Ratcatcher

Tudjátok, Ratcatcher tojását egy erdő közepén találtam, körülötte olvadt kövek szerteszét - nyilvánvalóan sárkányok lakta hely lehetett, akik valamiért elhagyták, és a tojás hátramaradt. Nem voltam rest befogadni :) azért az embernek nem minden nap van lehetősége arra, hogy egy igazi sárkányt fogadjon be. De persze a kikeltéshez szükség volt valakire, aki igazán ért a sárkányokhoz, és igen hosszú volt az út, mire megtaláltuk őt. 
No de most még maradjunk egy kicsit a tojásnál - hogy ti is lássátok, milyen is egy igazi sárkánytojás, lemodelleztem csokiból :) és persze bébi Ratcatcher sem maradhatott ki belőle - különben nem is lenne az igazi!


Hozzávalók:
100 gr vörös marcipán
100 gr fehércsoki
fehércsoki lencse
bronz lüszterpor
cukorgyöngy

Elkészítés:
Először Ratcatchert formázom meg marcipánból. Fondantformázó készlet segítségével alakítottam ki a karmait, az arcát, és a szárnyait, amiket később gyurmáztam a kis testéhez. A homlokába egy rózsaszín cukorgyöngy került - ez a sárkánygyöngy :) miután elkészült, hűtőbe teszem, hogy megszilárduljon a gyurmázástól kissé ragacsos marcipán.
Temperálom a fehércsokit, és tojás alakú műanyag forma két felébe töltöm, majd ecsettel szétkenem, hogy mindenhová jusson. Kis ideig fejjel lefelé állítom a forma két felét, majd a hűtőbe teszem, és megvárom, míg megköt a csoki.
A kis marcipán Ratcatchert beleteszem az elkészült tojásba. Ismét temperálom a fehércsokit, ecsettel végigkenem az egyik tojásfél szélét, és összeragasztom a két felet. Ezután következik a sárkánytojás külső kialakítása: egy tojástartóba állítom (ha az nincs, megteszi egy kávéfőző alja is :D), és fehércsoki lencsékkel borítom, amiket szintén temperált fehércsokival ragasztok szépen sorban, kissé egymást fedve a tojásra. Ez elég pepecs munka, közben egyszer újra kellett temperálni a ragasztóanyagot, továbbá a fél konyha csokis lett (épp, ahogy szeretem) :D
Amikor kész vagyok, megvárom, hogy alaposan megkössön a csoki, végül bronz színű lüszterrel festem be a tojást. 




You know, I found Ratcatcher's egg in the middle of a forest; all around there were molten stones - obviously it was inhabited by dragons, who'd left the place for some reason and the egg was left behind. I didn't hesitate to take him in :) one doesn't have the possibility to adopt a real dragon every day. But of course to hatch the egg, I needed someone who really knows dragons, and it was a long way to find him.
But for now let's stick with the egg - I made a chocolate model of it, so you can see how it looked like :) And of course baby Ratcatcher must be inside it, otherwise it wouldn't be the real thing!


Ingredients:
100 gr red marzipan
100 gr white chocolate
white chocolate chips
bronze luster dust
candy pearl

How to make it:
First I make Ratcatcher out of marzipan. I used a fondant modeling set to shape his claws and face and wings, which were added to the body in the end. A pink candy pearl was placed in his forehead - this is the dragon pearl :) after I am done, I place him in the fridge a bit so the sticky marzipan can become solid again.
I temper the white chocoalte and I pour it in the two halves of a plastic egg mould. With a brush I smear it everywhere. I place the two halves upside down for a while, then I put them in the fridge until the chocolate sets.
I place the little marzipan Ratcatcher in the chocolate egg. I temper the white chocolate again, I smear some on the rim of one half of the egg and I stick the two halves together. Then comes the outer decoration of the egg shell: I put the egg in an eggcup (or if you don't have one, the bottom half of a coffee maker will do :D), I cover it with chocolate chips - I stick them on with tempered chocolate and they have to cover each other slightly. This is a meticulous work, I had to temper the "glue" once again in the meanwhile and the entire kitchen was full of chocolate :D (just like I like it :D).
When I am done, I wait until the chocolate sets, finally I paint the egg with bronze luster dust.

Ratcatcher's truffles

Ratcatcher az én kis házi kedvencem, a házisárkányom (ha én magamnak nem lennék eléggé az :D). Ő vigyáz rám, amikor egyedül vagyok, és mindig mindenhova velem tart. Jól emlékszem, amikor rátaláltam a tojására - kis vörös rücskös drágakőként csillogott az erdő mélyén. Ott voltam, amikor kikelt az Éjféli Tűz izzásában, és akkorka kis gyík volt, mint az ujjam. Vele voltam, amikor csetlés-botlás közepette megtanult mindent, amit egy igazi sárkánynak tudnia kell, és akkor is, amikor szárnyra kelt a hír, hogy a világok egyikében ismét él egy sárkány, és ellenfeleink megpróbálták megszerezni őt. Amióta megnőtt, vele repülök hegyek és felhők között, egészen fel az égig. Egyszer pedig kóstoltam még a sárkányköpetből készült igen erős koktélt is (ha tehetitek, inkább hagyjátok ki, hacsak nem bírjátok igenigen jól a másnaposságot...). Kissé nehézkes most már a lakásban tartani őt, de persze ez nem szakíthatja el a köztünk lévő köteléket :) (nézzétek el, hogy nem rakok fel róla képet, csak a saját rajzaimat, de a csokifotózás közben épp vadászni volt).


Most az általa ihletett trüffel receptjét osztom meg veletek - természetesen ez is kellemesen tüzes, amilyen illik is egy sárkányhoz :)


Hozzávalók:
120+100 gr étcsoki
40 gr málnapüré
0,1 dl vodka
4 csipet csili
egy kiskanál vaj
egy kiskanál méz

Elkészítés:
A málnát lepasszírozom és leszűröm, a málnapürét vajjal és mézzel felmelegítem, majd hozzákeverek 120 gr magas kakaótartalmú étcsokit. Ezután adom csak hozzá a vodkát. Végül megszórom csilivel, és alaposan összekeverem. Hűtőbe rakom 3-4 órára, azután kiskanál segítségével kis adagokat veszek ki belőle, amiket golyókká formázok. Ezeket sütőpapírra ültetem.
Temperálok 100 gr étcsokit. A trüffelgolyókat konyhai tűre szúrva megforgatom a csokiban, lerázom róluk a felesleget, majd visszateszem őket a sütőpapírra, végül ismét a hűtőbe rakom őket, míg a burok megszilárdul.




Ratcatcher is my pet dragon (if I myself wasn't enough :D). He takes care of me when I'm alone and he comes with me everywhere. I can remember so well when I found his egg - it was shining like a little red coarse gemstone in the deep of the forest. I was there when the egg hatched in the glow of the Midnight Fire and he was a tiny lizard like my finger. I was with him while he, stumbling around, learnt everything that a real dragon needs to know, and also when news spread that a dragon lives in one of the worlds again and our enemies tried to seize him. Since he grew up I fly with him amid mountains and clouds, up in the sky. And once I even tasted a strong cocktail made of dragon spit (do not try it, only if you can handle hangover very very well...). Nowadays it is kinda difficult to keep him in the house but of course this cannot tear our bond :) (apologies that I can't upload a photo of him, only my drawings, but he went out hunting while I was taking pictures of the chocolates). 


Now I will share with you the recipe of truffles inspired by him - naturally they are pleasantly fiery as it befits a dragon :) 


Ingredients:
120+100 gr dark chocolate
40 gr raspberry puree
0,1 dl vodka
4 pinches of chili
one small spoon of butter
one small spoon of honey

Recipe:
I blend the raspberries and sieve them; I warm up this puree with butter and honey, then I add 120 gr dark chocolate with high cocoa percentage. I only add the vodka then, finally I sprinkle the ganache with chili and I stir it properly. I put it in the fridge for 3-4 hours, then with a small spoon I scoop little portions and I shape small balls. I put them on a parchment sheet.
I temper 100 gr dark chocolate. Pinning the truffles on a kitchen needle I dip them in the chocolate, I shake off the excess, then I put them back on the parchment paper. I put them in the fridge until the chocolate shell sets.

epres-balzsamecetes // strawberry-balsamic vinegar

"Bizony mondom néktek, ím eljő a kard s a bárd kora, a farkas-förgeteg kora. Eljő a Fehér Fagy és a Fehér Fény Kora, az Őrület és a Megvetés Ideje, Tedd Deireádh, a Végidő. A világ fagyban pusztul el, s az új nappal újjászületik. Újjászületik az Ősi Vérből, Hen Ichaerból, a magból, mit elvetettek. A magból, mely nem hajt ki, hanem lánggal lobban fel. 
Ess'tuath esse! Így lészen! Olvassátok a jeleket! Hogy milyen jelek érkeznek, elmondom néktek - elébb elárasztja a földet az Aen Seidhe vére, a Tündevér..."

Mit érezhet az, akinek a születését és sorsát ilyen szavakkal jósolják meg? A 12 éves Ciri épp ebben a helyzetben van. Miután szülővárosát és nagyanyját, Cintra királynőjét elpusztítják Nilfgaard katonái, a kislány sorsa összefonódik Geraltéval, aki megmenti és magával viszi őt Kaer Morhenbe. Geralt foglalkozására nézve szörnygyilkos, vagyis abból tartja fenn magát, hogy megfelelő bérezésért cserébe ellátja az embereket rettegésben tartó különféle szörnyetegek (úgy mint vámpírok, hullaevő szellemek, és így tovább) baját. A történetnek már ez az alapfelállás is épp elég muníciót ad, azonban a kis hercegnő és a szörnygyilkoló mutáns közti barátság - ami később apa-lánya szeretetté mélyül - csak a kiindulópontja Andrzej Sapkowski méltán híres Witcher-sorozatának. 


Öt könyvön keresztül kísérhetjük el Geraltot és Cirit kalandos útjukon; sorsuk egybefonódik nemcsak számtalan izgalmas, vicces, drámai karakterével, hanem a történelem szövetével is, ami itt nemcsak hátteret ad a történetnek, hanem kíméletlenül a markába szorítja szereplőinket. Megismerhetjük a királyságok uralkodóit, varázslónőket, egyszerű parasztokat, törpéket, tündéreket - és mindezt szerencsére nem a megszokott Tolkien-utánzatú kliséken keresztül. 
Sapkowski érdeme, hogy a történet mindvégig realisztikus marad véres és kevésbé véres érdekellentétekkel, érzésekkel, törekvésekkel, komplex viszonyokkal. Továbbá nem kímélte magát, és bőven merített az európai mitológiakincsből - az ő tündérei sokkalta szervesebben kapcsolódnak a kelta mondavilághoz, mint Tolkienéi, szereplői életében a mitológia realitássá válik, a lények, amikkel Geraltnak időről időre szembe kell szállnia, a legkülönbözőbb "nemzetiségeket" tudhatják magukénak. Ez a sokszínűség megmutatkozik a szereplők elnevezésében is, ami néha egy kissé már zavarba ejtő. Az is mindenképp Sapkowski számlájára írható, hogy nem kiszámítható fordulatok szerint építkezik a történet: hogy csak egy példát említsek, a Ciri előtt álló két legnyilvánvalóbb lehetőség közül az egyik, hogy törékeny gyermekként kézenfekvő módon Geraltra bízza magát, és hagyja - netán elvárja -, hogy megvédje őt. Ehelyett ő a másik utat választja: edz és küzd és tanul, és mindenekkel szemben ő maga alakítja a sorsát (ami, lássuk be, a fenti idézet felől nézve nem is olyan könnyű feladat).
Bár ebben a gazdag, részletesen kidolgozott képzeletbeli világban általánosan elterjedt nézet, hogy a Geralthoz hasonló mutánsokat (szándékosan nem használom a magyar fordítás "vaják" szavát, egyszerűen borzalom) kiképzésük során megszabadítják az emberi érzésektől, a regény kezdetétől fogva nyilvánvaló, hogy ez valójában nem igaz. Geralt gyengéd szeretettel veszi körül Cirit, ahogy a társai is Kaer Morhenben. És persze két főszereplőnket nemcsak egymáshoz fűzi különleges kapcsolat, hanem az eleinte visszataszítóan büszke és hiú mágushoz, Yenneferhez, a könnyed és kedves Trisshez, na meg személyes kedvencemhez, Dandelionhoz, a bárdhoz, aki legalább úgy haldoklik egy kis karcolástól és vértől, ahogy én tenném :D
Ahogy megállíthatatlanul folyik a történet, szereplőink észrevétlenül változnak és az olvasó velük változik; és bár nem várnánk, mert Sapkowski mintha kevésbé kedvelné saját szereplőit, mint sok más író, a regény végére velük érzünk, velük sírunk és nevetünk. Na ez az igazi írói teljesítmény.

Most, hogy a végére értem az öt könyvnek, úgy hiszem, jó nyári kikapcsolódás lesz újraolvasni őket, és ismét elmerülni a kalandokban :) 
Ezúttal pedig én is egy izgalmas csokival próbálkoztam - méghozzá epret és balzsamecetet kevertem össze tejcsokival. Az édes ízt finoman ellensúlyozta a balzsamecet savanykássága; a bonbonok ezúttal vékony étcsoki burkot kaptak.


Hozzávalók:
150 gr étcsoki
90 gr tejcsoki
45 gr eperpüré
3 kiskanál glassa gastronomica
egy kiskanál vaj
vörös lüszterpor, kakaóvaj

Elkészítés:
Az eperpürét és a vajat összemelegítem, majd hozzáadom a tejcsokit. Végül belekeverek 3 kiskanál glassa gastronomicát, és megkóstolom, hogy kellően pikáns-e.
Olvasztott kakaóvajhoz keverem a vörös lüsztert, ecsettel körkörös mozdulatokkal vörös csíkokat festek a bonbonforma mélyedéseibe. Míg a díszítés megszárad, temperálom az étcsokit. Elkészítem a bonbonhéjakat. Megtöltöm őket az epres krémmel, és hűtőbe teszem a formát. Miután a töltelék megbőrösödött, temperálom a maradék étcsokit, és lezárom a bonbonokat.

What might one feel when one's birth and destiny was foretold with such words? 12-year-old Ciri is exactly in this situation. After her hometown and her grandmother, the queen of Cintra had been destroyed by the soldiers of Nilfgaard, the girl's fate is intertwined with Geralt's, who saved her and brought her to Kaer Morhen. Geralt is a witcher, he earns his living by killing monsters that threaten the lives of people (such as vampires, ghouls, etc.). This situation in itself holds enough munition, but the friendship of the little princess and the monster-killing mutant - which later on transforms into the love of father and daughter - is only the starting point of Andrzej Sapkowski's deservedly famous Witcher-series. 

We can accompany Geralt and Ciri on their adventures through five books; their destiny intertwines not only with those of numerous exciting, funny, dramatic characters, but also with the texture of history, which is not only a backdrop but it grasps our characters into its fist without mercy. We can get to know the rulers of kingdoms, sorcerers, simple peasants, dwarves, elves - fortunately not through the usual Tolkien-ish clichés. A merit of Sapkowski is that the story remains realistic with bloody and not-so-bloody conflicts of interest, emotions, aspirations, complex relations. Moreover, the author did not spare the effort of drawing from European mythologies - the connection of his elves to Celtic myths is much more organic than those of Tolkien; mythology becomes the reality of his characters; the monsters that Geralt has to face from time to time, bear various "nationalities". This diversity manifests itself in the names of the characters too, which is sometimes baffling. Another advantage is that the story is quite unpredictable. Just to mention one example, from the two obvious paths that Ciri can take, one is that as a fragile child, she lets - or even expects - Geralt to take care of her and defend her. Instead, she takes the other path: she trains and fights and learns and in spite of everything, she shapes her own destiny (which, let's face it, is not such an easy task from the point of view of the above quotation).
Even though in this rich, detailed imaginary world it is common knowledge that mutants like Geralt are disposed of their feelings during their training, from the very beginning of the novel it is clear that this is not true. Geralt, as well as his comrades in Kaer Morhen, surround Ciri with gentle love. And of course our protagonists have special relationships with others too: such as the initially obnoxiously proud and vain sorceress, Yennefer, the easygoing and kind Triss and my personal favourite, Dandelion, the bard, who agonizes from a little scratch and blood just like I would :D
As the story unstoppably flows, the characters change and the reader changes with them; and even though we wouldn't expect it, as it seems that Sapkowski doesn't like his characters as much as other writers, by the end of the novel we feel with them, we cry and laugh with them. Now that's a real achievement of the writer.

Now that I finished the five books, I believe it will be nice to re-read them during the summer and submerge in the adventures again :)
This time I tried an exciting chocolate - I mixed strawberry and balsamic vinegar with milk chocolate. The sweet flavour is counterbalanced by the sourness of the vinegar; the bonbons got thin dark chocolate shells.


Ingredients:
150 gr dark chocolate
90 gr milk chocolate
45 gr strawberry puree
3 small spoons of glassa gastronomica
one small spoon of butter
red luster dust, cocoa butter

Recipe:
I warm up the strawberry and the butter, then I add the milk chocolate. I mix it with 3 spoons of glassa gastronomica and I taste the cream to see if it's piquant enough.
I mix red luster dust with molten cocoa butter. With a brush I paint red circles in the cavities of the mould. While the decoration dries, I temper the dark chocolate. I prepare the bonbon shells. I fill them with the strawberry cream and I put the mould in the fridge. After the filling sets, I temper the leftover dark chocolate and I seal the bonbons.

epres-rózsás // strawberry-rose

Áh, már annyiszor megfogalmaztam magamban a legszerelmesebb csoki-ízt, de azt hiszem, ezt már semmi sem überelheti :D Hát mi más is lehetne az igazi szerelmes íz, ha nem a tejszínes eper és a vörös rózsa kombinációja?! Már csak a pezsgő hiányzik belőle, de talán egyszer majd úgy is kipróbálom. Csak a teljesség kedvéért :D
A modern zenetörténet legszebb szerelmes dala (és amikor ezt mondom, teljességgel objektív vagyok!!!) egyértelműen a Love of my life, ikonikus Queen-dal, aminek természetesen itt a helye :)


Hozzávalók:
150+80 gr fehércsoki
50 gr eperpüré
0,1 dl tejszín
6-8 rózsaszirom
vörös lüszterpor, szárított rózsaszirmok

Elkészítés:
Összeöntöm az eperpürét és a tejszínt, megmosom a rózsaszirmokat és beletépkedem. Felforralom a szószt, és hagyom állni 1-2 órát, hogy a rózsa íze kioldódjon. Ezután hozzákeverek 80 gr fehércsokit.
A csokiforma egyes mélyedéseit kis pöttynyi vörös lüszterporral díszítem. Temperálok 150 gr fehércsokit, elkészítem a csokiburkokat. Miután megszilárdultak, megtöltöm őket az epres töltelékkel és a hűtőbe teszem. Végül a maradék temperált csokival lezárom a bonbonokat. Miután kifordítottam őket a formából, fehércsoki pöttyel szárított rózsasziromdarabkákat ragasztok a szívek tetejére.



Ah I tried to formulate the best chocolate with love-taste but I think this one cannot be outdone :D What could be the ultimate love taste if not the combination of strawberry with cream and red rose?! Only champagne is missing, but maybe I'll try it with that too. Just for the sake of it :D
The most beautiful love song in the history of modern music (and when I say this, I'm totally objective!!!) is obviously Love of my life, Queen's iconic song, which must be inserted here :)


Ingredents:
150+80 gr white chocolate
50 gr strawberry puree
0,1 dl cream
6-8 rose petals
red luster dust, dried rose petals

Recipe:
I pour the strawberry puree and the cream in a pot; I wash the rose petals, I tear them into small pieces and add them to the puree. I boil the sauce, cover it and leave it for 1-2 hours so the rose's flavour dissolves. Then I mix it with 80 gr white chocolate.
I decorate some of the cavities of the mould with tiny dots of red luster dust. I temper 150 gr white chocolate and I prepare the shells. After they get solid, I fill them with the strawberry cream and I put the mould in the fridge. Finally I seal the bonbons with the leftover tempered chocolate. After they fall out of the mould, with a dot of white chocolate I stick pieces of dry rose petals on the top of the hearts.
