epres pohárkrém // strawberry trifle

Minap az eperdzsemhez vettem másfél kiló epret (rozmaringos, tejcsokis és bazsalikomos dzsem készült :)) - aztán persze ami megmaradt, azt elnyammogtam, illetve összeütöttem egy ilyen igen egyszerű pohárkrém desszertet :) Azt hiszem, mostantól inkább ilyeneket fogok készíteni, mivel a nemlétező globális felmelegedés 40 fokos nyaraiban képtelenség csokizni sajnos :/

Hozzávalók 2 adaghoz:
100 gr mascarpone
100 gr eperpüré
8 szem eper
50 gr fehércsoki
két babapiskóta
bazsalikom

Elkészítés:
A mascarponét, az eperpüré 2/3-át és a felolvasztott fehércsokit egyneművé keverem. Mindkét pohár aljába belemorzsolok egy-egy babapiskótát, a félbevágott eperszemeket ráültetem. Középre halmozom a krémet, a tetejét meglocsolom eperpürével. Fél szem eperrel és bazsalikommal díszítem.


The other day I bought 1.5 kg strawberries for the jam (I made three types of jam: with rosemary, milk chocolate and basil :)) - then I ate up the leftover, and I prepared a very simple trifle dessert :) I think from now on I'll make such treats because in the 40 degrees summer of the non-existent global warming it is impossible to make chocolate :/

Ingredients for 2 portions:
100 gr mascarpone
100 gr strawberry puree
8 strawberries
50 gr white chocolate
two sponge fingers
basil

Recipe:
I mix the mascarpone, 2/3 of the strawberry puree and the melted white chocolate. I shred the sponge fingers into the bottom of the two cups and put the half strawberries on the layer. I heap the cream in the middle and sprinkle the top with strawberry puree. I decorate it with half strawberry and basil.

citromos-bazsalikomos // lemon-basil

Ez a régi citromos-bazsalikomos csokim újratöltve. Mivel volt még a készleten a múltkori citromkrémből, ezért gondoltam felhasználom, nehogymár kárba vesszen :D A bazsalikomjaim meg épp most nőttek akkorára, hogy már le lehet csipegetni róluk az első leveleket, úgyhogy nem volt nehéz választás, hogy mi készüljön :) A krémet mascarponéval dobtam fel, hogy még lágyabb legyen.

Hozzávalók:
50 gr citromkrém
4-5 bazsalikomlevél
120+50 gr fehércsoki
50 gr mascarpone
zöld ételfesték

Elkészítés:
Kakaóvaj és ételfesték keverékével márványozom a bonbonforma mélyedéseit. Míg a kakaóvaj megszilárdul, temperálom a fehércsokit, majd elkészítem a burkokat. 
Jöhet a töltelék: kikeverek 50 gr citromkrémet és ugyanannyi mascarponét. Felolvasztok 50 gr fehércsokit, hozzáadom, végül beletépkedem a bazsalikomleveleket. Megtöltöm a bonbonokat, a formát hűtőbe teszem. Végül temperálom a maradék csokit, és lezárom a bonbonokat.



This is a reloaded version of my old lemon-basil bonbons. Since I still had some of the lemon curd left, I thought I'd use it rather than waste it :D My basils are becoming big enough for a small harvest, so it wasn't hard to decide what to prepare :) I boosted the filling with mascarpone in order to make it softer.

Ingredients:
50 gr lemon curd
4-5 basil leafs
120+50 gr white chocolate
50 gr mascarpone
green food paint

Recipe:
With the mixture of cocoa butter and food paint, I marble the cavities of the mould. While the cocoa butter sets, I temper the white chocolate, then I prepare the shells.
Then comes the filling: I combine 50 gr lemon curd and mascarpone. I melt 50 gr white chocolate and add it to the mixture, finally I tear the basil leafs into little pieces and add them too. I fill the bonbons; I put the mould into the fridge. Finally I temper the leftover chocolate and I seal the bonbons.

Arwen

Nagy szerencsénkre a Gyűrűk ura film készítői kicsivel nagyobb szerepet szántak és több mondatot adtak Arwen szájába, mint Tolkien. A könyvben ugyanis Arwen szerepe nagyjából annyiban merül ki, hogy szépségesen szép, és szerelmes Aragornba. Ezzel szemben a filmben a romantikus pillanatok mellett kapott egy elég vagány üldözős jelenetet, egy látomást, és még választás elé is került. Végül persze elfoglalta méltó helyét a Király oldalán.
Tolkien nőalakjai (már azok, akik valami jelentősebb szerepet is kapnak) általában kétféle archetípusnak felelnek meg: vannak köztük nőiesen titokzatos, törékeny, ugyanakkor saját sorsukat formálni képes hölgyek, meg... van Éowyn :D No de róla majd később, mert ennek a posztnak még mindig Arwen a főszereplője. Egyszóval Arwen a féltünde, aki megerősíti az emberek és tündék közti jó kapcsolatot, szépsége és kedvessége miatt népe körében kijár neki az Esticsillag név. Egy ilyen teremtésnek nyilván nem volt nehéz illendő csokit varázsolni :) Kissé felturbóztam az eredeti, a Facebook-posztom alá érkezett ötletet (meggy, mascarpone), mivel még ennél is különlegesebb és fejedelmibb ízösszeállítást akartam készíteni. És persze a bonbon díszítését is ehhez igazítottam :)


Hozzávalók:
150+30 gr fehércsoki
50 gr mascarpone
fahéj
40 gr meggy
egy vörös rózsa szirmai
agaragar
vörös lüszter, kakaóvaj

Elkészítés:
Először a bonbonburkokat készítem el. Öntapadó papírszalagból szív formákat vágok ki, amiket a mélyedésekbe ragasztok. Ezután a lüszterport és az olvasztott kakaóvajat elegyítem, és összefröcskölöm a mélyedéseket. Az ecsetre csak igen kis festéket viszek fel, hogy apró pöttyök keletkezzenek. Megvárom, míg megszárad a kakaóvaj, ekkor óvatosan eltávolítom a papírszíveket. Temperálom a fehércsokit, kiöntöm a formát.
Ezután jön az első réteg töltelék: a meggyeket és a rózsaszirmokat összeturmixolom. Felforralom egy csipet agaragarral, majd állandó kevergetés mellett kihűtöm. Amikor kezd zselésedni, néhány cseppet minden bonbon aljába öntök.
A második réteg töltelékhez a mascarponét simára keverem, megolvasztok 30 gr fehércsokit, hozzáadom, majd fahéjjal ízesítem a krémet. A meggyzselére adagolom, és hűtőbe teszem a formát. Végül lezárom a bonbonokat. 



Fortunately the makers of the Lord of the Rings trilogy gave a bit more role and a bit more sentences into Arwen's mouth than Tolkien. In the books Arwen's role is limited to being incredibly beautiful and being in love with Aragorn. By contrast, in the movies, besides romantic moments, she got a quite cool chase scene, a vision and she even had to make a choice. Finally, of course, she took her place together with the King.
Tolkien's female characters (at least those who have some bigger role) are usually the embodiment of two archetypes: there are those who are feminine and mysterious, fragile, but still able to shape their fate, and... there is Éowyn :D But this post is still about Arwen. So Arwen is the half-elf, who strengthens the good connection between men and elves; her beauty and kindness earned her the name Evenstar among her people. It wasn't hard to make a chocolate for such a person :) I boosted the original idea (sour cherry, mascarpone), as I wanted something even more regal and special. And of course I designed the decoration of the bonbon accordingly :)




Ingredients:
150+30 gr white chocolate
50 gr mascarpone
cinnamon
40 gr sour cherry
petals of a red rose
agar
red lustre, cocoa butter

Recipe:
First I prepare the shells. I cut out hearts of a paper tape and stick them into the cavities. Then I mix the lustre dust and the melted cocoa butter, and I sprinkle the cavities. I take only a little bit of paint on the brush at once in order to get really tiny dots. I wait until the cocoa butter hardens, then I get rid of the paper hearts. I temper the white chocolate and I prepare the shells.
Then comes the first layer of filling: I blend the sour cherries and the petals. I boil them with a bit of agar, and then cool the mixture while constantly stirring it. When it starts to jellify, I put some drops into each bonbon.
For the second layer, I combine the mascarpone and 30 gr melted white chocolate, until the cream gets smooth. Then I season it with cinnamon. I pour it on the top of the jelly. I put the mould in the fridge. Finally I seal the bonbons.

Sun&Moon

Kedves barátaim esküvőjére készült ez a csokimaszk - sajnos végül nem ilyen formában kapták meg, mivel a nagy melegben egy egész picikét deformálódott XD de a lényeg szándék, nem igaz? :D Mivel tudtam, hogy érdeklődnek a keleti vallások és filozófia iránt, valami olyasmit akartam ráfesteni, ami az egységet, az ellentétek harmóniáját fejezi ki - mivel ők épp ezt testesítik meg a való életben is :) és hát mi lehetne erre alkalmasabb, mint a Hold és a Nap?! 
A maszk elkészítése viszonylag egyszerű, csak egy habzsák, csoki és lüszterpor szükséges hozzá. A formát kézműves boltban vettem, lánykorában gipszforma lehetett.


Hozzávalók:
70 gr fehércsoki
170 gr étcsoki
lüszterpor

Elkészítés:
Temperálom a fehércsoki, majd habzsákba töltöm. Megrajzolom a mintát - előbb a Holdat, aztán a Napot. Az esetleges elmaszatolódó vonalakat vattapálcával törölgetem föl. Amikor a csoki megszilárdult, olvasztott kakaóvaj és lüszterpor keverékével kifestem a mintát: a Napot arannyal és bronzzal, a Holdat világoskékkel.


Temperálom az étcsokit, beletöltöm a formába. Egy-két percig körbelötyögtetem, hogy a széleket is beborítsa a csoki, és egyenletes réteget képezzen mindenhol. Végül kiöntöm a felesleget, és lehúzom a formáról a maradékot. Tíz percig fejjel lefelé állítom a formát, hogy kicsepegjen, azután hűtőbe teszem. Amikor elkészült a maszk, könnyedén kipottyan a formából.



I prepared this chocolate mask for the wedding of my friends - unfortunately in the end they received it in a different shape, because in the heat it got deformed a tiny bit XD but intention is what matters after all, right? :D Since I knew that they are interested in Asian religions and philosophy, I wanted to paint something on it that represents unity and the harmony of contrasts - because they themselves are the embodiment of that in real life :) and what else would be a better symbol of that, if not the Sun and the Moon?!
Preparing the mask is relatively easy, only a piping bag, chocolate and lustre dust are needed. I bought the mould in a creative hobby shop; it must have been a plaster mould originally.


Ingredients:
70 gr white chocolate
170 gr dark chocolate
lustre dust

How to prepare:
I temper the white chocolate and pour it in the piping bag. I draw the pattern - first the Moon, then the Sun. Smudged lines are cleaned with a cotton stick. When the chocolate sets, I paint the pattern with the combination of lustre dust and melted cocoa butter: gold and bronze for the Sun, light blue for the Moon.
I temper the dark chocolate, I pour it in the mould. I slosh it around for some minutes so that the chocolate covers the edges and forms an even layer everywhere. Finally I pour out the excess and I scrape off the leftovers. I set the mould upside down for ten minutes, while it is still dripping, then I put it in the fridge. When the mask is done, it will fall out of the mould easily.

rózsás-rozés-málnás // rose- rosé wine-raspberry

Én a városokkal épp úgy vagyok, mint az emberekkel. Néha keresztezik egymást útjaink, gyönyörködök bennük, sokukat megkedvelem, néhányba beleszeretek, másokat megszeretek, aztán mégis eltávolodunk egymástól, megint másokat idegenkedve figyelek, és időbe telik, mire megbarátkozok velük. Na Pozsony épp az utóbbi volt. Első találkozásunkkor téli köpenybe burkolózott, és bár a legjobb szállását ajánlotta fel, és a csodás, aranyló karácsonyi vására mellett még a rockklubjait is egyből bemutatta, valamiért sokáig mégsem kívánkoztam vissza. Eltartott egy darabig, míg egy-egy kiruccanás során annyira megismerkedtem útjaival, hogy már otthonosan mozogjak benne. De van, hogy egy igazán jó kapcsolathoz idő kell és még szorosabb ismeretség :) így aztán Pozsony akkor vált közeli kebelbarátommá, amikor több ismerősöm is lett benne, amikor már annyira beleszerettem a kastélyába, hogy valahányszor arra járok, első utam oda vezet és agyonfotózom, amikor már a város látványa teljesen belémivódott. Amikor az óváros összes kis utcája ismerősként fogad, és többé már nem tudok elveszni (térkép nélkül sem), ismerem a boltok kirakatát, tudom, hol vannak a legjobb éttermek és kocsmák, és mindig van kivel elmenni oda.
Szóval ez a csoki egy pozsonyi jóbarátomnak készült, a legutóbbi látogatás alkalmával :)


Hozzávalók:
50 ml rozébor
egy vörös rózsa
30 ml málnapüré
100 gr fehércsoki
egy kiskanál vaj
150 gr tejcsoki
lüszterpor, kakaóvaj

Elkészítés:
A rózsaszirmokat leszedem a szárukról, gyengéden megmosom, majd levágom a tövükről a fehér részeket. Egy kis pohárba teszem őket, és rájuk öntöm a rozét. Két napig állni hagyom, közben néha megkeverem kiskanállal. Végül leszűröm a bort, hozzáadom a málnapürét. A vajjal együtt megolvasztott fehércsokit is a borhoz keverem. 
Kakaóvaj és arany lüszterpor segítségével összefröcskölöm a bonbonforma mélyedéseit. Ezt megismétlem a vörös lüszterrel is. Temperálom a tejcsokit, elkészítem a burkokat. Amikor megszilárdultak, megtöltöm őket a töltelékkel, és a hűtőbe teszem. Néhány óra múlva kiveszem, és a maradék temperált tejcsokival lezárom a bonbonokat.



For me, cities are like people. Sometimes we cross paths, I admire them, I like many of them, I fall in love with some of them; others I get to like but later we drift apart; some others I observe from the distance and it takes time until we become friends. Bratislava was like this. She was wearing a winter coat when we first met and even though she offered her best accommodation and introduced her wonderful, golden Christmas fair and her rock clubs, for some reason I still did not feel the need to go back. It took time until I got familiar with its streets during occasional visits. But sometimes a really good relationship needs time and even closer acquaintance :) therefore Bratislava became my intimate friend when I got to know some people there, when I fell in love with her castle so much so that whenever I go there, I have to visit it and take photos of it, when the sight of the city infiltrated me. When all of the tiny streets of the old city centre greet me and I cannot get lost any more (not even without a map), I know the shop windows, I know where the best restaurants and pubs are and I always have someone to go there with.
So this chocolate was made for a friend of mine who lives in Bratislava, on the occasion of my last visit :)


Ingredients:
50 ml rosé wine
one red rose
30 ml raspberry puree
100 gr white chocolate
one spoon butter
150 gr milk chocolate
lustre dust, cocoa butter

Recipe:
I get rid of the stem of the rose, I gently wash the petals and I cut off the white parts. I put them in a small glass and I pour the rosé wine on them. I leave them to soak for two days, occasionally stirring them with a spoon. Finally I sieve the wine and I add the raspberry puree. I also combine it the the mixture of the melted butter and white chocolate.
I sprinkle the cavities of the bonbon mould with golden lustre and cocoa butter. I do the same with red lustre. I temper the milk chocolate, I prepare the bonbon shells. When they get solid, I fill them with the filling and I put the mould in the fridge. Some hours later I take it out and I seal the bonbons with the leftover tempered chocolate.

mangó-whiskey // mango-whiskey

Az Ezertornyú Prága elnevezés nem teljesen igazságos – Prágát inkább Ezermeséjűnek kéne nevezni. Minden egyes háznak, minden épületnek saját története van; ha figyelmesen hallgatja őket, elmesélik az arra járónak. De elegendő rájuk pillantani is, a történelem glóriaként veszi körbe őket, ami beszüremlik az ember szívébe, és öntudatlanul is magával ragadja, hogy aztán többé el se engedje. De miért is akarna megszabadulni tőle bárki – Prága elbűvölő, varázslatos és mesés; ahogy az ember ott sétál, minden kő, minden dísz, a lámpaoszlopok, a homlokzatok szobrai, minden részlet csak mesél és mesél. A küszöbök alatt háziszellemek bujkálnak – nagyobb házaknál egész nagy családok több generációja, ahol az öregek saját őseiktől örökölték szájhagyomány útján a ház történetét, amihez saját történetük is szorosan kapcsolódik. A kisebb, egyszerűbb épületeket pedig agglegény- vagy épp ifjú, egyedülálló szellemek őrzik. Ott leskelődnek a sarkokon, megszólítják azt, aki képes hallani őket. Prága Ezermeséjű és Ezercsodájú.


Ezt a csokit pedig cseh barátaimnak készítettem. Egy ideje már birizgálta a fantáziámat a mangó-whiskey kettős, vajon mennyire jó az összhatás. Hát eléggé :D

Hozzávalók:
30 gr mangópüré
25 ml whiskey
1 kiskanál vaj
100+180 gr tejcsoki
ételfesték, kakaóvaj

Elkészítés:
A mangópürét és a whiskey-t összekeverem. Megolvasztok 100 gr tejcsokit, amihez adok egy kanál vajat is. Elegyítem a mangóval. 
Rózsaszín ételfesték és olvasztott kakaóvaj keverékével összefröcskölöm a bonbonforma mélyedéseit. Megvárom, míg megszáradnak a pettyek. Temperálok 180 gr tejcsokit, elkészítem a burkokat. Miután megszilárdultak, megtöltöm őket a mangós krémmel. Hűtőbe teszem néhány órára, végül a maradék csokival lezárom őket.



Calling Prague the City of a Thousand Spires doesn't really do justice - Prague should be called the City of a Thousand Tales. Every house, every building has a story; if one listens to them as he passes by, they'll tell him. But it's enough to look at them; history embraces them as a glory, which infiltrates one's heart and unconsciously enraptures him in order not to let him go anymore. But why would anyone get rid of it anyway - Prague is charming, magical and fabulous; as one walks there, every stone, every decoration, the lamp posts, the statues of the facades, every detail keeps telling stories. Under the thresholds house spirits are hiding - in bigger houses several generations of entire big families, where the elderly inherited the story of the house to which their own story is linked, through oral tradition. Smaller, simpler buildings are guarded by bachelor or young, single spirits. They are lurking at every corner, they talk to those who can hear them. Prague is a city of Thousand Tales and Thousand Wonders.


I made this chocolate to my Czech friends. The combination of mango and whiskey has roused my interest, I was curious how they fit together. They do :D


Ingredients:
30 gr mango puree
25 ml whiskey
1 small spoon butter
100+180 gr milk chocolate
food paint, cocoa butter

Recipe:
I mix the mango puree and the whiskey. I melt 100 gr milk chocolate, and I add a spoonful of butter. I combine it with the mango.
With the mixture of pink food paint and melted cocoa butter I sprinkle the cavities of the bonbon mould. I wait until the drops get dry. I temper 180 gr milk chocolate, I prepare the shells. After they get solid, I fill them with the mango cream. I put the mould in the fridge, then I seal the bonbons with the leftover chocolate.

citromkrémes // lemon curd

Amikor a Gasztroblogok Facebook csoportban megláttam Sünis kanál citromkrémjét, azonnal összefutott a számban a nyál :D szinte éreztem is az ízét, úgyhogy muszáj volt megcsinálnom - persze ehhez sem jutottam hozzá vagy három napig a hatvanzsillió más teendőm miatt, de végül csak elkészült! És naná, hogy fel kellett használnom csokiban is! Persze ha nem tudtok/akartok temperálni, akkor jó szívvel ajánlom magát a citrom curd-öt is, annyira finom és friss, igen sokféle édességhez el tudnám képzelni. Tervben van citromkrémes-bazsalikomos csoki is (majd ha megnőnek a bazsalikomjaim), citrom-menta, és így tovább, rengeteg ötletem van még :)
A krém receptjét nem írom le ide, azt a Sünis kanál blogban megtaláljátok.


Hozzávalók:
40 ml citromkrém
60 gr fehércsoki
130 gr étcsoki
kakaóvaj, kurkuma

Elkészítés:
Vízgőz felett megolvasztom a fehércsokit, és összekeverem a citromkrémmel. Addig keverem, míg a krém összeáll.
Kakaóvaj és minimális mennyiségű kurkuma keverékével összefröcskölöm a bonbonforma mélyedéseit. Temperálom az étcsokit, elkészítem a burkokat. Megtöltöm őket a citromos krémmel, ha szükséges, hűtőbe teszem egy kicsit (nekem nem kellett, mert a krém szinte azonnal kellő szilárdságú volt a lezáráshoz). Temperálom a maradék étcsokit, talpazom a bonbonokat.


When I saw the lemon curd of the Sünis kanál blog in our gastroblog Facebook group, my mouth began to water immediately :D I could even feel the taste of it, so I had to make it - but of course I couldn't get to it for like three days because of the sixty-billion other things I had to do. But finally it is done and I also had to use it in chocolate! In case you cannot/don't want to temper, I can also recommend making the lemon curd itself, it is so tasty and fresh, and I can imagine using it with a wide range of sweets. I plan to make lemon curd-basil chocolate (once my basils will grow big enough), lemon-mint, etc. I have plenty of ideas :)
Below is the translation of the original lemon curd recipe, then the chocolate's.


Ingredients for the curd:
2 lemons
3 yolks
1 egg
180 gr icing sugar
60 gr butter
Recipe:
I grate the lemon peel and squeeze the lemons. In a metal pot I mix the eggs and the sugar, finally I add the lemon too. In a bain-marie, stirring constantly, I cook the cream until it gets dense enough. I strain the curd to get rid of clods. Finally I add the butter and I leave the cream to cool a bit. I pour it in a jar, close it and set the jar upside down until the cream cools down. Keep it in the fridge!

Ingredients for the chocolate:
40 ml lemon curd
60 gr white chocolate
130 gr dark chocolate
cocoa butter, turmeric

Recipe:
In a bain-marie I melt the white chocolate and combine it with the lemon curd. I stir it until it gets smooth.
With the mixture of cocoa butter and a tiny bit of turmeric I sprinkle the cavities of the bonbon mould. I temper the dark chocolate, I prepare the shells. I fill them with the lemon cream, if necessary, I put the mould in the fridge (I didn't have to because the cream was solid enough for the sealing). I temper the leftover dark chocolate, I seal the bonbons.

Pippin

Most, hogy újraolvastam a Gyűrűk Urát, ismét megállapítottam, hogy Pippin az egyik kedvenc szereplőm :) Benne van élet, vidám, bumfordi, kíváncsi, jókedvű, elszánt, szeret énekelni, egyszóval igazi karakter. Na, nem is volt nehéz kitalálni, milyen csoki illik hozzá. A választásom egyértelműen a meggyre esett. Hozzá alkoholt akartam társítani, és ahogy böngésztem az üvegek közt, a szemembe ötlött a whiskey. Pippin egyik kedvenc időtöltése a pipázás, így tehát meg is volt a másik alapanyag. Savanykás meggyzselé és füstös-krémes whiskey-étcsoki ganache, hmmm...


Hozzávalók:
150 gr fehércsoki
60 gr étcsoki
20 ml whiskey
egy kiskanál vaj
60 gr meggy
agaragar
lüszterpor, kakaóvaj

Elkészítés:
Először ragasztószalagból levágott darabkákat ragasztok a bonbonforma mélyedéseibe, hogy megkapjam a választóvonalat. Ezután előbb aranyszínű, majd vörös lüszterporral fröcskölöm össze a mélyedéseket, úgy, hogy középre menjen a java. Végül eltávolítom a ragasztószalagot. Temperálom a fehércsokit, elkészítem a burkokat.
Ezután jön a meggyzselé (én mirelit magozott meggyet használtam). Összeturmixolom a meggyszemeket, majd szitán át leszűröm. Az így kapott lét egy negyed kanál agaragarral felforralom, aztán hagyom lehűlni. Amikor már nem túl forró, minden mélyedésbe csurgatok egy adagot.
Most jön a whiskeykrém. Vízgőz felett felolvasztom az étcsokit egy kiskanál vajjal, majd elegyítem a whiskeyvel. A krémet a megszilárdult meggyzselére rétegezem. Hűtőbe teszem a formát, és amikor a krém megszilárdul, temperálom a maradék fehércsokit és lezárom a bonbonokat.



Now that I re-read the Lord of the Rings, I acknowledged again that Pippin is one of my favourite characters :) there's life in him, he's cheerful, clumsy, curious, happy, determined, he loves to sing, he's basically a real character. It wasn't hard to find out what kind of chocolate fits him. I chose sour cherry. I wanted to pair it up with alcohol and as I was browsing through the bottles, I found the whiskey. Since one of Pippin's favourite activities is smoking the pipe, I had the other ingredient. Sour cherry jelly and smokey-creamy whiskey-dark chocolate ganache, hmm...


Ingredients:
150 gr white chocolate
60 gr dark chocolate
20 ml whiskey
one spoon of butter
60 gr sour cherry
agar
lustre dust, cocoa butter

Recipe:
First, I tear off pieces of the tape and stick them into the cavities of the mould to get the separating line. Then I sprinkle the cavities first with golden, then with red lustre dust in a way that the bulk of it goes in the middle. Finally I get rid of the tape. I temper the white chocolate and I prepare the shells.
Then comes the cherry jelly (I used frozen pitted cherries). I blend the cherries and I sieve them. I boil the liquid with a quarter spoon of agar, then I leave it to cool. When it's not too hot anymore, I pour a bit into every cavity.
Now comes the whiskey cream. In a bain marie I melt the dark chocolate and the butter, then I combine it with the whiskey. I put a layer of the cream on the top of the cherry jelly. I place the mould in the fridge and when the cream sets, I temper the leftover white chocolate and I seal the bonbons.

banán - sós karamell // banana-salty caramel


És ismét tavasz volt.
Winny a dombtetőn állt, körülötte felszabadultan sóhajtozó, zöld lobogójukat bontó fák. Alant a reggeli fényben még fáradtan, az elvonuló tél által hátrahagyott titkokat őrizve bújtak össze a piros cserepes háztetők. Virágoktól terhes ágú gyümölcsfák bohém alakja bukkant fel itt is, ott is.
Gyereknevetés, kályha gyomrából felkúszó füst, frissen teregetett ruhák ropogós, napszárított illata, a föld vérkeringésének pezsgése, az újjáéledő táj álmokat rejtő, felleguszályú látványa – Winny mindezt a levegővel együtt szívta be, megtelt a tüdeje.
Itt az ideje, hogy ismét útnak induljon.
Az ujját ölelő Pillangógyűrűt bámulta. Mily rég, hogy utoljára használta… Talán elfelejtette már a szárnyalást, és most már fél is tőle. Mi van, ha nem sikerül? Ha a belül süvítő szelek hiába biztatják?
Három év hosszú idő, sok minden megváltozik azalatt. Mi van, ha elpárolgott a varázslat a gyűrűből? Oly sokáig viselte használat nélkül, oly sokáig élvezte hangtalanul és rabságban tartva a belül játszó szelet.
A tetőket és a viráglombú fákat nézte. Mily könnyű lenne megfordulni és hazamenni! Egészen könnyű lenne ismét csendben hallgatni a belső szelet anélkül, hogy átadná magát neki.
De nem! Nem véletlenül hozta a szél erre a dombra.
Felsóhajtott és elfordította a Pillangógyűrűt. Békésen úsztak a bodros felhők az égen. Méhek döngtek a közeli bokrok körül.
Elmúlt a varázs. Még egy kis szellő sem moccant. Winny lábujjhegyre állt, hátha akkor megérzi. Milyen ragyogó zöld a fű, milyen sárgák a pitypangok, és ő soha többé nem látja őket a magasból! Apró légmozgás simította végig az arcát. Megdobbant a szíve. Ez lenne az?
A szél elült. Pillanatnyi csend.
Az égből csapott le, karmait kimeresztve a bosszú, egyesülés, odaadás vágyával, a rég nem látott szerető kíméletlenségével és szenvedélyével. Eltépte Winnyt a pázsitról, száraz falevélként sodorta az égbe, ide-oda ráncigálta mint rossz gyerek a játékszerét. Most a föld felé süvített, majd ismét neki a felhőknek, el a falu felett, föl, föl, egészen magasra, akárha az űrbe akarná kilökni.
Winny lélegzete bennszakadt, a szél egyre csak üvöltött s ő tehetetlen koloncként vergődött. Végtagjai gyorsan átfagytak, mellkasa páncéljában halálos félelem ritmusára vert a szíve. Küzdött, úszott, dobálta magát. Végül feladta. S akkor, csak akkor, a szél szelíd örvénnyé változott, tavaszi fuvallattá, hátára vette Winnyt, engedelmesen repítette, ahogy régen.
Odalent pitypang- és százszorszép-pettyes mező, a völgybe húzódó, fakó tetejű házikók, s utak, utak, utak. Már csak azt kell eldönteni, melyiket kövessék.


Ez egy egyszerű recept: minden fő hozzávalóból ugyanakkora mennyiség kell bele. Aztán amikor az ember megeszi, szétolvad a szájban a banán élénk, édes íze, nyami :)

Hozzávalók:
40 ml tejszín
40 gr cukor
40 gr banán
két kiskanál vaj
2 csipet himalájai só
200 gr tejcsoki
kakaóvaj, ételfesték

Elkészítés:
Olvasztott kakaóvajjal és ételfestékekkel (vörös, rózsaszín és arany) összefröcskölöm a formát. Ezután temperálom a tejcsokit és elkészítem a bonbonok burkát.
Feldarabolom a banánt és a tejszínnel együtt összeturmixolom. Egy lábasban megolvasztom a cukrot, amikor szép borostyánszínű lesz, lehúzom a tűzről, és beleteszek két kanál vajat, azután a banánturmixot. Fröcsköl, vigyázat! Egy kicsit még melegítem az egészet, hogy összeálljon, legvégül ízlés szerint adagolom a sót.
Amikor kissé kihűlt, a karamellát beleadagolom a bonbon burkokba. Hűtőbe teszem a formát, míg a töltelék teteje meg nem köt. Ekkor temperálom a maradék tejcsokit, és lezárom a bonbonokat.




And it was spring again.
Winny was standing on the hilltop, around her, freely sighing trees unfolding their green flags. Below, still tired in the morning light, guarding the leftover secrets of passing winter,  red-tiled roofs huddled. The bohemian figure of fruit-trees turned up, their branches heavy with flowers.
Children's laughter, smoke rising from the belly of furnaces, the crisp, sun-dried scent of freshly hung-out clothes, the fizzing of the ground's circulation, the view of the reviving, dream-hiding, cloud-cloaked landscape - Winny breathed all of this in together with the air; her lungs filled.
It's time to take the road again.
She stared at the Butterfly ring embracing her finger. It's been a long time since she'd last used it... Maybe she'd forgotten to fly, and now she's afraid of it. What if she doesn't succeed? If the winds inside encourage her in vain?
Three years is a long time, many things can change. What if the magic had evaporated from the ring? She was wearing it for such a long time without using it; she enjoyed the silent wind playing inside, in captivity.
She watched the roofs and the flower-crowned trees. How easy it would be to turn around and go home! It would be really easy to silently listen to the inner wind, without giving herself to it.
But no! It is not by chance that the wind brought her to this hilltop.
She sighed and turned the Butterfly ring around. Peacefully, fluffly clouds were swimming in the sky. Bees were buzzing around the nearby bush.
The magic was gone. Not even a tiny breeze moved. Winny stood on tiptoes - maybe then she'd feel it. How dazzling green the grass is, how yellow the dandelions are, and she'd never see them from above! A tiny waft caressed her face. Her heart skipped a beat. Is it that?
The wind died off. A moment of silence.
It struck from the sky; with sharp talons, the desire to revenge and unite; the relentlessness and passion of a lover long time not seen. It tore Winny from the lawn; carried her in the sky like a dry leaf; dragged her around like a bad child his toy. Now it whizzed towards the ground, then again at the clouds, away above the village, up, up, very high, as if it wanted to toss her into space.
Taking Winny's breath, the wind kept howling and she was squirming like a helpless burden. Her limbs froze; in the armour of her chest, her heart beat to the rhythm of deadly fear. She struggled, swam, threw herself. Finally she gave it up. And then, only then, the wind transformed into a gentle swirl, a spring breeze, it took Winny on its back, flew her obediently like back then.
Below a field with dandelions and daisies; cottages with faded roofs and roads, roads, roads. The only thing to decide, which one they should follow.


This is a simple recipe: the same amount is needed of every main ingredient. Then when you eat it, the intense, sweet flavour of the banana melts in your mouth, yummy :)

Ingredients:
40 ml cream
40 gr sugar
40 gr banana
two small spoon of butter
2 pinches Himalayan salt
200 gr milk chocolate
cocoa butter, food paint

Recipe:
With melted cocoa butter and food paint (red, pink and gold) I sparkle the mould. THen I temper the milk chocolate and I prepare the bonbon shells.
I cut up the banana and blend it with the cream. I melt the sugar in a pot and when it gets a nice amber colour, I take it off the fire and I add two spoons of butter, then the banana-smoothie. Be careful, it splatters! I warm the caramel a bit more until it becomes creamy; finally I add the salt.
When it cools down, I portion the caramel into the shells. I put the mould in the fridge until the filling sets. Then I temper the leftover chocolate and I seal the bonbons.
