Karácsonyi csokik // Christmas chocolates

Körülbelül tíz éve minden karácsonykor írok egy karácsonyi mesét. Ez már afféle hagyomány, amit idén sem akarok megszakítani. Mivel tegnap volt advent első vasárnapja, ezért ma közzéteszem az első részt.
Ebben az évben sok emlékezetes dolog történt velem, közülük az egyik, hogy eljutottam végre Carcassonne-ba, ami, mondhatjuk, a történelmi origóm: 18 évesen, amikor ott álltam kétségbeesve az egyetemválasztás előtt, végül a katharok miatt választottam a történészi hivatást. A vár örökre a részem marad, a történet hátterét is adja. Szereplőim egy része kitalált, mások (például Peire Autier és Viollet-le-Duc) valóban léteztek, mint ahogy a Cité és a katharok történelmének részletei is valódiak. 
Igazából az eretnekmozgalom kutatásának úttörője Déodat Roche volt a 20. század elején (aki 101 éves korában halt meg! Milyen lehetett egy történésznek végigélni az első és a második világháborút, majd a hidegháborút is...). Őt sok más kutató követte, talán leghíresebb közülük Emmanuel Le Roy Ladurie, akinek Montaillou c. zseniális könyve a 14. század eleji falu életén keresztül mutatja be az egykori eretnekek mindennapjait. Az angolszász kutatók csak 40-50 éve kezdtek érdeklődni a középkori eretnekmozgalmak iránt, de mára már rengeteg angol nyelvű tanulmány, monográfia és forrásgyűjtemény áll az érdeklődő rendelkezésére.
Alant a történethez illő zene, amit júniusban rongyosra hallgattam, míg órákon keresztül bolyongtam a várfalak közt. Egy francia zeneszerző, Eric Lévi műve, aki az eretnekmozgalom történelméből merített ihletet.

Mondani sem kell, már több adag karácsonyi csoki készült időközben, első körben a karácsonyvárókba. A következő meglehetősen egyszerű(nek tűnő :D) csokikhoz csupán némi kézügyességre és türelemre van szükség.

Hozzávalók:
150 gr étcsoki
50 gr fehércsoki
lüszterpor
matcha tea
aszalt és liofilizált gyümölcsök, fűszerek, kávébab, stb.


Elkészítés:
Sokféle karácsonyi szilikonformát lehet venni; én tavaly karácsonyra kétfélét kaptam: egy bonbonformát, illetve egy inkább sütikhez való, szélesebb lyukú formát. Most mindkettőt felhasználtam, és színezett fehércsokival díszítettem őket. Ez elég babra munka, a csokiadagokat különböző színű lüszterporokkal, és matcha teával színeztem (és természetesen minden alkalommal temperáltam), majd kifestettem a csokiformák megfelelő részeit. Ezután összeszedtem mindenféle otthon található gyümölcsöt, kávét, pisztáciát, mandulát, diót, levendulát, fűszert, és feldaraboltam, illetve összetörtem őket, hogy egyből meg tudjam majd szórni a csokik hátulját. Temperáltam az étcsokit, betöltöttem a formákba és minden darabot másféle "feltéttel" ízesítettem, akár egy mendiant-t. Végül a kész csokik egyes részeire még tettem egy kis csillogó lüszterport.
Bepakolhatjuk őket kis dobozkákba, vagy textilzsákocskákba, és ha megszámozzuk, el is készült a karácsonyváró :)

„Két napja a legkülönösebb iratra leltem. Eleddig úgy tudtam, az inkvizíció utolsó áldozata Peire Autier volt, ám e jegyzőkönyv szerint még jóval utána is perbe fogtak és eretnekséggel vádoltak egy parfait-t, bizonyos Raymond Garsie-t. Lassan haladok az olvasással, az iratot igen megviselte az idő, itt-ott olvashatatlanná kopott a szöveg. Amint a végére értem, megírom neked az eset kimenetelét. Tudom, hogy érdekelni fog, barátom.”

Angèle hátratűrte előrehulló haját. Negyedszer olvasta végig ugyanazt a bekezdést, és most, hogy erre ráeszmélt, lerakta a levelet. Vajon megvan még az a jegyzőkönyv? Fel kéne kutatni.
Beletúrt az előtte heverő halomba, megkereste a soron következő levelet, de sehol egy utalás a középkori jegyzőkönyvre. Sem az azután következőben. Surrogtak a régi, törékennyé száradt lapok, ahogy végigfutotta a rájuk rótt sorokat.

„A mi felvilágosodott korunkban, amikor az ész győzedelmeskedett az ostobaság, a babona és a vallás fölött, jóformán szégyen ilyesmit leírni – és nem is írnám, ha magam is nem győződtem volna meg róla saját érzékszerveimmel –: valamiféle megmagyarázhatatlan, félelmes lény járja a Cité utcáit. Kérlek nézd el szóhasználatom, de másképp nem nevezhetem, csak fantomnak. A hírt először a külső falnál lakók terjesztették el: rémisztő, szívszorongató érzetről pletykáltak, időnként önmaguktól mozgó bútorokról, éjszakánként csillapíthatatlan zokogás hangjáról, amitől nem tudják lehunyni sem a szemüket. Egy vén szipirtyó állítólag látott egy zöld köntösbe öltözött alakot, ahogy a gyilokjárón suhan, majd eltűnik.
Természetesen semmi hitelt nem adtam e történeteknek. Hanem oly makacsul tartották magukat, hogy végül felmentem egy este a Citébe. Végigsétáltam a kettős várfal közti töltésen. Az ott lakók már behúzódtak viskóikba, csak néhány kóbor eb és patkányok osztották meg velem társaságukat. Rossz előérzet kerített hatalmába, de igyekeztem legyűrni. A Balthazar torony felé tartottam épp, midőn a hátam mögött zaj hallatszott. Egy mosdatlan eb ücsörgött a St Laurent torony tövénél, először azt hittem, tán az motozott. Ám akkor újból hallottam a hangot. Hüppögést, mintha valaki magában sírna. Követtem, jóllehet közben igen besötétedett. Egy kunyhó mellé épített fészer mögül jött a hang s én abban a tudatban közeledtem, hogy most végre felfedem a tudatlanokat rémisztgető csirkefogót. Arra, amit láttam, azonban nem voltam felkészülve. Maga az ördög bámult rám összeégett, megbarnult bőrű férfi képében. Szemei helyén üres gödrök, haja itt-ott csomókban, feketére perzselődve; a legélénkebb képzeletű ponyvaíró nem teremthet ily iszonyatot. Hátrahőkölve elbotlottam, ám mire feltápászkodtam, hogy menekülőre fogjam, a jelenésnek nyoma veszett, csak valamiféle szúrós, égett húsra emlékeztető szag maradt utána.
Mondhatom neked, barátom, jó ideig messzire kerülni fogom a Citét ezek után.”

Angèle értetlenkedve forgatta a levelet. Ez nem lehet Pessolis képzeletének terméke. De akkor… Mi erre a magyarázat? Nagyot nyújtózott, elvégzett néhány fejkörzést. Mindjárt 5 óra, hamarosan zár a levéltár. Legjobb lesz, ha hazamegy és ír Amielnek.
Már a Zola Avenue-n sétált, útközben a város karácsonyi fényeit bámulva. Hiányzott a városa, Carcassonne; mindig hiányzott, de ilyenkor, karácsony előtt különösen. Beesteledett, mire végzett a vásárlással és hazaért. Otthon leült az asztalhoz és bekapcsolta a gépét, míg tűnődve rágcsált egy müzliszeletet. Ebben a pillanatban úgy érezte, sosem fog végezni a kutatásával; pláne nem, ha közben kísértethistóriákra lel. Mielőtt Eugène Viollet-le-Duc 1853-ban megkezdte a Cité rekonstrukcióját, a várfalak gyűrűi közt sok apró viskót építettek. Ma már szinte elképzelhetetlen, de akkoriban a középkori vár adott otthont a szegényeknek. Amit Jean-Henri Pessolis, a történész látott, lehetett egy vak koldus éppúgy, mint érzékcsalódás. Mégis nyugtalanító az a levél… És Raymond Garsie-t sem tudta hova tenni. Sok kathar parfait történetét ismerte, de róla még sosem hallott. No persze ez semmit nem jelent, elvégre nem ez a szakterülete. Ezért is fog most írni Amielnek.
Még be sem fejezte a gépelést, amikor megcsörrent a telefonja.
- Szia! – üdvözölte vidáman Béatrice, a húga. – Azt akarom csak kérdezni, hogy van-e már valami ötleted, mit adsz anyáéknak karácsonyra. Tudod, nyár végén elromlott a fűnyíró, és arra gondoltam, vehetnénk közösen egy újat.
- Jó ötlet! Benne vagyok. Jövő hétvégén hazamegyek, akkor megbeszélhetjük a részleteket.
- Szuper!
- Na és mizujs otthon, meg a Citében?
- Itthon minden rendben. Viszont képzeld, nemrég beszéltem Marie-val, tudod, az a barátnőm, aki a Citében dolgozik egy étteremben. Azt mondta, valami nagyon furcsa dolog történt ma az esti műszak előtt. Az étterem konyhájában volt egyedül, amikor a hátsó ajtó felől kaparászást és nyöszörgést hallott. Az a rész ott le van zárva, amikor nem fogadnak vendégeket, úgyhogy el tudod képzelni, hogy megijedt szegény. Kinézett a hátsó ajtón, de nem volt ott senki. Bezárta, mire a zajok újra elkezdődtek. Azt mondta, annyira baljós előérzete támadt, hogy azonnal hazament. Útközben hívta fel a főnökét, és rosszullétre hivatkozott.
Angèle-t kirázta a hideg.
- Nem lehet, hogy csak egy kóbor macska volt?
- Én is ezt kérdeztem Marie-tól, de azt állítja, biztos benne, hogy azt látta volna. Azt mondta, olyan nyomasztó volt az egész, mint valami Stephen King könyvben, és azon gondolkodik, hogy kivesz miatta pár nap szabadságot.
- Milyen véletlen egybeesés…- motyogta Angèle.
- Hogy?
- Semmi, csak pont ma… ma olvastam valami hasonlót a levéltárban.
- Az ember azt hinné, te kutatni jársz oda, nem horrort olvasni! – nevetett fel Béatrice.
- Ez nem vicces. Nem fogok tudni elaludni – kuncogott Angèle is.

Miután lerakta a telefont, hosszan bámult maga elé. Végül úgy döntött, folytatja a megkezdett e-mailt, és ezt is megírja Amielnek. Talán csak megindult a képzelete; egy kívülálló szemlélő biztosan talál valami racionális magyarázatot…







For approximately ten years I've written a Christmas tale at every Christmas. This is already a kind of tradition, which I don't want to interrupt this year either. Since yesterday was the first Advent Sunday, I publish the first part today.
In this year many memorable things happened with me. One of them is that finally I visited Carcassonne, which, we could say, is my historical starting point: at the age of 18, when I was desperate because I had to choose a university, in the end I chose history as my vocation because of the Cathars. The fortress remains part of me forever and it provides the backdrop for the tale. Some of my characters are imaginary, others (for example Peire Autier and Viollet-le-Duc) are real, just like the details of the Cité's and the Cathars' history too.
In reality the pioneer of the research on this heresy was Déodat Roche in the first half of the twentieth century (who died at the age of 101! How could it be for a historian to live through two world wars, then the cold war...). He was followed by many others; among them the most famous is probably Emmanuel Le Roy Ladurie, whose genial book, Montaillou depicts the everydays of the heretics through the life of this village in the beginning of the 14th century. Anglo-Saxon researchers became interested in medieval heresies only 40-50 years ago, but by today a vast corpus of English language essays, monographs and source books are at the disposal of those interested.
Above is the background music of the story, which I listened to all day long while I was wandering among the walls of the castle for hours and hours in June. It is the work of a French composer, Eric Lévi, who was inspired by the history of the heresy.

Needless to say, several rounds of Christmas chocolates have been made in the meanwhile, first of all for advent calendars. The following, (seemingly :D) simple chocolates require only manual skills and some patience.



Ingredients:
150 gr dark chocolate
50 gr white chocolate
luster dust
matcha tea
dried and lyophilized fruits, spices, coffee beans, etc. 

Recipe:

Many Christmas chocolate moulds can be bought; I got two for last Christmas: one bonbon mould and another one with larger cavities, for cookies. Now I used both of them and I decorated them with coloured white chocolate. This is quite a fussy work; I coloured the chocolate portions with various luster dusts and matcha tea (and of course I tempered them one by one), then I painted the adequate parts of the cavities. After that I collected every fruit, coffee, pistachio, almond, walnut, lavender, spices that I could find at home, I chopped or crushed them so I could sprinkle the bottom of the chocolates immediately. I tempered the dark chocolate, I poured it in the moulds and I flavoured the chocolates with various bits, just like mendiants. Finally I decorated certain parts of the finished bonbons with some glittering luster dust.
We can pack them in small boxes or textile sacks and if we number them, our advent calendar is ready :)

„Two days ago I found the most peculiar document. So far I thought that the last victim of the inquisition was Peire Autier; however, according to this protocol a parfait, a certain Raymond Garsie, was sued and accused well after him. I proceed slowly with the reading, the document is time-worn, the text is frayed and unreadable here and there. As soon as I finish it, I will let you know the outcome of the case. I know it will be of interest to you, my friend."

Angèle pushed back her hair. She had read through the same paragraph for the fourth time and now that she realised that, she put the letter down. Does that protocol still exist? It should be researched.
She dug in the pile in front of her, looking for the next letter, but there was no hint whatsoever to the medieval protocol in that. Nor in the one after that. The old, fragile papers were rustling as she skimmed through them.

„In our enlightened age, when reason has won over folly, superstition and religion, it is almost a shame to write this down - and I wouldn't even write it, had I not perceived it with my own senses –: some inexplicable, fearful creature wanders the streets of the Cité. Please forgive me for using such expression, but I cannot call it anything else but a phantom. The news were spread first by those living at the outer wall: they were gossiping about a frightening, heart-rending feeling, about furniture occasionally moving by itself, about the sound of unquenchable crying at night, due to which they could not even close their eyes. An old crone allegedly saw a figure dressed in a green robe as he was gliding on the battlements and then he disappeared.
Naturally I did not give any credit to these stories. But they were so persistent that finally one evening I went to the Cité. I walked on the outer parapet. Those living there had already taken shelter in their hovels, only some stray dogs and rats shared their company with me. I was overtaken by a sense of foreboding, but I tried to overcome it. I was on my way towards the Balthazar Tower when I heard a noise from behind. A grubby dog was sitting at the foot of the St Laurent Tower, at first I thought that it was the one that fumbled. But then I heard the sound again. Sobbing, as if someone was crying alone. I followed it, even though in the meanwhile it grew quite dark. The sound came from behind a shed built next to a cottage and I approached it knowing that finally I would discover the scamp who keeps frightening the simpletons. I wasn't prepared to what I saw. The devil himself stared at me in the body of a man with burnt, brown skin. There were empty sockets instead of his eyes, the tufts of his hair scorched to black; not even the most imaginative penny-a-liner can create such horror. Recoiling I tumbled, but by the time I staggered to my feet in order to escape, the vision disappeared, only a kind of stinging smell, resembling burnt flesh, remained after him.
I can assure you, my friend, I will avoid the Cité for a while after this."

Angèle cluelessly turned over the letter. This cannot be the product of Pessolis's imagination. But then... What is the explanation to this? She stretched, twisted her head a couple of times. Almost 5 o'clock, the archive will close soon. It's for the best if she goes home and writes to Amiel.
She was walking on the Zola Avenue, staring at the Christmas lights of the city. She missed her town, Carcassonne; she always missed it, but especially at this time, before Christmas. Evening fell by the time she finished shopping and arrived home. At home she sat down to the table and turned on her computer, while she was musingly munching on a cereal bar. At this moment she felt like she would never finish her research; especially not if she finds ghost stories in the meanwhile. Before Eugène Viollet-le-Duc started the reconstructions of the Cité in 1853, many small hovels were built between the rings of the fortress walls. Today it is almost unthinkable, but at that time the medieval castle gave home to the poor. What Jean-Henri Pessolis, the historian saw, could have been a blind beggar as well as a delusion. Still, that letter was unsettling... And she had no idea about Raymond Garsie either. She knew the stories of many Cathar parfaits, but she had never heard of him. Obviously this doesn't mean anything, after all it is not her field of expertise. That is why she is going to write to Amiel now. 
She hadn't even finished typing, when her phone rang.
- Hello! - her sister, Béatrice greeted her cheerfully. – I only wanted to ask whether you have any idea what to give to Mum and Dad for Christmas. You know, at the end of summer the lawn mower broke down and I thought we could buy a new one together.
- Good idea! I'm in. Next weekend I'm going home, then we can discuss the details.
- Awesome!
- And, what's new at home and in the Cité?
- Everything is allright at home. But imagine, a while ago I talked with Marie, you know, my friend, who works in a restaurant in the Cité. She told me that some really weird thing happened before the night shift. She was alone in the kitchen of the restaurant, when she heard scratching and moaning from the direction of the back door. That part is closed off when they don't admit customers, so you can imagine how frightened the poor thing got. She looked out but no one was there. She closed the door and the noises started again. She said that she had been overtaken by such foreboding that she had gone home immediately. She called her boss on the way and excused herself by saying that she was unwell.
Angèle shivered.
- Couldn't it have been a stray cat?
- I asked the same but Marie stated that she's sure that she would have seen that. She said the entire thing had been so overwhelming like in some Stephen King book, and she is contemplating taking some days off because of it.
- What a coincidence...- mumbled Angèle.
- Pardon?
- Nothing, only today... today I read something similar in the archive.
- One would think that you're going there to research, not to read horror books! - laughed Béatrice. 
- It's not funny. I won't be able to sleep – chuckled Angèle too.
After she had put down the phone, she was staring in front of herself for a while. Finally she decided that she'd continue the e-mail, and she would write about this to Amiel. Maybe it's only her imagination that is going wild; an outer observer can probably find some rational explanation...

karácsonyi táblás csokik // Christmas chocolate bars

Ismét a világ egyik, számomra kedves kis csücskében ülök, saját házi vízeséssel a szállás mellett, odakint a magas hegyek ködköpenyt öltöttek, reggel végignéztem a téli naplementét (pedig nem is keltem annyira korán..). Jó itt lenni, mert mindig van idő és tér az álmodozásra, amiből aztán mesék lesznek. És nem csak ezért.. néha jó elvonulni a város pezsgésétől egy ilyen csendes helyre, ahol az ember összeszedi magát, lerója régóta meglévő adósságait saját maga felé, és marad ideje minden olyasmire, amire az otthoni hajtásban nem.


Karácsonyi recepteket ígértem, úgyhogy íme néhány ötlet azoknak, akik táblás csokival szeretnék meglepni rokonaikat, barátaikat. A karácsonyi ízvilág pikk-pakk elérhető néhány klasszikus gyümölccsel és fűszerrel: a szilva, a meggy, a narancs, a mazsola, a dió mind jó választás lehet, és természetesen adhatunk hozzájuk olyan meleg hangulatú fűszereket, mint a fahéj, gyömbér, kardamom, szerecsendió, vagy mézeskalács fűszer. Díszítéshez a Dr. Oetker-féle téli cukordíszeket alkalmaztam, illetve karácsonyi ostyát (mikulás sapka, csillagok, fenyő). Csomagoláshoz átlátszó tasak a legjobb, amit elég átkötni egy ezüst, vagy arany szalaggal, cérnával, és kész is a szuper ajándék.




I'm sitting in one of my favourite corners of the world again, with my own waterfall next to the accommodation; out there the mountains put on mist-cloaks; in the morning I watched the winter sunrise (even though I didn't wake up that early...). It's good to be here, because there is time and space for daydreaming, of which then fairytales will become. And not only because of this... Sometimes it's nice to get away from the fizzle of the city to a quiet place like this, where one can pull herself together, she can pay her debts to herself and she has time for everything which is neglected at home in the rush.


I promised Christmas recipes so here are some ideas for those who would like to surprise their family or friends with chocolate bars. Christmas flavours can be achieved easily with some classic fruits and spices: plum, sour cherry, orange, raisins, walnuts might be good choice and naturally we can add spices with warm tones such as cinnamon, ginger, cardamom, nutmeg or ginger bread spice mix. I decorated the chocolates with Dr Oetker's winter candies and with Christmas themed waffle (Santa's hat, stars, pine tree). For wrapping a transparent bag is the best choice; it's enough to tie a golden or silver ribbon or thread on it and the present is ready!

kandírozott narancs // candied orange peels

November második fele és a december a legkedvesebb időszakom az évből. Mikor az éjszaka átveszi az uralmat a nap felett hideg, szúrós fényű csillagaival, hűvösödik az idő és elfog az az édes vágyakozás a hó, a karácsony, a békés napok iránt; mikor végre neki lehet állni a készülődésnek, finom ételeket és édességeket készít az ember; azon morfondírozik, kinek milyen ajándékot adjon majd, feldíszíti a lakást és a szívét, és mindeközben leporolhatja a rég hallott, imádott karácsonyi dalokat is. Ez a csodák ideje!
Ezért azt hiszem, mostantól karácsonyi finomságok receptjeit fogom kitenni, amiket bárki elkészíthet otthon, hogy még finomabbá tegye az ünnepi menüt :)
Az első ilyen recept a kandírozott narancshéj, ami jól bevált: immár harmadik éve készítem el, van hogy egy tél alatt többször is. Ebből nem létezik túl nagy adag, az egész család odavan érte. A receptet egy receptgyűjtő oldalon találtam, tehát nem saját, de sajnos belinkelni nem tudom, mert már nem emlékszem a címére. Minden esetre a hölgy, aki oda felrakta, jól kikísérletezte. (az adagok értelemszerűen arányosan növelhetők/csökkenthetők)


Hozzávalók:
40 dkg narancshéj
35 dkg cukor
víz

Elkészítés:
A narancshéjat ízlés szerint felkockázom vagy csíkokra vágom és egy éjszakára hideg vízbe áztatom. Másnap leszűröm a héjakat, majd vízben felrakom főni őket. Miután a víz felforrt, ismét leszűröm a héjakat, a vizet kiöntöm. Lemérem a héjakat, a súlyuk háromnegyedének megfelelő mennyiségű cukrot adok hozzájuk és annyi vizet, amennyi épphogy elfedi őket. Visszateszem a lábost a tűzre, és amikor felforr a szirup, leszűröm a héjakat, félreteszem őket. A szirupot tovább főzöm, míg a víz fele el nem párolog, ekkor visszateszem a héjakat. Még egyszer megismétlem ezt az eljárást, amelynek a végére egészen kis adag szirup marad csak. Ekkor a héjakkal együtt a súlyuk 1/8-ának megfelelő mennyiségű cukrot adok még a keverékhez, és ha felforr a szirup, kis lángra teszem. Folyamatos keverés mellett megvárom, míg kristályosodni nem kezd a cukor, ekkor lehúzom a tűzről és tovább mozgatom, nehogy összeragadjanak a héjak.
A végeredmény roppanós cukorral borított, belül puha, kesernyés narancshéj. A hátramaradt, narancsízű cukrot pedig felhasználhatjuk más karácsonyi süteményekhez, vagy édességekhez is :)

The second half of November and December are my dearest period of the year. When the night takes over the day with her cold stars, the weather becomes chillier and I'm overwhelmed by that sweet longing for snow, Christmas and the peaceful days; when finally preparations can be started; one makes good meals and sweets and contemplates what kind of presents to give to others; decorates her home and her heart and in the meanwhile the adored Christmas songs, that haven't been heard in a long while, can be dusted off. This is the time of miracles!
So I think from now on I'll put out the recipes of Christmas sweets which anyone can prepare at home in order to make the festive menu even tastier :)
The first such recipe is candied orange peels which is always a success: I've made it now for the third year in a row, sometimes more than once in one winter. There is no such thing as too much of this, the whole family is nuts about it. I found the recipe on a recipe collecting site, so it's not my own but unfortunately I can't put the link here as I don't remember the title. Anyway, the lady who had put it up there, had experimented until she had got the recipe right. (obviously the rations can be increased or dicreased proportionally).


Ingredients:
40 dkg orange peels
35 dkg sugar
water

Recipe:
I cut up the orange peels into cubes or stripes and I soak them in cold water for a night. The next day I sieve them, then I start cooking them in water. When the water is boiling I sieve the peels again and I pour out the water. I measure the peels, I add sugar weighing 3/4 of their weight and water to cover them. I put the pot back on the fire and when the syrup starts boiling, I sieve the peels and leave them to cool down. I boil the syrup until half of the water evaporates, then I put the peels back into it. I repeat this procedure once more, until only a bit of syrup is left. Then I add the peels and sugar weighing 1/8 of their weight and when the syrup starts boiling I lower the fire. Constantly stirring I wait until the sugar starts crystallising, then I pull the pot off the fire and I keep moving the peels so they cannot get stuck together.
The outcome is soft, bitter peels covered with crunchy sugar. The leftover orange-flavoured sugar can also be used for other Christmas cookies or sweets :)

citromos-bazsalikomos // lemon-basil

Klasszikus párosítás, a nyáron készítettem el először táblás formában. Tegnap ismét elővettem a receptet, hogy férjem szülinapjára készítsek egy adag bonbont (tortára én nem vállalkozom :D). Mivel olasz és a savanykás-gyümölcsös ízeket is szereti, ez tűnt a tökéletes választásnak. A bulin nagyjából öt perc alatt fogyott el a 24 bonbon, szóval sikernek mondható :)


Hozzávalók:
0,1 dl frissen facsart citromlé
0,3 dl tejszín
3 levél bazsalikom
120+140 gr fehércsoki
lüszterpor, kakaóvaj

Elkészítés:
A citromlét és a tejszínt összekeverem, beletépkedem a bazsalikomleveleket. Összeforralom őket, és elkeverem 120 gr fehércsokival (a citromlé miatt kicsit hígabb lett a tejszín, ezért több csoki kell bele). Hagyom kihűlni a ganache-t.
Mivel ez az adag most szülinapra készült, a felolvasztott kakaóvajat elkevertem kék és sárga lüszterporral, hogy zöldes árnyalatot kapjak, majd ecsettel írtam a mélyedésekbe olaszul, hogy "boldog szülinapot". 
Miután a kakaóvaj megszáradt, temperálok 140 gr fehércsokit, és kiöntöm a mélyedéseket. Ha megszilárdultak a bonbonhéjak, megtöltöm őket a töltelékkel. Végezetül lezárom a bonbonokat.


This is a classic combination, I prepared it as a chocolate bar during the summer. Yesterday I took this recipe again in order to make some bonbons for my husband's birthday (I don't undertake cakes :D). Since he's Italian and he likes sourish fruit flavours, this seemed like a perfect choice. It was consumed in about five minutes at the party, so we can say it was a success :D


Ingredients:
0,1 dl freshly squeezed lemon juice
0,3 dl cream
3 leaves of basil
120+140 gr white chocolate
luster dust, cocoa butter

Recipe:
I mix the lemon juice and the cream; I tear the basil leaves into small pieces and I add them to the liquid. I boil the mixture, then I add 120 gr white chocolate (the cream became a bit diluted because of the juice so it requires more chocolate). I leave it to cool down.
Since this portion was made for a birthday, I melt the cocoa butter and mix it with yellow and blue luster dust in order to get a green shade, then I wrote "happy birthday" in the cavities in Italian.
After the cocoa butter gets dry, I temper 140 gr white chocolate and I prepare the shells. When they get solid I fill them with the cream. Finally I seal the bonbons.

kávés-marcipános // coffee-marzipan

Sötét év volt ez a művészetben - oly sok nagy ember ment el, és az évnek még nincs is vége... Hat napja a kedves, öreg Leonard Cohen is csatlakozott a mennyei zenekarhoz - egy újabb legenda, akit többé már sosem láthatunk a színpadon. Varázslatos, mély hangja, sokatmondó versei és dalszövegei, melankolikus dalai azonban mindig velünk maradnak. Megindító a youtube-videók alatt a sok búcsúüzenetet olvasni..
Biztos vagyok benne, hogy az alábbi két szerzemény szívszorítóan ismerős lesz mindenkinek. Nem ismervén a háttértörténetet, csak a dal által keltett érzésekre hagyatkozva írtam egy történetet a Bird on the wire-ről; Leonard emlékére most közzéteszem.
A mai csoki pedig épp olyan keserédes, mint ez a dal.



Hozzávalók:
40 ml kávé
100 gr marcipán
20+30 gr fehércsoki
3-4 szem kakaóbab
150 gr étcsoki

Elkészítés:
A kávét fölmelegítem, belereszelem a marcipánt, majd hozzáadok 30 gr fehércsokit is. Addig kevergetem kis lángon, míg homogén masszát kapok (bónuszként lehet adni hozzá kávélikőrt, vagy egy kis rumot is!). Félreteszem, míg kihűl. Temperálok 20 gr fehércsokit, és habzsákba töltve csíkokat húzok a bonbonforma mélyedéseibe - ez lesz a díszítés. Temperálok 150 gr étcsokit, elkészítem belőle a bonbonhéjakat. Mozsárban összetörök 3-4 szem kakaóbabot, és a töretből pár szemet a mélyedések aljára szórok. A kakaó és a kávé íze prímán kiegészítik egymást, ráadásul az édes masszát is frissebbé teszi egy kis ropogós adalék. Megtöltöm a bonbonokat, végül lezárom őket. Kávé mellé kitűnő desszert! :)


Like a bird
Kalitkába zártan élek. Mindennapjaim állandó bezártságban telnek: emberekkel tömött metrószerelvényekben, épületek – a munkahelyem, az iskolám – termeiben, boltokban, alagutakban.
Amióta az eszemet tudom, klausztrofóbiás voltam. Nem hogy a liftbe nem mertem beszállni, de a 45 perces tanórákat is csak a nyitott ablak mellett ülve bírtam ki. Az utcán a kétoldalt tornyosuló házaktól nem kaptam levegőt. Nem létezett akkora szoba vagy terem, ami elég nagy lett volna.
Egyetlen egyszer éreztem csak úgy, hogy elegendő tér van körülöttem: amikor vasutas édesapám elvitt magával a “vonatkórházba”. Az óriási hangárban egymás mögött sorakozó szerelvények egyikének tetejére másztam, onnét néztem szét képzeletbeli birodalmamon. Hosszú ideig álltam ott tárt karokkal, apám pedig kinevetett, amikor azt mondtam, játszom. Ő ezt sosem értette. Nem is tudott róla, mint ahogy senki más sem. Szüleim csupán azt látták, hogy a fiuk nem szereti a liftet és a kocsiba is csak hosszas rábeszélés árán száll be, de ezt betudták múló gyermekkori szeszélynek. Nem vették észre az összefüggést azzal sem, hogy a szobám fal felőli oldala kongott az ürességtől, mert az ablakok alá zsúfoltam minden bútoromat.
Az iskolában én is a “furcsák” közé kerültem. Aki nem hajlandó, csak az ablak mellett ülni, szünetben nem megy a folyosóra, viszont a tágas tornateremből alig lehet eltávolítani, az furcsa – és diáktársai szemében legfeljebb piszkálásra alkalmas.
Marci akkor érkezett, amikor már csak két évünk volt hátra az érettségiig. Vörös hajával ő is rögtön a furcsák közé került. Ő lett a legjobb barátom, mert nem zavarták a szokásaim, nem tartotta kirívónak viselkedésemet és sosem tette szóvá beteges ragaszkodásomat az ablakhoz. Ő elfogadott olyannak, amilyen voltam. Engem pedig nem érdekelt egyetlen bűne: a haja színe.
Miután hátrahagytuk a gimnáziumot, mindketten Pestre kerültünk: ő a Műegyetemre, én jogra. Egy-két évig kollégiumban laktunk, azután részidős állást szerezvén együtt béreltünk lakást.
A diplomaosztó előtti évben, a nyári szünet előtt Marci megkért: a vakáció alatt utazzak el hozzájuk, mert meglepetést készített számomra. Mint utóbb kiderült, nem az otthonára célzott, hanem családi nyaralójukra a Balatonon. Szívesen vettem a meghívást, bár a három órás vonatútra gondolván előre elszorult a torkom.
Minden esetre augusztus vége felé összegyűjtöttem minden erőmet és a Déliben felszálltam a tapolcai gyorsra. Félálomban zötyögtem végig az utat az ablak melletti ülésen. A nap már lenyugodott, mire megérkeztem az elhagyatott, kis állomásra. Marci kocsival jött ki elém, azzal tettük meg a tízperces utat egy még kisebb és elhagyatottabb üdülő-településre.
Másnap kora reggel barátom noszogatására ébredtem. Tornacipőt, kényelmes ruhát vettünk, mert túrázni indultunk. Végigsétáltunk a csendes falu főutcáján, fel a hegy irányába.
- Nemsokára megkapod a meglepetést is – mosolygott titokzatosan Marci.
A fák koronája összezárult felettünk. Ágaik megszűrték a napfényt, csillapították a szelet. Hosszan sétáltunk a lombok alatt, egyre feljebb és feljebb. – Mindjárt ott vagyunk! – biztatott Marci, miközben felkapaszkodott egy sziklás részen.
Kitisztult előttünk a táj. A sziklák tetején elvezető út körül egy-két cserszömörce bokortól eltekintve semmi sem nőtt. Egy pillanatig nem kaptam levegőt. Száz méter magasban álltunk a tó felett – és akárhová néztem, a láthatár messze-messze húzódott távoli, párás hegyek vonalán.
- Íme, a meglepetés -  mondta Marci. Felé fordultam, megragadtam a vállait. – Honnét tudtad?! – Hat éve ismerlek. Te vagy a legjobb barátom – felelte. Elnevettem magam. A végtelen kék ég felé fordultam, kitártam karjaimat, hátravetettem a fejem, és csak nevettem, nevettem…



It's been a dark year for arts - so many great people passed and the year hasn't ended yet... Six days ago the sweet, old Leonard Cohen joined the heavenly band - another legend whom we'll never see on stage anymore. His magical, deep voice, suggestive poems and lyrics, melancholic songs will stay with us. It is heartbreaking to read the farewell messages under his songs on youtube..
I'm sure that these two melodies will be familiar to all. Not knowing the background story of the song, relying only on the feelings evoked by it, I wrote a tale about Bird on the wire. I'm going to publish it now, in memory of Leonard.
Today's chocolate is just as bittersweet as this song.


Ingredients:
40 ml coffee
100 gr marzipan
20+30 gr white chocolate
3-4 cocoa beans
150 gr dark chocolate

Recipe:
I warm up the coffee, I shred the marzipan in it and I also add 30 gr white chocolate. I stir it on low fire until I get a homogeneous mass (as a bonus some coffee liqueur or a bit of rum can be added too!). I put it aside until it gets colder. I temper 20 gr white chocolate and after I pour it in a piping bag, I draw lines in the cavities of the mould - this is going to be the decoration. I temper 150 gr dark chocolate and I prepare the bonbon shells. In the mortar I crush 3-4 cocoa beans and I sprinkle a couple of cocoa nibs into each bonbon shell. The flavours of coffee and cocoa fit very together well, moreover, the sweet filling will be freshened by some crunchy crumbs. I fill the bonbons then I seal them. It's an excellent dessert with coffee!


Like a bird
I live locked up in a cage. Every day passes by in constant closedness: in metro cars stuffed with people, in the halls of buildings – my workplace, my school – in shops, in subways.
I’ve been a claustrophobic as far back as I can remember. Not only did I not dare to get in the elevator but I bore the 45-minute-long classes only next to the open window. On the streets I couldn’t breathe because of the houses overtowering on the two sides. There was no room or hall big enough.
I felt that there’s enough space around me only once: when my railway man father took me to the “train hospital”. In the gigantic hangar climbed on the top of one of the trains lining up behind each other and I looked around in my imaginary realm. I was standing there for a long while with arms wide open and my father laughed at me when I told him that I was playing. He never understood this. He didn’t even know about it, neither did anyone else. My parents saw only that their son didn’t like the elevator and he got in the car only after long persuasion, but they considered it a passing childhood whim. They didn’t realise the connection with that the wall of my room was empty as I crammed my furniture under the windows.
I became one of the “weird ones” in school. He, who is not willing to sit anywhere else but next to the window, who doesn’t go to the hallway in the breaks but cannot be expelled from the spacious gym, is weird – and is suitable only for mocking in the eyes of his classmates.
Marci arrived when we had only two years left until the final exam. With his red hair he immediately got among the weirdos. He became my best friend because my habits didn’t disturb him, he didn’t consider my behaviour conspicuous and he never mentioned my morbid adherence to the window. He accepted me as I was. And I didn’t care of his only fault: the colour of his hair.
After we left secondary school, both of us got to Budapest: he went to the University of Technology, I went to law. For a couple of years we lived in dorms, then having obtained part-time jobs we rented a flat together.
In the year before graduation, at the beginning of the summer holiday Marci asked me to visit them during vacation because he had prepared a surprise for me. As it later turned out he referred to his family’s weekend house at Lake Balaton and not his home. I accepted the invitation gladly, even though thinking about the three-hour-long train ride my heart sank in advance.
However, by the end of August I gathered all my strength and I boarded the fast train to Tapolca at the railway station. Half asleep I bumped along the way on the seat next to the window. The sun had already set when I arrived to the abandoned, small station. Marci had come to pick me up with his car; our journey took ten minutes to an even smaller and more abandoned village. The next morning I woke to the goading of my friend. We put on sneakers and comfortable clothes as we went on a trip. We walked along the main road of the serene village, up in the direction of the mountain.
“Soon you’ll get the surprise too,” smiled Marci mysteriously.
The crowns of the trees closed above us. Their branches filtered the light and softened the wind. We walked for a long while under the foliage, higher and higher. “We’re almost there!” Marci encouraged me while we clambered up at a rocky part.
The landscape cleared up in front of us. Apart from a couple of smoke bushes nothing grew around the path on the top of the rocks. For a second I couldn’t even breathe. We were standing a hundred meters above the lake – and wherever I looked, the horizon spread far, far away on the line of distant, misty mountains.
“This is the surprise,” said Marci. I turned to him and grabbed his shoulders. “How did you know it?!” “I’ve known you for six years. You are my best friend,” he answered. I burst out laughing. I turned towards the endless blue sky, I flung my arms open, threw back me head and I was just laughing, laughing…

barackos-makadámdiós // peach-macadamia nuts

Nektek van dalotok? Olyan szívhez szólóra gondolok, amit valahányszor meghallotok, úgy érzitek, ez igen! Ez vagyok én. Mert olyan a dallama, a szövege, ami nem csak hogy tetszik, de egyszerűen kifejezi azt, ami vagyok. A zene olyan nyelv, amit mindenki megért, és ami híven közvetíti az érzéseket; sokkal személyesebb, mint a beszéd.
Régebben úgy gondoltam, hogy Jimitől a Little wing a dalom, egészen addig, amíg meg nem hallottam a G2BA-t a Steelhearttól. Szerelem volt első hallásra. A dallam, a hangszerelés és a szöveg összhangja olyan mint egy szenvedélyes imádság, ami híven kifejezi az élet iránti mérhetetlen szeretetemet. Minden bosszúságával, fájdalmával, szomorúságával, szépségével, örömével, vidámságával együtt. És a dalt még hitelesebbé teszi, hogy egy olyan énekes írta, akire 16 évvel azelőtt egy koncerten rádőlt a fél színpadi felszerelés, majd a baleset után majdnemhogy a halálból tért vissza.
A csokit persze legalább annyira szeretem, mint a zenét, egyik nélkül sem tudnék élni :D A következő kreáció egy kicsit olyan is, mint maga az élet: a barack kissé savanykás íze egybeolvad a makadámdió-krém édességével. Utóbbit vagy egy hónapja vettem természetesen csokikészítési céllal, ám mire idáig jutottam, több mint a fele elfogyott :D úgyhogy kicsit ki kellett pótolnom :)) A csokiformát is régebben megvettem, de még nem volt alkalmam kipróbálni. A kész csokik hasonlítanak a nagymamák brosstűire, nem gondoljátok? :))


Hozzávalók:
40 gr barackpüré
50 gr makadámiakrém
50 gr fehér csoki
2 csipet szerecsendió-virág
150 gr magas kakaótartalmú tejcsoki
lüszterpor

Elkészítés:
A barackpürét beforralom szerecsendió-virággal. Egy másik lábasban felmelegítem a makadámiakrémet, és belekeverem a fehér csokit. Temperálom a tejcsokit, elkészítem a bonbonhéjakat, majd miután megszáradtak, a barackból néhány cseppet csöpögtetek beléjük. Erre jöhet a makadámiakrém, végül lezárom a bonbonokat. A kész csokikat egy kis púderszínű csillámporral díszítem, hogy még nagyisabbak legyenek ;)

Do you have a song? I'm thinking of something so heart-stirring that whenever you hear it you feel like that's it! This is me. Because I don't only like its tune and its lyrics but they simply express what I am. Music is a language that everyone can understand and that faithfully transmits feelings; it is even more personal than talking.
Formerly I used to think that Jimi's Little wing is my song, until I heard G2BA from Steelheart. It was love at first hearing. The harmony of melody, arrangement and lyrics are like a passionate prayer that expresses my endless love for life. With all of its distress, pain, sadness, beauty, joy, happiness. And the song is even more authentic as it was written by a singer on whom half of the stage equipment had fallen during a concert 16 years earlier; then after the accident he returned almost from death.
I love chocolate just as much as music, I couldn't live without any of them :D The following creation is a bit like life itself: the slightly sour flavour of the peach fuses with the sweetness  of the macadamia cream. I bought the latter about a month ago, obviously with the aim of chocolate making, but until today more than half of it disappeared :D So I had to complement it with white chocolate :))) I bought the chocolate mould some time ago but I didn't have the opportunity to try it until yesterday. The bonbons look like the brooches of granny, don't you think? :))


Ingredients:
40 gr peach puree
50 gr macadamia cream
50 gr white chocolate
2 pinches of nutmeg flower
150 gr milk chocolate with high cocoa percentage
luster dust

Recipe:
I boil the peach puree with nutmeg flower. In another pot I warm up the macadamia cream and I add the white chocolate. I temper the milk chocolate, I prepare the bonbon shells, and after they solidified, I pour a couple of drops of the peach puree in each of them. The macadamia cream comes on the top of this, finally I seal the bonbons. I decorate them with talcum coloured glitter in order to make them even more granny-esque ;)
