marcipánlikőr // marzipan liqueur

Néhány hete jártunk Szentendrén a marcipánmúzeumban, ami egészen lenyűgöző. Aztán megvettem a boltban a marcipánlikőrt, amiről persze kiderült, hogy életében nem látott sem marcipánt, sem mandulát :D Úgyhogy akkor eldöntöttem, hogy karácsonyra készítek igazi marcipánlikőrt. Lelkesen el is kezdtem böngészni a neten a recepteket, de egyik szörnyebb volt a másiknál: az egyikbe tojást raktak, a másikba 3 dl vodkához fél liter tejet írtak elő, stb. Szóval kénytelen voltam megalkotni a saját, igen egyszerű receptemet, amiről elmondható, hogy egész fincsi lett :)
Természetesen folytatódik a karácsonyi mese is, mivel advent harmadik vasárnapja van :)


Hozzávalók:
5 dl vodka
2 dl tejszín
200 gr marcipán
2 teáskanál mandula aroma

Elkészítés:
Felmelegítem a tejszínt, és belereszelem a marcipánt. Addig keverem, míg fel nem olvad, ekkor hozzáadok két teáskanál aromát, ami kiemeli a mandula ízét. Amikor egészen kihűlt a massza, hozzákeverem a vodkához, és hűtőbe, vagy sötét helyre teszem. Naponta felrázom. Az ízek nagyjából két-három hét alatt összeérnek.

„Mióta ismered az említett Estelát?
Amióta elszegődött a nagybátyámhoz, Ponshoz 15 évesen.
Mikor ismerted meg őt testileg?
Nagyjából egy évvel később.
Azon első alkalommal bűnnek tartottad-e ezt?
Mivel mindkettőnknek élvezetet okozott, nem hittem azt és nem is tűnt bűnnek akkor.
És most hiszed, hogy ha egy férfi és egy nő, akik nincsenek vérrokonságban, egyesülnek, és az mindkettejüknek kellemes, akkor bűnt követnek el?
Azt hiszem, igen.”

Angèle figyelmesen olvasta a jegyzőkönyv szövegét. Amiel addig kutakodott, míg megtalálta, legépelte s elküldte neki is. A fájlban a latin és a francia szöveg párhuzamosan futott, a margón Amiel magyarázó megjegyzésekkel látta el őket. Sajnos több részlet is hiányzott, ugyanis az eredeti jegyzőkönyvet több ízben meghajtották, a pergamen megtört, és más káros hatások is érték. Annyit azonban így is ki lehetett bogozni belőle, hogy Raymond Garsie-t több tanú, köztük egy barátja, Berenguièr, eretnekséggel vádolták, mi több, utóbbi szerint parfait, vallási vezető volt. Egybehangzóan állították, hogy Raymond befogadott és élelemmel látott el más vándor parfait-kat, és maga is meggyőződésből hirdette a katharok, vagyis Jó Keresztények tanait. Ennek ékes bizonyítéka volt épp ez utolsó mondata, hiszen a katharok elítélték a testiséget.
Minden ellene felhozott bizonyítéknak ellen mondott azonban, hogy hosszú ideje kapcsolatban állt Estelával, egy cselédlánnyal. Némely parfait-k látszatházasságot tartottak fenn, hogy megtévesszék ellenségeiket, és szemmel láthatóan ezzel az inkvizíció is tisztában volt.

„Azon a télen, amikor kapcsolatot kezdtem Estelával, egyik délután meglátogatott egy barátom, Berenguièr, aki akkoriban Pèire-nél, a takácsnál dolgozott. Azt mondta nekem, meg akarja ismerni Estelát, de én ebbe nem egyeztem bele. Ezután nem kérdezett többé efelől, de Estela később bevallotta, hogy őt is megkérdezte, de ő elutasította.
Estela ismertetett meg Fabriciával, aki a magukat Jó Keresztényeknek nevezők közül való?
Én őt nem ismerem, és tudomásom szerint Estela sem.”

Amiel hosszú magyarázata kapcsolódott ez utóbbi bekezdéshez: „Az eljárás elején Raymond-t, mint minden gyanúsítottat, megkérdezték, kik a halálos ellenségei, és az ő tanúvallomásaikat nem vették figyelembe. Azt hiszem, azzal ásta meg a saját sírját, hogy Berenguièr barátját nem sorolta közéjük. Mindketten ugyanannak a nőnek a kegyeire pályáztak, aki végül Raymond-t választotta. Gyanítom, hogy Berenguièr bosszúból jelentette be Raymond-t az inkvizíciónál, hiszen, bár úgy tűnik, igen jól ismeri és magáévá tette a katharok világnézetét, konzekvensen tagadja, hogy parfait lenne, és Estelára hivatkozik. Talán nem sejtette, hogy a riválisa eddig elmegy majd.”
Raymond-t, úgy látszik, körülvették az eretnekek. Több ismerőse, köztük a szeretője is Jó Keresztények követője volt, jóllehet, amikor erről kérdezték, igyekezett mindent letagadni. Nyilvánvalóan el akarta kerülni, hogy Estela is az inkvizíció elé kerüljön.
Az első kihallgatás azzal zárult, hogy fogságra ítélték Raymond-t.
„A »Le Mur«, vagyis a Fal volt az a hely Carcassonne-ban, ahol az elítélteket tartották,” írta Amiel. „Akit szigorú fogságra ítéltek, az apró cellába került, ahol kenyéren és vízen élt. Így tartották fogva a parfait-kat. Befalazva, megfelelő táplálék hiányában a legtöbben néhány hónap alatt meghaltak. Mások, akiket »murus largus«-ra ítéltek, jobb helyzetben voltak, valószínűleg nagyobb cellákat és jobb ellátást kaptak.”
Hat hónap múlva Raymond-t ismét kihallgatták. Ezúttal teljesen más válaszokat adott; összevetve az előző vallomásával, mintha egy másik ember állt volna a püspök előtt.

„Beismered, hogy a magukat Jó Keresztényeknek nevező eretnekek követője vagy?
Beismerem.
Követőjük voltál csupán, vagy vezető is?
Vezető voltam, és többször végeztem a szertartásaikat.
Kik voltak társaid e bűnben?
Pèire, az unokatestvérem, Guilhèm és Miquèl, a pásztoraink, és Estela.”

Ezzel Raymond Garsie sorsa megpecsételődött. Nem volt hajlandó megbánni bűneit és visszatérni az egyház kebelébe, így máglyahalálra ítélték. Az ítéletet 1317. karácsonyán hajtották végre.
„Az a benyomásom, hogy Garsie hitt az eretnek tanokban, de csak a hosszas börtönbüntetés és talán másfajta nyomás hatására tört meg és vallott úgy, hogy vezető szerepe volt, ezt a vallomást ezért nem tekinthetjük hitelesnek,” írta Amiel. „Érdekes lenne megtudni, mi történt a szeretőjével és a többiekkel. Folytatom a kutatást, hátha találok még valamit – talán a közigazgatási iratok között.”
Angèle felsóhajtott. Szomorú történet… mint a legtöbb katharé. Hosszan töprengett, mielőtt nekilátott a válaszlevélnek. Mikor végzett, elküldte, majd az ablakhoz sétált. Odakint a várost szürke esőtakaró fedte; az alacsonyan szálló felhők csak siettették a korai sötétedést. A hűvös ablakpárkányra könyökölve úgy döntött, hogy a karácsony előtti utolsó kutatási hetét Garsie ügyének fogja szentelni. Ki tudja, hátha talál valamit a központi levéltárban…



A few weeks ago we visited the marzipan museum in Szentendre, which was fascinating. However, afterwards I bought marzipan liqueur in the shop, and it turned out that it had never even seen either marzipan, or almond :D So I decided that I'm gonna make real marzipan liqueur for Christmas. I started browsing the recipes on the internet, but one was more horrible than the other: they put eggs in one of them, for another they prescribed half a liter milk with 3 dl vodka, etc. In the end I had to find out my own, very simple recipe, and I can say that it became quite tasty :)
 Naturally the Christmas tale will continue too, as it's the third Sunday of advent :)


Ingredients:
5 dl vodka
2 dl cream
200 gr marzipan
2 tea spoons of almond aroma

Recipe:
I warm up the cream and I shred the marzipan in it. I stir it until the marzipan melts, then I add two tea spoons of aroma, which will enhance the flavour of the almond. When the mass gets cool, I mix it with the vodka and I put the bottle in the fridge or any other dark place. I shake it up every day. The flavour will mature within two or three weeks.

„Since when do you know the aforementioned Estela?
Since she hired herself out to my uncle, Pons, when she was 15 years old.
When did you get to know her carnally?
About a year later.
Did you believe it to be a sin on this first occasion?
Because it was pleasing to both of us, I did not believe that and it did not seem to be a sin at that time.
Do you believe that if any man unites with any woman, who are not related within the degrees of consanguinity, if it is pleasing to both of them, that would be a sin?
I believe, yes."

Angèle read the text of the protocol carefully. Amiel was researching until he found it, transcribed it and sent it to her. In the file the Latin and French text ran parallel; Amiel added explanatory comments on the margin. Unfortunately some parts were missing as the original protocol had been folded many times, the parchment got broken and it had been exposed to other damaging effects too. It could still be deciphered that several witnesses, among them Berenguièr, a friend of his, accused Raymond Garsie of being a heretic. Moreover, according to the latter, he was a parfait, a religious leader. They unanimously stated that Raymond had taken in and fed other wandering parfaits and that he had propagated the Cathar doctrines out of conviction. This was proved exactly by his last sentence, as the Cathars (or Good Christians) condemned carnality.
However, all proofs were contradicted by the fact that he had been in a relationship with Estela, a handmaid, for a long while. Some parfaits had kept up false marriages in order to deceive their enemies and apparently the inquisition had been aware of this.

„That winter, when I started a relationship with Estela, one afternoon I was visited by a friend, Berenguièr, who worked for Pèire the weaver at that time. He told me that he wanted to get to know Estela but I did not agree to that. After that he did not ask about this any more, but later Estela admitted that he had asked her too, but she had refused him.
Did Estela introduce you to Fabricia, who is one of those who call themselves the Good Christians?
I do not know her, nor does Estela, according to my knowledge."

Amiel attached a long explanation to this last paragraph: "In the beginning of the procedure they asked Raymond, like every other suspect, who were his deadly enemies and their testimonies were not taken into account. I believe he dug his own grave when he didn't count his friend Berenguièr among them. Both of them favoured the same woman, who chose Raymond in the end. Berenguièr reported Raymond to the inquisition out of revenge, I presume, since, even though it seems he knew and internalised the Cathar world view, he consistently denied that he was a parfait, and he referred to Estela. Probably he hadn't assumed that his rival would go this far."
It seemed that Raymond was surrounded by heretics. Several of his friends and his lover were followers of the Good Christians, however, when he was asked about this, he denied everything. Obviously he tried to prevent Estela getting in front of the inquisition.
 The first interrogation ended by Raymond being convicted to imprisonment. 
„The  »Le Mur«, or the Wall was the place in Carcassonne where the prisoners were held," wrote Amiel. "Those sentenced to strict imprisonment were put into tiny cells and they received only bread and water. This is how parfaits were kept. Immured, lacking proper nourishment, most people died within months. Others, who were convicted to »murus largus«, were in better position; probably they had bigger cells and better provisions."
 Six months later Raymond was interrogated again. This time he gave entirely different answers; as if another person had stood in front of the bishop, compared to his previous confession.

„Do you confess that you are a follower of the heretics who call themselves Good Christians? 
I confess it.
Were you only their follower or a leader too?
I was a leader and I performed their ceremonies several times.
Who were your companions in this sin?
Pèire, my cousin, Guilhèm and Miquèl, our shepherds and Estela."

Thus the fate of Raymond Garsie was sealed. He was not willing to repent his sins and to return to the church, so he was sentenced to burning at the stake. The verdict was carried out at the Christmas of 1317.
„My impression is that Garsie believed in the heretic dogmas, but he broke and confessed that he had had a leading role only after a lengthy imprisonment and probably under other types of pressure, therefore we cannot consider this confession authentic," wrote Amiel. "It would be interesting to know what happened to his lover and the others. I will keep on researching, maybe I can find something else - perhaps among the administrational documents."
Angèle sighed. What a sad story... like that of most of the Cathars. She contemplated for a while before she started to write an answer. When she finished it, she sent it, then she walked to the window. Outside the city was covered by a blanket of rain; low flying clouds hastened the early dusk. Leaning over the cool windowsill she decided that she's going to dedicate her last week of research before the Christmas break to the case of Garsie. Who knows, maybe she can find something in the central archives...
