdiák) elmerülhetek a vizsgáztatás örömeiben. Az eredmény általában kiábrándító, viszont a tapasztalat maga nagyon érdekes. Azt vettem észre magamon, hogy a "power position"-be kerülve kijön belőlem a vérengző vadállat, és amikor száz ember ül a nagy előadóban, és írják a dolgozatot, egyszerűen idegesít a puskázásuk. Félreértés ne essék, én magam is rengeteget puskáztam annak idején, nem ez háborít fel önmagában, hanem az, hogy ezek a mai diákok letöltik a tananyagot az okostelefonjukra, berakják a pad alá, aztán ott tapizzák, és azt hiszik, hogy a tanár meg a felügyelők nem látják. Látványos tévedés! A mi időnkben a puskázás amolyan nemes versengés volt a tanár meg a diák között (legalábbis én így éltem meg XD gondolom a tanárok nem annyira...). Mindig újabb technikákat kellett kitalálni és tökélyre fejleszteni, hogy ne vegyék észre, és a telekörmölt, különböző helyekre eldugott papírfecnik nemcsak a találékonyságot fejlesztették (:D), hanem míg leírtuk a tanulnivalót, a nagy részét meg is jegyeztük. Megtanultunk közben jegyzetelni, mert azokra a bélyegnyi papírdarabkákra bizony csak a legesleglényeg fért oda, és a kézügyességünk is fejlődött, mert kihegyezett 0.5-ös rotringheggyel írni bizony nem egyszerű mulatság. Aztán persze az első lebukás után (jobb esetben még előtte) mindenki rájött, hogy ha a bal keze nem az asztalon van, és nagyon lefelé néz, a tanár egyből rá fog jönni, hogy puskázik. 
Na, az okostelefonok generációja mit sem tud ezekről a dolgokról. Azt hiszik, elég betömni a pulóverükbe a telefont, és akkor már láthatatlan lesz, és á, egyáltalán nem gyanús, hogy a feje a köldökében van, és bal kézzel ezerrel görget, hogy megtalálja a digitális anyagban a keresett választ... pfff. Amúgy is utálom az okostelefonokat, de amikor ilyen látványosan semmibe veszik és hülyének nézik az embert, na attól aztán végképp felmegy bennem a pumpa.
Egyébiránt igazán nosztalgikus az egyetemen ilyen fiatalok közt lenni (nem mintha én olyan vén lennék), és eszembe juttatja, amikor tizenpár évvel ezelőtt magam is oda jártam. Mennyire más volt akkor az életem! De a nosztalgiáról szóljon inkább az alábbi történet és a zene :) 
Na és persze a hozzá való csoki! A minap sajtos-boros vacsorát rendeztünk otthon (mert néha jó :))), és sikerült választani hozzá egy 2014-es Tokaji Furmintot: édes, könnyű, gyümölcsös fehérbor, amit amint megízleltem, tudtam, hogy csokiba kívánkozik. Tejcsokit párosítottam hozzá, fehérrel túl édes lett volna, az étcsoki pedig ki volt zárva, nem illettek volna össze. Hozzáadtam egy kis kakukkfűmézet, ami némi fűszeres felhangot teremtett - épp csak finoman, az utóízében, bár a méz íze így is jól kijön a trüffelben. A végeredmény selymes, olvadós csokikrém, behűtve finom desszert :)

Hozzávalók:
110 gr tejcsoki
0,1 dl tejszín
0,2 dl Tokaji furmint
egy kiskanál vaj
két kiskanál kakukkfűméz

Elkészítés:
A tejszínt felmelegítem, és összekeverem a csokival. Hozzáadom a vajat és a mézet, míg meleg, végül beleöntöm a Tokajit is, és simára keverem. Egy éjszakán át a hűtőben hagyom. Másnap kézzel kis krumplikat formázok a krémből, és kakaóporba hempergetem őket. Kis mennyiségű arany lüszterporral díszítettem őket.


Nosztalgia
A doboz csak úgy véletlenül, szinte a semmiből került elő egy rendrakás alkalmával. Noémi lassú mozdulattal söpörte le a port a tetejéről. Hosszan nézte a világoskék kartont, titkok rejtőjét, mielőtt letelepedett a szőnyegre, és kibontotta. Felszínes pillantásból is látszott, hogy régi emlékek lapulnak benne, kincsek, majdnem elfeledettek: fotók, apró-cseprő tárgyak, préselt virág, őszi séta alkalmával gyűjtött vörös falevél…
Noémi óvatosan emelte fel a legfölső fényképet, kilencedikes osztályképét. A fiúk szamárfület mutattak egymásnak, nyelvet öltöttek a fotósnak, míg a lányok megilletődve ücsörögtek a kényelmetlen padokban. Baloldalt bordó pulcsiban, álmodó arccal ült Vica, akivel később elválaszthatatlanok lettek. Középen fülig érő szájjal vigyorgott Lili, szinte virított a képről. És ott kucorgott ő is a hátsó sarokban, még rövid hajjal, szende félmosollyal, az elmaradhatatlan csuklószorítóval a karján. Noémi lerakta a fotót, és beletúrt a paksamétába.
A következő képet sokáig nézte elmerülten, pedig csak egy aranysárga naplementét ábrázolt, gazoktól kócos domb felett. Akkor volt az egyéves évfordulójuk, és visszatértek a helyszínre, ahol először érezték, hogy összetartoznak. A képet ő készítette, míg Noémi a bolyhos tavaszi virágok között válogatott, amiket később lepréselt és beragasztott a naplójába.
Újabb  fényképet húzott elő, amin a levelüket hullató juharfák alatt állt, egy halomnyi vörös levelet hajított maga fölé. Kivette a dobozból a törékennyé száradt levelet. Tétován forgatta ujjai között, míg meg nem állapodott a fonákjánál, amire ezüst színű festékkel pingálták: “Szerelmes levél Danitól”. Gyorsan félretette a képpel együtt, és találomra kivett még egy fotót a kupacból. Elmosolyodott, ahogy megpillantotta a három viháncoló kölyköt, akik egyszerre cibálták ugyanazt a gitárt. Lili próbálta lefogni a húrokat, Dani igyekezett volna játszani, de a másik oldalán Noémi pengetett összevissza. Előttük tábortűz égett, felette bográcsban főtt a paprikás csirke. Ez is egy volt Lili vidám kerti partijai  közül, amin többnyire négyen vettek részt: a szervező maga, barátja Pali, az ő haverja, Dani és Noémi. Így visszagondolva egész természetesnek tűnt, hogy Danival egymásra találtak. És mennyit nyúzták őt a kerti partikon, hogy játsszon! Néha kijelentette, hogy inkább zenegéppé változik, akkor legalább az aprót zsebre tehetné. De azért mindig elhozta a gitárt, és türelmesen pengetett a többiek többszólamú, hamis nótázásától kísérve. A gitár nyakára néhány szalag volt kötve – világoskék, fekete, sötétkék, zöld – sorrendjüket Noémi még az évek távlatából is fel tudta idézni.
Újabb osztálykép került a kezébe, a tizenegyedikes. A haját még mindig kislányos copfokban hordó Vica mögött ült, Dani mellett. Dani fekete Def Leppard-pólót és szokásos csuklószorítóját viselte; hullámos haja szertelenül hullott a vállára. Ez volt az az év, amikor az első félévben végig egy padban ültek, és Dani hagyta, hogy Noémi lessen róla matekdolgozatok alatt. Valamikor késő ősszel aztán rájött, hogy egyszerűbb lenne korrepetálnia őt, és attól kezdve hetente kétszer együtt tanultak. Ezekből a “szinten tartó foglalkozásokból”, ahogy Dani nevezte őket, rendszerint végeérhetetlen beszélgetések, esetenként végeérhetetlen enyelgés kerekedett, ami csak akkor szakadt félbe, amikor besötétedett, és Daninak haza kellett mennie.
A fényképek halma mellől kiszárított, feketévé sötétült szirmú rózsa került elő. A szárára kötött rózsaszín szalagra gyűrődéseket nyomtak a dobozban töltött évek. Tavasszal kapta, a születésnapjára. A város feletti “burzsuj-dombon” ültek, az elhagyatott utca közepén, felettük a felhőtlen kék ég, körülöttük a gondozott sövénnyel szegett villák. Dani a Two steps behind-ot, a Crazyt és az Every time I look at you-t játszotta neki. Szabadok voltak és boldogok.
Noémi figyelmét egy színes fotó sarka keltette fel. Jól emlékezett – az ő macis pulcsija töltötte be a kép felét, mögötte hosszú haja takarta az arcát. Az első vitájuk. Érettségi előtt néhány hónappal Dani bejelentette, hogy Szegedre felvételizik, csak második helyen adja be jelentkezését fővárosi egyetemre. Noémi már akkor tudta, hogy ez fog a kapcsolatuk végéhez vezetni. Dühös volt Danira és saját magára, amiért nem bízott eléggé sem benne, sem önmagában. Dani viccelődő fotózással próbálta elütni az ellentétet, és azt hangoztatta, hogy még annyi dal van, amit el kell játszania Noéminak. Végül elnapolták a kérdést.
Azután két gemkapoccsal összefogott kép következett: az egyiken Dani a Tisza partján ült gitárjával az ölében, körülötte három sörösüveg. Amint teljes átéléssel játszott valamit, előrelógó haja miatt alig látszott az arca. A másik kollégiumi szobájában készült, ahol poszterekkel kitapétázott falnak dőlve az ágyán olvasott. Ezeket az egyetemről küldte Noéminak egy rövid levéllel együtt, nem sokkal a beiratkozás után.
Ahogy Noémi tekintete visszasiklott a dobozra, egy teleírt lapon állapodott meg. Love bites - egy dalszöveg, amit tőle kapott karácsonyra egy válogatás cédével és a kis plüssmacival együtt, ami azóta is a lámpájára akasztva függött. Akkoriban ez volt Dani kedvenc száma, a szilveszteri bulira meg is tanulta és eljátszotta a jelenlévőknek. Az jó kis buli volt. Liliéknél találkoztak néhányan az osztályból, Lili anyukája szendvicseket készített nekik, vett egy raklapnyi dobozos sört és csipszet. Egész éjjel zenét hallgattak, ettek, activityztek, énekeltek – Noémi kissé irigykedve gondolt vissza arra a felszabadult időszakra.
Kíváncsian kukkantott be a keze ügyébe akadó borítékba, majd hangosan felnevetett. Félig elmosódó sziluettek, éles színek – a sorozat a Whitesnake koncertjén készült, amire Dani második együtt töltött nyaruk során hívta meg. Noémi próbált fényképezni, inkább kevesebb, mint több sikerrel. A tömeg könyörtelenül lökdöste, ráadásul a magasba emelt kezek kitakarták a színpad nagy részét. Néhány képen azért apró alakokként felbukkantak a zenészek is.
A koncertképek mögött egy gyűrött, zöld szalag lapult a boríték alján. Noémi a kezébe vette, kisimította. A gitár negyedik szalagja.
Miután a fél nyáron együtt vakációztak a Velencei tónál és sátoroztak a Gerecsében, otthon Dani előhívatta a nyári fotókat. A sorozatból külön másolatot kért Noéminek, amit azzal adott át, hogy a borítékban megtalálja annak bizonyítékát is, hogy sosem fogja elhagyni. Három nappal később elutazott Szegedre. Három hónappal később már nem voltak együtt.
Noémi nagyot nyelt. Keze elernyedt, a szalag lehullott. Hosszan bámulta azt a zöld csíkot a kék szőnyegen. Miért, hogy az azóta eltelt több mint tíz év ellenére úgy fáj visszagondolnia erre?
Indulatosan pakolta vissza a képeket, száraz virágot, falevelet a dobozba, és becsukta. Felkapta, a konyhába ment, felnyitotta a szemetest. A mozdulat félbeszakadt. Lenézett a dobozra. Visszament a szobába, berakta a szekrénye legfelső polcára, hátulra, ahol addig is megbújt, félig elfelejtve.
Amikor az asztalához lépett, hogy leüljön olvasni, megtorpant. A zöld szalag ott feküdt a padlón a lába előtt. Felvette. Kinyitotta az ablakot, kinézett a bárányfelhős égre. Kinyújtotta a karját és elengedte a szalagot.
A tavaszi szellő megpördítette, magával sodorta, el a messzi kék égbe.



This post is about nostalgia :) At this time, the end of the academic year I'm in the "fortunate" position that as a doctoral student (not-yet-teacher, not-student-anymore) I can submerge in the joys of overseing&controlling exams. Results are usually disillusioning but the experience itself is very interesting. I observed that in "power position" the bloodthirsty beast rears its head in me: when a hundred students are writing the exam in the auditorium, I am annoyed by their cheating. Do not misunderstand me: I was cheating a lot in my time, this in itself is not scandalous, but the fact that today's students only download the material on their smartphones, they put it under the table then scroll up and down, and they think that the teacher and the overseers won't notice it... Spectacular mistake! In my time cheating was a kind of noble rivalry between teachers and students (at least that's how I perceived it XD probably the teachers didn't...). We always had to come up with and elaborate new techniques that couldn't be noticed and the full pages of scraps hidden into various places developed creativity (:D) and also while we wrote down the material, we memorised most of it. We learnt to take notes as on those tiny papers only the most important things could fit, and our manual skills improved as it is not easy to write with super-sharpened pencils. Then of course after being caught for the first time (or possibly even before that) everyone realised that if one's left hand is not on the table and one is looking down too much, the teacher will notice that he's cheating.
Well, the generation of smartphones doesn't know anything about these things. They think it's enough to put the phone in their pullover, then it'll become invisible, and nooo way, it's not suspicious at all that his head is in his bellybutton and he's scrolling in order to find the answer in the digital material.... pfff. I hate smartphones anyway, but when one is so spectacularly ignored, then I get really angry.
Apart form that it's nostalgic to be among such youngsters (not as if I myself was so old), and it reminds me of the time when I was frequenting university. My life was so different! But let the story below and the music talk about nostalgia :)
And of course the chocolate! Some days ago we had a cheese-wine dinner (because sometimes it's good :))) and I chose a 2014 Tokaji Furmint (king of wines, wine of kings!): sweet, light, fruity white wine and as soon as I tasted it, I knew that it wants to be in chocolate. I paired it with milk chocolate because white would have been to sweet and they wouldn't have fitted with dark. I added some thyme honey, which created a bit of aromatic tone - just slightly in the aftertaste, although the honey flavour still comes out in the truffle. The product is silky, melting chocolate cream, a nice dessert when chilled :)

Ingredients:
110 gr milk chocolate
0,1 dl cream
0,2 dl Tokaji furmint

Recipe:
I warm the cream and I mix it with the chocolate. I add the butter and the honey while it's still warm, finally I also add the Tokaji wine and I stir it until it gets smooth. I leave it in the fridge for a night. The next day I make little potatoes of the cream and I roll them in cocoa powder. I decorate them with a tiny bit of golden luster dust.




Nostalgia
The box appeared accidentally, out of the blue in the course of a tidying up. Noemi slowly swept off the dust of its top. For a while she stared at the light blue cardboard, keeper of secrets, before she sat on the carpet and opened it. Even from a superficial glance it was evident that old memories laid inside, treasures, almost forgotten: photos, knick-knacks, dry flower, red leaf collected during an autumn walk…
Noemi carefully lifted the topmost photography, her class photo from ninth grade. The boys were giving bunny ears to each other and sticking their tongues out at the photographer, whereas the girls were sitting embarrassedly in the uncomfortable benches. Eve, with whom they became inseparable, was sitting on the left in purple pullover and with a dreamy face. Lili was grinning broadly in the middle, she was almost beaming. And he was squatting there too, in the back corner, with short hair, meek smile and the ever-present wristband on his arm. Noemi put down the photo and dug into the pack.
She looked at the next picture for a long while, even though it depicted only a golden sunset above a hill rumpled with weeds. It was their first year anniversary and they returned to the scene where they had felt for the first time that they belonged together. He took the picture while Noemi was selecting the fuzzy spring flowers, which she then dried and pasted in her diary.
She pulled out a new photo, in which she was standing under maple trees that were losing their leaves, throwing a heap of red leaves above herself. She took the fragile, dry leaf from the box, hesitantly spun it between her fingers until it settled at the back side, on which it was painted with silver paint: “Love leaflet from Danny”. She quickly put it aside together with the photo, and then randomly took another snapshot from the pile. She smiled as she got sight of the three frolicking kids, who were pulling the same guitar. Lili tried to press the strings down, Danny struggled to play the guitar, but on the other side Noemi was plucking the strings randomly. In front of them a campfire was burning, above that chicken paprikash was being cooked in a cauldron. It was one of Lili’s cheerful garden parties, at which usually four of them participated: the organiser herself, her boyfriend, Paul, his friend, Danny and Noemi. Thinking back it seemed almost natural that they got together with Danny. And how much they were torturing him to play at the garden parties! Sometimes he stated that he would rather become a jukebox then at least he could keep the change. But he still brought the guitar and he played patiently, followed by the polyphonic, false singing of the others. Four ribbons were tied on the neck of the guitar – light blue, black, dark blue, green – Noemi could recall their order even from the distance of time.
Another class photo got into her hand, eleventh grade. She was sitting next to Danny, behind Eve, who still wore her hair in braids. Danny was wearing a black Def Leppard tee and his usual wristband; his wavy hair playfully fell on his shoulders. This was the year when they were sitting in the same bench during the first semester and Danny let Noemi copy during math tests. In late autumn he realized that it would be easier to teach her and from that time they studied together twice a week. These “level-keeping classes”, as Danny called them, usually turned into endless talking, occasionally endless dalliances, which were interrupted only when it grew dark and Danny had to go home.
From beside the pile of photos a dry, blackened rose turned up. The years spent in the box imprinted wrinkles on the pink ribbon tied on its stem. She received it in spring, for her birthday. They were sitting on the “bourgee hill” above the town, in the middle of the abandoned street, above them the cloudless sky, around them villas fringed with trimmed hedges. Danny played Two Steps Behind, Crazy and Every Time I Look at You for her. They were free and happy.
Noemi’s attention was drawn to the corner of a colourful photo. She remembered well –her pullover with teddies filled in half of the picture, behind that her long hair covered her face. Their first quarrel. A couple of months before the final exam Danny announced that he’d apply to S., and would hand in his application to a university in the capital only in the second place. Noemi knew it even then that this would lead to the end of their relationship. She was angry with Danny and with herself that she trusted neither him, nor herself enough. Danny tried to get over the conflict with jesting photography, and said that there were so many songs that he had to play for Noemi. Finally they postponed the issue.
Then two pictures came, clasped together by a paper clip: in one of them Danny was sitting on the bank of the T. River, surrounded by three bottles of beer, with his guitar in his lap. As he enthusiastically played something, his face could hardly be seen because his hair hung into it. The other was taken in his dormitory room where he was reading on his bed, leaning against the wall decorated by posters. He sent these to Noemi from the university together with a short letter, not long after the registration.
As Noemi’s gaze turned back to the box, it fixed on a page full of text. Love Bites – lyrics that she received from him at Christmas, together with a compilation CD and the small teddy bear that hung on her lamp ever since. At that time this was Danny’s favourite song, he even learnt it for the New Year’s Eve party, and he played it for those present. That was a good party. Some of them from the class met at Lili’s, her mum made sandwiches, bought a pallet of beer and chips for them. They were listening to music, eating, playing activity and singing all night long – Noemi thought back on that time with a bit of envy.
She curiously peeped into the envelope close to her hand then laughed out loud. Blurry silhouettes, sharp colours – the series were taken at a Whitesnake concert, to which Danny invited her during their second summer spent together. Noemi tried to take pictures with rather less than more success. The crowd relentlessly jostled her; moreover, the raised hands obscured most of the stage. In some of the pictures the tiny figures of the musicians showed up.
Behind the concert photos, in the bottom of the envelope, a wrinkled green ribbon laid. Noemi took it in her hands and smoothed it. The fourth ribbon of the guitar.
After they spent half of the summer holiday at Lake V. and camped in the G. mountain, Danny got the summer photos developed at home. He asked for a copy of the series for Noemi, which he handed over by saying that in the envelope she would find the proof that he would never leave her. Three days later he travelled to S. Three months later they weren’t together any more.
Noemi swallowed. Her hand slackened, the ribbon dropped off. She stared at that green line on the blue carpet for a while. Why, that despite the more than ten years that had passed by since then, it hurts so much to think back on this?
She impetuously packed back the pictures, dry flower, leaf into the box and closed it. She picked it up, went in the kitchen and opened the rubbish bin. The movement interrupted. She looked down at the box. Then she returned in the room and put it on the topmost shelf of her wardrobe, in the back, where it had been hiding until then, half forgotten.
As she stepped to her desk in order to sit down and read, she recoiled. The green ribbon laid there on the floor, in front of her feet. She took it. She opened the window, looked out at the buttermilk sky. Then she stretched out her arm and let go of the ribbon.

The spring breeze whirled it and swept it away into the distant blue sky.
