mojito csoki // mojito chocolate

Régóta tervbe volt véve ez a csoki is, és most, hogy közeledik az új év, gondoltam elkészítem az esti partira. Nem sajnáltam belőle az alkoholt, elvégre buli vaaaaaan!! :D Azt kell mondjam, nagyon jó volt ez az év - sokat utaztam, új emberekkel találkoztam, sokat dolgoztam és érdekes dolgokat tanultam, a mindennapjaim része volt a rengeteg zene, mese és még annál is több csoki :D ahogy kedves Uncle G-m szokta mondogatni, az embernek pozitív személyekkel és dolgokkal kell körülvennie magát, mert az élet túl rövid ahhoz, hogy mérgelődjünk és stresszeljük magunkat. 
Ugyanakkor kissé elszomorít a nagy csillaghullás... Azt hiszem, a nagy generáció (a mozi és a rockzene aranykorára gondolok itt) tagjai épp most értek abba a korba, hogy feltűnően sokan mennek el - attól tartok ebből a szempontból a következő év sem lesz sokkal jobb. 
No de emlékezzünk a jóra és szépre, és végül is mi mással lehetne ünnepelni az új évet a pezsgő mellett, ha nem csokival?! Ezt a receptet JSS, egyik kedvenc énekesem ihlette: amikor először láttam őt a színpadon, 6-7 mojito koktélt dobott be a koncert alatt XD Bár ez a koktél nem a kedvencem, de a lime és a menta csokival együtt tökéletes, főleg némi alkohollal kiegészítve :D Alant pedig a hozzá tartozó dal a kiváló Jeff előadásában, és ezzel kívánok nagyon boldog új évet mindenkinek!


Hozzávalók:
1 lime leve
0,2 dl rum (ami nálam pálinka volt)
0,1 dl tejszín
0,2 dl lime-menta szörp
200+130 gr fehércsoki
3 csipet szárított menta
kakaóvaj
ételfesték
bonbonkapszli

Elkészítés:
A ganache-hoz összeöntöm a tejszínt, a frissen facsart lime lét, és a szörpöt, beleszórok pár csipet szárított mentát. Felmelegítem, és hozzáadok 130 gr fehércsokit. Elkeverem, majd hozzáöntöm az alkoholt (nálam semleges ízű pálinkával készült, de nyilván fehér rummal az igazi). 
Az alumínium bonbonkapszlik belsejét zöld kakaóvajjal díszítem: ehhez az olvasztott kakaóvajhoz keverek néhány csepp ételfestéket, és ecsettel összespriccelem őket. Temperálok 200 gr fehércsokit, egyharmadig megtöltöm a kapszlikat. Ecsettel felviszem a csokit a kapszlik oldalára is, egészen a tetejéig, majd hagyom megszilárdulni. Végül megtöltöm a mojitós töltelékkel, és színes díszekkel dekorálom. Evés előtt a kapszlikat egyszerűen lehúzom a csokiról.




I've been planning this chocolate for a long while and now that New Year's Eve is coming, I thought I'm gonna prepare it for the party. There's a decent amount of alcohol in it, coz it's party timeeeeee!! :D I have to say this year was pretty good - I travelled a lot, I met new people, I worked a lot and I studied about interesting things. Music and fairytales were part of my everydays, as well as chocolate :D As my dear Uncle G says, one has to surround oneself with positive persons and things, as life is too short to be angry or stressed. 
At the same time I'm a bit sad that so many stars passed away... I believe the members of the great generation (I'm thinking of the golden age of cinema and rock music here) reached that age that strikingly many of them pass away - I fear the next year won't be any better from this point of view.
But let's remember the good things and after all what's better to celebrate the new year with, than chocolate?! This recipe was inspired by one of my favourite singers, JSS: when I first saw him on stage, he drank 6-7 mojitos during the concert XD Even though this cocktail is not my favourite, lime and mint are perfect with chocolate, especially if you add some alcohol :D Above is the matching song, performed by the awesome Jeff, and with this, I wish everyone a very happy new year!


Ingredients:
the juice of one lime 
0,2 dl rum 
0,1 dl cream
0,2 dl lime-mint syrup
200+130 gr white chocolate
3 pinches of dried mint
cocoa butter
edible food paint
bonbon caps

Recipe:
For the ganache I pour together the cream, the freshly pressed lime juice and the syrup, I add some pinches of dried mints. I warm them up, and I also add 130 gr white chocolate. I stir the cream, then I pour in the alcohol (I used palinka, but obviously white rum is the real thing).
I decorate the inside of the aluminium bonbon caps with green cocoa butter: for this I melt the cocoa butter and mix it with edible green paint. I spray the caps with the help of a brush. I temper 200 gr white chocolate, I fill the caps to 1/3 with it. I paint the inner sides with chocolate, up to the top then I leave them to dry. Finally I fill the caps with the mojito cream and I decorate the top of the bonbons with colourful candies. Before eating, I pull off the cap of the chocolate.

Karácsonyi csokigömb // Christmas choco globe

Már csak egyet kell aludni!!! Az elmúlt napok csoki- és szaloncukor készítéssel teltek, többek közt készült egy karácsonyfadísz, meg néhány mendiant transzferfóliára öntve :) Most már asszem el leszünk látva elég csokival az ünnepek alatt :D

Csoki díszgömb
Hozzávalók:
kreatív hobbiboltban beszerezhető műanyag gömb
70 gr fehércsoki
20 gr tej- vagy étcsoki, vagy előre elkészített bonbonok
lüszterpor

Elkészítés:
Temperálom a fehércsokit, és ha kész, ecsettel körberajzolom a műanyag gömb mindkét félgömbjének belső szélét. Legalább háromszor átfestem, hogy jó vastag perem alakuljon ki. Ezután különböző mintákat rajzolok a gömb belsejébe, ügyelve arra, hogy több helyen összeérjenek. Ezeket a mintákat is többször átfestem csokival, hogy vastagabbak és tartósak legyenek. 


 Miután kész a minta, hosszú időre hűtőbe teszem, míg jól át nem hűl. Ha megszilárdult a csoki, előbb óvatosan megnyomkodom a műanyag gömböt, ügyelve arra, hogy el ne roppanjon a csoki. Fejjel lefelé fordítva finoman az asztalhoz ütögetve ki fog esni a gömbből a kész csoki. Ha egy-egy kisebb rész letörik, olvasztott csokival vissza lehet ragasztani. Sütőpapírra készítek néhány mintát (fenyőfát, vagy csak cikkcakkokat) elütő színű csokiból, és mielőtt összeragasztom a gömb két felét, ezeket belehelyezem. Lehet bele tenni szaloncukrot, vagy bonbont is. Olvasztott csokit kenek a peremekre, összeillesztem őket és megvárom, míg megszilárdul. A kész gömbre kis arany és fehér lüszterport kenek, hogy még csillogóbb legyen.


A mendiantokat temperált csokiból készítettem, amit transzferfóliára öntöttem, és megvártam, hogy megszilárduljon. A fatörzs hasonló technikával készült: ehhez levágtam egy csíkot a fóliából, elkentem rajta a csokit, és amikor kezdett szikkadni, összetekertem, úgy hagytam megszilárdulni.

Only one day until Christmas!!! The last days were spent with chocolate and candy making, among others I prepared a Christmas tree decoration globe and some mendiants on transfer sheet. :) Now I think we'll have enough chocolate until the new year :D

Choco globe
Ingredients:
plastic globe bought in creative hobby shop
70 gr white chocolate
20 gr milk or dark chocolate, or previously prepared bonbons
luster dust

How to prepare:
I temper the white chocolate and when it's ready, I paint a chocolate stripe on the inside fringes of the two halves of the globe. I paint them through at least three times in order to get a thick edge. After that I paint patterns in the inside, taking care that they touch each other here and there. I go through the patterns twice at least so they become thick and stable.


After I'm done with the patterns, I put the globe in the fridge for a long time until it cools completely. When the chocolate gets hard I carefully push around the fringes of the globe, taking care that the chocolate doesn't get broken. Turning it upside down and knocking it gently at the table the chocolate will fall out of the mould. If a smaller part breaks off, it can be fixed with melted chocolate. I make some patterns of milk or dark chocolate on parchment paper (Christmas tree or just zigzags) and before sticking together the two halves I put them inside the globe. We can put there candies or bonbons too. I paint melted chocolate on the fringes and I fit together the two halves. I put some golden and white luster dust on the globe when it's done.


I prepared the mendiants of tempered chocolate which I poured on transfer sheet and I waited for them to set. For the tree trunk I cut off a stripe of the transfer sheet, I smeared chocolate on it and when it started to set, I scrolled it up and left it to get solid.

Csoki karácsonyfa // chocolate Christmas tree

Az ötlet tortadekorációból jött :) De mivel papírból olyan könnyű ilyesmit csinálni, ki akartam próbálni, hogy ez a csokira is igaz-e. És igen! Ajánlom mindenkinek, aki mutatós karácsonyi díszt szeretne az ünnepi asztalra, amit aztán jól föl is lehet enni a desszerttel :D 

Előkészület:
A neten található papírra nyomtatható összerakhatós karácsonyfaminták közül egyet egy darab sütőpapírra másolok (én ezt használtam). Valójában magára a mintára nem lesz szükség, csak arra, hogy meddig kell majd bevágni. 

Hozzávalók:
100 gr fehércsoki
kókuszreszelék
lüszterpor
cukordíszek

Elkészítés:
Sütőpapíron a minta alapján előre megjelölöm, mekkorára szeretném készíteni a fa két felét, hogy egyforma magasak legyenek - alapnak a sütőpapír egyenesre vágott alját veszem. Temperálom a fehércsokit. Habzsákba töltöm, és kis lyukon keresztül gyors mozdulatokkal cikkcakkban folyatom a papírra a kijelölt csúcsig, úgy, hogy nagyjából háromszög alakú legyen (így egyszerűbb, de a kísérletező kedvűek megpróbálkozhatnak a klasszikus karácsonyfa alakkal is). Nem kell túl vastag réteg belőle! Két fát készítek, és a sütőpapírt félrehúzva le lehet törölni az aljáról a felesleget, így egyenes lesz a fa legalja. Mielőtt a csoki megszilárdul, késhegyről lüszterport fújok rá, megszórom kókuszreszelékkel, és feldíszítem :) Nálam egy ezüst és egy arany színű fa készült. 
Mikor a csoki elkezd szikkadni (de még mielőtt teljesen megszilárdul!), a papíron előrajzolt karácsonyfa mintában bevágom az összeillesztés helyét, és a csokifák fölé helyezve a résben késsel végigvágom a csokit is. A papírt ezután el lehet tenni, a csokiban pedig kiszélesítem a rést annyira, hogy biztosan össze lehessen majd illeszteni a két részt. Ezután már csak várni kell, hogy megszáradjon a csoki, óvatosan lehúzni a papírról, összeszerelni, és kész is! 


       


The idea came from a cake decoration :) But since this is so easy to make of paper, I wanted to try whether the same is true to chocolate. And yes, it is! I recommend trying this to everyone who'd like to have a beautiful Christmas decoration on their table, which can be eaten up together with the dessert :D

Preparation:
I copy one of those compilable Christmas tree patterns that can be found online on a piece of baking paper (I used this one). You won't need the pattern itself, just for measuring the length of the cut in the middle.

Ingredients:
100 gr white chocolate
shredded coconut 
luster dust
candy decors


How to prepare:
I mark on a sheet of baking paper how high the two parts of my trees are going to be: they must be of the same height. Their base is the straight edge of the baking paper. I temper the white chocolate, I pour it in a piping bag and I quickly make zigzags on the paper from its edge up to the top that I marked previously. The shape should be more or less a triangle (you can also experiment with the classic Christmas tree shape). The chocolate layer shouldn't be too thick! I make two trees and pulling away the baking paper a bit, I get rid of the excess on the bottom, thus the base of the trees will be straight. Before the chocolate sets I blow some luster dust on them from the tip of a knife, I sprinkle shredded coconut on them and I adorn them :) I prepared a silver and a gold tree.
When the chocolate sets (but before it hardens!), I cut in the middle line of the previously drawn paper tree patterns. I put them above the chocolate trees and I cut through the lines in the chocolate too - one from below, the other from above. I put aside the paper and I broaden the cuts in the chocolate so that the two halves can be put together more easily. After that I only have to wait for the chocolate to get solid, then pull it off the paper, put it together and voilá! It's ready :D

Körtés-chilis // Pear-chili

Már csak hatot kell aludni!
Ma van advent negyedik vasárnapja, és ahogy kint egyre csökken a fény, úgy növekszik a házakban a gyertyák meggyújtásával. Ezzel a posttal véget ér a karácsonyi történetem, ám karácsonyi receptek továbbra is várhatók :) 
Az itt következő recept valójában egy leves bonbon-formába öntve. Az ötletet a Toll és fakanál blog egyik postjából vettem: chilis körteleves! Pikáns, izgató, ínycsiklandozó ízösszeállítás. Nem bírtam neki ellenállni. A bonbon meglehetősen finom lett: a krém szétolvad az ember szájában, és csak legvégül tűnik fel a chili aromája. Azt hiszem, finom desszert lehet egy karácsonyvárós téli ebéd végén.



Hozzávalók:
40 gr körtepüré
0,1 dl tejszín
1 kiskanál vaj
1 kiskanál méz
100+150 gr étcsoki
chili

Elkészítés:
A körtét meghámozom, az előírt mennyiséget lábosba rakom és összetöröm (az enyém kellően szottyadt volt szerencsére :)). Hozzáadok egy pici tejszínt, egy kanál mézet és vajat, majd felmelegítem. Mielőtt forrni kezd, elzárom a tüzet és a masszához adok 100 gr étcsokit. Elkeverem, félreteszem hűlni. Közben elkészítem a kis csokikapszlikat. Miután megszilárdultak, kiveszem őket a formából és megtöltöm őket a körtés töltelékkel. A tetejükre szórok egy kis csilit, és kész is a bonbon.

„Mikor az unokatestvéremet elvitték, én úgy döntöttem, hogy önként felkeresem a püspök urat. Bánom, hogy hallgattam az eretnek beszédre és még inkább, hogy hittem benne. Kész vagyok bűnbánatot gyakorolni, amelyet a püspök úr kiszab rám.
Mit tudsz Guilhèm és Miquèl pásztorokról, akik Raymond családjánál álltak szolgálatban?
Amikor Raymondért jöttek, ők a város közelében legeltették a juhokat. Amint eljutott hozzájuk a hír, magukhoz vették Estelát, aki viselős volt Raymond gyermekével, és elmentek a katalán határ felé. Egy hónapja, amikor Bernard, a pásztorunk visszatért, azt állította, hogy Ax-les-Thermes-nél látta őket, a határ közelében.”

Angèle megkönnyebbült, mikor megtudta, hogy Estela és a pásztorok megmenekültek. Amiel szerda este küldte el neki az újabb jegyzőkönyv átiratát, amire sikeresen rálelt Toulouse-ban. Egyben felvetette, hogy találkozzanak még egyszer karácsony előtt, mert valami fontosat akar mondani. Végül abban egyeztek meg, hogy a Place Carnot-n találkoznak, ami decemberben a La Magie de Noël fesztivál keretében forgalmas, színes, szabadtéri vidámparkká változott: a karácsonyi vásár bódéiban megannyi édességet, kézműves terméket árultak, a tér közepét korcsolyapálya foglalta el. Mint mindig, ilyenkor is rengeteg turista számára kínált vonzó úti célt a bájos városka karácsonyi forgatagával és az egyre rövidülő napok végén kivilágított Citével.
Angèle a Rue Courtejaire és a tér találkozásánál várta Amielt, aki néhány perc késéssel, kipirultan érkezett.
- Szia! Régóta vársz?
- Á, nem, nemrég érkeztem.
- Meghívhatlak egy forralt borra?
Angèle mosolyogva bólintott.
Elsétáltak a vásár bódéihoz, a borárushoz. A papírpohárba töltött forralt bor kellemesen melegítette átfagyott kezüket.
- Nem megyünk fel a várba? Itt elég nagy a zaj, útközben tudnánk beszélgetni – vetette fel Amiel. Angèle beleegyezett, így elballagtak a Rue Aimé Ramondra, majd rákanyarodtak a Rue du Pont Vieux-re.
- Sokáig gondolkodtam, hogy elmondjam-e… - szólalt meg Angèle. – Múltkor, miután találkoztunk, jártam egyet a Citében és… láttam valamit, ami nagyon megrémisztett.
- Füstszag, parázsló szemek, keserves sírás?
Angèle megtorpant. – Te is találkoztál vele? – suttogta.
Amiel biccentett. – Csütörtök este. Egyetlen pillanatra láttam csak, utána eltűnt az árnyékban.
- Azt hiszem, ez ugyanaz a valami lehet, amiről Pessolis írt a levelében. Tudom, hogy lehetetlennek tűnik, de minél tovább töprengek rajta, annál biztosabb vagyok benne. A szívem ezt súgja. És van még valami.
Felértek a Régi Hídra. Angèle megállt, hogy megcsodálja a narancsszín fényben fürdő várat. Alattuk kitartóan ostromolta a hétszáz éves híd pilléreit az Aude.
A lány nagy levegőt vett. – Nem hagyott nyugodni ez a kísértethistória. Utánaolvastam az interneten, meg néhány könyvben is, és azt találtam, hogy… bizonyos szellemek olyankor bukkannak fel és kísértenek, ha valaki emlékezik rájuk. Az, hogy megpróbálja felhívni magára a figyelmet és sír, állítólag mindkettő annak a jele, hogy elintézetlen dolga maradt ezen a földön.
- Arnaud barátom is valami hasonlót mondott. Pénteken leültünk beszélgetni, mert a csütörtöki eset egy kissé megrémített. Szerinte nem szabad félni az ilyen kísértetektől, hanem értésükre kell adni, hogy minden rendben van, és hogy ők már nem avatkozhatnak az élők dolgaiba.
Angèle egyetértően hümmögött. – Igen. Én is ezt találtam.
- De gondolod, hogy ez a lény…
A lány bólintott.
Elhaladtak a St. Gimer templom előtt, ahonnét már hallatszott a Cité zsongása.
- Örülök, hogy megtaláltad Pèire vallomását, köszönöm, hogy elküldted. Egy kissé a szívemhez nőtt Raymond Garsie, tudod, előfordul ilyen, amikor kutat az ember.
Amiel elmosolyodott. – Ó, hogyne. Olyan volt az egész, mint egy detektívregény. Rengeteg iratot átnéztem, három napig lemondtam miatta az összes csoportomat. Már kezdtem feladni, hogy bármit is találok, amikor végre ráakadtam arra a jegyzőkönyvre. Elég rövid, de a lényeg benne van. És végül Pèire is megúszta a sárga kereszt felvarrásával.
Felballagtak az Aude Kapu felé vezető meredek úton.
- Milyen jó itthon lenni! – sóhajtott fel Angèle, ahogy felnézett a Cité fenséges falaira. Végighúzta ujjait a köveken. – Valahányszor itt vagyok, szinte érzem magam körül a történelmet – felnevetett. – Azt hiszem, kicsit irigyellek is, hogy itt dolgozhatsz. Először engem is a középkor fogott meg, de nem tudtam kibarátkozni a latinnal, aztán más témák is érdekelni kezdtek.
- Tudom, mesélted. Ám gondolj bele: ha nem a 19. századi historiográfiát kutatnád, sosem fedeztük volna fel Raymond történetét!
- Ez igaz. De azért néha még mindig bánom, hogy nem voltam kitartóbb a latinnal.
Beléptek az Aude Kapun, a vidám zajok, az ünnepi zene, illatok és fények egyből elárasztották az érzékeiket. A Château Comtal felé indultak, az oda vezető úton minden vendéglő és kávézó egymást túllicitálva igyekezett minél több vendéget elcsábítani. Kézművesek árulták portékáikat, gyerekek viháncoltak sikongatva, kutyák ugattak, az emberek a keskeny utcákon alig fértek el.
Angèle leállt egy árus pultja előtt, aki helyben készült mézet árult. Amiel megvárta, míg mindent megnéz, majd belekarolt, hogy el ne veszítsék egymást.
- Valami fontosat akartál mondani, azt írtad az e-mailben – emlékeztette őt Angèle.
- Ja igen – Amiel zavartan mosolygott. – Szóval… hogy is mondjam, hát elég régóta ismerjük egymást és arra gondoltam…
- Várj csak! – szakította félbe Angèle. Hallgatózott. – Ne haragudj, azt hiszem el kell szaladnom egy percre. Megvársz? Várj meg itt, kérlek! Rögtön visszajövök, egyetlen perc az egész – elfordult és végigszaladt a Rue Viollet le Duc-ön. Igen, jól hallotta. A Rue de Toulouse végéből jött a hang, az elhagyatott, sötét kis utcából.
Ráfordult a Rue du Moulin d’Avarra. Kétoldalt régi-régi kőfalak húzódtak s az egyik előtt ott állt… Árnyék takarta az égett arcot, panaszos hangja zavaros félelmet, szánakozást és aggodalmat keltett Angèle lelkében. Nagyot nyelt, elszámolt magában háromig. Nem tudta, hogy van-e értelme annak, amit tenni készül, de már elhatározta, hogy megpróbálja. Legyűrte a félelmét és közelebb lépett. Az alak tekintete rászegeződött, ettől egy pillanatra kirázta a hideg, de csak ment tovább. Orrát megcsapta a füstszag, ahogy megállt karnyújtásnyira tőle. Majdnem leverte a lábáról az elmondhatatlan szomorúság, önvád és az árulás felett érzett kétségbeesett keserűség. Önkéntelenül a mellkasához kapott, mintha azzal csillapíthatná az érzelmeket. Hosszan figyelte a gyér fényben alig kivehető arcvonásokat, elszorult a torka. Végül összeszedte magát és kimondta amit eltervezett.
- Estela és a gyermek megmenekültek, nem kerültek az inkvizíció elé. Rád várnak odaát.
A kísértet jajgatása elhalkult. Angèle-t nézte, azután mintha felsóhajtott volna, alakja füstként foszlott szét az éjszakában.
A lány fellélegzett. Nehezen bírt megmozdulni, de végre megfordult. Az utca végében Amiel várta. Átölelték egymást. Amiel kézen fogta, együtt sétáltak haza a fényben úszó Citéből.



Only five days are left!
Today is the fourth Sunday of advent and as the period of light decreases outside, it is growing inside the houses as the candles are lit. With this post my Christmas tale comes to an end, but you may still expect some Christmas recipes :)
The following recipe is actually a soup in bonbon form. The idea cam from one of the posts of the Toll és fakanál blog: pear soup with chili! Spicy, exciting, enticing combination. I couldn't resist. The bonbon became quite tasty: the cream melts in the mouth and the chili shows up in the aftertaste. I think it could be a nice dessert at the end of a winter meal, preparing for Christmas :)



Ingredients:
40 gr pear puree
0,1 dl cream
1 small spoon of butter
1 small spoon of honey
100+150 gr dark chocolate
chili

Recipe:

I peel the pear and I blend the prescribed amount (fortunately mine was properly overripe :)). I add a bit of cream, a spoon of honey and butter, then I warm it up. Before it starts boiling, I turn off the stove and I add 100 gr dark chocolate to the mass. I stir it, and I put it aside. In the meanwhile I prepare the chocolate caps. After they solidfy, I take them out of the mould and I fill them with the pear filling. I sprinkle chili on the tops and the bonbon is ready.

 What do you know about the shepherds Guilhèm and Miquèl who served for the family of Raymond?
When they came for Raymond, those were herding the sheep near the city. As soon as the news reached them, they took Estela who was bearing Raymond's child and they left towards the Catalan border. A month ago when Bernard, our shepherd returned, he said that he had seen them in Ax-les-Thermes, close to the border."

Angèle was relieved when she learnt that Estela and the shepherds escaped. Amiel sent her the new protocol, that he'd successfully found in Toulouse, on Wednesday evening. At the same time he proposed that they should meet once more before Christmas as he had something important to say. Finally they agreed to meet at Place Carnot, which had turned into a buzzing, colourful, open-air amusement park in December in the framework of the La Magie de Noël festival: in the stands of the Christmas fair sweets and artisan products were sold, the middle of the square was occupied by an ice rink. As always, the charming town with its Christmas cavalcade and with the Cité lit at the end of the always shortening days, proved to be an attractive destination for tourists
Angèle was waiting for Amiel where Rue Courtejaire and the square met. He arrived a bit later looking flushed.  
- Hello! Have you been waiting long?
- No, I arrived a short time ago. 
- May I invite you for some mulled wine? 
Angèle smiled and nodded.
They walked to the huts of the fair, to the wine trader. The mulled wine poured into paper cups pleasantly warmed their freezing hands.
- Won't we go up to the fortress? It's too noisy here; we could talk on the way there - suggested Amiel. Angèle agreed, so they strolled along the Rue Aimé Ramond, then they turned to the Rue du Pont Vieux.
- I was thinking a lot whether I should tell you... - started Angèle. - Last time after we met I took a walk in the Cité and... I saw something that terrified me.
- Smell of smoke, smouldering eyes, bitter crying?
Angèle stopped. - You met him too? - she whispered.
Amiel nodded. – On Thursday evening. I saw him only for a second; then he disappeared in the shadow. 
- I think this is the same thing that Pessolis wrote about in his letter. I know it seems impossible, but the more I contemplate, the more certain I become. My heart tells me that. And there is something else.
They reached the Old Bridge. Angèle stopped in order to admire the fortress bathing in orange lights. Below them the Aude tenaciously besieged the pillars of the seven hundred-year-old bridge.
The girl took a deep breath. - This ghost story bothered me so I read a bit on the internet and in some books and I found that... certain ghosts appear and haunt when they are remembered. If they try to call the attention of people and they cry, allegedly these are the signs of his unsettled issues.
Arnaud, my friend said something similar. We sat down to talk on Friday because that case on Thursday frightened me a bit. According to him one shouldn't be afraid of such ghosts, but they should be convinced that everything's all right and they can't interfere in the issues of the living.
Angèle hummed in an agreeing manner. – Yes. I found the same too.
- But do you think that this creature... 
The girl nodded.
They passed by the St. Gimer church, from where the buzz of the Cité could be heard.
- I'm glad you found Pèire's testimony, and thanks for sending it to me. I kind of got to like Raymond Garsie; you know it happens when one is doing research.
Amiel smiled. – For sure. It was like a detective novel. I looked through many documents; I cancelled all of my groups for three days. I was about to give it up when finally I found that protocol. It's quite short but it contains the essence of the story. And even Pèire managed to get off by sewing on the yellow cross.
They walked up on the steep path to the Aude Gate.
- How good it is to be home! – sighed Angèle, as she gazed up at the majestic walls of the Cité. She touched the stones with her fingers. – Whenever I'm here I almost feel that history surrounds me – she laughed. – I think I envy you a bit because you can work here. At first I was fascinated by the Middle Ages too but I couldn't get on well with Latin, then I became interested in other topics too. 
- I know, you told me that. But think about it: if you weren't researching the historiography of the 19th century, we wouldn't have discovered the story of Raymond!
- That's true. But sometimes I still regret that I wasn't more persistent with Latin.
They entered the Aude Gate; the joyful sounds, festive music, scents and lights overwhelmed their senses. They went towards the Château Comtal. On the way there every restaurant and café tried to tempt as many guests as possible, by overbidding the others. Artisans were selling their products, children were sniggering and screaming, dogs were barking and the people could barely pass by the narrow streets.
Angèle stopped at the hut of a merchant who was selling locally produced honey. Amiel waited for her then he took her arm in order not to lose each other.
- You wanted to say something important, you wrote that in the e-mail  – reminded him Angèle.
- Oh yes – Amiel smiled embarrassedly. – So… how shall I put it, we've known each other for some time and I was thinking…
- Wait! – interrupted Angèle. She listened intensly. – I'm sorry, I think I have to leave for a minute. Will you wait for me? Wait for me please! I'll come back soon, it'll take only a minute – she turned away and ran along Rue Viollet le Duc. Yes, she hard it right. The voice came from the end of Rue de Toulouse, from the abandoned, dark street. 
She turned to Rue du Moulin d’Avar. Old stone walls ran on the two sides and he stood in front of one of them… Shadow covered the burnt face, his mournful voice woke confused fear, compassion and worry in the heart of Angèle. She swallowed and counted to three. She had no idea whether it made any sense what she was planning but she'd made up her mind to try it anyway. She overcame her fear and stepped closer. The creature fixed his gaze on her and for a second she shivered, but she still went on. When she stopped within arm's reach she could feel the smell of smoke. She almost collapsed when unutterable sadness, self-reproach and the desperate bitterness of treachery hit her. She instinctively reached for her chest as if she could soothe the feelings like that. She observed the features of his face in the dim light; she had a lump in her throat. Finally she pulled herself together and she said what she had planned.
- Estela and the child escaped, they did not get in front of the inquisition. They are waiting for you on the other side. 
The wailing of the ghost silenced. He looked at Angèle then as if he'd sighed, his body dissolved in the night. 
The girl respired. She could hardly move but finally she turned back. At the end of the street Amiel was waiting for her. They hugged each other. Amiel took her hand and they walked home together from the radiant Cité.

sós-karamellás és epres-bazsalikomos // salt-caramel and strawberry-basil

Két napja több szempontból is mérföldkőhöz érkeztem: aznap volt a szülinapom, úgyhogy elárasztottam magunkat csokival; és mivel a fehér csoki a kedvencem, ezért csak fehér csokis finomságok készültek :D Jól esett, hogy pont aznap, mikor vettünk egy üveg bort, a pénztáros megkérdezte, hogy elmúltam-e 18 :DD Azt hittem ilyen már nem fog megtörténni, miután elmúltam 25... 
Továbbá egyik postom elérte a 100 fős látogatottságot, aminek nagyon örültem :) köszönöm minden látogatónak. 
Nem is szaporítom tovább a szót, jöjjenek a receptek :) mindkettő klasszikus ízpárosításon alapul, némi fehércsokival felturbózva (a nyáron vagy egy kiló eperpürét lefagyasztottam, hogy egész télen legyen muníció :D).



Sós-karamellás trüffel
Hozzávalók:
30 gr dulce de leche
15 gr tejszín
1 kiskanál vaj
100 gr fehércsoki
egy csipet só

Elkészítés:
Kis lábosba öntöm a dulce de leche-t és a tejszínt. Felmelegítem őket, és adok hozzá egy kiskanál vajat, meg ízlés szerint egy-két csipet sót. Leveszem a tűzhelyről és hozzákeverem a fehércsokit. Beteszem a krémet a hűtőbe, majd amikor áthűlt, golyókat formálok belőle.

Epres-bazsalikomos bonbon
Hozzávalók:
10 gr tejszín
40 gr eperpüré
10 ml Tokaji fehérbor
2 levél friss bazsalikom
1 kiskanál vaj
1 kiskanál méz
100+200 gr fehércsoki
vörös lüszterpor

Elkészítés:
Összeöntöm a tejszínt, az eperpürét, a vajat és a mézet és felmelegítem őket. Közben beletépkedem a bazsalikomleveleket. Mikor a massza egynemű lesz és felforr, leveszem a tűzről, és hozzákeverek 100 gr fehércsokit, meg egy kis fehérbort. A bonbonmélyedéseket kifestem vörös lüszterporral, alkoholba mártott ecset segítségével. Miután megszáradtak, temperálom a maradék fehércsokit, és elkészítem a bonbonok héját. Miután megszilárdult, beletöltöm a tölteléket. Kis hűtés után lezárom a bonbonokat.


Two days ago I reached a milestone from two points of view: it was my birthday, so I flooded ourselves with chocolate, and since white chocolate s my favourite, I only made sweets with white chocolate :D It was nice that exactly on that day when we bought a bottle of wine, the cashier asked me whether I was over 18 :DD I thought that this wouldn't happen anymore after I had become 25...
Furthermore one of my posts reached 100 views, which made me very happy :) thanks for every visitor.
Long story short, here are the recipes :) both of them are based on a classic combination, boosted with some white chocolate (I froze almost one kilogram of strawberry puree during the summer in order to have munition for the entire winter :D).


Salt-caramel truffles
Ingredients:
30 gr dulce de leche
15 gr cream
1 small spoon of butter
100 gr white chocolate
one pinch of salt

Recipe:
I pour the dulce de leche and the cream in a small pan. I warm them up and I add a small spoon of butter and one or two pinches of salt. I take the pan off the stove and I mix the mass with the white chocolate. I put the cream in the fridge and after it cools down? I make little balls. 

Bonbons with strawberry-basil filling
Ingredients:
10 gr cream
40 gr strawberry puree
10 ml Tokaji white wine
2 leaves of basil
1 small spoon butter
1 small spoon honey
100+200 gr white chocolate
red luster dust

Recipe:
I pour the cream and strawberry puree together with the butter and the honey and I warm them up. I tear the basil leaves into small pieces and put them in the mixture. When the mass starts boiling, I take the pan off the fire and I mix it with 100 gr white chocolate and a bit of white wine. With the help of a brush dipped in alcohol I paint the cavities with red luster dust. After they dry, I temper the rest of the white chocolate and I prepare the bonbon shells. When they get solid I fill them with the filling and finally I seal the bonbons.
