A csokiöntésről // Concerning chocolate moulding

Amikor belevágtam ennek a blognak az írásába, több dolog is motivált. Egyrészt az, hogy összegyűjtsem a receptjeimet, és ne felejtsem el őket (közeli ismerőseim jól tudják, hogy a feledékenységgel folyamatos kézitusát vívok), másrészt pedig, hogy a csokikészítés minden mozzanatát megosszam a leendő csokikészítőkkel, nehogy azokba a hibákba essenek, amikbe én. Az első néhány hónapot, amikor nekiláttam a csokizásnak, ilyen vagy olyan módon elrontott csokik kísérték végig. Volt, amibe teljesen véletlenül (észre sem vettem, hogyan) belement egy csepp víz, másnál túl vastag lett a csokiburok, nem lett szép a talpazás, kifelejtettem egy munkalépést stb. stb. Szóval sokat kellett gyakorolni, mire minden úgy ment, ahogy mennie kellett. 
Ezért a következőkben igyekszem nagyon pontosan leírni minden lépést.
Ott tartottunk tehát, hogy van egy adag temperált csokink. Ekkor két lehetőségünk van:

a) sima táblás csokit készítünk
A csokit beleöntjük a csokiformába (ügyelve, hogy az űrtartalmánál ne legyen több, mert akkor ki fog folyni). Jól megragadjuk és a szomszédok nagy örömére hozzácsapkodjuk a konyhapulthoz - módszeresen, a széleit is. Ettől a csoki szépen szétterül, és a légbuborékok feljönnek a felszínére. Ha ezzel megvagyunk, jöhet a szórás: az előre kikészített fűszerek, magvak, szárított virágok, cukordíszek, aszalt/liofilizált gyümölcsök stb. közül rászórunk egy adagot. Itt szabadon engedhetjük a fantáziánkat, végtelen lehetőségünk van. Én speciel általában két, maximum háromféle ízt szoktam kombinálni (ezek közül egy fűszer, és egy vagy kettő gyümölcs/virág/mag stb.), meg néha adok hozzá díszítést - ennek során célszerű az ízek és színek összhangjára odafigyelni. Amennyiben közben látszik, hogy a csoki kezd szilárdulni, a nagyobb darabokat érdemes egy leheletnyit belenyomni, hogy biztosan megragadjanak. Ha kész vagyunk, mehet is a hűtőbe, és amikor megszilárdult, könnyedén ki lehet borítani a formából. Azt, hogy kész a csoki, onnét lehet tudni, hogy alulról megtekintjük a polikarbonát formát (még véletlenül se fordítsuk fejjel lefelé!! :D), és ha látszik, hogy a csoki elvált a formától, akkor jó.

b) töltött csokit/bonbont készítünk
Hasonlóképp kezdődik, mint az előző: a formába öntjük a csokit; ha bonbon készül, akkor a szilikonlapáttal el lehet teríteni a csokit a lyukak közt, így több darab készülhet, mint ha mindent egy helyre öntünk. Jöhet a ritmikus csapkodás, és ha megvagyunk, egy odakészített sütőpapír fölött megfordítjuk a formát (itt-ott lehet olvasni, hogy a csoki kirázása előtt 5-10 vagy ki tudja hány percet kell várni, hogy elkezdjen szilárdulni a formában. Nekem az a tapasztalatom, hogy semmi szükség a várakozásra, így is épp elég vastag marad majd a burok). Általában a gravitáció nem elegendő, hogy az összes felesleg kifolyjon a formából, így nyugodtan alkalmazhatunk erőszakot: a spakli, vagy egy kanál nyelével alaposan ütögessük meg a forma alját, hogy az utolsó felesleges csepp is távozzon. Amikor már csak vékony csíkocskák potyognak, akkor visszafordítjuk a formát, és spaklival lehúzzuk róla a felesleget, majd fejjel lefelé a papírra helyezzük, és megvárjuk, hogy félig megszáradjon. Közben még ki fog folyni egy kicsi, így mielőtt átrakjuk a hűtőbe, érdemes még egyszer lehúzni.

Amikor megszilárdult a burok, beletöltjük a tölteléket. Ez a kedvenc lépésem, nincs annál gusztább, mint a töltelék a csokiburokban :)) Érdemes legalább 1-2 milliméteres peremet hagyni, különben nem fogjuk tudni lezárni a bonbonokat. A csokit visszarakjuk a hűtőbe, hogy a töltelék is elég szilárd legyen, hiszen arra kerül majd még egy réteg csoki. Most nyugodtan elmehetünk megnézni 3-4 részt a kedvenc sorozatunkból, amíg várakozunk. Még véletlenül se próbálkozzunk a töltelékre idő előtt meleg talpnak való csokit önteni, mert fel fog jönni a felszínére, lyukacsos marad stb. szóval, bár finomnak így is finom, nem lesz túl esztétikus.
Amennyiben megszilárdult a töltelék, temperáljuk a megmaradt csokinkat, és öntsük rá a formára. Oszlassuk el, majd ismételten ütögessük a konyhapulthoz. A táblás csokink ezennel kész is, a bonbonnál utolsó lépésként egyetlen mozdulattal húzzuk le a felesleges csokit - ha túl sok marad a formán, az sem nagy baj, mert miután megszilárdult, le lehet majd törögetni a bonbonokról, ám ha kétszer húzzuk le a spaklival, ismét csak elcsúfítjuk a bonbon talpát. A forma mehet vissza a hűtőbe, és nincs más hátra, mint várni egy kicsit, és már ki is szedhetjük a kész csokit a formából!


Several things inspired the writing of this blog. First, I wanted to collect my recipes and not to forget them (my friends perfectly know that I'm constantly combatting forgetfulness), second, to share every phase of chocolate making with future chocolatiers so they can avoid the mistakes that I had made. When I started making chocolate, the first few months were marked by spoiled bars. A drop of water fell in one of them (I didn't even notice when), another had too thick shell, the bottom wasn't handsome enough, I forgot one phase of the procedure, etc. etc. So I had to practice a lot until everything went as it should be.
Therefore in the following I'll try to describe every step as precisely as possible.
So we had some tempered chocolate after the previous post :D Now we have two possibilities:
a) we prepare a simple chocolate bar
We pour the chocolate in the mould (while being careful that the amount is not more than its capacity, otherwise the chocolate will overflow). We grab the mould and, to the joy of the neighbours, we tap it dinamically to the kitchen counter - methodically, even the edges. The chocolate will spread nicely and the air bubbles will rise to the surface. Then we can sprinkle it with the previously prepared spices, seeds, dry flowers, candy decorations, dry/lyophilised fruits etc. We can let our imagination run wild, we have endless possibilities. Usually I combine two or three flavours (one spice and one or two fruits/flowers/seeds etc.), and sometimes I add a bit of deco - it's practical to take into consideration the harmony of flavours and colours. In case the chocolate starts to solidify, the bigger pieces should be slightly pushed into it so they would get stuck properly. When we're done, it can go in the fridge and after solidification the chocolate can be easily removed from the mould. If we want to get to know whether the chocolate is ready, we should take a look at the bottom of the mould (do not turn it over!! :D). 

b) we prepare filled bar/bonbons
It starts similarly as the previous one: we pour the chocolate in the mould; in case we prepare bonbons, we may spread it between the cavities with the silicone spoon. Then comes the rhythmical tapping and then we turn the mould over above a piece of parchment paper (one may read here and there that before shaking out the excess chocolate one should wait 5-10 minutes so the chocolate starts getting solid. My experience is that there is no need for waiting, the shell will be perfectly fine even like this). Usually gravity is not enough so we may apply force: knock the bottom of the mould with the handle of the scraper or a spoon so that even the last drop of excess will run off. When only thin drops are pouring, we can turn back the mould and scrape off the excess chocolate, then we place it upside down on the paper and wait until solidification starts. In the meanwhile a bit more chocolate will flow out, so before putting it in the fridge, we may scrape it off once more.
When the shell solidifies, we fill it with the filling. This is my favorite step, there's nothing more attractive than the filling in the shell :)) We should leave at least 1-2 millimetres below the edge otherwise we won't be able to seal the bonbons. We put the chocolate back in the fridge so the filling becomes solid enough too - as another layer of chocolate will be poured on it. Now we can go and watch 3-4 episodes of our favorite series while we're waiting. Do not try to pour the warm chocolate on the filling before time, because it's gonna rise to the surface, there will be holes etc. so, even though it will still be tasty, it won't be beautiful.
Once the filling solidified, we temper the leftover chocolate and pour it on the mould. We spread it and tap it on the counter. The chocolate bar is ready; in case we make bonbons, we should scrape off the excess with one move - it's not a big problem if a bit too much remains on the mould, as it can be broken off the bonbonbs after solidification, but if we scrape it twice, it's gonna spoil the bottom of the bonbons. The mould can go back in the fridge and we only have to wait a bit more until we can take the chocolate out of it!
