narancslikőrös // orange liqueur

Ha már az embernek olyan jó arc barátnője van, hogy házi készítésű narancslikőrt ad ajándékba - kissé megkésve karácsonyra :D - akkor az a minimum, hogy az ember megtiszteli azzal, hogy felhasználja csokiban :D Ugyan én is rogyásig készítettem a likőröket karácsonykor, de persze az mind elment ajándékba, szóval nem én rendeztem belőlük vad partikat.
Ez a narancslikőr kellően zamatos, az ízébe pikánsan vegyül a beleáztatott fahéjé, egészen ütős és még erős is. Étcsokival kissé ütötték volna egymást, ezért finomabb tejcsokival kombináltam. A krém isteni lett: lágy, olvadékony és megtartotta a likőr karakteres ízét.


Hozzávalók:
0,4 dl narancslikőr
100 gr tejcsoki
100 gr étcsoki

Elkészítés:
0,3 dl narancslikőrt felmelegítek, de nem forrásig, nehogy kiszökjön az alkohol. Belekeverem a tejcsokit, és amikor összeáll a krém, hozzáadok még 0,1 dl likőrt. Temperálom az étcsokit, beleadagolom a táblás formába. Kiöntöm a felesleget, félreteszem, míg megszilárdul a csoki. Megtöltöm a likőrös krémmel, és hűtőbe teszem. Amikor a krém kissé megköt, temperálom a maradék étcsokit és lezárom a táblát.


Once one has such a great friend who gives her home made orange liqueur - a bit belated Christmas present :D - then the least one can do is to honor it by using it in chocolate :D I made loads of liqueurs at Christmas but obviously all of them became presents and it wasn't me who organised wild parties with them.
This orange liqueur is aromatic enough, the flavour of the cinnamon soaked in it merges with it, also, it is quite strong. They wouldn't have fit together with dark chocolate so I combined it with delicate milk chocolate. The cream became heavenly: soft, melting and it kept the characteristic flavour of the liqueur.


Ingredients:
0,4 dl orange liqueur
100 gr milk chocolate
100 gr dark chocolate

Recipe:

I warm up 0,3 dl orange liqueur, but do not boil it in order to keep the alcohol content. I add the milk chocolate and when it becomes creamy I add another 0,1 dl liqueur. I temper the dark chocolate, I pour it in the mould. I shake out the excess and put it aside until the chocolate hardens. I fill it with the liqueur cream and I put it in the fridge. When the cream starts to set, I temper the leftover dark chocolate and I seal the chocolate bar.

Meggyes-marcipános // sour cherry-marzipan

Függőségeim közé tartozik a töri, a csoki, a zene és a mesék. Volt egy időszak, amikor úgy véltem, a társadalom szempontjából hasznosabb leszek, ha "felnövök", de aztán rájöttem, hogy mégsem annyira érdekel a társadalom meg az elvárásai. Az életem akkor jó, ha olyan dolgokkal veszem körbe magam, amiket szeretek, és inkább nem szabok gátat a függőségeknek :D Múlt héten szegény számítógépem gyengélkedése miatt nem volt alkalmam írni, de most bepótlom. 
Már régóta gondolkodtam, vajon milyen alapanyagokból készült az az isteni marcipánkrém, amit a Szamos csokiiskolában készített a mester, és azzal töltöttük életünk első táblás csokijait. Azt hiszem, valami hasonló lehetett:


Hozzávalók:
0,3 dl meggylé (ha lehet, nem a 7 meg 12%-os)
0,1 dl ágyas meggypálinka
70 gr marcipán
80 gr tejcsoki

Elkészítés:
Felmelegítem a meggylét, hozzáadom a marcipánt kis darabokra törve, vagy reszelve. Miután krémmé állnak össze, leveszem a tűzről, és hozzáöntöm a meggypálinkát. Temperálom a tejcsokit, a bonbonkapszlikba fél-fél kiskanálnyit töltök, majd ecsettel kikenem a belső felüket, egészen a peremig. Miután megszilárdult a csoki, beletöltöm a marcipános krémet :)


History, chocolate, music and fairytales are my addictions. There was a time when I thought that for the sake of society it'd be better to "grow up" but then I realised that I am not that interested in society and its expectations. My life is good if I surround myself with things that I love and don't try to limit my addictions :D Last week I didn't have the chance to write due to my computer's ill health but now I'm gonna make up for that.
I've been thinking a lot about what kind of ingredients our master at the Szamos chocolate school used for that heavenly marzipan cream with which we filled our first chocolate bars. I think it must have been something similar: 


Ingredients:
0,3 dl sour cherry juice (if possible not the 7 or 12% ones)
0,1 dl sour cherry pálinka (or any other spirit made of sour cherry)
70 gr marzipan
80 gr milk chocolate

Recipe:
I warm up the cherry juice and I add the marzipan broken into little pieces (or shredded). When they become creamy, I take the pot off the stove and I mix it with sour cherry palinka. I temper the milk chocolate and  I pour half a spoon into each bonbon cap. I paint th inside of the caps, up to the brim. After the chocolate gets solid, I fill them with the marzipan cream :)

Bűbájos // Enchantress

Ez egy kísérlet az igazi Mesecsoki-élmény© (:D) elérésére. Az epic music ihletett meseírásra és hozzáillő csoki készítésére, mi több, életemben először a dalra írtam a mesét. Ha valaha lesz saját brand-em, azt épp ilyennek képzelem.
A mesét kétféleképp olvashatod: a) ahogy akarod, b) egy meghatározott tempó szerint: a bekezdések elején megadtam a hozzájuk illő részletet a dalból, így folyamatos olvasás közben tökéletes zenei aláfestést fogsz hallani. Az utolsó egy percet szándékosan meghagytam "üresjáratnak", tovább lehet képzelni a történetet. (A dalt lásd lent, a mese alatt) :) És ha közben még eszegeti is az ember a receptben leírt csokit, akkor egy több érzéket is elbűvölő élményben lesz része :D
A csoki ízét egyrészt a dal hangulatához igazítottam, másrészt pedig, mivel még sosem próbáltam a sáfrányt, mindenképp készíteni akartam vele bonbont. A fekete kardamom füstös íze összhangban van a magas kakaótartalmú csokiéval, a sáfrány pedig utóízként lebeg, akár egy kis varázslat - a kettő kombinációja pedig sötét és misztikus.


Hozzávalók:
0,5 dl tejszín
egy csipet sáfrány
3-4 fekete kardamom mag 
70 gr 70%-os étcsoki
200 gr 55%-os étcsoki
fehér lüszterpor, kakaóvaj

Elkészítés:
A tejszínt felforralom, leveszem a tűzről és beleteszem a sáfrányt. Hagyom állni egy fél óráig, majd hozzáadom az összetört kardamommagokat, és ismét felmelegítem. Beletördelem a 70%-os étcsokit, elkeverem. Egy éjszakára ismét állni hagyom, hogy az ízek összeérjenek. 
A csokiforma mélyedéseibe lüszterporral színezett olvasztott kakaóvajjal kis holdakat festek. Amikor a kakaóvaj kezd száradni, fondantformázóval utána lehet igazítani. Temperálok 200 gr étcsokit, elkészítem a bonbonhéjakat, majd száradás után megtöltöm őket a ganache-sal. Hűtőbe teszem, míg a töltelék kihűl, aztán lezárom a bonbonokat.


[00:00] Éjből volt az ereje, a Holdsarló koronázta homlokát, palástján csillagpor ült. Örökkévalóság óta járta az erdőket a hegyek északi lejtőin – néha, amikor az égbe törő fenyők látványa alázatra késztette, egész apró volt s hosszú, ébenfekete haja a földet seperte, máskor, amikor az árnyak megsűrűsödtek, ezüst szemei felragyogtak és hatalmassá lett, akár az űr végtelenje. Titánok leánya volt, ujjai intésére világok támadtak s világok enyésztek el.
Amerre járt, hívogató melódia töltötte be a teret s aki megpillantotta, többé nem szabadulhatott tekintetétől. A hegyek lábánál élő emberek Bűbájosnak nevezték, és óvakodtak tőle. Ha az erdőkbe mentek, egy tálkában tejet hagytak Bűbájos Szikláján jóindulatáért cserébe, mert tudták, máskülönben kezének egyetlen mozdulatára, hajának egy rebbenésére örökre a foglyai maradnának. Téli éjszakákon, amikor hó fedte a hegyoldalakat s a kegyetlen Hold fényében minden élő megfagyott, az emberek bezárták házuk ajtaját és ablakait, mert Bűbájos ilyenkor lent járt a kunyhók között. Lépteinek nesze a legjobban fűtött szobában élők szívébe is hűvös fuvallatként hatolt.

[01:00] Szél tépázta a fenyők ágait, a sűrűn hulló hópelyhek fehér tollakként kavarogtak a levegőben, átláthatatlan falat vonva lovas és úticélja között. Távoli farkasüvöltés visszhangja ölelte a csúcsokat, a világot betöltötte a tél szaga, a felhők hideg lehelete. A lódobogás hangja elveszett a lehullott hó paplanában. A lovas már rég útját tévesztette s most céltalanul vágtatott abban a hiú reményben, hogy valahol rábukkan a faluba vezető ösvényre. Ám az erdő könyörtelenül vezette egyre mélyebbre, lova tajtékot hányt, a hó belepte mindkettejüket s jól tudta: már csak idő kérdése, hogy végleg elvesszenek.
De most mintha… fény pislákol az erdő mélyén. Talán egy kint rekedt favágó kunyhója? Arra irányította lovát. Az aprócska fénybogár nőtt, növekedett ahogy közeledtek, a lovas úgy követte azt, akár éji pillangó a lángot. S ahogy az éji pillangó, ő sem vette észre, hogy a végzete felé közeledik. Ezüst fény hatolt át a fatörzsek közt, dárdái a lovas arcába vágtak. Megrántotta a gyeplőt.
[01:42] Bűbájos állt a fenyők alatt hatalma teljében, zúgó hópelyhek örvényében, homlokán a Hold fényével. Hosszú, ében haja hollószárnyként úszott a szélben, éjszín palástján csillagképek sziporkáztak. Ám a lovas nem sokáig csodálhatta e látványt, mert a kavargó hó elült, Bűbájos palástja lassan lebegve terült szét a földön, igézetének áradó fénye elhalványult, az erdőt a téli éj csendje ülte meg. Bűbájos megfordult és egyenesen rá nézett ezüst szemeivel. Ujjaiból fekete füstként kúszott elő a varázs.
A lovas feleszmélt, elfagyott tagokkal kászálódott le lováról s térdre esett a hóban.
- Kérlek Úrnőm, vezess haza! Nem akartam ártani neked, csupán eltévedtem, nem találom az utam. A segítséged nélkül elveszek.
[02:25] Nem mert felnézni, mert attól tartott, a bűvölet sötét szálai már körbeszőtték. Összeszorított szemekkel, vacogó fogakkal várta a véget, amikor deres szempillái alá fény szüremlett. Kinyitotta a szemét. Bűbájos előtte állt, a lóra mutatott, majd intett, hogy kövesse. A lovas hinni sem merte szerencséjét. Nehézkesen visszamászott hátasára s lépésben indult Bűbájos után. Áthaladtak az erdőn: körülöttük jótékonyan elállt a havazás, a szél susogva rajzolt mintákat a hóba, összeborultak felettük a fák. A lovas Bűbájos palástjára szegezte tekintetét, amelyen minden lépésére a Tejút örvénylett. Amikor a fák oly magasra nőttek, hogy csúcsaik a felhők közé vesztek, megnyílt a hegyoldal s ők beléptek a hegy gyomrába. Vaksötét üregben ereszkedtek lejjebb, egyre lejjebb, az egyetlen fényforrás Bűbájos palástjának halovány csillagfénye volt.
[02:51] Kiszélesedett a folyosó. Bár a levegő hűvös maradt s a lovas lehelete párafelhőként gomolygott, a hó leolvadt ruhájáról. Suttogás, elmormolt bűvigék, sóhajok susogtak körös-körül, a lovas zavartan kapkodta fejét ide-oda, így jól látta, amikor tompa fluoreszkáló ragyogásban óriás barlang tárult fel előttük. Katedrálishoz méltó zöld kristályoszlopok magasodtak fölébük, odafent, a felmérhetetlen távolban galaxisként csillantak a kövek. Emberkéz nem teremthet ilyen végtelen, tökéletlenségében elbűvölő építményt. A lovas megbabonázva itta be a látványt, míg földalatti patakok fekete, jeges vizén keltek át. A távoli dübörgést inkább testével érzékelte, mintsem hallotta, s egy pillanatra megrémült, hogy a hegy rájuk omlik. De aztán elérték a barlang másik végét, a sziklák összezárultak körülöttük.
[03:26] Cseppkőképződmények sziluettjei ütköztek ki a félhomályból, halkan csordogált-csepegett a víz, amely az örökkévalóság óta formálta e természetes szobrokat. Üregek, járatok, barlangok szövevényes rendszere közepette mentek, a távolságokat csak itt-ott felcsillanó vörös, arany, zöld fénypontok érzékeltették, amelyek hol közelebb bukkantak fel, hol egy elérhetetlenül messze sötétlő barlangszáj vagy cseppkőoszlop mellett. Hanem a lovas hiába igyekezett kivenni, mik lehetnek ezek a fények, csak sugaraikat láthatta s az azokban kirajzolódó sötét sziklatömböket. Úgy tűnt, mintha egész éjjel csak meneteltek volna a barlangrendszer útvesztőjében, éjsötétben és rájuk telepedő csendben.
[04:00] Aztán egy kanyar után kiléptek az alagútból. Előttük feltárult a hegylánc látképe: hófödte csúcsok törtek büszkén az ég felé, völgyeik homályba vesztek, szabadon száguldott a szél a magasban. Elállt a hóesés, a Hold rongyos, tépett felhők mögül színezte kékre az ormokat. Bűbájos továbbvezette a lovast lefelé, az erdő felé, s hamarosan belevesztek a fák sűrűjébe. Rejtett ösvényeken lépdeltek, amelyeket csak a vadak jártak, a földön heverő, elhagyott sziklákra groteszk maszkot festett a hó. A fák közé hatoló holdfényben árnyéka szürke szellemként követte a lovast, aki csak most ébredt rá, hogy vezetője nem vet árnyékot sem.
Ide-oda kanyarogtak, útjukat keresztezte egy befagyott folyó. Bűbájos könnyedén átlépdelt rajta, a lovasnak azonban le kellett szállnia a nyeregből, óvatosan próbálgatta a jeget. Meg sem reccsent a kemény jégpáncél, biztonságosan átjutottak rajta. Nem sokkal lejjebb a folyó vízesésként szakadt a völgybe, ám játékos cseppjeit most börtönébe zárta s fenyegető jégtőrökké formálta a tél. Az erdő mélyén vadállatok morogtak, vágtató talpak alatt surrogott a hó.
[04:54] Bűbájos palástját felkapta a fák alá besüvítő szél, s a lovasnak, akit örvénylése megigézett, úgy tűnt, már nem is ők menetelnek az éjben, hanem az erdő hullámzik el mellettük homályos tengerként. Lova ritmikus mozgása, a zsibbasztó hideg, a sötétkék árnyak s a fatörzsek, amelyek betöltötték látóterét, minden érzékét eltompították – vagy Bűbájos bocsátott rá bűvöletet, és észre sem vette, amikor elnyomta az álom? Talán már sosem érnek haza. Nem figyelt fel a távolban hívogató apró fénypettyekre sem. Dombok ölén húzódott meg a falu, a szél füst illatát sodorta feléjük.
[05:22] A lovas hátasa izgatott nyerítésére eszmélt fel. Előttük már látszott a favágók által kitaposott csapás, amely a házak felé vezetett. Mielőtt kiértek volna az utolsó fák közül, a lovas megállította lovát. Leszállt róla, és Bűbájos elé borult, tekintetét a földre szegezve.
- Megmentetted az életem. Mondd, mivel háláljam meg? Nincs semmim, ami méltó lenne hozzád.
- Valami mégis csak van – Bűbájos hangja mintha évezredeken át hatolt volna el hozzá, ősi és mély volt, akár a hegyek gyökere. A lovas ismét elsuttogott varázsigéket és dallamfoszlányokat hallott, amelyek csábítón fonták körbe Bűbájos lényét.
- Mondd el mi az és neked adom, Úrnőm.
- Az érzéseid. Emberi érzések. Én örökkévalóként szemlélem az életet és mindazt ami körülvesz, te halandóként. Ezt akarom: örvendeni minden új napnak, mintha az akár az utolsó is lehetne. Bizonyára nem nagy kérés az életedért cserébe?
- Érzések nélkül az élet mit sem ér! Kérlek, kérj valami mást, mert ha ezt elveszed tőlem, akár hagyhattál volna halálra fagyni az erdőben.
Bűbájos hosszan, elgondolkodva nézte a lovast.
[06:11] - Ez esetben egy megoldás van: mágiával magamhoz láncollak s az érzéseid az enyémek lesznek anélkül, hogy téged megfosztanálak tőlük. Amely dolgok egyszer kapcsolatba kerültek, az örökkévalóságig kapcsolatban maradnak.
Azzal ujjai a levegőbe rajzoltak, sötét varázs csordult végig rajtuk, egyre sűrűbben. Éjszín köd hömpölygött kezei körül, s ahogy elült, Bűbájos a lovas felé nyújtotta tenyerét. Sötét bőrén csak a csillanásából lehetett észrevenni a fekete gyűrűt. A lovas odanyúlt, elvette. Egyszerű karikagyűrű volt fényes, hűvös anyagból.
- Húzd fel! – parancsolta Bűbájos, és ő engedelmeskedett.
Továbbra sem mert felnézni, de hallotta, ahogy Bűbájos lélegzete egy pillanatra elakad.
- Most menj! Vár az otthonod.
- Köszönöm – súgta a lovas. Felült lovára, s mihelyst rálépett a faluba vezető útra, fellélegzett.
[06:52] Már a házak előtt járt, amikor utoljára visszanézett. A havas hegyoldalban árnyék suhant a fák felett, nyomában fellegként úszott szikrázó palástja. Bűbájos táncolt az éjszakában; mintha zene kísérte volna lépteit, visszaverődött a sziklafalakról, tiszta, hideg levegővel töltötte meg a völgyet. A lovas sokáig figyelte és tudta: szebbnek látja a hegyeket, mint előtte bármikor.



This is an experiment for achieving the real Fairytale Chocolate-experience © (:D). Epic music inspired me to write a fairytale and create the matching chocolate, moreover, for the first time in my life I wrote the tale based on the music. If I'll ever have my own brand, I imagine it like this.
You can read the tale in two ways: a) the way you want it, b) according to a certain tempo: in the beginning of the paragraphs I wrote the timing of the matching parts of the song, so while reading you'll hear a perfect soundtrack. I deliberately left last minute "empty", that space is up to your imagination. (see the song up here, above this text) :) And if one is even eating the chocolate described in the recipe, then s/he'll have an experience enchanting more than one sense :D
The flavour of the chocolate was adjusted to the vibe of the song, on the other hand, since I've never tried saffron, I wanted to create bonbons with it. The smokey taste of black cardamom is in harmony with the dark chocolate's, the saffron floats as an aftertaste like a bit of magic - the combination of the two is dark and mystical.


Ingredients:
0,5 dl cream
a pinch of saffron
3-4 seeds of black cardamom 
70 gr 70% dark chocolate
200 gr 55% dark chocolate
white luster dust, cocoa butter

Recipe:
I boil the cream, then I put the saffron in it. I let it cool for half an hour, then I add the crushed cardamom seeds and I warm it up again. I mix it with the 70% dark chocolate and I leave it for a night so the flavours have time to mature.
With the mixture of luster dust and cocoa butter I paint crescent moons in the cavities of the mould. When the cocoa butter starts to set, I can adjust the moons with fondant shaper. I temper 200 gr dark chocolate, I prepare the bonbon shells and after they get dry I fill them with the ganache. I put the mould in the fridge until the filling cools, then I seal the bonbons.


[00:00] Her power derived from the night, the crescent Moon crowned her forehead, stardust sat on her robe. She had been walking through the forests on the Northern slopes of the mountains for eternity – sometimes when the sight of firs aiming for the sky humbled her, she was tiny and her long, ebony hair swept the ground; other times when the shadows thickened, her silver eyes lit up and she grew mighty like the endless space. She was the daughter of titans, worlds arose and worlds vanished by the wave of her fingers.
Wherever she went, an inviting melody filled the air and whoever saw her could not rid themselves of her gaze any more. The people living at the foot of the mountains called her Enchantress and they were wary of her. When they went to the forest, they left a bowl of milk on the Rock of the Enchantress in exchange for her benevolence, as they knew that otherwise a motion of her hand, a flutter of her hair would enslave them forever. On winter nights, when snow covered the slopes and every living being froze in the light of the cruel Moon, people locked their doors and windows because Enchantress walked between their huts. The sound of her steps penetrated as a cool whiff the heart of even those, who lived in the most heated rooms.

[01:00] Wind tore at the branches of the fir trees, thickly falling snowflakes swirled in the air as white feathers, setting an impenetrable wall between rider and his destination. The echo of distant howling embraced the peaks; the world was filled with the smell of winter, the cold breath of the clouds. The sound of hoof beat disappeared in the quilt of the fallen snow. The rider had lost his way a long time ago and now he was racing aimlessly in the vain hope that somewhere he would find the path leading to the village. But the forest ruthlessly led him deeper and deeper, his horse was foaming, snow covered both of them and he knew it’s only a matter of time to get lost for good.
But now as if… light is flickering in the deep of the forest. Maybe the cabin of a woodcutter who had gotten stuck out there? He directed his horse that way. The tiny light grew and grew as they approached it; the rider followed it as the night butterfly follows the flame. And just like the night butterfly, he did not notice that he was approaching his fate. Silver light pierced through the tree trunks, its spears struck in the face of the rider. He pulled the reins.
[01:42] Enchantress stood under the firs with all her might, in a whirl of whizzing snowflakes and the light of the Moon on her forehead. Her long ebony hair floated in the wind as the wing of a raven, constellations sparkled on her dark robe. However, the rider could not admire this view for a long time because the swirling snow stilled, Enchantress’ robe slowly floated and spread on the ground, the radiating light of her charm faded and the silence of the winter night bestrode the forest. Enchantress turned around and looked directly at him with her silver eyes. Magic crept out of her fingers as black smoke.
The rider aroused; he dismounted his horse with frozen limbs and fell on his knees in the snow.
"My Lady, please guide me home! I did not mean you any harm; I merely cannot find my way. Without your help I’m lost."
[02:25] He did not dare to look up as he was afraid that the dark threads of enchantment had weaved him around. With eyes squeezed shut and chattering teeth he was waiting for his doom when light filtered under his hoary eyelashes. He opened his eyes. Enchantress stood in front of him, she pointed at the horse, then she gestured him to follow her. The rider could hardly believe his fortune. He laboriously climbed back on his mount and started off after Enchantress in walking pace. They passed through the forest: around them snowing stopped indulgently; wind drew patterns in the snow, the trees embraced above them. The rider fixed his gaze on Enchantress’ robe on which the Milky Way swirled with every step. When the trees grew so tall that their tops vanished among the clouds, the side of the mountain opened up and they stepped inside. They descended deeper and deeper in a pitch-black tunnel; the only source of light was the faint starlight of Enchantress’ robe.
[02:51] The tunnel widened. Even though the air remained cool and the rider’s breath wreathed as a cloud, the snow melted off his clothes. Whispers, murmured spells, sighs soughed around; the rider perplexedly turned his head around, so he saw very well when in dim fluorescent glow a gigantic cave opened up in front of them. Green crystal columns, worthy of a cathedral, towered above them; up in the immense distance the stones gleamed like a galaxy. No human hand could create such endless, imperfectly enchanting structure. The bewitched rider absorbed the sight, while they crossed the black, icy waters of underground streams. He sensed, rather than heard the distant rumble and for a second he got frightened that the mountain would tumble down on them. But then they reached the other side of the cave, the rocks closed around them.
[03:26] The silhouette of dripstone formations unfolded from the twilight; the water, which had been shaping these natural sculptures for eternity, quietly dripped. They walked in a labyrinth of chambers, passages, caves; distances were perceivable only through glistening red, gold and green lights, which appeared sometimes closer, other times next to an opening or dripstone column immensely far away. The rider tried to observe what these lights could be to no avail; he could only see their beams and the dark boulders lighted by them. It seemed as if they had been marching all night long in the maze of the cave system, in dark and silence fallen on them.
[04:00] Then after a curve they stepped out of the tunnel. The view of the mountain range appeared in front of them: snow-covered peaks rose towards the sky, their valleys disappeared in twilight; high above the wind rushed freely. Snowing had stopped; the Moon coloured the ridges blue from behind ragged, tattered clouds. Enchantress led the rider downwards to the forest; soon they were swallowed up by the trees. They walked on hidden paths which only the beasts knew; the snow painted grotesque masks on the lonesome rocks lying on the ground. His shadow followed the rider as a grey ghost in the moonlight penetrating between the trees and he realised that his guide didn’t cast a shadow.
Their road twisted and crossed a frozen river. Enchantress passed through easily, but the rider had to get off the saddle; he carefully tried the ice. The solid ice shell didn’t even crackle, they got through safely. Not much later the river tumbled in the valley as a waterfall, but its playful drops were imprisoned and shaped into ice-daggers by the winter. In the deep of the forest beasts were growling, snow rustled under rushing paws.
[04:54] The wind howling under the trees caught up the robe of Enchantress, and to the rider, who was enchanted by its swirling, it seemed that it’s not them marching in the night any more but the forest waving away beside them as a gloomy sea. The rhythmic moving of his horse, the stiffening cold, the dark blue shadows which filled his view numbed his senses – or was it Enchantress who had put a spell on him and he hadn’t noticed when he’d fallen asleep? Probably they will never get home. He didn’t notice the tiny lights enticing from afar. The village lay in the lap of the valley; the wind carried the smell of smoke.
[05:22] The rider awoke to the excited neighing of his mount. In front of them the path trodden by the woodcutters could be seen, which led towards the houses. Before they walked out of the forest, the rider stopped his horse. He dismounted and kneeled in front of Enchantress with his eyes fixed on the ground.
"You saved my life. Tell me, how shall I show my gratitude? I have nothing that would be worthy for you."
"There is still something," the voice of Enchantress, as if reaching him through thousands of years, was ancient and deep as the roots of the mountains. The rider heard whispered spells and whiffs of melodies again that temptingly surrounded Enchantress.
"Tell me what is that and I shall give it to you, My Lady."
"Your feelings. Human feelings. I observe life and everything that surrounds me as an immortal, you as a mortal. I want this: to be able to rejoice at every new day as if it could be the last. I am sure this is not a big request in exchange for your life."
"Without feelings life is worth nothing! Please ask something else because if you take this, you could have left me in the forest to freeze to death."
Enchantress watched the rider for a long while, thinking.
[06:11] "In this case there is only one solution: I am going to chain you to myself with magic and your feelings will be mine without dispossessing you of them. All things which have been connected will be connected forever."
Then her fingers drew in the air, dark magic overflowed on them, ever thicker. Black mist billowed around her hands and as it settled, Enchantress stretched her hand towards the rider. The black ring could be noticed only of its gleaming on her dark skin. The rider reached for it and took it. It was a simple ring made of shiny, cool material.
“Put it on!” ordered Enchantress and he obeyed.
He still did not dare to look up but he heard as she caught her breath for a second.
“Now go! Your home is awaiting.”
“Thank you,” whispered the rider. He mounted his horse and as soon as he stepped on the path leading to the village, he respired.
 [06:52] He was passing by the first houses when he looked back for one last time. A shadow floated above the trees on the snowy slope, her sparkling robe drifted behind her as a cloud. Enchantress was dancing in the night; and as if music had followed her footsteps, which echoed on the rocks and filled the valley with clean, cold air. The rider watched her for a long while and he knew: she found the mountains more beautiful than ever before.

túrós-szedres // blackberry-quark

Az írás olyan, mint Bilbó szavajárása: "Veszélyes dolog kilépni az ajtón, Frodó. Csak rálépsz az Útra, és ha nem tartod féken a lábadat, már el is sodródtál, ki tudja, hová." Az ember csak belekezd és nincs megállás. Az írás olyan, mint a fekete lyuk: beszippant, és egész nap a történetben élsz, még a papír sincs előtted, de fejben már az ötezredik jelenetet komponálod (munka helyett :D). Az írás olyan, mint a zene, a légzés és a meditáció: nem lehet nélküle élni, ablakot nyit más világokba, és elvisz oda, ahová másképp sosem jutnál el. Jobb, mint az olvasás, mert amíg az ember ír, addig egy kicsit olyan lehet, mint Isten, amikor a világot teremtette.
És néhány hete rátaláltam a zenémre, ami egyszerűen tökéletesen passzol az íráshoz. Az epic music nekem olyan, mint a Nagy Ő: eljött, és most nem értem, hogy élhettem eddig nélküle :D már nem is emlékszem, hogy bukkantam rá youtube-böngészés közben, most meg már órákig hallgatom, míg írok. Megint otthonossá vált tőle a világ, mint régen, minden perc egy új kaland, a valóságot átszövi a mágia.
Alant jelenlegi kedvencem, a két zeneszerző zseni alkotta Two steps from Hell - Flight of the Silverbird című alkotása. Epic music is epic.

Az alábbi bonbont még a szülinapomra készítettem. Az ötlet már nyár óta a fejemben volt, de nem adódott alkalom meg idő az elkészítésére :) Nyáron az otthoni bokrunkról elraktam a mélyhűtőbe egy adag passzírozott szedret, amit most végre elővettem :) Kellemes savanyú ízét jól kiegészítette az édes túrókrém, igazán frissítő ízkombináció.


Hozzávalók:
200 gr étcsoki
10 gr szederpüré
0,3 dl tejszín
40 gr túró
pár csepp citromlé
60 gr fehércsoki
lüszterpor

Elkészítés:

A lüszterport összekevertem néhány csepp alkohollal, majd mintákat festettem a forma mélyedéseibe. A tejszínhez hozzákevertem a túrót, a citromlét, és felmelegítettem. Közben összetörtem a túrót (ha nem lesz elég sima a krém állaga, érdemes összeturmixolni), végül hozzáadtam a fehércsokit és addig kevertem, míg elolvadt. Temperáltam az étcsokit, elkészítettem a bonbonok burkát. Miután megszilárdult, egy fél teáskanálnyi szederpürét öntöttem beléjük. Erre jött a túrókrém. Hűtőbe tettem, míg a krém kissé meg nem szilárdult, ezután lezártam a bonbonokat.



Writing is like Bilbo's line: "It's a dangerous business, Frodo, going out your door. You step onto the road, and if you don't keep your feet, there's no knowing where you might be swept off to." One just starts it and there's no stopping. Writing is like a black hole: it sucks you in, you live in the story all day long, there's no paper in front of you but in your mind you compose the five thousandth scene (instead of working :D). Writing is like music, breathing and meditation: it's impossible to live without it, it opens a window onto other worlds and it takes you where otherwise you'd never get. It's better than reading because while you're writing you can be a bit like God when he created the world.
And a couple of weeks ago I found my music which fits perfectly for writing. Epic music is like Mr. Big: he came and now I don't understand how I could live without him until now :D I don't even remember how I found it during youtube-browsing, and now I can listen to it for hours while writing. It makes me feel at home in the world like in the good old days; every minute is a new adventure, magic interweaves reality.
Up there is my current favourite, composed by the two geniuses of Two steps from Hell: Flight of the Silverbird. Epic music is epic.

The following bonbons were prepared for my birthday. I had the idea on my mind since summer but there was no occasion and time to make it :) During the summer I froze some blackberry puree, which I used now :) Its pleasant, sour flavour was completed by the sweet quark cream; a refreshing combination!


Ingredients:
200 gr dark chocolate
10 gr blackberry puree
0,3 dl cream
40 gr quark
drops of lemon juice
60 gr white chocolate
luster dust

Recipe:

I mix the luster dust with some drops of alcohol and I paint patterns into the cavities of the mould. I add quark and lemon juice to the cream and I warm them up. In the meanwhile I mash the quark (if the consistency of the cream is not smooth enough, you may blend it), finally I add the white chocolate and I keep stirring until it melts. I temper the dark chocolate and I prepare the bonbon shells. After they solidify, I pour half a teaspoon of blackberry puree in each of them, which is folloed by the quark cream. I put the bonbons in the fridge until the cream sets, then I seal them.

piña colada

Kedves barátom szülinapjára készült ez a csoki, a múltkori koktéltöltelék sikerén felbuzdulva ezúttal kedvenc koktélomat, a piña coladát alkottam meg csoki formában. A töltelék állaga hígabb mint az eddigiek, viszont nagyon finom!


Hozzávalók:
0,25 dl ananászlé
0,2 dl kókuszkrém
0,1 dl fehér rum
2 teáskanál kókuszolaj
100+200 gr fehércsoki
kakaóvaj
piros és arany lüszterpor

Elkészítés:
Az ananászlét, a kókuszkrémet és a kókuszolajat felmelegítem, majd beletördelek 100 gr fehércsokit, és addig keverem, míg krémes nem lesz. Ekkor hozzáadom az alkoholt. 
A szívecske bonbonforma mélyedéseinek egyik oldalát olvadt kakaóvajjal kevert arany lüszterporral márványozom, a másik oldalát pedig a kakaóvajhoz kevert piros lüszterporral. Temperálok 200 gr fehércsokit, elkészítem a csokiburkokat. Miután megszilárdultak, megtöltöm őket a töltelékkel, és hosszabb időre hűtőbe teszem, míg a ganache teteje kissé keményebb lesz. Ekkor temperálom a maradék csokit és lezárom a bonbonokat.


This chocolate was made for the birthday of a dear friend of mine; getting enthusiastic by the success of the last cocktail filling, this time I created my favourite cocktail, piña colada in chocolate form. The consistency of the filling is more liquidish than the others, but it's very good!

Ingredients:
0,25 dl pineapple juice
0,2 dl coconut cream
0,2 dl white rum
2 teaspoon of coconut oil
100+200 gr white chocolate
cocoa butter
red and gold luster dust

Recipe:
I mix and warm up the pineapple juice, the coconut cream and the coconut oil, then I add 100 gr white chocolate and I stir it until the cream becomes smooth. Finally I add the alcohol.
I marble one side of the heart-shaped cavities of the mould with the mixture of cocoa butter and gold luster dust. The other side is marbled with cocoa butter and red luster dust. I temper 200 gr white chocolate, I prepare the bonbon shells. After they get solid I fill them with the filling and I put it in the fridge for a while until the ganache gets a bit harder. Then I temper the leftover of the chocolate and I seal the bonbons.
