kakukkfűmézes // with thyme honey

Ti hisztek a tündérekben? Én igen, de persze nem azokban a repülő miniatűr virágokban, amik minden Disney rajzfilmben felbukkannak. Az én tündéreim a mitológiából érkeznek, legfőképp az írországi mítoszokból. Az írek tündérei szépek és szeszélyesek, elválaszthatatlanok a természettől, ugyanakkor bírják a mesterségeket is. Kegyesek azokhoz, akik jól bánnak velük, de kegyetlenül elbánnak azokkal, akik megsértik őket. Természetük ugyanannyira kettős, mint a világon minden: éjszaka és nappal, ég és föld, nyár és tél. Ősibbek mint maga az ember, a legősibb hiedelmek kapcsolódnak hozzájuk. Az én tündéreim a természetben élnek, és valahányszor kijutok a városból, mindig eltalálok hozzájuk. Ha felnézek az égre, a felhőkre, mindig érzem, hogy várnak rám a városon túl.
Valahogy így képzelem a tündérek édességeit: természetből vett alapanyagokkal készült, édes, de mégsem tömény, titokzatos. Ezért is örültem, amikor Itriben, az egyik kedvenc boltomban ráleltem a különböző virágok porából készült mézekre. Nem tudtam ellenállni a kakukkfűméznek, hiszen a fűszer is olyan friss aromájú. A kakukkfűméz édes és egy csöppet kesernyés, érződik benne a fűszeres felhang, épp ezért nem tudtam megállni, hogy ne tegyek néhány cseppet külön is a bonbonhüvelyekbe.



Hozzávalók:
200+100 gr étcsoki
0,5 dl tejszín
4+2 kiskanál kakukkfűméz
kakukkfű
1 teáskanál vaj
20 gr fehércsoki
kurkuma

Elkészítés:
A tejszínt felforralom, és beleszórok néhány csipetnyi kakukkfüvet. Lefedem, és egy éjszakát állni hagyom. Másnap leszűröm, megmelegítem, és összekeverem 100 gr étcsokival, egy kis adag vajjal, valamint 4 kiskanál kakukkfűmézzel. Felolvasztom és temperálom a fehércsokit, majd belekeverek egy-két csipetnyi kurkumát, amitől kissé sárgás lesz. Mintákat rajzolok a bonbonformába. Míg a díszítés megszilárdul, temperálok 200 gr étcsokit. Elkészítem a bonbonhüvelyt. Amikor megszilárdult, megkenem az alját egy kis kakukkfűmézzel, amire rátöltöm a ganache-t. Végül lezárom a bonbonokat.



Do you believe in fairies? I do, but of course not in those tiny flying flowers that pop up in every Disney movie. My fairies come from mythology, above all from Irish myths. The fairies of the Irish are beautiful and capricious; they are inseparable of nature, but they know crafts as well. They are gracious to those who treat them well, but are cruel to those who offend them. They have a dual nature just like everything in this world: night and day, earth and sky, summer and winter. They are more ancient than mankind itself, the most ancient beliefs are connected to them. My fairies live in the nature, and whenever I leave the city behind, I find them. When I look up in the sky, on the clouds, I feel that they are waiting for me outside of the city.
This is how I imagine the sweets of the fairies: made of natural materials, sweet but not dense, mysterious. That is why I was so happy when I found various types of honey made of different flowers in one of my favourite shops in Itri. I could not resist to buy thyme honey, after all the herb itself has such a fresh aroma. Thyme honey is sweet and a bit bitter, an aromatic overtone can be felt in it; therefore I had to put some drops of it in the bonbon shells.




Ingredients:
200+100 gr dark chocolate
0,5 dl cream
4+2 spoon of thyme honey
thyme
1 teaspoon butter
20 gr white chocolate
turmeric

Recipe:
I boil the cream with some pinches of thyme. I cover it and leave it for a night. The next day I sieve the cream, warm it up and mix it with 100 gr dark chocolate, a bit of butter and 4 small spoons of thyme honey. I melt and temper the white chocolate, then I add some turmeric, which gives it some colour. I decorate the cavities of the mould with the white chocolate. Until it gets solid I temper 200 gr dark chocolate. I prepare the bonbon shells. After they solidify, I smear a bit of thyme honey in each shell, on which I pour the ganache. Finally I seal the bonbons.
