narancsos-rozmaringos // orange-rosemary

A brutális csokikészítő hét után most eljött a cuccok postolásának ideje :D Sokadik alkalommal készítettem el epres-rozmaringos bonbonjaimat (ezúttal a Segítsüti licitnyertesének kérésére küldtem el őket úgy, hogy advent elejére érkezzenek meg :)). És persze a rozmaringos ganache-ból megmaradt egy adag. Mit lehetne kezdeni vele? Ekkor jött az újabb kérés: szülinapi narancsos csoki. A kettő gyorsan összeállt egy izgalmas ízvilágú bonbonná, amit külsőleg is igyekeztem érdekessé tenni. Ez a fröcskölős technika már régóta tetszett, és most az újonnan vett bronz színű lüszterporral ki is próbáltam.


Hozzávalók:
egy narancs leve
rozmaring
0,2 dl tejszín
70 gr étcsoki
egy kupaknyi rum
150 gr fehércsoki
lüszterpor, kakaóvaj

Elkészítés:
A ganache-hoz a rozmaringot tejszínbe áztatom, felforralom, állni hagyom. Másnap leszűröm, ismét felmelegítem, és hozzákeverem az étcsokit. Belefacsarom egy közepes méretű narancs levét. Végül adok hozzá egy kupaknyi rumot.
Gyertyaláng felett megolvasztok fél kiskanálnyi kakaóvajat, és hozzákeverek egy kis bronz lüsztert. Ecsettel veszek fel belőle, és az ujjammal összefröcskölöm a bonbonforma mélyedéseit. Miután a kakaóvaj megszáradt, temperálom a fehércsokit, kiöntöm a formát. A héjakat megtöltöm a narancsos töltelékkel, és pár órára a hűtőbe teszem. Végül lezárom a bonbonokat.


After the brutal chocolate making week it's time to post stuff :D I've prepared my strawberry-rosemary bonbons again and a bit was left of the rosemary ganache. What could I do with it? Then a request came: chocolate with orange for a birthday. The two quickly came together in an exciting bonbon, which I tried to make more interesting with its outer appearance. I fancied this "splashing" technique for a while and finally I applied it with the newly bought copper luster dust.


Ingredients:
the juice of one orange
rosemary
0,2 dl cream
70 gr dark chocolate
one cap of rum
150 gr white chocolate
luster dust, cocoa butter

Recipe:
For the ganache I soak the rosemary in the cream, I boil it and I leave it for several hours. The next day I sieve the cream, I warm it up and I add the dark chocolate. I squeeze the juice of one orange in it, finally I add a cap of white rum.
With the help of a candle I melt half a spoonful of cocoa butter and I mix it with copper luster dust. I dip a brush in it and with my finger I splash it in the cavities of the mould. After the cocoa butter gets dry, I temper the white chocolate and I prepare the bonbon shells. I fill them with the orange cream and I pu them in the fridge. Finally I seal the bonbons.

gesztenyés-marcipános // chestnut-marzipan

Az ír mitológiában van egy tündér (ehm, jobban mondva a tündérek királya ő), akit Lughnak hívnak. Mielőtt királlyá lett, Lugh egy szép napon bekopogott Ezüstkezű Nuada, a tündérek királyának kastélyába, és amikor megkérdezték, ki az és mihez ért, a király udvarához ugyanis csak úgy csatlakozhat, ha van valami különleges képessége, azt felelte, hogy ő építész. Építész azonban már volt az udvarnál. Akkor Lugh azt mondta, hogy ő kovács. De már kovács is volt az udvarban. Akkor Lugh azt mondta, hogy ő harcos és költő és orvos és zenész és pohárnok.... És amikor kiszóltak neki, hogy mindezekből már van az udvarnál, akkor megkérdezte: és olyan is van, aki mindezt egyszerre tudja? No erre már ki kellett nyitniuk neki a kaput.
A következő hasonlat persze azért elég erőteljesen sántít, Lugh ugyanis olyan volt, mint az eminens kölök az iskolában, mert ő tényleg minden felsorolt mesterséghez nagyszerűen értett, de néha azért egy egész kicsit úgy érzem magam, mint ő: a rengeteg dolog, ami érdekel (és amikben egy kicsit is járatos vagyok), olyan, mint egy puzzle darabkái: egyik nélkül sem lehetek teljes. Ha csak elképzelem, milyen lenne zene, mese, rajzolás, csokizás vagy történelem, mitológiák stb. nélkül élni, inkább levágnám a fél kezem. Csak egyet elveszünk a képletből, és borul az egész :D Régen ott volt a kényszer, hogy választani kéne közülük, mert hát az embernek mégiscsak kell egy szakma, amiből megél, blablabla, de néhány éve eldöntöttem, hogy a továbbiakban nem érdekelnek az efféle, a társadalom által az emberre kényszerített korlátok. Lughnak sem mondták a tündérek kastélyából, hogy bocs haver, de ezt nem hisszük el, egyszerre csak egy dologhoz érthetsz! Sok dologhoz érteni (legalább egy kicsit) tök jó, és az embert arra sarkallja, hogy még több új dolgot tanuljon meg. Az élet olyan rövid és ez a világ olyan érdekes, annyi mindent fel kell fedezni, átélni, elolvasni, megtanulni! Kár, hogy nem 48 órásak a napjaim...


Hozzávalók:
30 gr főtt/pirított, hámozott gesztenye
50 gr tejszín
40 gr marcipán
1 kupaknyi fehér rum
130 gr étcsoki

Elkészítés:
A gesztenyéket alaposan megtisztítom, és belepasszírozom őket a tejszínbe. Egy éjszakára a hűtőben hagyom a keveréket, hogy a tejszín átvegye a gesztenye ízét. Másnap hozzátördelem a marcipánt, és felteszem melegedni. Miután a marcipán elolvadt, leveszem a tűzről, végül hozzáadok egy kis rumot.
Temperálom az étcsokit, elkészítem a bonbonhüvelyeket. Miután megszilárdultak, megtöltöm őket a marcipános krémmel, és a hűtőbe teszem, amíg a töltelék megbőrösödik. Végül temperálom a maradék étcsokit, és lezárom a bonbonokat.



In Irish mythology there's a fairy (erm, he's the king of the fairies actually), whose name is Lugh. Before becoming the king, on one fine day Lugh knocked on the door of the castle of Nuada Airgetlam, king of the fairies. When they asked who it was and what skill he possessed, because he could join the court only in case he had a special skill, Lugh answered that he was a builder. But there was already a builder in the court. Then Lugh said that he was a smith. But there was already a smith in the court. Then Lugh said that he was a warrior and a poet and a physician and a musician and a cup bearer... And when he was told that there were people possessing each of these skills, then he asked: do you have someone who is skilled in all these things together? And then they had to open the door for him.
The following metaphor is quite lousy as Lugh was like the eminent kid in school, he really mastered all professions; but sometimes I do feel like him a bit: the many things I'm interested in (and I am familiar with at least a bit) are like the pieces of a puzzle: I cannot be complete without any of them. If I imagine life without music, fairytales, drawing, chocolate making or history, mythology, etc. then I would rather cut off my hand. Take one piece from the picture and the whole thing becomes incomplete. A long time ago there was this pressure that I must choose one of them because one needs a profession of which one makes a living blabla, but some years ago I decided that I am not interested in these limits that society is trying to force on us. Lugh wasn't told either that sorry buddy, but we don't believe it, you can be an expert of only one thing! Knowing/mastering many different things (at least a bit) is good and it urges one to learn even more new things. Life is so short and this world is so interesting, there are so many things to be discovered, experienced, read, learnt! It's a pity that I don't have 48-hour long days...


Ingredients:
30 gr boiled/roasted, peeled chestnuts
50 gr cream
40 gr marzipan
1 cap of white rum
130 gr dark chocolate

Recipe:
I clean the chestnuts and I mash them into the cream. I leave the mixture in the fridge for one night so the cream takes over the flavour of the chestnuts. The next day I add the marzipan cut/torn into small pieces and I warm it up. After the marzipan dissolves, I turn off the stove and finally I add a bit of rum.
I temper the dark chocolate and I prepare the bonbon shells. After they get solid, I fill them with the marzipan cream and I put the mould in the fridge until the filling starts to set. Finally I temper the leftover chocolate and I seal the bonbons.

mango-matcha

Hallgatásom okai: költözés, utazás, munka, doktori (nem feltétlen ebben a sorrendben :D). Valójában a színfalak mögött már beindult a karácsonyi csokigyár, ami idén elég extenzívnek néz ki - amit persze nem bánok, mert a csokikészítés addiktív folyamata olyan, mint a meditálás: közben az ember szépen végiggondolja a napját, megszabadul a feszültségtől, és már csak a csillogó, illatos csokit figyeli, és előre örül a finomságnak, amit készít belőle. Az alkotás öröme, ami aztán majd másoknak is örömet okoz :)
Időm és energiám sem volt, hogy ráálljak a plázákban, üzletekben már tobzódó karácsonyi hangulatra, de talán lassacskán eljön ennek is az ideje, hiszen már csak két hét, és itt az advent. Ideje lesz karácsonyi ízvilágú csokikon agyalni, na meg néhány kreatív ötlet is van még a tarsolyomban :) De ezekről később, én nem vagyok olyan türelmetlen, mint a boltok, a karácsonyt ki kell várni, abban rejlik a szépsége.
Úgyhogy most egy mangós-matchás ízesítésű bonbont mutatok be, amit tegnap készítettem.


Hozzávalók:
70 gr mangó
30 gr tejszín
50+20+150 gr fehércsoki
matcha por

Elkészítés:
A mangót és a tejszínt együtt felmelegítem, majd összeturmixolom. Hozzáadok fél teáskanálnyi matchát (a keverék színvilágáról szó se essék, ha el tudjátok képzelni a narancs és a zöld kombinációját...XD), valamint belekeverek 50 gr fehércsokit.
Temperálok 20 gr fehércsokit, némi matchával megszínezem, majd spirálokat festek a bonbonforma mélyedéseibe. Ezután temperálok 150 gr fehércsokit, és miután a díszítés megszilárdult, kiöntöm a bonbonformát. Kicsepegtetem a felesleget, száradás után megtöltöm a bonbonhéjakat a mangós töltelékkel. Hűtőbe teszem néhány órára, végül a maradék temperált fehércsokival lezárom a bonbonokat.


The reason of my silence: moving, travelling, work, doctoral studies (not necessarily in this order :D). As a matter of fact, behind the scenes the Christmas chocolate factory has started its work, which seems to be extensive this year - which I don't mind at all because the addictive process of chocolate making is like meditation: in the meanwhile one thinks over one's day, gets rid of the stress and then pays attention only to the shiny, fragrant chocolate, and is happy about the goodies that will be made. The joy of creating, which will cause joy to others too :)
I didn't have time and energy to adapt to the pushy Christmas atmosphere of malls and shops but sooner or later that time will come too, since there are only two weeks left until Advent. I'll also have to think about Christmas flavour chocolates and there are some creative ideas on my mind as well :) But I'll write about these later because I'm not as impatient as the shops - you must anticipate Christmas, that's the beauty of it.
So for now I'm going to introduce mango-matcha bonbons which I made yesterday.


Ingredients:
70 gr mango
30 gr cream
50+20+150 gr white chocolate
matcha powder

Recipe:
I warm up the mango and the cream together, then I blend them. I add half teaspoon of matcha (let's not talk about the colour of the mixture, if you can imagine the combination of orange and green...XD), and I also add 50 gr white chocolate.
I temper 20 gr white chocolate, I colour it with some matcha, then I paint spirals in the cavities of the mould. Then I temper 150 gr white chocolate and after the decoration gets solid, I prepare the bonbon shells. When they get dry, I fill them with the mango cream. I put the mould in the fridge for some hours, finally I temper the rest of the white chocolate and I seal the bonbons.

málnás-hibiszkuszos // raspberry-hibiscus

Egyik kedves együttesem a Darkness - most többen biztosan értetlenül néznek a képernyőre, de ha azt írom: I believe in a thing called love? Freddie Mercury (egyik) reinkarnációjaként értékelt énekes és bandája a 80-as éveket idéző, az összes rock-klisét felvonultató, gusztustalanul vicces videókkal és a 70-es éveket idéző hangzásvilággal - jelen pillanatban a Queen dobosának fiával a dobok megett :) Hát ez a Darkness, teljes őrület, és két nap múlva második alkalommal fogok részt venni a koncertjükön (aztán harmadszor is Bécsben, de az már másik történet :D). 
No most glamrock csokit ugyan már készítettem egyszer, de a Darkness zenéje is ehhez a stílushoz áll közel, így hasonló ízvilágú bonbont készítettem nekik is. A csípős-csattanós töltelékhez a málna, a hibiszkusz és a gyömbér adja a lendületet :) azt hiszem elég vagány ízkombináció.


Hozzávalók:
50 gr tejszín
80 gr fehércsoki
2-3 kiskanál hibiszkusz
2-3 kiskanál liofilizált, porított málna
3 nagy csipet gyömbér
180 gr tejcsoki
cukorcsillag, lüszterpor

Elkészítés:
Temperálom a tejcsokit, elkészítem a bonbonok burkát.
Felmelegítem a tejszínt és a hozzákevert hibiszkuszt. Miután felmelegedett, hozzáadom a málnát, majd elkeverem benne a fehércsokit. Végül beleszórok pár csipet gyömbért - kóstolásos alapon, hogy kellemesen bizsergős-savanykás legyen. A tölteléket kihűtöm, majd a burkokba töltöm, és a hűtőbe teszem. Miután megszilárdult a teteje, temperálom a maradék tejcsokit, és lezárom a bonbonokat.
Arany és vörös lüszterporral díszítem őket, és olvasztott csokival egy-egy cukorcsillagot ragasztok a tetejükre.



One of my favourite bands is Darkness - and probably many are staring at the screen uncomprehendingly, but what if I say I believe in a thing called love? Singer regarded as (one of) the reincarnations of Freddie Mercury and his band operating with disgustingly funny videos gathering all rock clichés of the 80s and the sound of the 70s - at the moment touring with the son of Queen's drummer :) This is the Darkness, madness that I'll see for the second time the day after tomorrow (and then third time in Vienna, but that's another story).
Once I've made glamrock chocolate but the music of Darkness has this style too so I prepared bonbons with similar flavour for them. The impulse of the spicy filling is provided by raspberry, hibiscus and ginger :) I think it's a quite cool combination.


Ingredients:
50 gr cream
80 gr white chocolate
2-3 small spoons of hibiscus
2-3 small spoons of lyophilised raspberry
3 pinches of ginger
180 gr milk chocolate
candy stars and luster dust

Recipe:
I temper the milk chocolate and prepare the bonbon shells.
I warm up the cream and the hibiscus. After it gets warm, I add the raspberry, then I mix it with white chocolate. Finally I sprinkle it with ginger - I taste it in order to achieve a pleasantly tingling-sour taste. I cool down the filling, then I pour it in the shells and I put the mould in the fridge. After the filling gets solid, I temper the leftover milk chocolate and I seal the bonbons.
I decorate them with gold and red luster dust and I stick candy star on their top with molten chocolate.
