gránátalmás-marcipános // pomegranate-marzipan

Talán már észrevettétek, hogy szerelmese vagyok a papír-írószernek. Az ember lakhelyéről mindig őriz egy mentális térképet, fontosabb tájékozódási pontokkal, ismerős utcák hálózatával, no meg fehér foltokkal. Az enyémben a tájékozódási pontok a csokisboltok mellett a papír-írószer üzletek, és amikor le vagyok törve, vagy rám jön a shoppingolhatnék, akkor elugrok valamelyikbe, és elszórok egy rakás pénzt :D Nem tudok ellenállni a friss papír illatának, a színes tollaknak, a matricáknak (te jó ég, matricafüggő vagyok!) és kiegészítőknek, az igényesen nyomtatott és kötött füzeteknek. Szóval itthon állandó jelleggel állnak nagy halomban a különböző szépséges könyvecskék, és persze a többségének más-más funkciója van: az egyikbe csak karácsonyi mesék kerülnek, másokat naplónak teszek félre, van egy külön az immáron háromrészessé duzzadt hosszú mesémnek, meg egy a rövid szösszeneteknek :D De persze ha látok valami szépet, akkor is megveszem, amikor éppenséggel otthon öt-hat megkezdetlen füzet van XD Csak azért, mert a szép füzetektől az ihlet is könnyebben jön...
Az alábbi fotókon a legutóbbi szerzeményem látható, úh, elég ránézni a borítójára, és már egy nagy rakás mese kereng az ember fejében, amit beleírhat :D Úgy gondoltam, jó "háttér" lesz egy izgalmas csokinak, amihez a múltkori gránátalma megmaradt levét használtam fel :)


Hozzávalók:
180 gr 85%-os étcsoki
100 gr marcipán
0,4 dl gránátalmalé
lüszterpor, kakaóvaj

Elkészítés:
A marcipánt belereszelem a gránátalmalébe. Felmelegítem, és kevergetem, míg egynemű masszává áll össze.
Gyertyaláng felett megolvasztom a kakaóvajat, elkeverem bordó lüszterporral, és márványozom a csokiforma mélyedéseit. Temperálom az étcsokit, elkészítem a csokiburkokat. Miután megszilárdultak, megtöltöm őket a marcipános krémmel, és berakom a hűtőbe. Ha a töltelék megbőrösödik, temperálom a maradék étcsokit, és lezárom a bonbonokat.



Maybe you've noticed already that I am obsessed with stationery. One always keeps a mental map of one's hometown, with major points of orientation, the network of familiar streets and of course blank spots. In mine the points of orientation are chocolate shops and stationery shops; when I'm down or I feel like shopping, I go to one of them and play the big spender :D I just can't resist the smell of fresh paper, colourful pens, stickers (oh god, I am sticker addicted!) and accessories, booklets of high quality printing and binding. So at home the various beautiful booklets are constantly piled up and obviously most of them have a different function: one contains only Christmas tales, others are used as diary, I have a separate book for my fairytale which became a trilogy, and another one for short tales :D But of course if I see something nice, I buy it even if there are five or six empty ones at home XD Only because beautiful booklets inspire me...
In the photos you can see my latest baby, oh it's enough to look at the cover and a bunch of tales that I'll write in it are already whirling in my mind :D I thought it could serve as a proper background for an exciting chocolate, in which I used the leftover juice of the pomegranate :)


Ingredients:
180 gr 85% dark chocolate
100 gr marzipan
0,4 dl pomegranate juice
luster dust, cocoa butter

Recipe:
I shred the marzipan in the pomegranate juice. I warm it up and stir it until it becomes a homogeneous cream.
Above a candle I melt the cocoa butter; I combine it with deep red luster dust and I marble the cavities of the chocolate mould. I temper the dark chocolate and I prepare the shells. After they get solid, I fill them with the marzipan cream and I put the mould in the fridge. When the filling sets, I temper the leftover chocolate and I seal the bonbons.

pezsgős-gránátalmás // champagne-pomegranate

Gondoltam, csinálok valami ütőset farsangra, de úgy tűnik, már megint elkéstem vele, épp, mint tavaly XD Minden esetre, ha már itt tartunk, essék szó egy kicsit a farsangról, amiről a legtöbben csak annyit tudnak, hogy sokat kell kajálni, esetleg elmegyünk egy bálba, és ott vannak azok a karneváli őrületek Olaszországban, meg még egy-két más helyen. Na ennél egy kicsit összetettebb a dolog. A farsang a tél végi dőzsölés időszaka - a középkorban ekkor fogyasztották el a télről megmaradt élelmet, ami további őrizgetés esetén már megromlott volna. Ezt egybekötötték egy átmeneti rítussal, amely a télből, a sötét és a démonok idejéből a tavaszba, napfénybe vezetett át. Mint a legtöbb ilyen, a világ rendjét megújító fordulópont, a farsang is egy rövidke átmenet a káoszba, hogy aztán minden ismét szépen, rendben mehessen a maga útján. A démonok uralmának megtörését megfelelő szimbólumokkal, viselkedésformákkal, rítusokkal lehet elérni, amelyek hosszú ideig jellemezték a farsang időszakát, és itt-ott még ma is előfordulnak. Ilyenek a maszkos alakoskodások, különböző bábuk égetése (a tűz, a fény démonűző hatású). A felfordult világ rendjéhez tartozott a kicsapongás, a piálás, a táncos mulatságok, no meg az is, hogy ezekben a napokban az egyszerű emberek gúnyt űzhettek uraikból, elöljáróikból. Ugyanakkor az efféle érzéki örömökben gazdag fesztiválok, ünnepségek már előrevetítették a tavasz, a termékenység időszakát is. 
Az egyház persze igyekezett gátat szabni e pogány hagyománynak (no meg gondolom a gúnyolódás is érzékenyen érintette őket :D), így aztán Nagy Gergely pápa a hamvazószerdát jelölte ki a farsangi időszak végeként, ezzel beszorítva azt a karácsonyi ünnepkör és a húsvétot megelőző böjt közé. 

Sebaj, a csoki mindig jól jön, akkor is, amikor már egyébként böjtölni kéne :D No szóval kedvem támadt kipróbálni a gránátalmát, elvégre a farsang a dőzsölés, az érzékiség ideje, és mind jól tudjuk, hogy a gránátalma tulajdonképpen minek a jelképe :) Továbbá ebbe a csokiba muszáj volt minden finomságot belepréselnem, ami eszembe jutott, hogy minél farsangibb legyen - ebből persze az alkohol sem maradhatott ki :)


Hozzávalók:
0,8 dl  tejszín
2 pillecukor
0,3 dl gránátalmalé
2 nagy csipet csili
0,2 dl pezsgő
80 gr fehércsoki
200 gr tejcsoki

Elkészítés:
A gránátalma-magokat kioperálom a héjból, közben összevissza fröcskölöm magamat, meg a fél asztalt is a lével XD Leturmixolom őket, majd leszűröm, így kinyerem a tiszta gránátalmalét. Felmelegítek belőle 0,3 decit, amiben apró darabokra tépkedve felolvasztom a pillecukrokat. Belekeverem a fehércsokit is, és amikor egynemű masszává áll össze, hozzáöntöm a pezsgőt. Beleszórok két csipet csilit, és megkóstolom, hogy megfelelően pikáns lett-e.
Felverem a tejszínt, beleforgatom a pezsgős-gránátalmás krémet, így habos mousse-t kapok. Pár órára (vagy egy éjszakára) a hűtőben hagyom, hogy kellően megszilárduljon a hab.
Temperálom a tejcsokit, elkészítem a csokicsészéket. Miután megszilárdultak, kiütögetem őket a bonbonformából. Csillagcsővel ellátott habzsákból töltöm meg a csészéket a mousse-szal, hogy kicsi cupcake-eket formázzanak. Végül megszórom őket cukorkonfettivel, és visszateszem a hűtőbe, hogy az időközben felmelegedett hab ismét megszilárduljon.
A ropogós csokicsészékkel ínycsiklandó kontrasztot alkot a selymes hab, savanykás-csípős íze pedig meglepő és üdítő.


I thought I'd prepare something awesome for carnival, but it looks like I'm late again, just like last year XD Anyway, since we're here, let's talk a bit about carnival, of which most people know only that you have to eat a lot, maybe go to a ball and there are those famous parades in Italy and some other places. But it's so much more than this! Ttraditionally carnival was the debauchery, feasting period at the end of winter - in the middle ages leftover winter stores were consumed, otherwise they would have decayed. This was connected to a rite of passage, a transition rite, which was supposed to lead from winter, the time of darkness and demons to spring and sunshine. As most turning points renewing world order, carnival was also a short transition into chaos, after which everything could return to its good old, ordinary state. Breaking the reign of demons could be achieved with certain symbols, behavioural patterns and rites, which characterised the period of carnival for a long while and some of them appear even today. Such were using masks and disguise, the burning of puppets (fire and light chase away demons). Excesses, drinking, dancing, feasting and simple people mocking the ruling class all belonged to this upside-down world. At the same time such sensual celebrations and festivals were the precursors of the fertile period of spring. 
The church, obviously, tried to restrict this pagan tradition (and I guess they didn't particularly like the mocking either :D), therefore Pope  Gregory the Great decided that Ash Wednesday shall be the end of carnival, thus squeezing it between the Christmas and the pre-Easter Lent periods. 


It doesn't matter, chocolate is always good, even when Lent has already started :D So I felt like trying pomegranate, after all carnival is about excessive eating and sensuality, and we all know what pomegranate symbolizes :) Moreover, I put everything good in this chocolate that I managed to find out - obviously not omitting alcohol either :)


Ingredients:
0,8 dl  cream
2 marshmallows
0,3 dl pomegranate juice
2 pinches of chili
0,2 dl champagne
80 gr white chocolate
200 gr milk chocolate

Recipe:
I remove the pomegranate seeds and in the meanwhile I splash myself and the entire table with the juice XD I blend the seeds, then I sieve them, thus I get the clean juice. I warm up 0,3 dl of it, in which I melt the marshmallows torn into little pieces. I mix it with the white chocolate and when it becomes a smooth cream, I add the champagne. I sprinkle it with two pinches of chili and I taste the ganache if it became spicy enough.
I whip the cream and I combine it with the champagne-pomegranate ganache, which results in a foamy mousse. I put it in the fridge for some hours (or an entire night) so it has enough time to harden.
I temper the milk chocolate and I prepare the chocolate cups. After they get solid, I take them out of the mould. I fill them with the mousse from a star-tipped piping bag in order to get tiny cupcakes. Finally I adorn them with candy confetti and I put them back in the fridge so the foam can harden again.
The silky foam contrasts enticingly with the crunchy chocolate cups; its sour-spicy flavour is surprising and refreshing.

primavera

Bár még bujkál a késő délutáni melengető napsütésben, a kora reggeli rózsaszín felhőkben, az első hóvirágokban, a hajnali madárdalban, de meleg szíve már megolvasztotta a telet, mosolya ott tükröződik az arcokon. 
Már csak két perc van hátra tavaszig :) minden karneválozó, kisgyerek, szelíd bolond őt várja. Köztük én is :)
Ezért is támadt kedvem néhány csokivirágot készíteni. Többféle módszerrel próbálkoztam, mind másféle szirmokat eredményez, a kreativitásnak itt sincs határa :)

Hozzávalók: 100 gr fehércsoki, sütőpapír, lüszterpor

Lótusz: csíkot vágok a sütőpapírból. A temperált fehércsokiba belemártom egy vékony kés hegyét, és a papírra nyomom. Amikor felemelem, a visszafolyó csoki szép mintát hagy a szirom közepén. Ezzel a módszerrel sok szirmot készítek, végül a papírcsík mindkét felét egy-egy kávéscsészébe helyezem, ami enyhén meghajlítja a szirmokat (lásd 1. fotó). Miután teljesen megszáradtak, lehúzom őket a papírról. Fehércsokiból fészket készítek, amibe beleültetem az első sornyi szirmot. Ha nagyon lehasalnak, kis papírgömböccel támasztom meg őket. A szirmok tövére habzsákból újabb adag folyékony csokit nyomok, és jöhet az újabb sor, majd hasonló eljárással annyi szirmot helyezek egyre beljebb haladva, míg úgy nem vélem, hogy elég "borzas" lett a virág. Ekkor megvárom, hogy minden eleme teljesen megszáradjon, végül lüszterporral megfestem, hogy szép csillogó legyen.

Rózsák: a temperált fehércsokit habzsákba töltöm és egy csík sütőpapírra kis halmokat nyomok. Néhányat kissé elnyújtom egy kiskanállal, majd egy másik papírcsíkot helyezek föléjük, és ujjal kissé szétnyomkodom őket, hogy sziromformákat kapjak. Széthúzom a két csíkot, így két adag szirmot kapok. A kávésbögre-módszerrel szárítom meg őket, és a lótuszhoz hasonló módszerrel ragasztom össze őket: a nagyobb szirmokat kívülre, a kisebbeket belülre helyezem.


Virágoskert: sütőpapírra előrajzolom a mintát: napraforgót és bazsarózsákat meg leveleket. Habzsákba töltött fehércsokival előbb megrajzolom a keretet, majd a minta vonalait is végigkövetem. Miután megszáradt a kert, óvatosan lehúzom a papírról. A virágokat lüszterporral festem ki :)

Even though she is still hiding in the warm, late afternoon sunlight, the pink clouds of early morning, the first snowdrops and the birds' singing at dawn, her warm heart has already melted winter, her smile is reflected on the faces.
Only two minutes left until spring :) every carnival-goer, little child and gentle fool is waiting for her. Among them me too :)
That is why I felt like making some chocolate flowers. I tried different methods, all of them result in different petals, creativity has no boundaries :)

Ingredients: 100 gr white chocolate, parchment paper, luster dust

Lotus: I cut off a stripe of the parchment paper. I dip the tip of a thin knife into tempered white chocolate and I push it down on the paper. When I lift it, the chocolate will leave a nice pattern in the middle of the petal. I prepare lots of petals with this method, finally I place the two ends of the paper stripe into two coffee mugs (see photo no. 1), which will give a nice curve to the petals. After they get dry, I carefully pull them off the paper. I make a little nest of white chocolate in which I plant the first round of petals. If they lie down, I hold them in place with small balls of paper. I pour a bit more chocolate on the stem of the petals and add another row, then another, until the flower becomes "fuzzy" enough. I wait until all parts get dry, then I paint them with luster dust.


Roses: I pour tempered white chocolate in a piping bag and I make tiny mounds on a stripe of parchment paper. With the help of a small spoon I elongate some of them, then I place another stripe of paper on the top and very carefully, one by one I push them down a bit in order to get petal shapes. I pull the two stripes apart, thus I get two sets of petals. I apply the coffee mug method to dry them and I attach them together in a rose shape with the same method I used for the lotus: I put the bigger petals on the outside and the smaller ones in the inside.


Virágoskert: on a piece of parchment paper I draw the pattern: sunflower and peonies and leaves. I put white chocolate in a piping bag and I draw first the frame, then the lines of the pattern. After the garden gets dry, I carefully pull it off the paper. I paint the flowers with luster dust :)
