"1519 áprilisában megérkezett a Tabasco-partra Hernan Cortés spanyol hódító lóháton, fehér arccal, nagy szakállal.
Méretre vágom a transzerfóliát, belehelyezem a mágneses öntőformába. Temperálom az 50%-os étcsokit, elkészítem a bonbonok burkát. Miután megszáradtak, megtöltöm őket a fűszeres krémmel, és hűtőbe teszem. Végül lezárom a bonbonokat.
On the occasion of my birthday I bought myself a chocolate book and while reading, I found these lines:
"In April 1519 Hernan Cortés Spanish conqueror arrived at the Tabasco coast on his horse, with white face and long beard. According to contemporary sources, the locals believed him to be Quetzalcoatl Aztec god. In a golden cup Montezuma emperor offered him cocoa drink, the divine potion, which was sweetened with honey and flavoured with chili, cinnamon and clove."
Oh. The recipe of the cocoa that wasn't full of sugar; it contained that ancient, wild flavour which tempts to take an adventure and resonates with the secret desires of the soul. It would be a sin not to tame it.
I bought 80% quality chocolate for this. This is actually a very simple bonbon; it's depth depends on the spices and of course on the mellow, clear, fresh cocoa. Naturally adequate looks are suitable for a royal, old recipe :) so I chose my most beautiful transfer sheet too :)
Ingredients:
100 gr 80% dark chocolate
150 gr 50% dark chocolate
one and a half small spoon of butter
2 small spoons of oney
cinnamon, vanilla, chili, clove
transfer sheet
Recipe:
In a bain-marie I melt the 80% dark chocolate. I mix it with some butter, two small spoons of honey and 1-2 pinches of the spices. A little bit more can be aded of the chili, as it will provide the hot overtone.
I cut up the transfer sheet and I place it in the magnetic mould. I temper the 50% dark chocolate, I prepare the bonbon shells. After they get solid, I fill them with the spicy cream and I put them in the fridge. Finally I seal the bonbons.
Adventi mese 1
És bár mindig szívélyesen mosolygott a boltjába tévedő gyerekekre, a körükben mégis olyan, félelmes csodálat övezi, amilyen általában a meselényeket illeti.
- vélekedik Emmie, türelmetlen mozdulattal simítja arrébb a haját a szeméből.
- Kértek kóstolót a frissen sült mézeskalácsomból? Jó lenne, ha megmondanátok, elég fűszert tettem-e bele.
Ezüstszín tálcán nyújtja feléjük a cukormázzal díszített süteményt. Emmie gondolkodás nélkül elveszi a szív alakút, Jules is választ egyet.
Emmie rohan hazafelé, legnagyobb meglepetésére nyitva találja a bejárati ajtót.
- Gyere, Emmie, megyünk a kórházba!
- Meglátogatjuk anyát? - ráncolja a homlokát a váratlan hír hallatán Emmie.
How great that all of my photos got deleted from my memory card, because if one has a crap day, at least another nice thing like this should happen also :))) Therefore instead of the nicely collected Christmas ideas, I will share the latest bonbon recipe together with the first part of the Christmas tale :)
Ingredients:
150 gr dark chocolate
80 gr marzipan
30 gr cream
a cap of rum
three pinches of ginger bread spice
Recipe:
I put the marzipan, torn into little pieces, in the cream, I warm it up and I stir it until it dissolves. Then I turn off the stove and I add the rum and the ginger bread spice.
I temper the dark chocolate, I prepare the bonbons hells. I fill them with marzipan cream and I put them in the fridge. After the cream sets, I temper the leftover chocolate and I seal the bonbons.
Christmas tale 1
Since Joanne Harris we all know that chocolatiers are enchantresses - this is also the case of the owner of that sweet shop, who is the main character of this story.
The confectionery was a shop and café, where special bonbons and chocolate bars filled the shelves and the glass counter; people passing by could always drink a coffee or hot chocolate, with which they always received a honey roll. Rosie, the owner of the shop, was a lady with blushing face, spiderweb-wrinkles and glasses; she did not part with her red-green chequered scarf, not even in the hottest summer day. And even though she kindly smiled at the children who entered her shop, among them she was always considered with the same fearful admiration that befits fairytale creatures.
However, the protagonist of this story is not her, but Emmie, who pushes her nose to the back window of the confectionery in order to see what is going on inside. The gingerbread-like building of the shop stands in front of the bus stop, so the children coming back from school immediately go there to see if there is anything new in the shop window. Emmie and her friends, Zac and Jules are not exceptions either. Soon the second Sunday of Advent will arrive and Rosie must have started preparing Christmas sweets!
They are standing at the window, that is exactly as tiny as a child's face, whispering, jostlingeach other and they can only guesswhat is happening inside, behind the cloud of fume: the sweet scent of gingerbread is leakingthrough the cracks under the window.
The steam dissolves slowly and as if it moved outside the walls, fog ascends on the leafless trees and abandoned streets. The secrets of the shop's workshopunfold timidly. Rosie is filling small chocolate cups with chestnut cream and when she is done, she turns to a heap of gingerbread dough. She sprinkles spices on it: ginger, cinnamon, clove. She takes a casefrom the bottom left drawer of the cupboard, she opens it and from the powder inside, she adds a pinch to the dough. For that moment the workshopis illuminated by golden light!
Emmie and her friends cry out in surprise, but they immediately hold their tongues and escape. They stop only after turning around the next corner, they uncertainlylook at each other; they would probably laugh if their minds could stop rolling: did they really see that?...
"What was that?" asks Jules, panting. "Maybe some magic dust?" presumes Emmie, she impatiently pushes her hair away from her eyes.
"Or rather poison! Tomorrow everyone will die, who eats from it!" growns Zac like a malicious goblin. "And old Rosie will turn us into cockroaches for peeping at her secret!" "That's not true!" Julesslaps his back. "Rosie is not evil, she will enchant onlyyou for saying such things!" "Whatever, I have to go home," Emmie gets serious. "Let's agree that tomorrow we'll go to the shop and buy one of those gingerbreads!" They give a five to each other, then they separate.
Four streets above, modestly huddling upamong its bigger siblings, is a tiny house, the gate is creaking, a cat cuddles to Emmie's leg. Now, that their mother is not at home, it is Emmie's task to prepare afternoon snack for her younger siblings, to put together their bags for the next school day so their dad only has to pick them up the next morning when taking them to kindergarten and school. They write their homework together, Emmie washes the dishes and dad arrives to have dinner together with them.
The next early afternoon the three friends are standing in front of the confectionery, pushing each other in the front in order to decide who should go in first.
Zac jostles Emmie. "It was your idea, now go!" "But I don't have money!"
"Then how did you want to buy gingerbread?!" "OK, I'll go first!" Jules gallantly steps ahead and enters the shop. They pretend to be evaluating their opportunities, they are walking up and down along the shelves, observing the products with expertise that is only characteristic to children. "What shall I give you, dears?" asks old Rosie gently. "Would you like to try my freshly baked gingerbread? It would be so kind of you to tell me whether there is enough spice in it." She offers them the cookies decorated with frosting on a silver tray. Without hesitation Emmie takes the heart shaped one; Jules also chooses one. Zac flashes a dark glance at old Rosie and sulkily shakes his head. "Are you sure? This is very special gingerbread: it will grant you a wish," smiles at him Rosie, but he is relentless.
"Thank you!" waves Emmie while she is hurrying to the door. "Yes, thank you!" throws the words Jules and they are already on the street with the prey in their hands. There is nothing special about it - maybe only a slight golden gleam. The two girls look at each other, then Jules shrugges and bites off the head of the gingerbread soldier.
"I wish I got a camera for Christmas." Emmie eats up the heart at once and thinks with closed eyes, if only mum could come home from the hospital. Zac is glaring at them.
"Don't you feel sick? No nausea?" Jules laughs and pushes him. "It is very good! You want some?"
She holds the cookie in front of Zac but he declines. "If tomorrow you'll be there at the bus station, then maybe." Jules gives him a pitying look, then eats up the leftover of her cookie. "What if it was real magic dust?" she contemplates. "I hope Rosie said the truth," mumbles Emmie.
"Don't be so childish!" waves arrogantly Zac. "Such things only exist in fairytales. Anyway, my mum will bake gingerbread this afternoon, I bet it will be better than this!" "You are mean!" snaps Jules. "I don't want to talk to you anymore today." She links arms with Emmie, turns around and marches away. "Never mind, Emmie! He is so rude." "I know," laughs Emmie. "But I also have to go home, my siblings must be waiting for the afternoon meal already." "Sure, sure," replies absentmindedly Jules, she lets her go. Before she turns around the corner, she waves for the last time. Emmie runs home, only to find the door open. She is about to cry for her sister, when her dad steps in front of her and lifts her in his arms. "Come, Emmie, we are going to the hospital!" "Are we visiting mum?" frowns Emmie to the news. "No. No, we are not visiting, we are binging her home. She called me at work that she will be released today!" In joy, Emmie hugs her dad and she is just laughing and laughing.
Unfortunately, due to travelling, the first part of my advent tale will be transcribed only later. At the moment I am in Frankfurt - in one of our old Christmas books it was written that the Christmas market of Frankfurt is one of the oldest, biggest and most beautiful in Germany; and ever since I read this, I wanted to come here to see it. Fortunately it's been snowing all day long, this is the best kind of weather for rambling at the market, even despite the crowd. In Frankfurt every stand has different Christmas decoration; they are wonderful and kitschy at the same time, but what do we want at Christmas?! Besides artisan products, local foods and many kinds of sweets can be bought :)

rozmaring
0,2 dl tejszín
70 gr étcsoki
egy kupaknyi rum
150 gr fehércsoki
lüszterpor, kakaóvaj
Elkészítés:
A ganache-hoz a rozmaringot tejszínbe áztatom, felforralom, állni hagyom.
Miután a kakaóvaj megszáradt, temperálom a fehércsokit, kiöntöm a formát. A héjakat megtöltöm a narancsos töltelékkel, és pár órára a hűtőbe teszem. Végül lezárom a bonbonokat.
After the brutal chocolate making week it's time to post stuff :D I've prepared my strawberry-rosemary bonbons again and a bit was left of the rosemary ganache. What could I do with it? Then a request came: chocolate with orange for a birthday. The two quickly came together in an exciting bonbon, which I tried to make more interesting with its outer appearance. I fancied this "splashing" technique for a while and finally I applied it with the newly bought copper luster dust.
Ingredients:
the juice of one orange
rosemary
0,2 dl cream
70 gr dark chocolate
one cap of rum
150 gr white chocolate
luster dust, cocoa butter
Recipe:
For the ganache I soak the rosemary in the cream, I boil it and I leave it for several hours. The next day I sieve the cream, I warm it up and I add the dark chocolate. I squeeze the juice of one orange in it, finally I add a cap of white rum. With the help of a candle I melt half a spoonful of cocoa butter and I mix it with copper luster dust. I dip a brush in it and with my finger I splash it in the cavities of the mould. After the cocoa butter gets dry, I temper the white chocolate and I prepare the bonbon shells. I fill them with the orange cream and I pu them in the fridge. Finally I seal the bonbons.
In Irish mythology there's a fairy (erm, he's the king of the fairies actually), whose name is Lugh. Before becoming the king, on one fine day Lugh knocked on the door of the castle of Nuada Airgetlam, king of the fairies. When they asked who it was and what skill he possessed, because he could join the court only in case he had a special skill, Lugh answered that he was a builder. But there was already a builder in the court. Then Lugh said that he was a smith. But there was already a smith in the court. Then Lugh said that he was a warrior and a poet and a physician and a musician and a cup bearer... And when he was told that there were people possessing each of these skills, then he asked: do you have someone who is skilled in all these things together? And then they had to open the door for him.
The following metaphor is quite lousy as Lugh was like the eminent kid in school, he really mastered all professions; but sometimes I do feel like him a bit: the many things I'm interested in (and I am familiar with at least a bit) are like the pieces of a puzzle: I cannot be complete without any of them. If I imagine life without music, fairytales, drawing, chocolate making or history, mythology, etc. then I would rather cut off my hand. Take one piece from the picture and the whole thing becomes incomplete. A long time ago there was this pressure that I must choose one of them because one needs a profession of which one makes a living blabla, but some years ago I decided that I am not interested in these limits that society is trying to force on us. Lugh wasn't told either that sorry buddy, but we don't believe it, you can be an expert of only one thing! Knowing/mastering many different things (at least a bit) is good and it urges one to learn even more new things. Life is so short and this world is so interesting, there are so many things to be discovered, experienced, read, learnt! It's a pity that I don't have 48-hour long days...
Ingredients:
30 gr boiled/roasted, peeled chestnuts
50 gr cream
40 gr marzipan
1 cap of white rum
130 gr dark chocolate
Recipe:
I clean the chestnuts and I mash them into the cream. I leave the mixture in the fridge for one night so the cream takes over the flavour of the chestnuts. The next day I add the marzipan cut/torn into small pieces and I warm it up. After the marzipan dissolves, I turn off the stove and finally I add a bit of rum.
I temper the dark chocolate and I prepare the bonbon shells. After they get solid, I fill them with the marzipan cream and I put the mould in the fridge until the filling starts to set. Finally I temper the leftover chocolate and I seal the bonbons.
Úgyhogy most egy mangós-matchás ízesítésű bonbont mutatok be, amit tegnap készítettem.
Hűtőbe teszem néhány órára, végül a maradék temperált fehércsokival lezárom a bonbonokat.
The reason of my silence: moving, travelling, work, doctoral studies (not necessarily in this order :D). As a matter of fact, behind the scenes the Christmas chocolate factory has started its work, which seems to be extensive this year - which I don't mind at all because the addictive process of chocolate making is like meditation: in the meanwhile one thinks over one's day, gets rid of the stress and then pays attention only to the shiny, fragrant chocolate, and is happy about the goodies that will be made. The joy of creating, which will cause joy to others too :)
I didn't have time and energy to adapt to the pushy Christmas atmosphere of malls and shops but sooner or later that time will come too, since there are only two weeks left until Advent. I'll also have to think about Christmas flavour chocolates and there are some creative ideas on my mind as well :) But I'll write about these later because I'm not as impatient as the shops - you must anticipate Christmas, that's the beauty of it.
So for now I'm going to introduce mango-matcha bonbons which I made yesterday.
Ingredients:
70 gr mango
30 gr cream
50+20+150 gr white chocolate
matcha powder
Recipe:
I warm up the mango and the cream together, then I blend them. I add half teaspoon of matcha (let's not talk about the colour of the mixture, if you can imagine the combination of orange and green...XD), and I also add 50 gr white chocolate.
I temper 20 gr white chocolate, I colour it with some matcha, then I paint spirals in the cavities of the mould. Then I temper 150 gr white chocolate and after the decoration gets solid, I prepare the bonbon shells. When they get dry, I fill them with the mango cream. I put the mould in the fridge for some hours, finally I temper the rest of the white chocolate and I seal the bonbons.
Egyik kedves együttesem a Darkness - most többen biztosan értetlenül néznek a képernyőre, de ha azt írom: I believe in a thing called love? Freddie Mercury (egyik) reinkarnációjaként értékelt énekes és bandája a 80-as éveket idéző, az összes rock-klisét felvonultató, gusztustalanul vicces videókkal és a 70-es éveket idéző hangzásvilággal - jelen pillanatban a Queen dobosának fiával a dobok megett :) Hát ez a Darkness, teljes őrület, és két nap múlva második alkalommal fogok részt venni a koncertjükön (aztán harmadszor is Bécsben, de az már másik történet :D).
No most glamrock csokit ugyan már készítettem egyszer, de a Darkness zenéje is ehhez a stílushoz áll közel, így hasonló ízvilágú bonbont készítettem nekik is. A csípős-csattanós töltelékhez a málna, a hibiszkusz és a gyömbér adja a lendületet :) azt hiszem elég vagány ízkombináció.
Hozzávalók:
50 gr tejszín
80 gr fehércsoki
2-3 kiskanál hibiszkusz
2-3 kiskanál liofilizált, porított málna
3 nagy csipet gyömbér
180 gr tejcsoki
cukorcsillag, lüszterpor
Elkészítés:
Temperálom a tejcsokit, elkészítem a bonbonok burkát.
One of my favourite bands is Darkness - and probably many are staring at the screen uncomprehendingly, but what if I say I believe in a thing called love? Singer regarded as (one of) the reincarnations of Freddie Mercury and his band operating with disgustingly funny videos gathering all rock clichés of the 80s and the sound of the 70s - at the moment touring with the son of Queen's drummer :) This is the Darkness, madness that I'll see for the second time the day after tomorrow (and then third time in Vienna, but that's another story).
Once I've madeglamrock chocolate but the music of Darkness has this style too so I prepared bonbons with similar flavour for them. The impulse of the spicy filling is provided by raspberry, hibiscus and ginger :) I think it's a quite cool combination.
Ingredients:
50 gr cream
80 gr white chocolate
2-3 small spoons of hibiscus
2-3 small spoons of lyophilised raspberry
3 pinches of ginger
180 gr milk chocolate
candy stars and luster dust
Recipe:
I temper the milk chocolate and prepare the bonbon shells.
I warm up the cream and the hibiscus. After it gets warm, I add the raspberry, then I mix it with white chocolate. Finally I sprinkle it with ginger - I taste it in order to achieve a pleasantly tingling-sour taste. I cool down the filling, then I pour it in the shells and I put the mould in the fridge. After the filling gets solid, I temper the leftover milk chocolate and I seal the bonbons.
I decorate them with gold and red luster dust and I stick candy star on their top with molten chocolate.
